A Note From Your Director
There is no “summertime, and the living is easy” around here this summer. We
PAGE are busier than ever, and your whole staff is loving every minute of it. I know you
are going to be excited to read about everything we’ve got going on in June, like

outdoor dining, horse races, festivals, Benny Goodman music, our new Active

Minds programming, a tea, the Baby Shower, and even a behind-the-scenes glimpse

at what happens after you cast your ballot in Douglas County. It all makes me wish

I was retired so I could join you in all the fun.

Besides the activity programming, there are some other awesome things I wish
8
to let you know about. We are celebrating our 45th Anniversary with an event on
9
June 16th (see below). I am honored to know that I have played a role in the legacy
10-11 of the Castle Rock Senior Activity Center, and look forward to many more years of
12-13 our organization serving seniors. I give a special shout out to all of you for 45 years
of memories. I look forward to reading your poems (see page 14).

We welcome a new member to the Executive Board. Jim Johnson was

appointed to fill the open 2nd Vice President position. He is already being kept
16
busy on our Golf Tournament Committee, which is hard at work soliciting sponsors
17
and players for our very exclusive event at the Air Force Academy on September
18
1st. If you golf, or know anyone who does, this is a tournament not to be missed,
because of the location. And, you know it’s for a good cause - seniors! Please help

us spread the word. Thank you to our enthusiastic committee.

The Events Division of The Town of Castle Rock has offered the Senior Center
the chance to partner with them in providing ushers for their concerts this
summer at the new Philip S. Miller Park Amphitheater.
While we didn’t do this in time for the opening concert in May, you can choose
to usher at any or all of the following concerts: June 11 - Fab Four will be
singing beloved Beatles songs in this dynamic production; July 30 - The
Colorado Symphony will perform “Brass Luminescence, A Celebration of
Light;” August 27 - Marshall Tucker will perform decades of hits; and
September 24 - Starship with Mickey Thomas will round out this series with
such well known hits as “Sara” and “We built this City.” These are evening
shows, beginning at 7:00 PM. What a great opportunity this is, and because
it’s not reserved seating, the job is quite easy, with great perks.

Volunteer of the Month
June Volunteer: Christie Einspahr
We raise funds at our annual Craft Show, but that’s not all - we also grow our
organization and find future Volunteers of the Month. Our June Volunteer of the
Month, Christie Einspahr, had recently retired and was admiring Thelma Minney’s
crocheting at the Craft Show in 2014. At one time her aunt taught her to crochet, but
she had put it aside while working as an educator and raising children as a single mom.
Realizing that Christie wanted to take up the creative hobby again, Thelma invited her
to the Crochet and Knit group at the Castle Rock Senior Center, and the rest is history.
Christie came to a meeting and they patiently and lovingly taught her their skills. She
said she loved it. Little by little she started helping out the group’s leader, Sharon
Bruen, by organizing yarn and patterns; last year she took on a co-chairperson role with
Sharon. She loves encouraging the ladies and helping them with new ideas to try,
admitting that she is at no where near the level of expertise as many of them. The
group has now expanded to meet twice a week, on Wednesdays and Fridays, and they
are excited about the Baby Shower they are hosting this month for Denver Health
“Newborns in Need.”
Christie considers herself an ambassador for the Crochet and Knit group, as she’s out in the community involved in other crochet
and meet-up groups. Many of the members of those organizations have donated yarn, as well as completed projects, to the
Center for both the Baby Shower and the Craft Show. She enjoyed volunteering at the recent Senior Life Expo and is looking
forward to her group’s involvement in the upcoming events. Christie also volunteers as a proofreader for the newsletter and
enjoys going on trips with the Center, as well as participating in the Creative Writing Group.
When she’s not volunteering here, Christie enjoys writing poetry, traveling, and being outdoors in our beautiful state. She is
quite a musician and still teaches piano lessons, along with being a tutor to students. She plays the piano, guitar and violin.
Christie was born and raised in Hastings, Nebraska, graduating from college with degrees in English and German education. She
moved to Colorado in 1979 and spent 33 years teaching and in school administration in Englewood, Elizabeth, Cherry Creek and
Jefferson County before retiring. She bought a ranch-style home in Castle Rock in 2014.
She has two children: her daughter lives in San Francisco and is a financial planner; her son lives in Centennial and has a career
in marketing and web design with Furniture Row. They have both married and Christie hopes for grandchildren someday. That
hope was our good fortune, because she wanted to learn to crochet before the grandchildren came along! Thank you, Christie,
for all you do for the Castle Rock Senior Activity Center.

