The success when the much longed-for Edelweiß finally flourished on the Wilder Kaiser; the wave of emotion which went through Austria when Balthasar Hauser made it possible for the million Schilling stallion Pluto Verona to find a home in the Stanglwirt’s Lipizzaner stud farm; or that evening when – at that time still a professional skier – Hansi Hinterseer played his first melody on an accordion. For Balthasar Hauser, who has a love of nature, this approach has been a matter of course, even since he was a child. His special pioneering achievements lay in the consistency of applying this approach and particularly in the visionary recognition that living in harmony with nature means valuing it. Providing a service lies in recognising that guests value these ideas and that we act upon it. 4 5 Legends Stanglwirt & its legends The Stanglwirt origins lie in many things, whether that is the first private Lipizzaner stables, the Edelweiß on the Wilder Kaiser and in so many successful careers. Imaginativeness, a pioneering spirit and drive are what have characterised the Stanglwirt to date. Hansi Hinterseer learns to ‘play accordion’ Childhood friend of Balthasar Hauser, Hansi Hinterseer, was an acclaimed professional skier in the USA and one evening came to him asking Balthasar to teach him ‘a few tunes on the accordion’, which was so ‘wonderful’. The Americans really wanted to hear him play these tunes, so Hansi Hinterseer practised his first few notes with Balthasar Hauser in the office. A few years later he was discovered by the producer Jack White - and the rest is a living legend. A home for Edelweiß The botanical idea of Balthasar Hauser and friend Franz Kofler was born at a singers’ meeting. Edelweiß, which was threatened with extinction, was to gain a new home on the Wilder Kaiser! What was hastily conceived as a thought became an arduous undertaking. “We wanted to establish wild Edelweiß, not the garden variety Edelweiß”, said Balthasar Hauser. For this unusual rescue operation Edelweiß seeds were gathered from the Dolomites, grown in the garden, and finally planted in a secret location on the Wilder Kaiser. Success! The small, delicate plant found a new, protected home high above the Stanglwirt. Occasionally Balthasar Hauser picks one for ‘much loved guests’. Princess Caroline of Monaco and new Princess Charlene Wittstock were presented with one as a gift. The story of Pluto Verona It was a spectacular event. The venerable Dorotheum in Vienna was constructed as the setting for an unusual Lipizzaner auction which was broadcast live on ORF. Balthasar Hauser at that time managed the only private Lipizzaner stables in Austria and was very interested in the breeding stallions at the Piber stables. After all, this was where the proud horses from the Spanish Riding School came from. Under the patronage of the incumbent Minister for Agriculture, Josef Riegler, and presented by Peter Rapp, one horse after another was lead into the improvised arena. “It was love at first sight”, says Balthasar Hauser, as he recalls the moment, when Pluto Verona was offered up for auction. Yet his bid of one million Schilling was outbid –by an unemployed person, who as it later turned out, was not able to raise this sum of money. There was a huge debacle and ORF General Director at the time Peter Marbo asked whether the offer was still applicable. “A Tyrolean man is true to his word. We help one another and make the best of 6 1 2 3 4 5 6 8 7 things”, was Hauser’s reply to the rescue operation which ensued. People and the media followed this touching story and newsreader Horst Friedrich Meyer announced, on the second headline feature of the evening news: the impressive million Schilling stallion Pluto Verona has moved from the Piber stables to his new home at the Stanglwirt. A move which captured the hearts of all of Austria. Pluto Verona arrived as a 16-year old stallion and remained the hero of the stables until his death 20 years later. The children and grandchildren of this impressive Lipizzaner stallion can still be seen today at the Stanglwirt. ”Legends among guests” It is with this motto in mind that for a long time many celebrities have felt “at home” in the Stanglwirt. In the Hauser family and their staff they find a down-toearth nature that they love and hold in high regard. The eastern section of the Wilder Kaiser is an area where you can meet the Stanglwirt Lippizaners on the quiet forest trails. The Stanglwirt’s delicious mountain cheese is produced on the Graspoint Hochalm and there is also hunting in the same area. The chamois and roe deer hunt is managed in a very considerate manner. Nurturing is what matters in the first instance. The stocks of game are to remain healthy, and only game which is specified by the authorities is shot, in order to maintain stocks, explains Richard Hauser, CEO of the Biohotel Stanglwirt, and a hunter himself. Richard Hauser on the hunt In this sense hunting is integrated in the natural cycle of the cultivated landscape, i.e. in the rural economy and in forestry. With passion and understanding she wields the sceptre and works as a team with 100 employees, is always ready to listen to guests and provides pep-talks if something isn’t going right. For instance with a golf tee-off or a ski run. Trixi Moser is a positive person through and through. ‘I am down-to-earth and approachable, and have an awareness of what is going on around me’, she recounts. Everyday she consciously goes about her duties with joy, since – as she is convinced: ‘In the Stanglwirt we have the nicest product. Where else is there such a wonderful place to work?’ Trixi Moser is, so to speak, an icon in the Stanglwirt and an established pillar in the business. Having started out as a Receptionist in the Stanglwirt, today she organises the everyday affairs of the hotel, experiencing and living the rhythm of the Stangwirt. “I get to develop here and have contact with people”, she says. The straight talking is down to her - with guests and also with her core team. Clearly disseminating information – something which the staff in the team have learned from her. Sensitivity and attentiveness, without that the Stanglwirt would be sunk. “I try to keep an eye on everything. Stud farm manageress Anna Widder ensures that rides on the impressive Lipizzaners – and small ponies – are a real pleasure. ”Horses are good friends, sensitive creatures and occasionally they are wonderful therapists too”, explains our stud farm manageress Anna Widder. She is lucky to have made her passion her job, and has found the perfect place to work. “The Stanglwirt stud farm is a wellness oasis for Lipizzaners, very spacious, well looked after – it’s a 5* level here too”, muses our equine expert. 30 horses, ponies and foals need daily exercise, attention, care, and sometimes medicine. “Here everyone does everything”, explains the 31-year old, in reference to her team of 4 staff. “Horses are my life”, says Anna, as she leads a mare out of the box with her experienced hand. There is great excitement since this is the first time that Amelia has been separated from her little foal for a few minutes. The foal is just a few weeks old, Anna Widder missed its arrival by just a few minutes. “The mare did it all by herself, emotionally guided by the horse in the neighbouring box”, she laughs. The foal’s father is from the famous Piber stud farm in Vienna, home of the impressive Lipizzaners from the Viennese Court Riding Academy. She had a choice of stallions said Anna Widder; I selected a quiet stallion for our lively Amelia. Every year she looks for suitable stallions for the mares, since in the Stanglwirt stud farm 1 to 2 foals are a welcome addition to the stead every year. Anna Widder has worked with horses all of her life. She shows her passion for this job in each individual action. And in the many nicknames which she has for her impressive charges. Today the Stanglwirt is also centrally located – namely in the midst of cultural highlights, an artistic programme and high quality events. Swarovski Crystal World in nearby Wattens houses splendid treasures made out of crystal. These crystal delights are guarded by the water-spouting head of an Alpine giant. Created from a design by the artist André Heller, the giant houses the sparkling treasures in a subterranean exhibition area. 3-D projections, a crystal-o-scope and a crystal dome await the visitor, with a mysterious magic ambiance. The cow shed window has long been a trade mark of the Stanglwirt restaurant. In actual fact this brilliant idea was borne of necessity. It was the singers who were to blame - the mother of the Stanglwirt’s Anna Hauser, herself a keen singer, brought folk music to the famous guesthouse. These “singer meetings” soon enjoyed a legendary reputation – and so it came to be that the cosy pub snug was too small for the fast growing event, and extensions were carried out. The adjacent ‘Sagmehlschüpfei’ on the west side of the hall was closed and a new hall was joined on. While moving the wall to the north-facing side there was one small problem - a window to the cow shed could be seen behind it. Renowned architect Albertini from Wörgl, who was in charge of the redesign of the dining hall, wanted to have it bricked up but Lois, Anna Hauser’s partner came up with the fantastic idea of keeping the view to the cow shed as a tourist attraction. The rebuilding of the hall worked out very well! The favoured table was then somewhat elevated, to the right hand side of the hall. It was particularly popular, since from it there was a view not just of the hustle and bustle in the hall, but also – in the opposite direction – through a small window, there was a view into the shed where the cows and calves, pigs and piglets, unaffected by the often very important guests next to them, were setting about their idyllic, rural lives. The shed window at the Stanglwirt was from then on a brand product which had an unbelievable advertising impact. There had never been anything like this before, where the cows could watch guests eating, and in turn the guests were not disrupting the cows. The cow shed window is still here today. It has always inspired guests to think about life. Famous behavioural scientist Prof. Irenäus Eibl-Eibesfeldt once wrote in the guestbook: “I expected a lot from the Stanglwirt, but not that I would come across a behavioural scientist. At the moment the recipe-book is only available in German language. 