Lee Westwood scores a
world first by lending his
name to the colt and filly
courses at close house
When you’re one of the best golfers in the
world, you’ve just moved to Florida and you’re
at the top of your game, clearly you have your
pick of the world’s greatest golf resorts with
which to associate yourself.
So the fact that Lee Westwood chooses
to be the attached tour professional for Close
House, having renewed his contract for a
further three years at the beginning of 2013,
and lent his name to the two Close House
courses, is testament, were any needed, to the
quality of this place.

Players of Westwood’s stature don’t have
to sign contracts simply for monetary reward;
they are so in demand they have the freedom
to be discerning in their choices, which is what
makes Westwood’s association with Close
House so spectacular.
And the fact that he has chosen to extend
that association, signing a new, three-year
contract as the attached tour pro in early
2013 and lending his name for the first time
to the newly named Lee Westwood Colt and
Lee Westwood Filly courses, says much about
his love of this place. “I’m delighted to be the
Close House attached pro,” says Westwood.
“This is a perfect members’ course and it has
the capability to stage a major tournament in
years to come. The Colt is new, yet it is in great
condition. I always look forward to playing the
Close House courses again.”
And play it again this year, he will, with four
visits scheduled during the season to play in
events and to oversee the new Lee Westwood
Scholarship and the Lee Westwood Academy
for young players.
Westwood has a deeply valued association
with Close House. He genuinely enjoys being
here, and he fits in with everyone at members’
events and dinners, where he enjoys himself
as much as everyone else. He has made many
friends among the members and regulars like
Alan Shearer, Graham Wylie, Ant and Dec,
who turn out time and again for Close House
charity days because they love this place, just
as Westwood does.
And Westwood represents the North East
all over the world, wearing the Close House
logo on his cap at every event, where there
is also an announcement at every tee of his
relationship with the venue. Who in the North
East isn’t proud of that?
He’s also a regular visitor, often landing on
the lawn in his black helicopter, and he is also
now blogging on the Close House website,

allowing us all an insight into his world of
elite sport.
He is well prepared for the 2013 season,
says Westwood, his move to Florida ensuring
year-round practice, so there’s none of the
‘rust’ as he calls it, generally felt at the start of
the season.
“When I lived in England, I would go home
and pack the clubs away at the end of the
season, but this year I was out in the sunshine
and practising hard,” he says. “I went into the
first tournament feeling that my short game,
especially my putting, was sharp.
“I made my 2013 PGA Tour debut at the
AT & T Pebble Beach National Pro-Am, where
I was partnered by my Dad, which made the
week even more special. Pebble Beach was
the icing on the cake. If there was a bucket list
of golf courses, then it would definitely be one
of them. Now, it feels good to be back in the
routine of playing regularly.”
As we went to print, the 39-year-old
winner of 22 European Tour titles and leading
European money winner in 2000 and 2009
was heading to more tournaments and looking
forward to a great 2013.

The Lee Westwood Colt
The Lee Westwood Colt tips
its hat to the great English golf
architect Harry Colt (Wentworth, St
Georges Hill, Sunningdale) with its
rectangular tees, its bunker forms,
and the variety in par threes.
Within a year of the course
opening in 2011, it was voted one
of the top 100 courses in England.
Course architect Scott Macpherson
says: “The Lee Westwood Colt aims
to produce thrills for every golfer.
Old-English in style, the course
is in tune with the history of the
property, which is why each hole
has a gentle footprint to engage its
natural features.
“There are numerous little
wonders, such as the forest to the
left of the first hole, the old Roman
fort to the left of the 11th, the lake
by the 15th tees, and the ha-ha wall
and Ice Lake on the 18th.
“Variety is the foundation of
golf architecture and every hole
plays in a different direction to the
last. The course doesn’t give up its
secrets easily and it rewards you
for your powers of observation and
willingness to return.”
New improvements on the Lee
Westwood Colt include a pond on
the 18th, a higher competition tee
on the 8th and a tee extension to
the 14th.
The Lee Westwood Filly
The Lee Westwood Filly course
is undergoing a major
re-development for 2013, including
a bunker renovation programme
and work to reconfigure some of
the holes so that the 9th comes
back to the club house. There is a
considerable investment to upgrade
greens and re-model some of
the tees.
The Lee Westwood Filly is a little
shorter than the Lee Westwood Colt,
with more space on some fairways.
It has plenty of variety and challenge
and its parkland layout is renowned
for its beauty. It has 18 USGA
specification greens, is 6,000yds in
length and a par 70 from the medal
tees. The undulating greens test
the putting skills, while accuracy
off the tee is paramount for good
scoring. Having already held PGA
professional events the course
is challenging for all golfers and
perfect for a corporate golf day or a
round with a friend.

