Method
A chunky, creamy soup with salmon and smoked
haddock, mixed shellfish and potatoes - a hearty
meal
1. Heat the oil in a large saucepan over a
medium heat, then add the onion and bacon.
Cook for 8-10 mins until the onion is soft and the
bacon is cooked. Stir in the flour, then cook for a
further 2 mins.
Ingredients
- 1 tbsp vegetable oil
- 1 large onion, chopped
- 100g streaky bacon, chopped
- 1 tbsp plain flour

- 600ml fish stock, made from 1 fish stock cube

What’s in a Gant?
2. Pour in the fish stock and bring it up to a
gentle simmer. Add the potatoes, cover, then
simmer for 10-12 mins until the potatoes are
cooked through.
3. Add the mace, cayenne pepper and some
seasoning, then stir in the milk.
4. Tip the fish pie mix into the pan, gently
simmer for 4 mins. Add the cream and shellfish,
then simmer for 1 min more. Check the
seasoning. Sprinkle with the parsley and serve
with some crusty bread.

Co-op food for thought
Co-op Brings Essex Producers Get
Together at Cressing Temple Food Event
Chelmsford Star Co-operative recently attended
the Essex Festival of Food and Drink held on 18th
and 19th July at the Cressing Temple, with its
own marquee called the “Only Way is Local”
which showcased 20 of its local food and drink
suppliers.
Over 8000 foodies came out in the sunshine to
enjoy a whole host of food and drink related
merchandise as well as see TV super Chefs
James Martin from Saturday Kitchen and John
Torode from Master Chef.
The Society currently stocks over 45 Essex
producers across its 40 convenience food stores
which are located between Braintree and
Southend. Those that took a stand in the
marquee sampled and sold ice cream, frozen
yogurt, cakes, popcorn, beer, jams and honey,
sausages and pies, crisps, sauces and oils and
smoothies and exotic drinks.
This is the second year the Society has been
involved at the festival and Head of Marketing,
Vanessa Howard commented;
“The event was a great opportunity for us to bring
the wonderful array of food and drink producers
from Essex all together under one roof. We even
put a hamper together so that the TV chefs could
take away a sample of the great tastes of the
region.”
Throughout the weekend the marquee was
absolutely buzzing and all suppliers enjoyed
record sales with many practically selling out.
Brentwood Breweries summed up the event;
“We had an amazing weekend! Great people,
great event, thanks for having us.”
It wasn’t just food celebrities that came to the
event, Essex media personality, bodybuilder and
occasional glamour model Jodie Marsh, also
popped into the Essex food marquee to see what
was on offer.

BRIEF HISTORY OF THE COLNE
VALLEY & HALSTEAD RAILWAY
Just imagine being able to jump on a
little electric shuttle and pop to
Colchester, Sudbury, or Chelmsford. With
a bit of forethought this could have
been achieved, relieving the roads,
helping the environment and making use
of the cuttings that existed.
An Act of Parliament of 30th June 1856
authorised the Colne Valley and Halstead
Railway to build a line from the Eastern
Counties Railway at Chappel & Wakes
Colne to Halstead. The company found it
difficult to raise the required capital and
it was a further two years before
construction started.
Before the line could be completed,
there was a dispute with the Eastern
Counties Railway about the siting of the
junction at Chappel. At one point the CV
& HR threatened to build their own
station close to the Eastern Counties
station. The dispute was resolved and
the six mile line opened on 16th April
1860
By the time the line opened the
company had obtained powers for a 13
mile extension to Haverhill and work
started on 19th June 1860. The extension
was opened in stages, to Sible and
Castle Hedingham on 1st July 1861, to
Yeldham on 26th May 1862 and finally
to Haverhill on 10th May 1863. An
additional station at Birdbrook was
added in 1863.
With the formation of the Great Eastern
Railway in 1862 the CV&HR retained its
independence. In 1865 the GER opened
a line from Sudbury to Cambridge via
Haverhill where a connecting spur to the
CV & HR was built.
From its opening, the CV&HR was in
financial difficulties which were made
worse when the local press mounted a
campaign against the railway company.
A receiver was appointed in 1874 and
under his control new capital was raised
which allowed the company to purchase
three locomotives in 1876. Up until that
date all rolling stock had been privately
owned. By the turn of the century the
CV & HR was enjoying its first and last
period of prosperity.
Although close relations were
maintained with the GER the CV & HR
remained completely independent, until
it became part of the London and North
Eastern Railway in at the 1923.
Most CV & HR trains had been using the
Great Eastern station as connections
were usually required with Stour Valley
trains. The old terminus had been
relegated to a goods station with
occasional passenger trains before
amalgamation with the LNER made it
redundant. The station became the first
casualty was the terminus at Haverhill
lost its passenger service on 14th July
1924 It remained in use as a goods
station until 19th April 1965 and as a
goods station it was renamed Haverhill
South on 1st February 1925.
As with many rural lines, the popularity
of the motor car hastened the decline of
the CV & HR after WW2 and the
passenger service was eventually
withdrawn on 30 December 1961. Freight
traffic lasted until 19th April 1965 and
the track was lifted the following year.

