Berry Mousse
Ingredients:
1 large egg white
1/2 cup granulated sugar
2 cups chopped prairie fruit
(e.g. strawberries, raspberries, etc.)
Directions:
Place egg white in a medium mixing bowl.
Whisk for 2 minutes until light and foamy.
With an electric mixer, gradually beat in sugar and
berries on medium speed. Increase speed to high
and beat for 15 minutes. Mixture will fill the bowl.
Freeze for at least 4 hours and serve.
