Discipline
by Kathie Wind
P
arents often ask, “What should I do when
my two year old is throwing a temper
tantrum?” The best answer is, offer them
a cold drink of water. When they stop to
drink, the coolness of the water will calm
them down. Once they are calmed down you
can resolve the problem at hand.
The word discipline comes form a root word
that means “to teach.” When you have to
discipline a child, keep in mind it is a teachable
moment. For the youngest children, simple
redirection works best. For children three years
and older, have them” tell you their story, what
happened just before you hit Johnny? Show
them that you understand their predicament.
“Oh, that would make me mad too,” you could
answer. Explain that it is ok to be angry, explore
with them what their options are when they
are angry. Also, show them how the outcome
would be different with the right approach. Talk
about what they will do next time. Then have
the child come up with a solution for this time.
Always maintain the dignity of the child, so that
when this problem is solved they come away
feeling like they really are someone special and
they have new tools to solve problems.
Focus on the behavior that you want, rather
than what you do not want. If they are doing
something wrong, suggest something else
rather than always saying don’t do that. Try to
always give them a way to redeem themselves.
The more positive you can be the better the
outcome will be now and in the future.

Childhood Education and is the owner/director of

ASK THE EXPERT: Relationships
internet Safety
FoR CHildREn
Dear Theresa:
My children have been computer knowledgeable
since they were born. Well, maybe not that early
but it is unbelievable how much they know. My
one son is only 8 years old and can get around
the computer much better than I can. I also
have a 5 year old daughter and she is close
behind him. This seems to be the norm for the
kids these days. What I am wondering is how to
protect him from becoming curious and getting
into places on the computer he shouldn’t be
looking at for his age. Can you give me some
general Internet guidelines for my child that is
appropriate to his age and development?
~ Sophie
Dear Sophie:
You are so right about children these days being
computer savvy. It is the communication of
their times. It is a wonderful supplement to their
education and can improve their reading skills,
cognitive learning skills as well as technical
skills that are much needed in our society. It
also brings them a wealth of information mostly
good but your concern is valid regarding what
the computer can bring them in the area of
inappropriate information for their age.
driving yourself and your child crazy by your
own rules and restrictions. Find out about your
security software on your computer. Let your
computer do much of the work by restricting
websites and how your child uses the computer.
Most computers have security restrictions
you can set for different age levels. What is
appropriate for an eight year old may not be
appropriate for your 5 year old so make different
logins and security levels for each person that
uses the computer. Make sure you and your
child have the password but you maintain the
administrative login.
After you have set the security on the computer
the next step is to discuss the boundaries
and limits with your child. Your computer may
be secured but that doesn’t mean that the
computers or smart device he will be on at
friends or in other areas will be secured. You
will need to build trust with your child. Listen to
their needs and their wants and negotiate their
privileges appropriately. I would suggest that
you outline the rules for the Internet and the
consequences very clearly with your children.
The following contract is a guideline to help you
get a start in making rules.
Being an informed and concerned parent
is the first step. Some parents do not allow
their children internet because of their
own ignorance of the computer and their
exaggerated fears of “what could happen”.
If you are being realistic and responsible as
a parent you can find out what is needed to
make your computer safe for your child and
your child safe on a computer.
Therefore, the second step would be to take
the responsibility to monitor your child without

PRIVILEGES TO USE THE INTERNET AT HOME, AT A FRIENDS OR AT SCHOOL. I
UNDERSTAND THAT IF I VIOLATE ANY OF THESE RULES I ONLY WILL BE ALLOWED TO USE
THE INTERNET UNDER THE SUPERVISION OF AN ADULT SUCH AS MY TEACHER OR MY
PARENT.
1. I will not give out personal information such as address, phone number, parent’s work address,
phone number, or the name and location of my school without my parent’s permission.
2. I will tell my parents right away if I come across any information that makes me feel
uncomfortable.
3. I will not go onto a site that allows me to talk to people unless it is first approved by my parents. I
will then only talk to people who are my friends at school, family members. If they are not friends
at school or family members I will first get my parent’s approval before talking to them online. My
parents have the right to monitor my activity at anytime they feel appropriate.
4. I will never send a person my picture or any other personal information without first checking with
my parents and having their approval.
5. I will not respond to any messages that are mean or in any way make me feel uncomfortable. It
is not my fault if I get a message like that. If I do, I will tell my parents right away so that they
respond appropriately.
6. I will talk with my parents so that we can set up rules for going on-line. We will decide upon the
time of day that I can be on-line, the length of time I can be on-line, and appropriate areas for me
to visit. I will not access other areas or break these rules without their permission.
7. I understand the consequence to breaking these rules will result in me loosing my privileges for
the Internet.
Have the child sign the contact you and your
child agree upon and inform them that at
anytime the rules can be reviewed if anything
occurs that has not been discussed. The
internet is ever changing and so are your
children. At first trust should be given but each
child is different and as a responsible parent
you will know what your child is capable of
and not capable of handling. Some children
require more specific rules because they
are “explorers” and often push the limits and
boundaries of your rules. If the child proves
they are able to follow your “reasonable and
age appropriate rules” then expand their
privileges appropriately. Spend time with your
children while they are online. Become familiar
with the websites they like to go to and become
knowledgeable about the program securities.
Work with your child to make this a fun and
learning experience.
Why did they let the turkey join the band?
Too many restrictions and rules only push
your child to break the rules and is what I call,
“parent sabotage.” In other words you are
setting you and your child up for problems. A
win-win situation is to set age appropriate,
reasonable rules and boundaries to build a
trusting relationship. When a child has your
trust and you have theirs they are more likely
to come to you when something uncomfortable
happens. You maintain control but your child
feels your trust and will more likely behave
responsibly.

