We sometimes feel that way at PBS Hawaii, with people helping us in ways Leslie Wilcox PBS Hawaii that we don’t expect. President and CEO There are especially thoughtful people on Neighbor Islands. We send our “free” broadcast signals farther than those of any commercial TV station to reach more people, and Neighbor Islanders reach back. Here are two recent examples, beginning with Kauai woodworker Dean Mayer: ---“I made a lot of sawdust, that’s how I made it.” Dean is humbly explaining how he crafted a beautiful, rich-grained lobby desk for PBS Hawaii’s future home. It’s in his Omao workshop, ready to be shipped to Honolulu. The wood is from a large monkey pod tree that had to be cut down because its growth was threatening the safety of a home on the Koloa property of his friend, Dan Suga. Dean says he was moved to make the desk because he enjoys PBS Hawaii programming. Everyone who enters our future home will see Dean’s creation as soon as they open the door. We hope you’ll come and visit. ---“Everyone loved seeing Downton Abbey on the big screen.” That’s Susan Bendon of Spreckelsville, Maui, talking about a “pop-up” screening she gamely pulled off with little notice. Taking time out from the busy holiday season, a group of Maui residents watched the highly anticipated premiere of Downton Abbey’s final season more than a week before television viewers were able to see it. Susan, a PBS Hawaii Board Member, enlisted Seabury Hall’s Lynn Matayoshi and they presented the episode in the school’s comfortable auditorium. In Honolulu, we worked with Ward Consolidated Theatres to give an advance screening for fans. “PBS made many friends,” Susan said. See what I mean? With Lynn, Susan made it happen. Naturally, Chef Pete Evans and the travel cooking show Moveable Feast with Fine Cooking, in their quest to find the places where flavorful ingredients, top chefs and beautiful locations come together, saw Hawaii as a must-see location. Six talented chefs from Oahu, Maui and the Big Island had the opportunity to serve up their best and show the world what the food of Hawaii is all about. Chef Lee Anne Wong introduces us to the friendly competition of the Honolulu Fish Auction. Hoku‘ao Pelligrino of Noho‘ana Farm on Maui shares the significance of kalo to the Hawaiian culture. And Chef Peter Merriman relates the history of how King Kamehameha established livestock on Hawaii Island. Merriman, who has also appeared on PBS Hawaii’s Long Story Short with Leslie Wilcox, told us about a highlight from his experience taping the show: “Pete Evans and crew getting stuck in their rental car at Kahua Ranch! They had to get towed out!” “I’m excited for people outside of Hawaii to see the agricultural community and how Hawaii is so much richer than just white sand beaches,” Merriman said. “We have a deep culture.” Part of our culture, of course, is sharing the bounty with others. Friends and family of the chefs gathered to enjoy dinner together. As a way of saying thank you for their support, PBS Hawaii was also able to invite one lucky couple from our community of supporters and board members to each Moveable Feast event on Oahu, Maui and Hawaii Island. Noelani Kalipi, a PBS Hawaii Board Member who attended the Big Island event, said: “Tasting all of the local products, I felt much pride in being from Hawaii Island.” “The real ‘wow moment’ was when Chef Jon Matsubara made his smoked mai tai,” said Jodi Endo Chai, a Board Member who attended the Oahu event. “It was nice how Moveable Feast showcased all that Hawaii had to offer.” Left to right: Hoku’ao Pelligrino of Noho’ana Farm, host Pete Evans and Chef Kyle Kawakami By Chef Peter Merriman Serve this dish with basmati rice. Serves 4 to 6 For the Curried Lamb 2½ lb. boneless lamb shoulder or leg, cut in 1-inch cubes 1 Tbs. sea salt 1 tsp. coarsely crushed black pepper 3 Tbs. vegetable oil 2 tsp. ground cinnamon 2 tsp. ground coriander 2 tsp. ground cumin 2 medium onions, sliced 4 cloves garlic, chopped 2 Tbs. grated fresh ginger 2 Tbs. peeled and finely chopped turmeric 1 can coconut milk (13.5 oz.) 2 cups lower-salt chicken broth or water ½ fresh small chile pepper, such as habanero, seeded and finely chopped 1 pint cherry tomatoes