I think we all know that to get the most

eat, it's important to eat a variety of different
foods. With the start of summer, I am only
going to focus on fruits, as they are starting to
become readily available. With many fresh fruits available in the store, the last thing
you want to happen is have them spoil because you had too many to eat. When
shopping, think about what will have the shortest shelf life - I think that is probably
melons. Once you cut them, you only have a couple days to eat them. Having
trouble taking enough fluids in? Try eating watermelon.
Berries are a great addition for fiber and vitamins to yogurt, cereal, or even on their own. If you have more berries than you can eat,
place them on a cookie sheet in your freezer so they freeze individually, then place in a plastic bag in the freezer to help yourself to a
portion when you want. We usually have apples, as they keep for quite awhile, but bananas often do not.
Frozen, no sugar added, fruit is a great way to satisfy your fruit yearnings if you don't get to the store very often. Just thaw and eat or
throw in the blender with some yogurt and non-fat milk for a smoothie for lunch.
Actually, one of my favorite garden "fruits" is really a vegetable, high in fiber, which grows in my garden and can be frozen. The only
problem is that it's not a item you eat by itself, so it is usually baked with other ingredients so ends up being not as healthy. I often use
sugar substitutes when baking, which helps - and I try not to bake with it often. When I was child, we used to get a glass with sugar, go
pick it, dip and eat. OK - my 16 year old still loves to do that because she has heard this story from my childhood many times. Those of
you from the Midwest probably know what I am talking about - rhubarb.
I admit the reason I probably like rhubarb so much is because of my childhood memories, and we know that food and emotions can have
a strong connection. My parents moved into their home in 1951, and there was (and still is) a huge rhubarb patch that is at least 60 years
old. Last spring I brought some small plants back to Colorado and planted
them next to my Colorado native plants. The Wisconsin plants are used to
a colder climate, so for the last two years they have already been twice as
large in April as my native plants. The plants are, like many of us, hardy
Midwesterners. While I can't count rhubarb towards my fruit intake, it
counts towards my vegetable.
Whatever your fancy, take advantage of the fresh fruits coming into
season, all full of vitamins, nutrients and fiber. Seniors should have 1-1/2
to 2 cups of fruit a day. They do great work in your body to improve your
health in more ways than one!

LaPerriere will speak about “Weather
and WWII.” He will bring a copy of
the actual weather map that British
meteorologist James Stagg used to
assure Gen. Eisenhower that the
D-Day landing could be made on
June 6, 1944. Fred also has a collection of WWII vehicles,
including a WWII mobile weather station. He will bring along
several meteorological instruments that are part of the weather
station, including an anemometer, barometer, range gauge, and
searchlights used to calculate cloud ceiling.

This month’s hike on the 5 mile Dawson Butte Trail, a Douglas
County Open Space Trail, travels through mostly forested areas
with some open meadows and views of the Front Range
Mountains. The loop trail follows gently rolling terrain with
only about a 200 foot elevation gain. Elk, bear, mountain lion
and many other species call this land home. Wear comfortable
walking shoes, bring plenty of water, a snack and sunscreen.
Make thoughtful personalized greeting cards! All materials
will be provided. You will make 5 different cards and have
access to materials to make more of your own design. Class
size is limited so make sure you sign up.

People come from around the country to golf at Arrowhead because of the
incredible views of Colorado’s famous red rocks. The “On the Rocks Bar and
Grill” takes advantage of those great views, as you sit on the patio taking it all in
while enjoying lunch. We are limited to 20 people for the beautiful terrace views,
but we will take another trip if more people want to go, as it’s worth it. If the
weather doesn’t cooperate, you’ll be seated inside the glass-walled restaurant.

We tried once to go to Denver’s best and biggest Asian market, but they were
shut down for Chinese New Year. The second time will be a charm. With foods
from all over Asia, it will be a culinary delight. We’re not stopping for a meal, but

witness the efficiency, integrity, and effectiveness of the elections process. You

The locally owned and operated Pegasus Restaurant has a long
tradition of excellent Greek, Mexican and American food, but note
that now they are only open for breakfast and lunch. Take the flyer on page 6,
pick one up at the Center or print from our website, and go eat there for breakfast
or lunch. Order whatever you want, give your server the flyer when you pay for
your meal, and a portion of your bill will be donated back to the Senior Center.

We are providing transportation to the very unique Colorado Renaissance
Festival in Larkspur, as many of you have asked to go. Your Activity Fee is only
for transportation; you will pay for your own ticket. They are $22 at the gate,
$19 if you buy ahead at King Soopers, and $20.50 if you purchase and print
online at www.coloradorenaissance.com/tickets/. Your ticket includes entrance
into the entertainment stages. There are shops and many food vendors
throughout the park (cash only for food and beverages which you will purchase
on your own). Note that it is open rain/shine and is outdoors, so dress for the
weather. We will board the bus to return at 2:00 PM.

of sandwiches, burgers or pizza. They strive to use locally grown food items

TRIP - McAllister House Tour & Tea in Colorado Springs

Deadline to pay is June 15th - no refunds/credits
Besides a tour of this historic Colorado Springs home of one of the city
founders, you will have a tea luncheon which includes small sandwiches, fruit,
cake, coffee, tea or lemonade served “in the Victorian manner” in the tea room
of the house. The lunch is included in your Activity Fee, along with the tour and
the transportation. Please note that this is an historic home with stairs and no
elevator. We must pay in full in advance, and there are no refunds - the
deadline to pay is June 15th or when we reach the 15 person limit.