T
he Great Start Parent Coalition
has spent the last few months
working closely with many Genesee
County candidates. We began
with the Sandbox Party in Lansing
where we made a statement to support young children. With young
children in mind, we held three
Pumpkin Parties where we greeted
several local candidates and shared
our thoughts on the needs of early
childhood education. Working
with the Great Start Collaborative, we boarded a
bus and toured Genesee County with many key
agencies and leaders of our local community.
Parents from across the county took time to
educate and interview many of our candidates
for the November election as well. Our work is
far from over, but thanks to many parents and
leaders of our communities we
can make a difference for all the
young children in our lives.
The Parent Coalition is a network of concerned parents sharing information and resources.
Our goal is to create awareness
and educate local communities
regarding early childhood education and services.

How Do
We Learn
How To
As adults we have relationships with many
people; family, friends, co-workers, among
others. One vital component to maintaining
those relationships is trust. Webster’s Dictionary
defines trust as: to rely; depend; to hope; to
expect; assume; to believe; to entrust. As adults
we have spent a lifetime developing relationships
in which we extend those attributes and find
value in them. Where do we develop this innate
need to search for these qualities in our closest
relationships? It all begins in infancy.
As an infant we seek to have our basic needs met
in a caring, consistent, and sensitive manner;
babies innately desire that attachment to
someone, their caregiver. Babies rely and depend
on the adult in their life and assume their needs
for food, comfort, and safety will be met. This
critical stage in infancy is the foundation for
development as an emotionally healthy child
and adult. This is the beginning of the ability
to develop healthy emotional relationships
needed in families, school and later in life.
Some suggestions for promoting healthy, strong
attachments to your baby are:
Respond to your baby’ s coos and cries;
physically and verbally. Be comforting in
your response; use a soft and gentle voice. Be
consistent in your response; let them know they
can rely on you to respond. Give your baby

of your attention; don’t be in
a rush;
take time to play with him. Smile
and talk to your infant often; during mealtime,
bath time and other routines. Hold and cuddle
your baby often; gently stroke his face and allow
him to interact back by holding your finger.
Allow you baby to explore their world with your
loving guidance.
You cannot spoil a baby by responding with
holding and soothing responses when he or she
cries. You will be setting the stage for a strong,
loving relationship with you that will continue
to grow through childhood and into the next
generation.

ASK THE EXPERT: Automotive
do i have to change my oil
Every 3,000 miles?
This is a question that many car owners
and shop owners have asked. Let’s take
a look at engine oil change intervals, and
what exactly is going on with the conflicting
information that is being put out to the
public. Maintaining your vehicle is the best
way to prevent breakdowns and to limit
large expenditures from major component
failures. Changing your engine oil is one of
the best ways to ensure that your vehicle is
properly maintained. When an oil change
is done correctly, a vehicle inspection is
done as well. This can help you to gather
information about your vehicle and to
monitor potential problem areas.
Your engine oil becomes dirty and grimy
through the normal use of your vehicle. It’s
important to get that oil out of there so your
engine is not damaged. The big question
is how long does it take for your oil to get
so dirty that it needs to be changed? The
accurate answer is that everyone and
every vehicle is a little bit different. Most oil
change facility’s business models want you
to believe that this interval is 3,000 miles.
Most manufacturers recommend 7,500
miles when they built the vehicle. With
the development of oil life monitors, many
vehicles will alert you that your oil is ready
to be changed by illuminating a change oil
indicator of some type at or near the 7500
mile interval. I would encourage you to
follow your manufacturer’s recommendation
outlined in your owner’s manual. If you
do decide to choose the manufacturer’s
recommendation for oil change intervals,
please keep in mind that it is going to be
necessary to periodically check your oil
level. Many vehicle owners never check
their engine oil level when using the 3,000
mile interval, but with the longer mileage
period between oil changes it is a necessity
to check this level.

