1 cup water
1/2 cup Karo light or dark corn syrup
Preheat oven to 350 . Spray 9" square baking pan with
cooking spray. In a large bowl, combine dry ingredients
until mixed well. In medium bowl, whisk egg whites, water
and corn syrup.Stir into dry ingredients until smooth.
Poor into prepared pan. Bake 30 minutes or until cake
springs back when lightly touched. Cool on wire rack for
10 minutes.

VINCE AND GEORGE
- Larry Hollander
Their first race was in 1939. It was a cross country
affair, Vince said he came in 9th place and George in
19th, but George is not so sure. That was over 50 years
ago and Vincent Carnevale and George Sheehan still have
that same competitive edge.
After the inspiring lecture from Dr. Sheehan, George,
Vince, Lynda, Joe, Milt and myself got a table at the Nest
and had a few beers.
Training Diary: 6 days
per week, 45 miles weekly.
Hobbies: Golf, tennis,
dancing.
The lecture was wonderful and informative, but to listen
to Vince and George reminisce was even more stimulating.
A seventy-two year old and a seventy-four year old talking
with the enthusiasm of teenagers. Is it any wonder that
they both are living a full and active life.

Vince was talking about running 3 races in one day in
Ridgewood this year and almost beating Austin Newman who
is a 75 year old superstar. George remembered having this
fellow beat except for the last 100 yards.

These two men have proven to me that life is just a game
and you are never too old to play. Their competitive
spirit and the desire to succeed has kept both men 70 plus
years young.

So all you young Essex members take notice of these two
men and learn what life is really about. Vince did not
dwell on his recent heart attack and Dr. Sheehan did not
discuss his bout with cancer.
I believe they give this message that life is short and
life is great, so make the most of it.

BUS TRIP
Members have expressed the desire for the
club to take a bus trip to a race within a
few hours drive. We have found such a
race. At present it is the PREVENTION
HALF-MARATHON which is in Allentown, Pa.
The date is Saturday, March 16th . Start
time is 9:00 a.m. and the race is limited
to the first 1,000. entrants. The cost for
the day will be $25.00, to include bagels,
juice as well as lunch and beverages. You
should have received a reservation form and
an application for the race. You will be
responsible for entering the race. The
club will take care of the rest.
We are looking forward to this trip and
hope to get 50 people to join us. This
event is not only for our members. Please
feel free to invite your spouses or
significant others to join us.

This months meeting featured John Kokes as
our guest speaker. John is known to most
of us as a triathelete, fitness enthusiast
and an inspirational speaker. It has been
my pleasure to know John since 1983 when I
joined the Essex Health and Racquet Club.
We ran many miles together on the track and
he was always an inspiration to me with his
positive attitude. He talked me into
joining his for the Oxford, Maryland
triathlon in 1987+88. I ran as part of a
relay team. John naturally swam, biked and
ran the entire event and it was here that I
got to see first hand the results of his
hard training. In checking ny log book I
also recalled that we ran a 21 mile
training run together on the Belmar
boardwalk on 8/21/88.
John shared with us his vast training
experiences which began in 1979 how he has
strived for peak performance over these
years. He recalled how his training
program has been a trial and error process,
experimenting with various sports
supplements and nutrients. He supplied us
with an enormous amount of literature as
well as many samples of sports drinks
(Ultrafuel, Exceed, Gatorade). Among the
literature passed out was a summary sheet
of Ergogenic Aids. This sheet briefly
discussed the nutrient, manufacturer,

purpose, benefit, dosage and remarks. John
outlined the benefits of Ergogenic Aids:
- Add vim and vigor daily
- Provide peak energy (at work, workouts
and socially)

Increased quality and intensity
Provide extra energy
Helped recover fully
Increase life span
During the presentation, John referred to
many books which he had read over the
years. Here are some which he urged us to
read:
LIFE EXTENSIONS by Durk Pearson and Sandy
Shaw. These two were pioneers in many of
the concepts they discuss. One being the
concept of free radicals and their residual
effects on one's health, anti-oxidants (the
fumes which we breath when running on main
thoroughfares) and co-factors (the concept
of vitamins, minerals and electrolytes in
harmony with each other).
tablespoons of Brewers Yeast. John warned
that Brewers Yeast should be introduced
slowly into your diet as well as any other
supplements you wish to take. The last
book which was mentioned was PEAK ENERGY by
Daniel Hammer. Here Mr. Hammer promotes
how a person can increase their oxygen
consumption in just two weeks.
The multivitamin supplement which was
strongly recommended was HaxiLife by Twin
Labs. This supplement included the key
components which are necessary for peak
energy and performance. These include:
vitamin E, selenium, zinc, vitamin C and
chromium, B12 and B6. John emphasized the
important role vitamin C plays in recovery
and for general well being. Linus Pauling
is a wonderful example of the picture of
health. At 84 he continues his supplement
regime of vitamin C, E, B complex and A.
Pauling believes you can increase your
longevity by up to 24 by following his
program.
THE GLYCEWIC INDEX OF SELECTED FOODS This
index is very helpful when needing to find
a food which you can get energy from. John
remembered eating baked potatoes late in
the evening and having an unusual reaction
to them due to their high glycemic index.
"Avoid fat, because fat goes to fat", says
John. The diet John stresses is:
EAT TO MIN by Robert Haas. This book
John concluded by telling us we should have
less bad and more good. We may not be able
to be perfect, but we should strive to
become better. Thank you John for a very
interesting and informative evening.

what your blood cholesterol and
triglycerides counts are. When John had
one of his first cholesterol counts done,
he was shocked to see it was 212. He
figured out that it must be the 7 or so
bran muffins he had been eating every
morning at Dunkin Donuts. This book also
stresses the importance of complex
carbohydrates as a staple in your diet.
Remember complex carbohydrates are a clean
burning fuel.
FOREVER FIT by Cher and Robert Haas, FIT
FOR LIFE by Harvey and Marilyn Diamond were
other books highly recommended by John.
One book RAW ENERGY by Leslie Konton
discussed the concept of eating raw fruits,
foods and vegetables. She feels that raw
food enables you to run longer without
fatigue and in fact will give you a feeling