This was not the end of the line
however. In 1973 two railway enthusiasts
put forward a proposal to rebuild a
short section of the railway to operate a
steam service as a tourist attraction.
After several planning applications
permission was granted to relay one
mile of the line west of Castle
Hedingham. The first steam locomotive
came back to the line in August 1973
and the following year the Colne Valley
Railway Preservation Society was
formed. Track laying began the same
year and a new station, Castle
Hedingham was built. At that time the
original Sible and Castle Hedingham
station was derelict and awaiting
demolition. The owners agreed to
donate the building to the Society on
the condition that it was dismantled and
cleared from the site within six weeks.
The building was dismantled brick by
brick and it took a further two years to
rebuild, but externally it appears exactly
as it did when first built in 1861.
Wouldn’t it be great to have a cheap
local subsidised rail shuttle service
helping to relieve the inevitable gridlock
on the roads in the next 20 years or so.

The King’s visit to Halstead
What’s in a Gant?
Following the naming in July
2011 of six gants and streets in
Braintree town centre, a further
two gants were added on 17
February 2012 with the blessing
of Braintree District Council.
They are both to be found off
Little Square and, although the
gants are ancient, they have
never been named. 'Osborn's
Gant' commemorates the family
leather business that operated
throughout the 20th century, and
'Pig's Head in the Pottage Pot
Gant' records an ancient inn of
that name. The latter invariably
causes incredulity when
mentioned on town history walks
and talks, hence its choice.
Coggeshall Road was named to
commemorate the nearby, but
recently closed, public house.
The term 'gant' is unique to
Braintree and derives from the
Flemish word 'gang' meaning
alley. Flemish weavers brought
their skills to the area in the early
14th Century.
On 8 August 2012 Market Street
signs were replaced to show
more of the street's ancient

Remember Halstead
During the War?
Halstead 21st Century Group is trying
to create a timeline of events in
Halstead that happened during the
war and they are looking for people to
contribute their own memories.
The group is looking to hear from
anyone with information about local
industries, local personalities, Churchill’s
secret Army in station, evacuees, those
who cared for evacuees, the AngloAmerican Club, the town's links with RAF
and USAAF airfields, schooldays, the
allotments, the bombs that fell in the
area, the ARP wardens, the POW camp
and the Courtaulds’ air raid shelters.
Stories, pictures and other snippets of
information will be shared on Twitter
and Facebook.
Some local people have made audio
recordings of their stories which will be
held by Essex Record Office, Halstead
Heritage Museum and Braintree District
Museum. Ninety-five year old Muriel
Constable was the most recent to talk
about her working life as a weaver of
parachute silk during WW2. The stories
of four Halstead residents are featured
in the current WW2 exhibition at
Braintree Museum which runs until 12th
September.

Halstead 21st Century Group is keen to
raise awareness of the town’s built
heritage and have special concerns

Street. Built by Courtaulds for their
workforce during WW2, the group of 16
is particularly large and very rare. They
are the only Courtaulds’ shelters not to
have been demolished in this and are
among scores of structures to be
considered for a list of local heritage
assets under a Braintree District Council
scheme launched on 19th August.
Under another scheme, Braintree
District Council could permit that
destruction of up to 15 of the 16 WW2
air raid shelters. The Local Plan, which
sets out long term planning and
development policies for the district, is
set to be adopted next summer and it
is important that local people have
their say before it’s too late.

