Greetings!
The summer months are over but looks like we’re still off to a hot start here
at the Rockwell Club! We hope you are enjoying all the activities we have
for you. On the kids’ corner, our Sports and Recreation team has teamed up
with National Jiujitsu Championship medalist, Michael Tiu, also known as
“The Tiunami” in the martial arts world. Kids and teens aged 5 to 14 years
old are welcome to join his class. At the young adults and parents’ camp, the
Basketball League will be a surefire hit, as four teams are set to compete for the
championship trophy from July to September. We sure hope you noticed the
resurfacing of our newly refurbished squash and badminton courts too.
We have all been missing you!

a meaningful morning last Christmas
with the kids gathered by Sta. Cruz
Parish Pastoral Center. A warm-up
exercise led by no less than our Wenga
instructor (the Club’s signature dance
fitness class) Arnold Trinidad started
the day, followed by special dance
performance, fun games, gift-giving,
and a hearty lunch. The kids were a
refreshing and pleasant sight amidst
the traffic and season rush, reminding
us that simple moments like these are
what Christmas is really all about.

to Chinatown

G
one are the days of being content with an order of sweet and sour
pork and siomai. With our host, Ivan Man Dy’s enthusiasm for
sharing the culinary pleasures of a cuisine we thought we knew well
and the added value of off-the-beaten track locations in Chinatown,
his three-and-a-half hour food tour known as the Big Binondo Food
Wok introduced us to hidden gems of this vibrant and exciting
Manila district on the first day of the Chinese New Year.
The Walkapedia Tour organized by The Rockwell Club met Ivan in front
of the Binondo church a little before 8:00 a.m. The crowds began trickling in
because of the New Year celebrations. We had time to admire the church and
chat with Dy about what to expect from the Food Wok tour. Dy was our affable
host and tourist guide. Friendly and talkative, he put us at ease and could talk
about anything under the sun. That cool, sunny Thursday morning, he began
the tour with some little known tidbits on the interesting yet slightly conflicting
relationship between the Chinese in Binondo and the Spaniards in Intramuros
during the colonial years.
Our first stop was just a hop, skip and a jump away from our meeting place.
The restaurant’s name: DONG BEI DUMPLING. We were having special
dumplings for our first course because dumplings were considered by the
Chinese to be traditional lunar new year food.

The fried stuffed pancakes were also very enjoyable.
These were simply the fried version of the Kuchay.
Dy emphasized that the food in Dong Bei was from the northern provinces
of China. It differed from the Cantonese and Shanghainese cuisines that
we are more familiar with. The dumplings are boiled instead of steamed.
Because it was the first day of the lunar new year, they prepared a special
batch of “red” dumplings for us. One batch was stuffed with “kuchay” or
chives (a delicious snack!) and the other batch with red bell peppers. The
wrapper’s light, soft, and smooth texture was a perfect companion to the
flavorful pork mixed with the chives or bell pepper tucked inside.
The name of the restaurant for our “second breakfast course” was Quick
Snack on Carvajal Street. If you didn’t know it was there, you would have
missed it completely. Dy offered a quick tidbit about this unassuming
eatery. Operating for almost 50 years, the late owner, “Ama Pilar” opened
Quick Snack at the age of 60! We were first served flaky pastries called
Kuchay Ah in the form of pork Empanaditas. In English, it means, “chives
in a box”. We were subsequently served Tauhu (a tofu number with sweet
soy sauce and topped with cilantro), Sate Beef Kangkong Guisado and the
Chinese lumpia (fresh spring rolls).
After a short walk through the colorful streets of Binondo, we arrived
at another 60-year-old Chinatown institution, Sincerity, for “brunch.”
This place had a long line of patrons outside its doors waiting to be seated.
Sincerity’s Five-Spice Fried Chicken was the cause of the lines outside.
Perfectly cooked chicken, tender in the inside and crispy on the outside;
this dish was the epitome of comfort food. It did not need any gravy or
ketchup because the chicken was tasty in itself. Though Dy jokingly said
the five spices were secret, it is typically a seasoning composed of ground
cinnamon, cloves, star anise, fennel seeds and Szechuan peppercorns.
Other dishes we tried at Sincerity were Tsinoy Torta Talaba and
Cha Misua.
Our “dessert” was dished out in President Tea House. Dy explained that
the siopaos served were sweet and differed from the asado and mongo
kinds we’re accustomed to. The first kind served, Gabi Pao, was a cute
purple siopao with yam inside, then we moved on to another variation
with custard and salted egg. The last dessert was a traditional mango
and sago dish, known everywhere as Mango Sago, that was refreshing and
quite rich.

