Santa Barbara has a 7-Barrel Brewhouse that allows us to produce approximately 1,000 barrels of beer a year. Where does all of Fig’s packaged beer come from? All of our bottled and canned beers are produced in our Buellton brewery and packaged by our cellar team. They also package our kegged beer for taprooms and retailers. Any time you buy beer from a retailer it comes directly from our main production brewery in Buellton. Is all of the beer served here made here? We mainly produce specialty beers in our Santa Barbara brewery, along with select core beers, and occasionally have specialty beers on tap from one of our other breweries. Our year round beers come from our main production brewery in Buellton. We mill to crack the grain in half so that water can penetrate the endosperm. 2 | MASHING 3 | RECIRCULATION After mashing, the “wort” is run out of the bottom of the mash through a screen and collected in an intermediate vessel called a “grant” and recirculated until it runs clear and glassy. Milled grain is mixed with hot water at a specific temperature to form the “mash”and activates the malt’s natural enzymes that break starches down into smaller, digestible sugars. Welcome to 4 | LAUTERING & SPARGING The wort is strained out of the mash (”lautered”) into the kettle. A hot water spray (”sparge”) on the grain rinses out a maximum amount of extract. 6 | COOLING The settled wort is then cooled to fermentation temperature. 5 | BOILING & WHIRLPOOLING The wort is brought to a boil and hops are added at varying times for bittering, flavor and aroma. The wort is pumped into a circle for clarity. 7 | FERMENTATION Yeast is added to the fermenter where it converts the malt sugars into alcohol and carbon dioxide. 8 | CONDITIONING 9 | FILTRATION Some of our brews are coarsely filtered to remove yeast from solution and produce a bright, brilliantly clear beer. The beer is aged or conditioned for a long period of time to smooth out the edges and develop its complexity. 10 | CARBONATION Carbon dioxide is gently bubbled through the bright beer and absorbed into solution, slowly carbonating the beer. MEET OUR BREWER Kevin Ashford was found inside of a National Bohemian case on the streets of Baltimore Maryland as a child and began his love affair with beer at the earliest of ages. While attending James Madison University in Virginia earning his BA in International Affairs, he discovered craft beer while bartending. Kevin was granted a gift of a new beer at the end of each shift which accelerated his love for beer. After graduating, the economy at the time had taken a dive and opportunities were slim. He reverted back to his abilities as a bartender to tide him over until he was given his chance. A good friend offered him a position brewing beer at Heavy Seas (one of the largest breweries in Maryland). With the glimmer of stainless steel in his eye, he knew his fate was sealed. After brewing award-winning beers in Baltimore for over three years, Kevin was ready for a scene change. The West was calling, and he came ready. Here the mountains meet the sea so we brewed this Kölsch-style beer as the best of both worlds. This crisp, clean ale has notes of fresh cut grass, light to medium body. Paradise Road runs from Highway 154 into the Los Padres National Forest and inspired this Bohemian style lager with its refreshing streams and waterfalls. This golden pilsner derives its character from the delicate balance of European lager yeast and German Noble hops.
