Call 970.255.2641. >>37<< >>37<< Lamb Chops & Mint Apple Gastric by Wine Country Inn Lamb Chops Ingredients: (8 servings/2 chops for each person) • 16 Colorado lamb chops • salt & pepper • 1 tablespoon of canola oil Lamb Chop Directions: Lay out all chops on a cookie sheet or tray and rub salt and pepper into each chop on both sides. Heat heavy skillet that has been lightly coated with canola oil to prevent sticking. Sear chops on each side to develop color and texture. Remove to baking tray. Once all chops are seared, finish off in 375º F oven for 10 minutes. Arrange artistically on individual plates with wild rice or other side dishes and garnish with sprigs of fresh herbs. Drizzle plate with Mint Apple Gastric. Serve piping hot immediately. Mint Apple Gastric Ingredients: (8 servings) • 8 ounces apple mint jelly • 1 ounce freshly squeezed lemon juice • 1 ounce red wine vinegar • 1 ounce apple cider Mint Apple Gastric Directions: Combine all the ingredients in medium size sauce pan. Heat to a boil and reduce by one half. Taste for adjustments. Serve immediately (or can be reserved for up to two days ahead and stored in an air tight jar or container for service.) To cool, pour the sauce into a shallow pan until temperatue has dropped to 70º in the first 2 hours, and 40º in the next 2 hours. Then store in container. Drizzle over hot Lamb Chops right before serving. Enjoy!