With a multitude of options to select from, Valentines celebrations have evolved
into a full-blown enterprise. It sure drives our economy into full swing: from
simple dinners to concerts and countless retail promos that create pandemonium
everywhere.
T
he ever gracious party hostess and philanthropist, Josephine del Gallego has
been hosting full moon parties in Rockwell for the past few years. The full
moon party was held at the Club’s Palm Grove Garden and was catered by
Chef Jessie. A pioneer resident of Amorsolo and a self-confessed house girl who
has a flair for architecture and interior design, Josephine is now based in Cardiff,
California, where she enjoys her home by the sea. Every year she gathers her
closest Rockwell neighbors and friends from an interesting cross section of politics,
business, and fashion —which always makes for the most interesting conversations.
Thankfully, there are still those who veer away from the noise and choose
to celebrate in the most traditional way—in a languid setting by the pool, with
sweet voices lingering in the air over casual dinner. Our Valentines dinner
proved to be all that, as members stayed despite the downpour. The dinner show
featuring television and theater actor Guji Lorenzana and pop theater diva Sheila
Valderrama-Martinez afforded many good memories and sweet thoughts, making
our guests feel lovestruck all over again.

PEARLS AND TEAS
French company Jewelmer showcased
high-quality, lustrous pearls during a
3-day exhibit held at the Club last March.
Members were given special discounts for
the duration of the exhibit. A workshop was
also conducted over a casual afternoon of
tea, where Tess Catedral of Jewelmer shared
interesting facts about pearl variants and the
processes involved in turning them into fine
jewelry.
After the workshop, Mr. Mike Falsis, a
resident member from Amorsolo Square,
was declared the winner of the 18-carat
champagne colored south sea pearl
pendant, the grand prize of the Valentines
promotional raffle.

anila is known for its hectic
pace, bumper to bumper
traffic, and mercurial weather
conditions. Which is why it’s
always a treat to come across
an oasis where you can relax
and enjoy a satisfying meal in
a welcoming spot. With this
in mind, Chef Jessie cooks up
the perfect healthful menu. A
true artist in the kitchen, her
goal is to get inspired by what surrounds her. So she whips up
new dishes based on the ingredients that excite her and the
ideas stimulate her. From start to finish, it is all about giving her
patrons something fresh and delicious to look forward to. Right

here, she gives The Rock a taste of things to come.
Fresh Picks
City life can make for hot heads and added stress. So in a
world where we are what we eat, there’s at least one way we right
the balance of how we feel. Chef Jessie knows this, and puts a
premium on using ingredients that are fresh and nutritious. “We
prepare our food with a lot of vegetables and fruits, and also with
what’s in season,” says Chef Jessie. “This way, everything stays
and feels fresh.”
As such, Chef Jessie recommends starting off a meal with
some vegetable crudités. “For me, the best way to feel fresh
is to have a nice bowl of something really crisp and cold that
you can munch on. Here we have cold turnips, crunchy carrots,
cucumber, asparagus spears, celery, and romaine lettuce all
soaked in cold ice water and served with yoghurt dip. It’s healthy,
straightforward, clean, refreshing, and light.” After that, one can
move on to a bowl of cold soup served over ice. “I made a soup
with cucumber, mint, broccoli cauliflower, asparagus. But I
wanted something more. So I added a kick with some Tabasco

