I guess before I go forward with this amazing (and did I mention simple?) recipe, I should tell you a little more about StarKist®. It’s no secret that I’m trying to get back in shape after the holidays, and on my better-eating plan is, of course, tons of fish. So when I discovered that they had five new flavors in the Tuna & Salmon Creations® line, I immediately hopped in my car and headed to the store to stock up. Once I located these flavorful new pouches (which are easy to open and don’t even require draining) at my local store, my mind started racing about turning these StarKist® flavors into lunches I could get excited about. After thinking about what made sense for me when it comes to lunchtime, I decided that the Tuna Creations® Hot Buffalo Style Pouch was the perfect ingredient for an easy, finger-food lunch. I just knew it would be perfect to make into delicious Buffalo Tuna Cups. What You Will Need: (Makes 9 Buffalo Tuna Cups) 3 Pouches of Tuna Creations® Hot Buffalo Style 18 Wonton Wrappers 1 Teaspoon Olive Oil Shredded Lettuce 1 Tablespoon Crumbled Blue Cheese Diced Onions (for Garnish) How to Make It: While the thing I love about StarKist Creations™ Pouches is that I can eat them on the go (yup, I’ve been caught eating out of one with a fork in the car pick-up line), sometimes I just feel like making something a little fancier. And since my Buffalo Tuna Cups are perfect for grabbing and eating without having a sitdown meal (because who has time for that?), they are a great weekday lunch for when things are crazy! To make them, I simply line my cupcake tins with wonton wrappers, using two per cup and overlapping them to create the shape of a cup. Next, I brush olive oil onto each cup to ensure they are crispy and delicious. Into the oven my wonton wrapper cups go for eight minutes at 375 degrees… just long enough for the upper part to turn golden brown and the bottoms of the cup to cook into the shape I want them. As soon as they are done cooking, I remove them from the oven, place them on a plate and fill each one half full with shredded lettuce. Then, I empty my easy-to-open pouches of tuna into a bowl. There is no mess to this step and from the moment the pouches are ripped open, the aroma starts to whet my appetite. Next, I simply spoon a heaping teaspoon from my StarKist Tuna Creations® Hot Buffalo Style Pouches into each cup. After sprinkling a small amount of blue cheese and some green onions onto the top of the tuna, I’ve got a lunch that is simple while still being simply delicious! As far as the flavor is concerned, I’ll tell you there is nothing boring about this lunch! With just the right amount of heat from the Tuna Creations® Hot Buffalo Style Pouch, crunch from the wonton wrapper cups and coolness from the blue cheese and onions, each and every bite is a perfectly combined fiesta of flavors in my mouth.