This is a place for the more “high-stakes” bingo where big wins are possible and the

In this concert, Paul Cosentino and the Boilermaker Jazz Band will bring the
energy and delicate swing of Benny Goodman’s small bands to you, performing

Goodman Big Band melodies, done small band style, along with female
vocals. Before the show you’ll enjoy lunch with your choice of entrée. Your
meal, beverages and gratuity are included in your Activity Fee, along with your
trip to Boulder. Alcohol and desserts can be purchased.
TRIP - Horse Racing at Arapahoe Park
Saturday, June 4 11:00 AM $7 ($13 non-members)
Did you know there is horse racing right in our backyard? The track only
operates a few months a year, so we go each month it’s open. The Activity Fee
only covers transportation. You’ll be on your own to pay the $1 senior general
admission and the $10 clubhouse admission if you want to sit inside at a table,
along with any betting (cash only) or food you choose to buy. Races start at 1:00
PM and we stay for all of them (it’s over between 4:30-5:00 PM).

The dream came true with planning and fun
At the Blue Flame Room on Wilcox Street.
Each month more came to pay
Their respects around a table of vittles.
Thus, starting the tradition of potluck day,
Rain or shine from the ladies’ kettles.
Many years have passed, many changes,
We have moved three times, ‘tis true,
To have more space for our senior parade,
Membership now over four hundred and two.
We work, we play, take trips near and far,
Go to doctors, dentists or errands in the shuttle car.
Pool games, card games, bowling and such,
Theater, stage plays, out to lunch – go Dutch.
Walkers, talkers, mall crawlers, some dances,
Bus rides to casinos where we gamble, take chances.
Sessions on possessions, seminars and meetings
On the future of our Center at the board member seatings.
Noonday nutrition, health clinic, even pedicures,
Exercises, massages, beauty treatment and manicures.
There is softball, bingo, in-house movies with popcorn,
Reading or just visiting, new ideas are born.
Help with taxes, art classes, craft classes, and more.
Watch over each other whether rich or poor.
There is everyday living but needless to say
We still get together on potluck day.

Seasons come and go; you wish the snow would end and
spring would show up, and suddenly it’s already summer.
With our big snow storms in April, I am wondering what
ever happened to April showers bring May flowers?
Seasons, like life, do what they want to do whenever they
want to do it! Let us all have a wonderful summer season,
living each day to the fullest.
I want to thank all the library volunteers for doing a great job
keeping the library looking nice and keeping it running well.
Before they know it, we will be preparing for our big book
sale at the Craft Show. Please know that we always take
donations of books; we rotate them into our system so there
will be a great variety of books from which to choose...books
for the youngest to the oldest of seniors.
One of our volunteers, Mary Ann Rhoads, passed away this
year. Another long time member, Frankie Valdez, who for
years volunteered on our Activities Committee, also recently
passed away. Both of these ladies leave big shoes to fill in
volunteering and friendship.

More and more people are playing pickleball and that’s
great. We are now at our outdoor courts at Founder’s Park
for the summer. Open round-robin play will be on
Tuesdays and Thursdays at 8:00 AM. The courts are
available for members to play at other times - keys are
checked in and out at the front desk at the Senior Center.
Only members may check out keys; these courts are made
available through an agreement with the Town of Castle
Rock as a member benefit. Maps and pickleball information
is available at the front desk. Join the pickleball phenomena
and get yourself moving.
April was a bad
month for softball
with all the snow,
but hopefully by
June we will be
done with snow.
Home games are
played in the
mornings at
Metzler Park,
which is just south
of Wal-Mart, off Front Street. Stop by and cheer on our guys
and gals. The 70+ team, Castle Rocks, plays at home on
some Mondays. The Castle Rockies play away games early
in the month of June on Wednesdays. The Castle Rockers
are at their home field Wednesdays June 1 and 8.
All those snows meant the golf league
start got delayed, but all that moisture
sure makes for a gorgeous golf course.
The league plays Tuesday mornings at
Red Hawk Ridge, with both 9 and 18
hole divisions. If you’d like to sign up
as a sub, call the golf coordinators
listed below.
The warmer months mean it’s time to get out and enjoy the
weather - join the groups playing tennis.

Sports Coordinator, and Jim Johnson (right), who has taken on
the 2nd Vice President role on our Board of Directors. Both of
them were unanimously appointed by the Board.
Elaine Weaver, who took up painting
and drawing here in our art classes a
number of years ago, is now a
featured artist at a gallery show in
Denver. It’s the “International Art and
Photography” show at The Art of Life
Gallery. She will be at the show to
visit with guests about her Asian art
from 10am-2pm on June 4 and 18,
and on July 2. Refreshments will be
served. The gallery is at 800 S. Jason
Street in Denver.
Mary Orem was the lucky winner of our door
prize basket of symphony tickets, a hotel stay
& selection of wine we gave away at the
Senior Life Expo
Irene Henning was the winner of the
Dining-to-Donate contest in April at Chili’s.
Each month we draw one winner from those
who turn in a form at the restaurant.

The Senior Life Expo was a big success,
with 500+ seniors, their families, senior
advocate booths & sponsors filling the
Events Center - gathering and giving
information. Our Senior Center booths
were busy and many people found out
about our Center at the event - welcome to
those who joined and thanks to all the
wonderful volunteers.