Pro golfer Anna Scott
joined Close House in
2012. Anna, an ex-British
Girls Champion, is one of the longest
hitters on the Ladies European Tour and
can drive the ball accurately up to 270
yards. After a break due to injury, she is

to keep adding to her achievements.
David Edwards

margaret mill to a tee
Margaret Mill has had a tiring weekend celebrating
her daughter Victoria’s birthday in Edinburgh, but she
bounces into No.19, fresh as a daisy, no hint of the
rigorous of a tiring weekend.
She is resplendent in a black and pink Golfino
ensemble, purchased in the shop at No.19, where she
is, as she puts it, known as ‘a good customer’. There
are many opportunities to visit the shop because she
plays here up to four times a week; a habit developed
in the year since she retired from her job as a university
accreditation manager. “I worked from home a lot, so
I’d be desperate for the company when golf day came
along,” she says. “When I retired my husband said I
wouldn’t know what to do with myself, but I did; I come
here to play golf, and it’s wonderful.”
Margaret and her husband Andrew moved here
from Edinburgh seven years ago and she immediately
joined a golf club as a means of meeting people. Then,
Andrew won a year’s membership of Close House in
a charity auction and she came here. “I came, I stayed,
and I loved it. Andrew thought I was having far too much
fun and he joined the following year. Before I took up
golf nine years ago, I had been a horsewoman and
thought golf was a bit of a waste of time, but the bug bit
when a friend introduced me to it and I’ve been playing
ever since. When we moved here, it was a wonderful
way of meeting people. We’ve made some great friends.
“The thing I love about this club is that it is as much
about the social side as it is about the golf. In previous
clubs I wouldn’t have dreamt of going to the club for the

midweek steak night, but here it’s about all the
activities, not just the golf.
“Importantly, I don’t have to say I can’t play on
a particular day because it’s just for the men, and
I can play with my husband on a Saturday.”
Margaret and Andrew value the friends they
have here and the fact that it is so relaxed. “Oh,
and we do challenge the staff at times,” she says,
laughing. “You know, ‘oh dear, I’ve lost my car
keys’, that sort of thing.”
She was a member of the ladies team
which brought home the TR Percy Trophy to
Close House for the first time last year; quite
an achievement for a relatively new women’s
section. “And unlike many clubs, there is no
pressure here to participate in the section. I like
the fact that people play as they wish and don’t
feel that pressure.”
Margaret, like all the members, is looking
forward to the development of the Lee
Westwood Filly course and its re-opening in July.
“The improvements are going to be amazing,”
she says, “and I can’t wait to play it. It’s fantastic
having two courses and I do enjoy playing both
because I like the contrasts between them.
“I think the Lee Westwood Colt is probably
the most interesting course in the region. I love
the scenery and the fact that it’s on a hill; I’m a
Scot, so I’m used to going up and down hills. We
bring visiting friends here to play and they enjoy
it; technically it is quite challenging.
“You know, it’s so important to find the right
golf club, and this one is it. We’re so fortunate to
have it. Life here is good.”

