Irish Scampi with home made tartar sauce For more local recipes go to www.nigoodfood.com Difficulty: Easy Preparation Time: 5mins Cooking Time: 10mins Servings: 6-8 INGREDIENTS • 1kg Scampi Tails • 100g Self raising flo ur Sto ut • 60ml Murp hy ’s • Water to mix Tartar sauce: • 1 jar of mayonnaise • 60g Capers • 60g gherkins ns • 1/2 small onio • Choppe d parsley • Grate d grind of half a lemon and juice Method Mix self raising flour, Murphy’s stout and water to the consistency of pancake batter. Add scampi and drop in to deep fryer at 190oC for 4 minutes until cooked. For Tartar sauce: Mix all together and put in jar and keep for 4 weeks in the fridge. Serve with grilled lemon and chips.
