About T
When asked, “What is tea?” many people think of a hot drink often served
alongside coffee, British „Tea Time‟ or an Asian beverage. But what is tea
exactly? High quality tea is made of the top two leaves and the bud of the
Camellia Sinensis plant. Only beverages that contain this plant can be called
„tea‟. It is the processing of this plant that allows for the different kinds of teas,
which we have come to know and love. White teas, green teas, oolong teas
and black teas are all products of the Camellia Sinensis plant after different
methods of production. As the teas are processed its medicinal character
changes though its flavours and aromas are amplified. There are countless
studies that herald the benefits of drinking tea and still others being conducted
on its many values. The bottom line is simple, tea is an all-natural beverage
that should be a part of a healthy diet.

White T
White teas are light and delicately smooth with the lowest caffeine levels
of its brothers; green, black and oolong teas. Recent studies have shown
that White tea contains more cancer-fighting antioxidants than any other
tea. It has been proven to help impede the spread of cancer, lower
cholesterol and blood pressure, strengthen the immune system, prevent
cavities, reduce stress, and regulate ageing. White tea is also a great
weight loss agent. White tea is a product of the young and unfermented
Camellia Sinensis (tea) plant‟s top two leaves and a bud. It is the least
processed tea, undergoing a rapid drying thereby keeping it as close to its
natural state as possible.

young buds of the green tea leaves. The leaves are plucked
before they even open in the wee hours before dawn in order
to capture them in their most tender state. They are steamed
and dried. Enjoy Pai Mu Tan without milk or sugar in the
afternoon as a healthy digestive or after meals. Pai Mu Tan is
known as a cooling tea as its properties cool down the body
naturally. Recent studies have shown that white tea, especially

Green tea is a light and refreshing beverage originating from China
and spreading throughout Asia. In recent years Green tea has become
well-known in the west due to its lavish flavour and abundant health

Description: Matcha is traditionally a Chinese tea that is now
heralded by the Japanese for use in traditional tea ceremonies.
This smooth tea is very satisfying to the finish. The liquor is a
bright green colour with a thick foamy head. Generally
speaking, the lighter the green tea‟s colour, the sweeter the
flavor. Matcha is the result of ground tea leaves into a fine
powder. When prepared, the powder dissolves completely thus
the drinker consumes the entire leaf and receives the maximum
amount of nutrients. For this reason Matcha is a highly regarded
and considered a sacred tea. Matcha is a perfect
accompaniment with desserts and can be used as an
ingredient in both savory and sweet dishes.

Description: This tea bush is known for growing low to the
ground among peach, plum and apricot trees. The young
leaves absorb the fragrance of the fruit blossoms and are a
highly sought after tea as they have been naturally fragranced.
Only one young leaf and a new bud are plucked and hand
rolled into tiny spirals to lock in Bi Luo Chun‟s unique, clean,

Oolong T
Oolong tea has a flowery sweet aroma combined with a pleasant
aftertaste. This tea will never lose its appeal no matter how often you
drink it. It is believed to increase the body‟s energy, promote
metabolism, reduce and control obesity and regulate aging. Oolong
tea is a product of the semi-fermented Camellia Sinensis (tea) plant‟s
top two leaves and a bud and is a moderately processed tea midway
between green and black teas.

Description: This middle ground tea is a semi-fermented tea as
compared to green tea which is unfermented and black tea

brewing when the liquor is somewhat bitter, but it mellows with

Black tea has a pungent and full-bodied flavour. Well known to the Western
world when taken with milk, Black tea blends easily with fruit or spices to
create a rich and exquisite taste. Due to its preparation process, Black teas
are higher in caffeine than other teas. Interestingly, Chinese Black teas are
often referred to as red tea and are taken without milk. Tea connoisseurs
appreciate Chinese red tea as a beverage with various purifying qualities.
Regular consumption of Chinese red tea can reduce risk of stroke.

Description: This Chinese classic tea was originally made of
compressed leaves that had been formed into bricks, disks or
balls for easy storage. Pu-erh tea is made of steamed green tea
leaves that have been pressed and dried. This tea is well known

ease to digestion, treat diarrhea, indigestion, and high
cholesterol.

Description: Famous for its piney smokey flavour and aroma,
Lapsang Souchong makes a great morning tea to invigorate the
body and stimulate the mind. The leaves are withered over pine
fires and pan fried before being rolled and fermented in barrels.
Much like aromatic wines fermented in oak, this tea has a
distinctly smoky flavor and delivers a rich red colour to the cup.
This tea can be enjoyed on its own or with milk and sugar.
Lapsang Souchong accompanies breakfast foods such as eggs
and bacon, or fried foods wonderfully.

Our decaffeinated teas are processed without chemicals in order to
retain all the depth and flavour of their caffeinated counterparts. We
have two approved methods of decaffeination: the first method is the
“Canadian Chemical Free Co2 Process” whereby the tea is flushed with
Co2 to gently remove caffeine. The second method is the “Natural
Green Leaf Process”. Using the second method the tea is decaffeinated
immediately after plucking. Both methods are all-natural which means
our environmental footprint is small. Great decaf without compromise.

