Food and Entertaining
Course #: STREETCAR - 3
Savor the Flavor of New Orleans with Chef John Besh
John Besh grew up in Southern Louisiana and his
cooking is deeply rooted in the traditions and flavors of
the Bayou. At an early age he learned the essentials of
Louisiana’s rich culinary traditions working in commercial kitchens. Since Hurricane Katrina, Besh has changed
the way America thinks about food. He has renewed his
previous commitment to buying locally to help invigorate
the city and a food culture he loves.
In 1999, Food & Wine magazine named John
Besh one of the “Top 10 Best Chefs in America.” In
2006, James Beard named Besh the “Best Chef, Southeast” and he was victorious as the first New Orleans Chef
to compete against Mario Batali on Food Network’s Iron
Chef. Gourmet has ranked Restaurant August 22nd in
its “Top 50 Restaurants in the United States” and Gayot
Travel Guide has named it a “Top 40 Restaurant in the
U.S.” He also recently received the Louisiana Restaurant Association’s 2008 Restaurateur of the Year award.
His restaurants in New Orleans are Restaurant August,
Besh Steak in Harrah’s New Orleans Casino, Lüke, and
La Provence.
Come join Chef Besh for a tasting of one of his favorite dishes!

Come Share the Magic with Chef Paul Prudhomme
Join world-famous Chef Paul Prudhomme for a cooking
demonstration and tasting. Chef Paul has propelled the distinctive cuisine of his native Louisiana into the international spotlight.
Chef Paul learned the importance of using the freshest
ingredients while cooking at his mother’s side and continues to
use only earth’s finest harvests. As the youngest of 13 children,
Chef Paul was always adventurous. His strong curiosity of life
and cultural customs motivated him to leave Louisiana in his
early 20’s and travel across the United States to experience every culinary environment possible. In July 1979, K-Paul’s Louisiana Kitchen® opened its
doors in New Orleans. In only a few years, his French Quarter
restaurant attracted world travelers and continues to excite diners today. Diners are especially pleased to learn that K-Paul’s
Louisiana Kitchen now takes reservations. Renovations were
completed at the restaurant at the end of 1996 doubling the seating capacity. K-Paul’s Catering division satisfies palates in New
Orleans and “anywhere on the planet!”

Operative dentistry has been changing rapidly over the last few years. Recent changes in materials and techniques

This program will review the philosophy of implant therapy today. Both tissue level and bone level implants are appropriate. The tissue level implant has been successful for years and has made implant restorative dentistry simple using a
cemented approach. Active implant surfaces and stable abutment connections impart very high predictability. Loading protocols have drastically changed through the years due to advances in surface technology. Through digital planning, placement,
impressions and CAD/CAM technology, improved, predictable and esthetic results can be achieved.

(Hands-On Workshop)
Time: 8:15 – 10:45 a.m.
Course #: SPICES - 5
Cost: $35
NOTE: It is recommended that you attend the Friday lecture (BOURBON - 3 or BOURBON - 4) to participate in this hands-on workshop. This session is limited to 35 participants, DENTISTS ONLY.
Dr. Karl Koerner
Utilizing principles and techniques from discussion, participants will perform surgery procedures on life-like dentoform models. A “surgical” extraction is done followed by socket preservation with bone graft material and a barrier membrane. A partial bony impaction is performed complete with flap reflection and bone removal in a manner to avoid sensitive
anatomic structures followed by treatment to prevent dry socket. An excisional biopsy and other minor oral surgery procedures are also performed on models while Dr. Koerner instructs and critiques to help participants ascribe to current standards
of care.
Course Objectives:
• Have a solid feel for soft tissue incisions, bone removal, and placement of bone graft material.
• Know first-hand how various surgical materials are used and/or manipulated.
• Receive one-on-one instruction and feedback on a number of surgical procedures.
• Understand what current standards of care are regarding several surgeries commonly done in general practice.

preparations, recognition and management. The course is designed for all members of the dental office staff. Situations discussed here can happen outside of the dental environment as well as in the office. Everyone should be prepared!

Saturday, April 4 - 8 a.m.
New Orleans Morial Convention Center
The LDA House of Delegates, comprised of 76 voting members, is the ultimate policy-setting
body of the Louisiana Dental Association. As such, it speaks for the entire membership. The
members of the House are elected by the nine components of the LDA. The allocation of

considered and decisions made at each meeting of the House. All LDA members are welcomed
and encouraged to observe the activities of the House. Check at the registration desk for exact
room numbers.