The incredible Lawnmower Racing Championships are to be
held at Blake House Craft Centre as a charity fundraising event
on 12th - 13th September in aid of the Essex Air Ambulance,
with gates opening at 10am and racing 1pm - 5pm.
While most people are content to use their lawnmowers to cut
grass, a small band of adrenalin junkies are preparing their
machines for something far more exciting – lawnmower
racing! How fast can a lawnmower go? Come and find out,
watch and learn more about this fantastic sport as these
expert drivers race around the track at top speed for the Essex
heats of this spectacular annual event put on by the BLMRA
(British Lawnmower Racing Association).
With lots more for the kids to do and a variety of side stalls
and a barbecue, there’s great fun to be had for the whole
family. We will once again be supporting the Essex Air
Ambulance with all proceeds from the event being donated
towards their lifesaving work in the area. So for great family
entertainment, mud and madness, come and visit for this

September Garden Jobs
There's always something to be doing in
the garden, whether it's pruning, tidying
or sowing, so we've put together our top
gardening tasks for September.
In the flower garden
• Continue to feed and dead-head your
hanging baskets and container plants they will often keep going until the first
frosts.
• Try autumn-sowing hardy annuals for
bigger plants next year.
• Start to divide herbaceous perennials
as the weather cools. Make sure you
water in the new divisions well.
• Fill gaps in borders with autumn
flowering plants such as sedum and
chrysanthemum to extend the colour to
the end of the season.
• Plant hyacinth and amaryllis bulbs for
forcing, to ensure a crowd of colourful
blooms at Christmas. Perfect for a home
made Christmas present!
• Plant spring-flowering bulbs such as
daffodils, crocus and hyacinths now.
• Plant out any biennial plants sown
earlier in the year, or if you didn't have
time you can buy plants now. This
includes foxgloves, wallflowers and
Violas.
• September is a good time to plant new
perennials as the soil is still warm but

• With wetter weather arriving this
month, it's the ideal time to order trees
and shrubs. They will grow vigorously
next spring if planted this autumn.
• Keep deadheading annuals and
perennials to extend their performance.
• Keep dead-heading your Penstemons,
Dahlias and Roses to prolong flowering.
• Prune any late-summer flowering shrubs
such as the rock rose (Helianthemum).
• Prune climbing roses and rambling
roses once they've finished flowering
(unless they are repeat-flowering, in
which case leave them).
• Keep your Camellias and
Rhododendrons well watered at this time
of year to ensure that next year's buds
develop well.
In the vegetable garden
• Keep harvesting crops. If you have a
glut of fruit and veg try freezing, drying,
pickling, and storing so that you can
benefit from them later on. Take a look

• It's important to pinch out your cordon
tomato plants now if you haven't already
done so. This will concentrate the plant's

Classic Album Review
East Side Story - Squeeze
Difford founded Squeeze in 1974 along with lead
singer and multi-instrumentalist Glenn Tilbrook.The
group was named after The Velvet Underground’s oftderided 1973 album and found moderate success in
the London suburbs in the mid 1970s. After signing
with A&M Records, the band released a self-titled
debut album in 1978, followed by Cool For Cats in
1979 and Argybargy in 1980, each of which were fine
albums but strictly within the confines of the newly
coined “new wave” genre.
East Side Story by Squeeze East Side Story is the
fourth studio album by Squeeze, released in 1981.The
album signified a break with the band’s traditional “new
wave” sound towards more divergent styles and genres
including progressive rock, soul, and psychedelia.The
band originally wanted to do a four-sided “double LP”
with each side using a different producer – Dave
Edmunds, Nick Lowe, Paul McCartney, and Elvis
Costello. In the end, Squeeze released a long 14-song
single LP with Costello co-producing along with Roger
Bechirian. Under Costello’s guidance, the band
produced an album of smart, uptempo pop tunes
which guitarist Chris Difford labled as “suburban short
stories.”
With East Side Story, the band recorded their
masterpiece as they branched out to explore other
facets of their talents. With the variety of genres
explored, the production of Costello, and the fully
developed songwriting of Difford and Tilbrook East
Side Story has the feel of the double-album it was
originally intended to be.

The album begins with “In Quintessence”, an upbeat
song with repetitive phrasing and simultaneous vocals
by Tilbrook and Difford throughout.This is followed by
“Someone Else’s Heart” (not to be confused with
“Someone Else’s Bell” on the second side of the
album), which harkens back to the new-wave-ish sound
with a crisp organ and subdued vocals with fantastic
harmonies.
Later on the album’s first side is the album’s finest
sequence of songs. “Piccadilly” starts with an excellent
piano before settling into a simple, upbeat, three-chord
rock groove with chanting vocals delivered in a linear,
story-telling fashion. “There’s No Tomorrow” contains
a heavy dose of Beatle-esque surrealism with a
dramatic key riff and backwards-masked percussion
along with Costello on backing vocals.The ska
influenced “Heaven” is an excellent song which