Cleaning Carpet Spots and Spills
"Whoever said you shouldn't cry over spilled milk probably didn't have carpet...or a toddler!"
Clean spills immediately. If you catch the spill
when it’s fresh, you’ve got a good chance of
removing it completely. Consider these tips, too:
• Carefully blot or scrape the area before
applying any cleaning solution, removing as
much of the spill as possible.
• Do not rub the spill – that might spread the
problem to a larger area.
• Before using any cleaning solution, test your
carpet in an inconspicuous area to make sure
the cleaner won’t damage or discolor it.
• When you apply spot cleaner, work from the outside of the stain toward the inside to
avoid spreading the stain. After applying a cleaning solution, blot up all the moisture.
• A clean white bath towel is unsurpassed for drying carpet and brushing the nap back up
to a standing position.
• If you feel there is still too much moisture after blotting the carpet, place a 3/4" thick
stack of white towels over the spot and weigh them down with a heavy object.

BANANA CUPCAKES
Submitted by Mackenzie - Adapted from a Martha
Stewart recipe
1 1/2 cups all-purpose flour (spooned & leveled)
3/4 cup sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup applesauce
1 1/2 cups mashed bananas (about 4 ripe bananas)
2 large eggs
1/2 tsp. pure vanilla extract
1. Preheat oven to 350 degrees. Line a standard 12-cup muffin pan with paper liners.
2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda and
salt. Add applesauce, mashed bananas, eggs and vanilla. Do not over mix.
3. Spoon batter into muffin cups, filling 3/4 of the way.
4. Bake 25-30 minutes; until a toothpick inserted in center of a cupcake comes out
clean. Remove cupcakes from pan; cool completely on a wire rack.
5. Spread with vanilla frosting and serve.
VANILLA BUTTER FROSTING
1 lb. (1 box) confectioners’ sugar, sifted if lumpy
2 egg whites
1/2 cup butter
1 tsp. pure vanilla
1. Combine all ingredients in a bowl and beat for 5 minutes or until light and creamy.
If the mixture is too dry or too thick, add a few drops of milk. Frosting should still
be thick. If mixture is too thin, add a few tablespoons of confectioners’ sugar.
NOTE: If there are lumps in the confectioners’ sugar, the frosting will be lumpy unless
the sugar is sifted or pulverized in a food processor until smooth. Use a good quality
pure vanilla extract. Cheap vanilla or imitation will leave more of an alcohol taste since
this is not going to be baked or cooked. Using vanilla that has been on the shelf for
several years may produce a bland taste or require more vanilla to be used.

Washing your hands before dinner
“What is a
Fandangle?” was the
first thing that came to my mind when my
girlfriend told me about a fabulous squash
soup at this full service, multiple "award
winning" restaurant in the fabulous city of
Flushing.
Fandangles’ is a restaurant like no other,
where you will enjoy an elegant lunch or
dinner in an intimate atmosphere. They
also feature monthly artist exhibitions with
some of the most talented artists in the
industry. Their amazing service also goes
above and beyond, catering to vegans,
vegetarians, and people with special
dietary requirements and allergies.
“Menu items will be altered to meet
our guests’ needs, and special dining
experiences of our guests can be called
in ahead to expand their culinary choices
using our recipes or their own,” says coowner, Thomas Price.
You will quickly
find that every
part of this dining experience has been
thoughtfully created. Not only does
Fandangles' offer events and catering
service, but they also boast one of
the largest fine wine selections in the
Genesee County area.
“So, what is a Fandangle?” The word
Fandangle, according to many online
dictionaries, means “elaborate ornament.”
Elaborate: Involving many carefully
arranged parts or details; detailed and
complicated in design and planning.
Ornament: something that lends grace or
beauty.
Truly, Tom Price and Steve Lowry have
certainly done this and are geniuses at
their craft. Award-winning culinary Artist
Steven Lowry has graciously shared with
us this much talked about recipe with you.

