PAGE 2 From the President Jeff Oravitz September marks the end of our summer busy season and the advent of fall. We have concluded our major golf, pool, and tennis activities successfully, albeit with significant challenge from Mother Nature. As conditions fluctuated wildly this summer from abnormally cool and dry to abnormally hot and damp, our club was affected. From the rain Jeff Oravitz impacted Men’s and Couple’s Invitational events to unseasonable pool weather, our activity levels suffered over the summer. The unusual weather further hampered utilization of our dining options, exacerbating the impact on our budgets. The Board of Governors worked very closely with the club staff to mitigate as much impact as possible on our financial results, and as a result we expect only minor negative impacts to our fiscal 2013 which ends on September 30, 2013. Photo courtesy of TheAyers.com We were very pleased to host the Ohio Golf Association Senior Championship at our club in August, an outstanding opportunity to showcase the exceptional layout, condition, and hospitality of The Shawnee Country Club golf course and clubhouse. Feedback from the OGA and participants was overwhelmingly positive on all fronts, and this event was one of significant profitability for the Club. I would like you to join me in welcoming Executive Chef Donald Pressley to our Club. Donald has an extensive background in food and beverage operations around the United States and he will focus on driving improved Membership satisfaction with our culinary offerings and experiences. This topic was extensively mentioned during our survey processes earlier in the spring as an area needing improvement and I am sure Donald will work closely with our kitchen teams and management staff to generate the results we all desire. The Board has continued to work with our architect to identify concepts regarding the Tee Room and Pub, another prominent feedback topic and area of interest from our Membership survey. Professionally prepared renderings of redecoration/layout concepts are being developed at this time and will be shared with the Membership at a special meeting to be held in October. Details of the project, including costs and timing, will be provided during this meeting and the project will be presented for approval. Please enjoy the remainder of our golfing and tennis seasons this month and next, and enjoy the benefits of your membership. I look forward to seeing you at the club soon. The chef is going to continue tempting your palette with his new fall lunch and dinner specials. He is also going to have some specialty nights that you do not want to miss. So call now and make reservations for all the wonderful activities we provide. Speaking of the culinary department I would like to introduce to you our new executive Chef, Donald Pressley. Donald will be on board with us mid-September and we will be having a reception for him late September. Please read on to a letter Donald has sent to me!! Dear Elliot, I have always loved food. Luckily for me I've been able to turn this love of food into a career in cooking and have spent the last 28 years sharing this passion with Member's, friends, co-worker's and students. I began my career at the Biltmore Estate in Asheville NC. This gave me a taste of the industry which was all I needed to realize that I wanted to pursue a culinary career. I enrolled in culinary school and then started my formal training at the famed Watergate Hotel. During my career I've had the privilege of being Executive Sous Chef at the Biltmore Forest Country Club, a recognized Platinum Club. I've been the opening Executive Chef of Salem Glen Country Club and had positions at Greenville Country Club and Concord Country Club, a Troon Golf property. Through my private club experiences I've developed certain criteria in the kitchen by which my Staff and I live by. 1- We should strive to exceed the member's expectations on a daily basis. I want my members to think of their club first when dining out. 2- Using the highest quality ingredients and sourcing local products for the membership. 3- A hamburger is just as important as a 5 course dinner to me and my membership. 4- Consistency through daily training, recipes and plate presentation. The food should look and taste the same way if a member eats 5 times a week or 2 times a month at their club. It is important for me to appear in the dining area and ask the members their input, whether good or bad so that I can tailor menus to the memberships tastes and needs. At the end of the day I just want to be a small part of the overall success of the club. Executive Chef Donald Pressley Continuing on with the culinary department I want to speak to you about some changes we have made this past month as we have continued on without a Chef. The first thing we did is get back to the basics. Starting with the soups!!! I remember the day when I was a waiter and bartender here, members would come in for just the soups. They were proud to bring guests to not only show off their club but to show off the tasty soups we had each and every day. Well wonder no more, we have unlocked the safe and we have found the “old recipes” from our soup man Ervin White who worked here for 17 years doing nothing but making soups and salad dressings. That position has been filled again and the recipes have been flowing. Faith Smith is now our “soup lady” and the compliments over the past few weeks have paid off tremendously!! So the next time you are out and about stop in order a bowl of soup and enjoy. (Don’t forget we can bring any food orders right out to your car if you are in a hurry!!) The second thing we have done this past month is started to make all our desserts in house for Ala Carte. No more frozen pies and cakes, all fresh baked each day. PAGE 5 Elliot Burke (Continued) Last but not least I have completed the license for our Certified Angus Beef License as I will explain below!