22 Thomas Ritzer’s delicious tip Mountain cheese made using organic Stanglwirt produce Every year a total of 140 tonnes of milk for curds, butter, yoghurt and cheese are processed in the hotel’s own dairy. One exceptional item among our own cheese varieties is the “Stanglalm-Mountain Cheese”, says head chef Thomas Ritzer. The cattle are reared on the high Alpine pastures, far removed from civilisation, which ensures that the cows do not absorb any artificial fertilizers. All they eat is the finest of herbs, the most tender of grasses and nutrient-dense plants. This is natural organic energy in its purest form and yields the highest quality milk, which is demonstrably measurable in the fat and protein content and demonstrably appreciable in the exceptional taste. Our mountain cheese is made using this mountain milk, and 3000 kilograms are produced every year. Incidentally the transportation of this mountain cheese from the Alpine pastures is also special. The landlord’s daughter Maria Hauser is the Creative Director and is in charge of the range. A task which she has set about with a great deal of enthusiasm. Stanglpost: What lead you to design your own Stanglwirt Collection? Maria Hauser: As a creative and artistic person I have a natural interest in fashion, trends and designs. In the meantime the Stanglwirt brand has, thanks to centuries-old developmental work and the right marketing, a concept which my father Balthasar understands very well, become an established brand and has also matured to become a lifestyle product. Maria Hauser: The Stanglwirt Collection can be worn anywhere, whether that be Kitzbühel, Hamburg, Paris or New York. It is modern, sporty and casual. Very appealing. We do of course work with a team of proven specialists when it comes to functionality and cut. All the preparative pieces, selecting designs and materials are down to me. The process is strictly regulated, each item is chosen by me personally. It is entirely within the context of a premium brand that I place regard quality and design as foremost qualities. It is only in this way that we can ensure that the Collection consistently bears the distinctive Stanglwirt style. A short while ago, and quite by chance, I saw a man wearing a Stanglwirt polo-shirt on the Côte d’Azur. Surprising discoveries such as these are of course a huge delight! Stanglpost: What inspires and motivates you in your work? Maria Hauser: The joy at making something! I am aware of the great responsibility upon me in working with a brand which has developed from the work carried out by 12 generations of my family. With creative input from the past, making a path to the future is a both an honour and a challenge. Values and wellbeing have played a fundamental role in the past and will continue to do so in the future … Stanglpost: Do you have your own favourite piece? Maria Hauser: Just one? I am fond of all the pieces! That said, at the moment I am especially fond of the rugby shirt in pink. It’s just a nice colour, is flattering and can be worn at any time of the year. The very first Weißwurtsparty polo shirt makes me feel sentimental. I am working on a piece at the moment which is a good candidate for the very top of the popularity scale. I can’t reveal any more at the moment …. it is top secret. But I am convinced that our guests get as much pleasure from wearing & feeling the Collection as we do creating it! A year in which Archduke Albrecht VII, Regent of the Southern Netherlands, officially appointed Paul Peter Rubens as court painter. The year when Shakespeare published his sonnets in London and Johannes Kepler published his first two Kepler’s Laws in Prague. In Venice Galileo Galilei was one of the first people to construct a telescope to observe the night sky. A year in which many things began: On 11th September seafarer Henry Hudson discovered the island of Manhattan and was the first to navigate Hudson Bay, which was named after him later. On 7th November 1609 the Stanglwirt was granted publican status by the local authorities in Kitzbühel. There is probably barely a more worthy occasion for a big celebration that an anniversary, under the motto “400 years of hospitality”, the Hauser family celebrated the vibrant history of the hotel, which has been furthered developed by several generations with an increasing sense of tradition and with new vision, with friends and companions, staff and guests. One thing has remained unchanged over all the years and the centuries – what has in the meantime become a fixed slogan based on the established credo “at home at the Stanglwirt”. Even though the Stanglwirt has become one of the most famous hotel brands, the Hauser family and their team of 230 have never forgotten the roots of their success. The Stanglwirt is a living symbiosis of the fastidious luxury hotel sector and a 100 hectare farm. In times past and today still everyone is equal here – poor and rich, VIPs and the less well-known. In keeping with the traditional atmosphere of the Stanglwirt, local poets like Peter Rosegger, Enzi Kraus and Georg Paulmichl recited works. When mastermind and Stanglwirt owner Balthasar Hauser invites people to a Weißwurst party, then that is set to be the most noteworthy side-event of Kitzbüheler Hahnenkamm race programme - by a long chalk. For the 19th time this hip, mega pub crawl was held by the Hauser family, who yet again provided an incomparable mix of shows, glamour and entertainment, with a relaxed atmosphere, a bevy of famous guests. ‘Simply legendary’, as it was succinctly put by the musical head-lining act and star guest of the evening SASHA. This successful German pop star provided a really exceptional musical experience with his catchy hits like ‘I Fell Lonely’, ‘Hide and Seek’ and ‘Wide Awake’. Star chef Alfons Schuhbeck, who is ‘Weißwurst Pontiff’ and party co-founder Toni Holnburger have long been indulging visitors with a record-breaking 5000 Weißwurst and almost as many pretzels. “If it continues in this way next year we’ll need a much bigger cooking pot”, quips Toni Holnburger, who is already toying with thoughts for new Weißwurst creations in the year to come. Media interest has also been enormous. No fewer than 200 media representatives and 25 TV teams were accredited for this year’s party. A VIP service which of an exceptionally high class was offered by Salzburg’s Jetbroker Flyby Management.