CAndiEd liME SWEET PoTAToES
Adapted from a recipe from Lauren Ulm
When using traditional sweet potato casserole
recipes, families will be cooking up the most
fattening and unhealthy side dish on the
Thanksgiving Day buffet. There are healthier
sweet potato recipes that are both nutritious
and delicious. A brand new twist to a classic
holiday artery clogger this Thanksgiving may
well be the most welcome addition to the
Thanksgiving feast, especially for family and
friends who have only ever eaten yams in
their most sickening sweet form.
Ingredients
2 sweet potatoes, peeled
1/2 cup sugar
1 tsp molasses
1/2 tsp salt
1 Tbsp fresh lime juice
Zest from1 small lime
1/4 teaspoon ginger powder (optional)
Margarine
Black pepper
Parsley or cilantro, for garnish
1. Preheat oven to 400°. Slice sweet potatoes about 1/8” (try using a food processor).
2. In a bowl, mix together sugar, molasses, salt, lime juice, lime zest, and ginger to form a
paste.
3. Coat the sliced sweet potatoes well with the lime sugar mixture.
4. Oil or spray a casserole dish. Arrange coated slices in overlapping rows in one layer.
Dot with margarine, sprinkle with pepper and cover the dish lightly with two layers of
aluminum foil.
5. Bake for 30 minutes, then remove foil and bake uncovered for an additional 10
minutes. It’s okay if it looks a little watery when you remove the foil; it’ll reduce and
form a nice glaze during the rest of the baking.
6. To finish, turn on the broiler and broil until the tops of the sweet potatoes are brown.
Remove, sprinkle with black pepper and parsley or cilantro, and serve immediately.
SwEEt pOtatO faCtS
• Potatoes are tubers, which are underground stems. Sweet Potatoes are actually roots.
• The most common flesh color (or the insides) of a sweet potato is a vivid orange. These are
sometimes called "yams." However, a yam, or can of yams you buy in the store, is actually a
sweet potato. A true yam is a starchy root that grows in the Caribbean. It is rough and scaly and
not even related to the sweet potato!
• George Washington Carver was a scientist who developed 118 products from sweet potatoes!
He used sweet potatoes to make glue for postage stamps and a starch for sizing cotton fabrics.

Celebrate “Pizza with the works except Anchovies Day” November 12!
I make a couple of batches of pizza crusts and freeze them. After school, my daughter
takes them out of the freezer, adds her favorite ingredients and they are done in no time!
Pizza Dough
3/4 cup lukewarm water
1 tsp. honey
1 Tbsp. dry active years
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup semolina flour (in the organic section)
1/2 tsp. salt
1 tsp. olive oil
1/2 cup cornmeal
cooking spray
Spinach Pizza
Alfredo sauce
Fresh spinach, chopped
Tomatoes, sliced
Shredded Italian or Mozzarella cheese
Barbecue Chicken Pizza
Barbecue sauce
Chicken, chopped
Onions, chopped
Shredded Cheddar cheese
Pizza Dough (modified from “In the Kitchen with Rosie”)
1. Mix the water and honey together in a medium bowl.
Sprinkle the yeast on top and set aside for 20 minutes to
proof. until bubbles form on top of the surface.
2. Combine the all-purpose, whole wheat and semolina
flour, along with the salt, in a mixer. Slowly add the yeast
mixture. Mix until dough forms a ball, about one minute.
Add more water if necessary. Continue mixing for 2 more
minutes.
3. Rub the surface of a large bowl with olive oil. Transfer the dough ball to the bowl and
roll in the oil to coat. Cover with a towel and set aside in a warm place until the dough
doubles in size, about one hour. (It seems that I always have the dryer running, so I
usually put it on the dryer to rise.)
4. Preheat oven to 400°. Put the dough on a work surface prepared with a dusting !of
cornmeal. Roll out evenly to a thickness of 1/4 inch. Cut into about 5” circles. I use
one of my small plates to cut around. I usually get about 5 pizzas cut from the dough.
5. Spray cookie sheet with vegetable oil to coat. Put the pizza dough onto the sheet and
back 3-5 minutes. Remove the baked crusts from the oven. You can either cook them
now or let them cool and place them between pieces of waxed paper and put in ziploc
bags and freeze. To reheat, place thawed dough on cookie sheet with your choice of
toppings. Cook for 10 minutes in a 400° oven.