~! On August 1, 2013 Shawnee Country Club received its official registered license agreement to serve and advertise Certified Angus Beef, a beef brand that has a history that began in Ohio. A singular purchase in a Columbus Ohio IGA in 1978 started it all. Following that one purchase, the Certified Angus Beef Council was formed in conjunction with the Angus Beef Association to ensure consistently high quality beef to a discerning customer base. CAB Brand alone accounts for 2.2 million pounds of beef produced in the United States with an estimated $4 billion dollars in annual sales. All CAB beef is only the highest grades of beef, Select and Prime; only 1 out every 4 Angus cattle meet all the specifications to be Certified Angus Beef. In Ohio alone, as of 2012, there are 5844 registered head of Angus cattle and 7 historic herds (over 50 years maintained by a single family). SCC is the ONLY restaurant in Allen County serving licensed CAB steaks and burgers. Our steaks and hamburgers are all CAB, meaning we are buying the best quality meat from a trusted supplier, ensuring that our membership gets only the best. The licensing process began in March of this year, requiring the purchase and sales of CAB products since then as one of the requirements to obtain the advertising rights, so our Club can say with confidence that we sell some of the best beef in northwest Ohio. Unless you travel to Columbus, you cannot find true CAB steaks in any northwest Ohio restaurants. Closing Day for the Ladies is September 25th and for the Men it is October 5th. We have had a pretty nice year for golf. The golf course was in fantastic shape all year and the participation in almost all events was strong. With the exception of a few days in July when the golf course was closed, activity has been fairly consistent with previous years. Our Major events at SCC continue to be well received. As always, our Men’s Invitational was full. The Men’s League on Wednesday night is full. The Ladies Association continues to thrive with Tuesday morning, Tuesday night, and Wednesday morning golf. Friday Night Twilights have been very busy and are always well attended. As a club, we have a history of hosting some state wide championships every few years. This year we hosted the Ohio Golf Association Senior Amateur. You will be proud to know that our club put on a great golfing experience. Over half of the field made it a point to find me and thank us for our hospitality. It is refreshing to hear so many positive comments about SCC. The comments ranged from how good the conditions of the golf course were, to the quality of the food, to the quality of the service. I really enjoy introducing people to SCC. Most our truly surprised at the total package we have to offer. I look forward to seeing all of you this fall working on your games. Let us hope for a mild fall and some fantastic weather! PAGE From the Greens Superintendent Dennis Medeiros As the summer dwindles down each year I like to look at what turf weaknesses the golf course has and what remedies will improve those weaknesses. The tee project is a good example of a major improvement that not only eliminated many turf problems but added to the overall playability and aesthetics of the golf course. All this and a savings in labor and chemicals of $15,000.00 of which went back into the golf course in tree work and merit increases for key staff that we want to keep around for a while. There was also more labor available to allow detail tasks to be completed more often. Items like trimming the many hills and creek banks were completed more often along with extra weed eradication, debris removal just to name a few. This is all verified by the positive reaction from the membership this year about course conditions. The turf grass industry has advanced overwhelmingly in the past 10 years. New chemistry, equipment and grass varieties have surfaced providing excellent playing conditions at a reasonable cost. After all golf courses are in business to make a profit. New technology has made that possible with good management practices. So where is Shawnee CC in the big picture of technology? Typical of older clubs we are considerably behind the times as far as grass types. Fairways, greens and rough have multiple varieties of grass predominately “poa annua” which is a menace to the turf industry and very costly to maintain. It usually establishes in thinned out areas in the fall months, over winters ,then in the spring seeds profusely insuring survival of the species. It literally will take over an entire golf course in short periods of time. Unfortunately “poa” is a shallow rooted turf that is prone to every environmental stress known to turf grass and if not managed properly will die in the summer. Technology has assisted in its survival but the cost to maintain is considerable and you cannot put a price on quality. The Greens Committee consisting of Scott Koenig, Dave Murphy, Scott Geyer, Kristen Windau, Elliott Burke, Steve Mulcahy and myself have decided to further pursue the conversion of fairways to bentgrass along with collars and approaches to rye grass.. Number 7 fairway, from the road to the pond will be converted to bentgrass. Number 5 collar and approach will be seeded to rye grass. We would like the membership to watch the progress of this conversion and keep an open mind. The golf course will always be playable. Carts will not be allowed on the newly seeded areas but you can play from it. It’s not going to be perfect but very playable. To convert fairways as we are proposing does take a sacrifice from the membership but will be worth it in the long run both in cost savings and quality of the golf course. There will be a presentation at this year’s annual meeting and the topic will be open for discussion. Any questions will be answered at that time. In the mean time take a look at the test areas on 6 and 8 fairway as well as the tees. The “proof is in the pudding.” The first tee will close at 3 pm on Sunday September 29th to begin aeration of greens and fairways . The course will be closed all day Monday the 30th of September to complete the process. The range tees will be open during the aeration process. However, both range tees will be closed beginning October 7th to allow for re-seeding to insure quality practice tees next year. PAGE 18-Hole Sue Cook August 21, 2013 MEGA MEMBER-MEMBER Joan Whittaker and Dianna Breidenbach chaired this year’s Fall Member-Member, aka Mega Member-Member. The event had a new format and it was spectacular! 40 members signed up for the 27 hole event and everyone was asked to pick a partner. There were 5 flights with 4 teams in each flight. At 8:30 all the teams gathered for a shotgun start to play 9 holes on the front nine. The teams met for a second nine at 10:30 to play 9 holes on the back nine and met at 12:30 to again play the front nine. Each team played a BB on the first nine, a scramble on the second nine and alternate shots on the final nine. Wow…What fun! To keep the energy levels high, box lunches were handed out during a brief “rain delay” (how did Joan and Dianna know it was going to rain?!). The day ended with a festive celebration on the deck which included a little more food and drink and the presentation of awards. What a day! A MEGA THANK YOU, LADIES! Members extending privileges to any Guest(s) except as permitted by these rules shall forfeit all rights to extend guest privileges for such as may be fixed by the Board. As a reminder, according to Club By-Laws, Article 1, Section 2 (B) “A membership shall include the member and spouse and all unmarried children under twenty-one (21) years of age, and all unmarried children over twenty-one (21) years of age who are attending college on a full-time basis.