There is something about Close House that attracts strong
characters and successful personalities, which is why there
are so many well-known faces from the worlds of sport and
business on the fairways and in No.19.
Paul Holliday, owner of The Diamond Inn, Ponteland, is
one of them and, as he says, there is something about the
pull of this place that makes this a second home. “It’s the
atmosphere of the place, and the pull of David Fulton (past
captain) and Graham Wylie, who have created all of this,” he
says. “The well-known faces you see here every day knew
them before this, which is partly why we came in the first
place; plus the fact that it’s wonderful.”
For Paul, the pull of the golf is in its powers of mental
relaxation. “You could be having the worst day ever, then you
get on the golf course and it’s gone. Golf to me is peace
of mind. It’s also a great place to network. And on a golf
course, there is no pressure; you’re just playing golf, if you
sign a contract at the same time, that’s good, too.”
The Diamond is a highly successful, well-oiled machine,
and a great team behind him allows Paul a little more
time for golf these days. “I love the game. To anybody
that doesn’t play, it’s a mystery, but to me it’s a wonderful
release; four hours of freedom. If you travel and you like
nice hotels and golf, you can always find a 5-star hotel
linked to golf. My friends and I are at the stage that we can
play golf around the world. It’s a lovely thing to do; we go to
Portugal, the US, Dubai and we have a lot of fun and meet
wonderful people. That’s why I love golf; you meet the
best people in the best places in the world, and there is
a group of us who treat this place as home. The social
side is perfect and the courses are spot on. The food is
perfect, the staff are great.”

Diamond, not lease the clientele, which drift from one
to the other – the footballers, Ant and Dec and so forth.
Paul plays off 11, but says he has only played to his
handicap two or three times since the Colt has been
open, which is testament to the challenging nature of
the course. “It’s the greens more than anything, but the
whole course is hard and it’s always a challenge to beat
it. We have the Diamond Classic here, this year on June
1, and we’re changing format from Stableford last year
to Medal, so that’ll be harder again. I’d love to win my
own competition, but I’m not hopeful!
“I’m a fairly consistent driver of a ball, but my weak
link has always been my second shot, either mis-judging
or thinking you’ve nailed the perfect drive and then
walking up to your second and fluffing it. I’ve always
been a steady putter and have had the same putter for
nine years. Sometimes the chipping is a bit off. It’s the
middle of the hole that is a bit of a let-down.
“We’ve all taken a shine to Andy Scrimshaw at the
Academy, and he can see what’s wrong with your game
at a glance. I guess I take it a bit more seriously than I
make out, but it never, ever gets to me. It couldn’t make
me lose my temper.”
Paul enjoys other courses such as Loch Lomond
and Archerfield. Valderama is a favourite, and he loves
to replay his shots mentally when he sees the great
courses on TV. “Westwood is a massive feather in the
cap for the club and he’s fitted in beautifully, which is
brilliant. Playing with people like him shows you how
single minded they are. Having seen him and listened
to him, the management of getting round is the most
important thing; it’s a bit like business.
“Golf is a wonderful release, and a leveller. A
28-handicapper can’t compete with Westwood, but
he can learn from him and play the same course. You
go the week after and the stands are still up; you can
pretend you’re there! I once played St Andrews with
a group and on first tee four buses of Americans and
two of Japanese turned up. They didn’t know we were
and they stopped and watched. We got away with it
brilliantly, with rounds of applause. It was a little taste of
what it might be like to be a real pro…If only!”

for the natural world

Fouad Hassanyeh could, in the nicest possible way, be
regarded as one of the old guard at Close House; a
member since 1985, when it was owned by Newcastle
University and it was a very different proposition.
A relative late-comer to golf (he was 40 when he took
it up), the game has obviously done him good because
his face belies his 67 years. A psychiatrist, he comes to
play in soulful solitude, stripped of the responsibilities of
work, and the game means far more to him than winning.
“I have a great and profound respect for nature and this
place respects the nature in which it is situated, and that
is the primary reason I am here,” he says. “I feel more at
peace here than anywhere else.”
Enjoying an excellent mushroom omelette at No.19,
surveying the Close House landscape, Fouad is the
image of contentment. Inspired by the natural landscape,
he writes poems about it, and his eyes only leave the
spectacular view to allow him to wield knife and fork with
accuracy. So happy is he here, he plays all winter, despite
Raynaud’s disease ravaging his grip. “A few weeks ago I
played in impossible snow, but I still enjoyed it. I lost six
balls, but I walked off saying how wonderful it was!”
He enjoys solitary practice, and plays in competitions
every Sunday. He adds that he has not won a trophy
since 1994, and he credits that to his partner, but it is not
the winning that matters; it is being here, at one with the
natural landscape.
“Of course, golf is a challenge and I like to do my best,