12 ways to make
parent/teacher Conferences
the BESt
EVEr!
By Chick Moorman and Thomas Haller
I
t’s parent/teacher time. Yes, it’s
time to go to school and talk to the
teacher directly about your child and
how he or she is responding to the
curriculum, the teacher, and his or
her peers. Whether you’re looking
forward to this opportunity or not,
there are some important things to
take into consideration to help make
this venture to school a productive
one. Consider the following guidelines
when participating in parent/teacher
conferences.
1. Talk to your child ahead of time.
Get her input. Does she have a favorite
subject? A least favorite one? What does
she like best about this teacher? Ask if
there is any topic she would like you to
talk about with this teacher. Make sure
she knows before you head to school
that you and the teacher are meeting
with her best interests in mind.
2. Plan ahead. You probably have ten to
twenty minutes at best to meet with
your child’s teacher. To make sure those
are productive minutes, make a list of
the questions you want to ask and the
information you would like to share
about your child’s hobbies, interests,
personality, etc.
3. Set priorities. Keep it simple. Pick one or
two questions that are most important to
you. Zero in on one thing you most want
the teacher to know about your child.
You will not have time to explore a long
agenda. If you have real concerns about
44
the education process, the teacher, your
child, or the discipline policy, it’s best to
schedule a private conference at a later
time.
4. Manage your mind on the way to the
school. Re-mind yourself that this trip to
school will be for the benefit of your child.
Make a BE choice. How do you intend
to BE during this conference? Choose
to BE helpful, curious, interested,
informative, friendly, or collaborative.
How you choose to BE will structure the
tone and tenor of the conference. Your
BE choice will greatly influence the end
result.
5. Prepare a friendly opening. Thank the
teacher for preparing for this meeting.
Tell him something nice your child said
about him. Tell him you know this is a
busy day for him and how much you
appreciate how hard he’s working for the
benefit of his students.
Ouch!

6.
Listen. One of your main purposes is to
gather information about the teacher, the
school, and, most importantly, your child.
You can’t get that information if you do all
the talking. This teacher has important
information to share with you. Be sure
you hear it. Write it down if necessary.
7. Ask your most important question. It
might be about academic expectations
or behavior. It could be finding out how
your child will be evaluated and if and
how test results are used as part of
the instructional process. You could
ask about your child’s learning style,
the teacher’s homework policy, or the
discipline policy. You will NOT have time
to get all your questions answered, so
lead with the most important one first.
8. Remember, no one knows your
child better than you do. If you have
information about how your child learns
best or what interests him, share it.
9. If the teacher has a problem with your
child, do not get angry, apologetic, or
take things personally. Ask for examples
of the problem the teacher is sharing.
Ask what has been done so far. Ask what
steps will be taken next. Ask how you can
help.
10. You will not have time to develop an
action plan if your child needs help
academically or behaviorally. Schedule a
follow-up conference so you can discuss
specific steps that will be taken by you,
your child, and the teacher.
11. Share your appreciation at the end of the
conference. Tell the teacher specifically
what you liked about the way the
conference was conducted.
12. Debrief with your child as soon as
possible. Alleviate any anxiety she might
have about the conference by sharing
what was discussed. Do this while the
information is still fresh in your mind. Ask
for her reaction and opinion about what
was discussed. Share any plans you
have that will impact her life. Tell your
child the nice things her teacher said
about her.
Preparation is the key. Use the 12 guidelines
above and prepare to have the most
productive parent/teacher conference ever.

I SPY
By David Zidel
I Spy is a great game. You can also play a similar version in the car
or any place you are just bored. Whether going on long car rides on
vacation, or sitting in a doctor’s office wondering why you didn’t
show up twenty minutes late, this game can capture your child’s
attention while distracting their boredom.
You can use colors, letters or numbers depending on your child. One person starts by choosing a
color (something blue, for example) and says “I spy with my little eye, something blue” or simply
“I spy something blue.” The other players look around and suggest things it might be: “The blue
button on the dashboard” (no), “The blue shirt.” (no), “The blue pen” (no), “The blue map” - yes.
The person who guesses correctly often gets to choose the next object. Often the game is played
without the accumulation of points, and winning a round simply results in the initiation of further
play.

Glassware Cleaning Tips
• Use the bartender’s method for speedy stemware washing. Holding the base, pump the
glass vigorously in very hot sudsy water, then quickly put it in hot clear water (cooler
water may shatter it). Dry upside down on a cotton towel.
• For extra-shiny, streakless glasses, add
a little vinegar or borax to the final rinse
water. If glasses have hard-water stains,
rub them with a scouring pad dipped
in vinegar. Never use hot water, harsh
soaps, ammonia or washing soda on
silver or gold-rimmed glasses.
• A well-lathered shaving brush cleans
deeply etched or hobnailed glass
especially well.
• If eggs have dried on your patterned
glass tableware, rub off the residue with
a slice of lemon.