Rooibos (or Red bush tea) is a native of South Africa and is a taste of bliss

Ethical Tea Partnership is headquartered in London England. The ETP
audits tea estates to ensure ethical standards of conduct are being
followed. The ETP monitors 6 areas of production: employment
practices, education policies, health and maturity, safety standards,
housing, and basic human rights. T-Gourmet only buys tea from
estates that solidly demonstrate care for their workers and have an
ethical vision for the future. This creates a sustainable business

important elements in manufacturing tea in today’s trans-global

All of our Naturally Flavoured Black Teas are purchased from
estates monitored by the ETP. We always take our global
responsibilities seriously. Drinking tea is a global pleasure but
behind each cup is a much larger picture – the lives and
livelihoods of millions of people in the developing world. The
ETP ensures that each cup of tea you enjoy has been
produced in a socially responsible manner.
These teas are from high mountain estates. All of these
estates do not use pesticides. Natural fertilizers are used to
improve quality and increase yield which in turn provides
sustainable job security for estate workers. T-Gourmet‟s

Artisan T Ball
FYI
It takes approx 10 min for an artisan to create one
artisanal tea piece by hand. Calculating this time,
an artisan can produce approximately 6 tea
pieces an hour. Many of the artisans are happy to
do this seasonal work in order to augment their
household income. At T Gourmet we believe in fair
compensation for work provided. By purchasing
our Tea balls you are supporting their art and
recompensing their work.
Pu’erh
Pu’erh T – Since 2006 pu’erh has
been all the rage in China. The older
it gets, the more prized it becomes
(much like fine wine). Recently a
rare 1976 vintage fetched more
than $10,000 for 400g (less than a lb).
Pu’erh has long been heralded to
aid in digestion by breaking down
the fat molecules and lowering
cholesterol.

Pai Mu Tan
The best Pai Mu Tan white tea is
grown in the mountains near Fu-Ding
city in northeast Fujian Province,
China. The tea estates are small,
numerous and run as cooperatives
benefitting all.
Freshly plucked spring Pai Mu Tan tea
leaves are gently placed on
bamboo racks and allowed to dry
naturally. Good quality Pai Mu Tan
can be in short supply from time to
time, especially as white tea
becomes better known for its
extraordinary health benefits.
The healthy properties of green tea are largely attributed to polyphenols,
naturally developed chemicals with potent antioxidant properties.
Polyphenols also give green tea its slightly bitter character. In many cases,
the antioxidant effects of polyphenols appear to be greater than those of
vitamin C. green tea also contains alkaloids like caffeine, theobromine,
and theophylline that contribute to its effectiveness as a mild stimulant.

Drink Tea Daily
Drinking 10 Japanese-sized cups of green tea per day may delay the
onset of cancer. (*note: 1 Japanese cup = 120ml or about 4oz). In Japan,
a 10 year study of 8553 men and women who drank at least 10 cups of
tea per day found that they lived significantly longer than those who
drank only 3 cups a day. A subsequent study by noted Hirota Fujiki at
Tikushima Bunri University also found that green tea can act as a cancer
preventative.

In May 2006, researchers at Yale School of Medicine theorized that
the 1.2 liters of green tea consumed daily by many Asians
contributed greatly to the high levels of polyphenols and
antioxidants in their diets. Researchers believed that these
compounds worked to improve cardiovascular health, prevent
blood platelets from sticking together and lower cholesterol levels.
Speaking of cholesterol, the reaearchers also found that green tea
may prevent the oxidation of LDL or “bad” cholesterol, reducing the
buildup of arterial plaque.

Oolong
Regular cups of tea can help speed recovery from stress,
researchers from the University College London said
recently. Men who drank loose leaf black tea 4 times a
day for 6 weeks were found to have lower levels of the
stress hormone cortisol than a control group who drank a
fake tea substitute (Tetley??), the researchers said after a 6
week study of 75 men. The tea drinkers also reported a
greater feeling of relaxation after performing tasks
designed to raise stress levels. It was not known which
ingredients in tea were responsible for the relaxing effects.

substantial weight
loss to the
consumption of
oolong tea.

Rosehip is particularly high in Vitamin C, with about
1700-2000mg per 100g in the dried product. It also
contains vitamins A, D and E, essential fatty acids and
antioxidant flavonoids. Besides being used as a
remedy for rheumatoid arthritis, dizziness and
headaches it is commonly used externally in oil form to
restore firmness to skin by nourishing tissue. – Source:

Breast Cancer
A recent study by the Canadian Cancer Society
found that the consumption of green tea can
significantly reduce the risk of the onset of breast
cancer.
A Health Canada Study, published in
the Journal of Food and Chemical
Toxicology, suggests teas of all kinds
may limit cell mutation linked to
chronic diseases such as cancer.
A 15 year Swedish study of
61,057 women found that
those who drank 2 or more
cups of tea per day had a 46%
lower risk of developing
ovarian cancer compared to
non-tea drinkers.
Weight Loss
Drinking tea may aid in weight loss. In recent years, the anti-obesity and
hypolipidaemic effects of black tea have attracted increasing interest,
although the exact reasons behind the phenomena remain unclear. In a
recent study, researchers found that theaflavins present in tea significantly
reduced lipid accumulation, suppressed fatty acid synthesis and stimulated
fatty acid oxidation, factors that appear to help prevent obesity and related
liver damage.