but if it does not work out, okay. As a player, I am
going downhill, so it is fortunate that winning does not
matter to me,” he adds with a broad grin.
His best handicap was 10, but it is now 17, and
Fouad loves to play with anyone, of any age and
handicap. “And a degree of humiliation is good for the
spirit because it keeps you on level ground,” he adds.
He took up golf by accident, he says, and he went
on to become an accidental club captain, having been
invited to be vice-captain out of the blue in 2003 and
taking up the captaincy the following year as Graham
Wylie bought Close House.
“One day, I met Graham here, during the
transitional period between the university’s ownership
and his, and I asked what the membership could
expect. He gave me a wonderful vision for the future,
and what has since transpired has been far greater
than I anticipated.
“All of it is wonderful, and most importantly, the
synthesis of nature and Close House has maintained,
and that inspires me to write about nature. Or
perhaps it is because I am an incorrigible softie.
Either way, it does not matter. It is wonderful!”

Matty and Kat will be the
standard-bearers for our growing
junior section, which is run with
enormous dedication by Karen
Crawford. We’re putting a huge
amount of energy into building up
the junior section and we have high
hopes that these youngsters - many
of them Close House members
and team players of the future - will
benefit from the superb tuition at
the Close House Academy, inspired
by the Lee Westwood Scholarship
players and the man himself.

our mens and ladies league teams
building on their very successful 2012
season, which saw the women win
the TR Percy Trophy and the men
winning the Davison Cup and coming
second in the Hadrian League - huge
achievements for such a young team.
Adults and juniors alike get a
huge boost when members turn out
to support them and I am urging
all members to keep an eye on the
fixtures list and turn out to support
all our teams. Our players always say
what a huge difference it can make to
their performance and more support
could help us bring home more
silverware this season.
The teams are also set to be
among the best turned out in the
UK, thanks to the generosity of Peter
Harrison at Callaway, who,
in a rare move, has agreed to provide
all our kit for 2013.
All our members will also
benefit this year from
improvements which make both
courses more user-friendly.
We have found that progress
around the Lee Westwood Colt
can be slow, so we’re undertaking
improvements, including cutting back
some of the rough and altering the
8th tee box to improve the visibility on
that hole.
The competitions will hopefully
be that bit smoother this year, thanks
to the introduction of dedicated tee
times rather than shotgun starts.
The golf team at Close House
is striving to improve the overall
members’ experience. We appreciate
we still have some way to go before
we are the finished article, but
with the help of Tim Price, my vice
captain, we hope to make this year
a truly memorable experience for all
members at Close House.

There is something in the beauty and precision
of the world’s great golf courses which calms
and mind and the spirit in an almost magical
way, but what of the army which keeps these
courses in immaculate condition, their summer
greens at a flawless 3mm?
Hidden away from the perfectly groomed
Lee Westwood Colt and Lee Westwood Filly
courses at Close House is a green shed about
the size of a football ground. This is where
golf course and estates manager Brian Clark
and his 24-man team are based; the hub from
which men and machine are deployed to preen
the courses which are the pride of this place.
The grass height on tees, fairways and
greens is precisely measured with a digital
gauge, the greens cut daily during the season
to precision measurements to ensure they stay
fast and furiously challenging.
As this magazine went to print, Brian and
his team were witnessing diggers on their
beloved Filly course, where a revamp was
underway in readiness for a big season; the
course’s first with Lee Westwood’s name
attached to it. “It breaks any greenkeeper’s
heart to see diggers on their course,” says
Brian, “but the improvements will be worth
it. We’re altering some greens and tees and
refurbishing all the bunkers. It’s certainly going
to make the course more of a challenge.” It’s
a big job to a deadline made tighter by the
spring snow; one of the increasingly unusual
weather conditions which dominate the
greenkeeper’s life.
“The weather dictates my life and I look at
the forecast constantly,” says Brian. “The rain
last year was demoralising, and spring this year
is so late, we aren’t getting the early growth we
want. It makes things so challenging.”
It is fortunate, he says, that the Colt and
the Filly both drain well, but the weather has a
continuing hazard of the job. But still, he says,
his love for the outdoor life, after 24 years a
greenkeeper, nine of them here, remains as
deep as it has ever been.
He has experienced a course revamp on
the Filly before, and he was here when the Colt
was built. “The course improvements, and the
new nine-hole pitch and putt for 2013, are part
of an ongoing process of improvement. We get
involved in everything on site, including looking
after six football pitches and four rugby pitches
maintained here for the university [previous
owners], and the hotel grounds of course, so
this is not your usual greenkeeping job.”
Greenkeepers, says Brian, should play
their courses as often as they can to properly
experience them as the members do. “But I
don’t get to play as much as I would like,” he
says, ruefully, adding that his handicap has
slipped from 17 to the mid-20s. “Most of the
lads play, and I think the members like to see
that. The members are very supportive and
quick to thank us. Mind you, they also tell you if
the greens are slow.”
Brian’s day starts at 5.30am with a course
inspection and course condition update to the
Close House website. During the season, the
greens are cut every day, the fairways and tees
several times a week. It’s a relentless task,
all this mowing, preening and maintenance
of more than 300 acres of golf courses and
another 70 or so acres of sports pitches,
gardens and grounds, but it is a task he and his
team treasure.
“It’s a lovely place,” he says. “I wouldn’t want
to spend my time anywhere else.”

