The busy holiday season is upon us so why not
give your Christmas Party a Mexican Twist. Plan
your Christmas fiesta with us and make your

In Mexico, Christmas festivities begin with “Las
Posadas” nine days of candlelight processions
and parties starting December 16th. This is a
celebration that re-enacts the holy family’s
quest for shelter. To celebrate “Las Posadas”

TORTILLA SOUP
In Mexico, soup is enjoyed at any time of the day
or night, including breakfast. Mexican soups are
very popular and there are many recipes that you
can create at home for everyone to enjoy as an
appetizer or lunch. Some of the thicker soups
make a delicious and hearty dinner. Posole
(po-SO-lay) is a wholesome spicy corn soup that is
often served throughout the Christmas holidays in
Mexico.
The best thing about soup, it is easy to make and
always reheats well. This is an easy tomato-tortilla
soup, be sure to make extra, it’s so good people
will want seconds.

Serves 4-6

2 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, chopped
1 glass dry white wine
8 ripe beef tomatoes, seeded and chopped
¼ tsp cayenne pepper
Salt and pepper
Chopped coriander
Diced avocado
Grated white cheddar cheese
Fried Tortillas
Heat oil in a saucepan over high heat. Add onions
and cook until soft, stir in garlic. Add the wine and
cook until reduced by half. Add the tomatoes and
enough water to cover them. Bring to the boil,
then reduce to a simmer for 30 mins. Transfer
soup to a blender and process until smooth.
Return to saucepan, season with cayenne, salt
and pepper and cook for 5 mins. Serve and
garnish with cheese, avocado, coriander and fried
tortillas
In Mexico, Christmas festivities begin with “Las Posadas”
(Shelter), nine consecutive days of candlelight processions and
lively parties starting December 16th. Children gather each
afternoon to re-enact the holy family’s quest for shelter. Children
take part in this procession and stop at designated houses and
request refuge for the night, but are turned away. At the final stop
the pilgrims are told they are welcome to take refuge in a stable.
This is an active way of teaching children the story of the Nativity,
but the main attraction is the merrymaking that follows.
Holiday festivities culminate on Noche Buena (Christmas Eve)
with the celebration of late-night “Misa de Gallo” (Rooster’s
Mass). Afterwards families head home for a traditional Christmas
supper. The evening is rounded out with the exchange of gifts,
and children smash open piñatas. As these happy family
gatherings generally last into the wee hours, Christmas Day is a
day of rest.

The first chocolate drink is believed to have

years ago and chocolate became an
essential part of the Aztec culture by 1400
AD. Today hot chocolate is a national drink
in Mexico and at Cortina’s we serve it
traditionally with semi-sweet chocolate,
cinnamon, sugar and whipped cream.