to prepare healthy food that even the pickiest eater will want to
indulge in. If food is nutritious and delicious, people will not only
eat well, but they will feel good after. Also, we eat with our eyes
first so presentation is very important. If you please the eyes first,
the appetite is enticed.”
With this in mind, she’s concocted even more healthy
treats that are a feast for the eyes and the stomach. A perfect
example of this would be her fresh and truly hearty pasta salad
with kani sticks, roasted bell peppers, olives, parmesan cheese,
artichoke hearts, and micro greens topped off with a simple
pesto vinaigrette. For a main entrée, a hearty BBQ evokes the
image of afternoons spent outdoors and is almost enough to let
some sunshine in on a dreary day. For her version, Chef Jessie
uses only the choicest seafood such as prawns, lapu-lapu, jumbo
scallops, salmon, that is grilled to perfection and severed with a
quintessential picnic staple, potato salad, on the side. And last
but not the least comes her homemade sorbet and fruit medley. A
delightful and vibrant dessert that will burst with flavor as it melts
in your mouth, playing on your palate for a light and fresh ending.

sauce!” The Tabasco sauce gives one a feeling of wow and
wonder, and gives a curious, added dimension. As Chef
Jessie aptly puts it, “the more you eat, you want to just finish
it off.”
An Enriched Experience
Apart from her fresh food philosophy, Chef Jessie, as always,
makes it a point to create dishes that her clients will not
only enjoy, but benefit from. “It’s always been my advocacy

Last January, 2015, Chef Jessie had the distinct honor of preparing the meals for Pope Francis during
his stay at the Papal Nunciature in Manila. She shares some of the highlights from that life-changing
experience with us.
“My mission was to fill him up. He’s 78 years old and has a very full schedule. I had to make sure that
he was nourished. He doesn’t like vegetables so I served him a lot of meat. We stuck to the simple food
that he was used to because we wanted him to feel comfortable. I researched on Argentinean cuisine
and we baked media luna, which is their version of a croissant along with all our other breads. He really
enjoyed our sea bass and roast beef, which he likes to eat very rare. He even wiped up all the sauce! He
had two servings of the beef consomme.”
“I saw Pope Francis everyday, in the morning and in the afternoon. One time, while he was in the
jeepney Popemobile, dressed in his raincoat, he clasped my hand and said, “Grazi, grazi. Molto delizioso!”
Chef Jessie describes her experience with the Holy Father as a blessing that has inspired
her to make a difference in the lives of the poor, just as the Pope has asked all of us to
do. Because of this, she now offers “The Holy Father’s Menu” at Chef Jessie, the same
menu Pope Francis enjoyed so much on January 18, 2015 (which she described above).
Fifty percent of the sales from this menu will be donated to the Tulay sa Kabataan, the
orphanage Pope Francis visited when he deviated from his itinerary.

“When the Papal Nuncio contacted me through Cardinal Chito Tagle and first asked me if I could
cook for the Holy Father, I really started crying. It was such an honor and a blessing. Luckily, I didn’t get
nervous. That’s one of my gifts—I don’t get nervous and stay focused.”

second assignment in Manila, he tells us of
what he enjoys most about living in the city.
Profile: Hiromichi Matsuo, 42 years old,
diplomat.
Origins: Before coming to the
Philippines, I worked in different
departments in our head office in Tokyo
for more than 10 years. This is my second
foreign assignment as a diplomat and the
last time was also the Philippines. I arrived
in Manila last September.
Love for the People: Filipinos are
the most friendly people and nice to work
with. I love visiting markets and other busy
places where I can see the everyday life of
locals and listen [to] their conversations.
Well-loved Traditions: In Japan, I
used to go to my hometown in summer. It is
a small island with quiet [and] nice beaches.
My family plans to visit the Philippines
this summer and I am very much looking
forward to it.

the Club court every week. I recently joined
the Rockwell Photography Club, [which]
offers lectures on specific topics like street
photography, sunset photography and so
on. I plan to go on their shoots this summer
and snap away as many photos as I can.
he Inaba family definitely has family-bonding
on their minds, especially with three young children who
are all excited to head to the beach in the Philippines. They
share with us their plans for some quality time.
Profile: Daisuke, 39 years old, employed at Isuzu
Philippines; Ikuko, 40 years old, housewife. Children:
Taichi, 6 years old; Sosuke, 4 years old; Takuya, 3 years old.
Origins: We are originally from Tokyo. Daisuke was
working for a Mitsubishi trading company, while Ikuko was
working in Germany. Daisuke is now here on assignment for Isuzu
Philippines.
Love for the Country: We love the kind and friendly people.
Also, going to Tagaytay, Power Plant Mall, and Bonifacio Global
City.
Well-loved Traditions: We always make plans to go to the
beach, like the Maldives, in Palawan or Bali. This year, we plan on
having a vacation in Palawan, or just spend more time in the pool
with the kids.
Rockwell Club Habits: We use the swimming pool and training
gym at least once a week. We did a BBQ in the park once and loved
it! Daisuke would like to try Yoga and boxing. It would be nice if
there is a soccer activity here, too. My kids love soccer!