contains a great bass line and weird sound effects after
the chanting choruses. Later in the song their is a banjo
section with some weird, vocalized animal sounds.The
side ends with “Woman’s World”, a good pop song
with nice piano note runs, building ascension in the late
verses, and a great key jump later on.
By far the best song on the album, “Tempted” contains
a great thumping bass line by John Bentley under the
subtlely swelling organ by band newcomer Paul
Carrack, who was a member of Squeeze for this one
album. Carrack also sang most of the seductive lyrics
with some cool secondary and background vocals.The
band’s first “hit” in the U.S., “Tempted” has become one
of Squeeze’s most well known songs as it is infectiously
catchy and never seems to grow old. It is quite ironic
that, with short-timer Carrack at the lead, most passive
fans are unaware of the basic sound of the band as
normally led by Tilbrook’s vocals.
Although much weaker than the first, the second side
of the album does contain a few very interesting tracks.
“Is That Love” was the first single released from the
album, while “F-Hole” contains thick strings and an
almost psychedelic approach. “Labelled With Love”
contains a pure country rhythm with calm acoustic
guitar, piano, and rim-shot drums overlayed by some
good guitar later on. It was a song recorded as a semifarce and Tilbrook initially objected to its inclusion on
the album but was convinced by Costello and it
became a minor hit. “Vanity Fair” uses orchestration
much like later-era Beatles albums with no rock
instrumentation, just vocals, while the album concludes
with “Messed Around”, a rockabilly song much like the
Stray Cats, that would be more convincing without the
vocals of Tilbrook.
After a fifth album was released in 1982, Squeeze
took a break for a while before reforming later in the
decade. Although they continued to record
interesting music, the band would not again reach the
heights of East Side Story.

are we really eating?
Doughnuts aren’t the only problem. The
list of terrible things we mindlessly ingest
in the name of nourishment is long. But
just what are these dietary culprits
comprised of? What makes them so
toxic? And, most importantly, what are
they doing to us?

frighten people into eradicating all
processed foods from their diets, but
simply to shed light on some of the
dangerous ingredients we may be
unknowingly ingesting, and the way in
which we might be depriving ourselves
of the most basic nutritional
fundamentals.
Preservatives
Though some artificial food dyes have
been banned because they are believed
to cause cancer, most dyes used today
are of the artificial variety. They are also
linked to allergies, asthmas, and
hyperactivity.
Processed, Junk, and Fake Foods
Processed food is made from real food
that has been put through devitalizing
chemical processes and is infused with
chemicals and preservatives. Beef jerky,
canned tea, jam, hot dogs, and low-fat
yogurt with sugar or aspartame are a
few examples of processed food.
Junk foods contain very little real food.
They’re made of devitalized processed
food, hydrogenated fats, chemicals, and
preservatives, and include anything made
with refined white flour. Canned
breakfast drinks, cold/sugary cereals,
doughnuts, drive-through foods, and
soda are examples of junk foods.
Preservatives are a type of additive used
to help stop food from spoiling.
Nitrates and nitrites are used to preserve
meats such as ham and bacon, but are
known to cause asthma, nausea,
vomiting, and headaches in some
people. In addition to allergic reactions,
the same is true for sulfites (sulfur
dioxide, metabisulfites, and others),
which are commonly used to prevent
fungal spoilage, as well as the browning
of peeled fruits and vegetables.
While antioxidants such as alphacarotene are recommended by health
specialists to prevent premature aging,
some of the antioxidants used as food
preservatives may be unhealthy.
Contained in nearly every processed food
on the market, antioxidants prevent fatty
foods from spoiling when exposed to
oxygen.
BHT (butylated hydroxytoluene) and BHA
(butylated hydroxyanisole) are two of the
most widely used, yet controversial of all
antioxidants. So alarming were the
results of BHT and BHA in animal testing,
that a number of countries have severely
restricted their use.
Sodium nitrite in some foods is capable
of being converted to nitrous acid when
ingested by humans. Testing showed that
nitrous acid caused high rates of cancer,
it is still in use.
Some people have difficulty metabolising
these chemicals, which is thought to
result in health and behavioral problems,
and hyperactivity. They cause allergic
reactions, may also contribute to the
development of tumors and cancer, as

Our ancestors preserved foods naturally,
using salt, fermentation, and sun drying.
Food processing has evolved away from
these simple practices into more
complicated and dubious methods.
Today, nearly six thousand additives and
chemicals are used by food companies to
process our food. Many of them can
have a devastating effect on our health.
It is important to note the fact that
additives and preservatives cannot always
be painted with a negative brush. The
addition of vitamins to bread and milk
has helped to stamp out diseases such as
pellagra and rickets.
Unfortunately, the good intentions that
characterised the processed food industry
during the early days have now deevolved to finding ways to cheaply