Chopped fresh cilantro, for serving MOVEABLE FEAST IN HAWAII February 13 at 7:00 pm - Oahu Chef Pete Evans joins award-winning Hawaiian chefs Jon Matsubara and Lee Anne Wong to learn how local pineapple is harvested. They also meet local fish guru/mentor Brooks Takenaka at the Honolulu Fish Auction to bid and buy locally sourced fish for dinner. Chef Jon shows how to make his famous smoking mai tai cocktail, hibachi-style Kauai shrimp, and Kahaluu roast pork belly while Lee Anne cooks up fresh opah and vegetable sides and Pete prepares ahi poke. February 20 at 7:00 pm - Maui Pete explores, cooks and dines with two of the island’s excellent chefs, 2014 Maui Chef of the Year Isaac Bancaco, and founder of the mobile kitchen Maui Fresh Streatery Kyle Kawakami. The adventure starts with some off-shore fishing. Back on shore the team prepares a modern take on a traditional Maui feast at the spectacular Noho‘ana Farm known for its taro and poi. February 27 at 7:00 pm – Big Island “The Pied Piper of Hawaii Regional Cuisine,” Chef Peter Merriman takes Pete on a trip up the Kohala Mountains to the beautiful Kahua Ranch where they pick up Wagyu beef for the night’s feast. Meanwhile, local chef Jim Babian sources abalone straight from the tank at the Natural Energy Laboratory of Hawaii. Later, the chefs meet up at Merriman’s Restaurant to prepare woodgrilled abalone; pipikaula beef jerky poke; pan-seared kampachi with lilikoi brown butter sauce; and lamb curry with fresh ginger, turmeric, coconut, and pineapple-mint garnish. For the Raita ¾ cup plain whole milk Greek yogurt 1 small seedless cucumber, peeled and coarsely grated 3 Tbs. chopped fresh dill 2 tsp. minced garlic 2 tsp. chopped shallot 1½ Tbs. fresh lemon juice; more if desired Sea salt and freshly ground black pepper For the Chutney ½ cup unsweetened shredded coconut, toasted 2 Tbs. extra-virgin olive oil 2 Tbs. chopped cashews 2 Tbs. raisins 3 cloves garlic, thinly sliced and fried 2 tsp. toasted sesame seeds 1 tsp. crushed red pepper flakes ½ tsp. ground coriander Fine sea salt Make the lamb Position a rack in the center of the oven and heat the oven to 350°F. Toss the lamb with the salt and pepper. Heat the vegetable oil in a 5- to 6-quart Dutch oven over medium-high heat. Working in batches, brown the lamb on all sides, about 4 minutes per batch. Transfer each batch to a plate as it’s done. Remove the pot from the heat and let it cool briefly. Return the pot to medium heat. Add the cinnamon, coriander, and cumin, and cook, stirring constantly, 1 minute. Add the onions, garlic, ginger, and turmeric, and cook, stirring often and scraping any browned bits from the bottom of the pan with a wooden spoon, until the onions begin to soften, about 3 minutes. Stir in the coconut milk, broth, and chile pepper. Return the lamb to the pot and bring the mixture to a boil over medium-high heat. Cover and put in the oven for 50 minutes, or until the lamb is tender. Make the raita Combine all the ingredients except salt and pepper in a medium bowl. Season to taste with salt, pepper, and additional lemon juice. Refrigerate until ready to use. Make the chutney Combine all the ingredients except salt in a medium bowl. Season to taste with salt. Cover and set aside until ready to use. Finish the lamb Add the cherry tomatoes to the curried lamb, cover, and return to oven until the tomatoes soften, about 20 minutes. To serve Spoon the lamb into serving dishes and top with cilantro, raita, and chutney. Recipe adapted from Moveable Feast with Fine Cooking. They all have the same goal: to play in the NFL. According to the film, Samoans and Tongans in the U.S. are 28 times more likely to play football in the NFL than any other ethnic group. But with family expectations, gang violence and stigma, it isn’t an easy path. PBS Hawaii spoke with filmmakers Tony Vainuku and Erika Cohn by phone about their first feature-length documentary. This interview has been edited for clarity and length. As the story lines progressed, what was something that hit This film was shot cinema verite style, which can be tough home for each of you? when you’re following your subjects in real time, not Cohn: I can’t tell you how much I learned from our subjects.