I can be as I am in Manila.
In Japan, people call me

of Emiri, not Yukiko. But
here in Manila I can be
Yukiko. I can do whatever
I want. I’ve been into
dance since several years
ago. I dance classical
ballet, ballroom Latin and
standard, and flamenco. In
the past I also learned tap
dance and jazz. I also do
Pilates.
Well-loved
Traditions: All through
the year I enjoy dancing and [going to]
Pilates. I’m a dance nut. I plan to just
dance, dance, dance!
Rockwell Club Habits: In the past, I
went to the gym almost every night with
Yasushi or a friend. When I had severe pain
on my knees, I took treatments from the
Club therapist or personal trainer. When
we had a problem with our water heater,
we took a shower, sauna and bath at the
Club like going to a sento in Japan. When
Emiri was small, she took swimming
lessons and enjoyed swimming with her
friends. I also took some dance classes like
flamenco, ballroom, salsa and retro dance
at the Club studio. We’re lucky to have
such nice facilities nearby. Now I enjoy
flamenco classes with Gina, my Filipino
friend. Thanks to the classes I made friends
with some nice people. If I have more time,
I’d like to join other dance classes like jazz
and hip-hop.

for dance while here in Manila, and
she feels she’s found herself through her
different pursuits in the many years she’s
lived here with her family. Here she tells
us of her latest source of joy, dancing
flamenco.

friend that she took flamenco classes from
Señor Gomez at the Club. As I wanted to
do something new, I went there to observe
the class. I hadn’t had any background
of dance by that time. There I found her
dancing gracefully and happily. I became
so excited and enrolled right away. I took
the classes twice a week at the Club then.
After having a long break due to a surgery
I resumed flamenco last September under
Angel Gomez. Now I take the classes
only once a week there as I take private
lessons also. Mixed cultures are merged
in flamenco: Andalusian, Indian, Islamic,
and Latin. The atmosphere of dance
differs from dance to dance. I’m fascinated
because of these factors.

BODY TREATMENTS
Sea Salt Body Scrub (40 minutes)
Aromatic fine sea salts mixed with
aromatherapy oil is used to exfoliate
dead skin cells, leaving the body feeling
fresh and silky smooth. A moisturizing
lotion is applied after the scrub. This
treatment is also ideal to prepare the skin
for other essential body treatments like
aromatherapy massage and body wraps.
Moor Mud Back Tension Relief Massage
(90 minutes)
Moor Mud is applied on the back to relieve
back tension and aches. A warm towel is
used to cover the back for 10 to 15 minutes
and a one-hour full body massage follows.
This treatment is best after a hard day’s
work, a long trip or a strenuous exercise.

I
nspired by his recent junket to Spain where he explored the streets of Madrid
and Barcelona to search for both old and new culinary delights, Chef Claude
Tayag, have been wanting to showcase his new discoveries that link Spain and the
Philippines. The Spanish influence is not only apparent in our language, customs and
traditions, but the fusion is well embedded in our culinary history. Thus, Vamos A
Comer, which literally means let’s eat, was born and we’re excited to be working with
Chef Claude for the very first time. It was the launch of The Rockwell Club’s Guest
Chef Series, and a prelude to the bigger event called “Madrid Fusion” where he is also
one of the featured Filipino chefs. Last April 18, foodies and fans of Chef Claude’s
cooking trooped to Palm Grove for a 3-hour degustation of eleven Spanish-inspired
dishes using the best of local ingredients. It was surely a delight to the palate, and we
can’t wait to experience more of Chef Claude’s fusion masterpieces hopefully in the
very near future.