So how does a world-class golfer of the calibre
of Lee Westwood celebrate lending his name
to not one, but two world-class golf courses for
the first time?
Well, he’s starting by bringing the spoils
of the Miracle at Medinah - The Ryder Cup
itself - to Close House. Lee, who played in the
triumphant European team which overcame
the USA on the last day in Medinah, Illinois, in
September last year, will bring the famous cup
with him when he visits the world’s first Lee
Westwood golf courses at Close House on
July 23. And bringing the cup to Close House
personally is quite a landmark for Lee, who’s
looking forward to showing it off at the place
he calls his home-from-home.
“Who can forget the Miracle at Medinah?
Certainly not me,” he says. “I’ve been watching
the Ryder Cup since 1985 and have played in
eight, but the final day was unlike anything I’ve
ever seen or been a part of and I’m not sure I
will again. It was staggering.”
The Ryder Cup visit will follow Lee’s official
opening of the newly enhanced and re-branded
Lee Westwood Colt and Lee Westwood Filly
courses on July 1. Lee says: “I’m so pleased
to continue my attachment with Close House
for another three years, and to lend my name
to the courses. When I visit the club it’s like
a home from home. I’ve been asked to be
attached to a number of clubs, but Close
House has something special. It doesn’t matter
if you’re a member or just visiting, everyone is
made to feel really welcome.”
Lee has been involved in the design and
renovation of the two 18-hole courses at
Close House, working with course architect
Scott Macpherson. The opening of the Lee
Westwood Colt and the Lee Westwood Filly
courses marks a significant milestone in the
history of Close House.
“I first played Close House in May 2011
and was amazed by the condition and standard
of the course,” says Lee. “It didn’t come as a
surprise when it was awarded top 100 English
course status shortly after it opened.
“The enhancements for 2013 will make the
course even more attractive and challenging.
Working with Scott MacPherson has allowed
me to put my own stamp on the courses.
The Lee Westwood Filly course, which is
undergoing an extensive refurbishment,
is a very enjoyable course, while the Lee
Westwood Colt is also being enhanced with
new tees on the 8th and an extension of
the water around the 18th, making it a great
signature hole.
“I’ve played on some fabulous courses
across the UK, Europe and the world and
Close House has the potential to be one of
the very best. The standard of the course is
certainly good enough to host a championship
in the future.”

Starting with a white golf
ball, Mark is trading items
up for charity. He has a year
to trade up to the best item
he can without exchanging
money, then he will sell the
final item in aid of charity.
Within the first month,
the ball had been traded
up for a collectable theatre
poster, which was then
traded for a pair of Vivenne
Westwood gloves, which in
turn went for the chairman’s
box at St James’s Park for
the Newcastle v Sunderland
derby, which Mark traded
to Richard Sinton, owner of

a friend’s little boy, Jack Alfie

and has spent 90% of his
life in hospital. Children with

What on earth has happened to golf apparel? Time was
when the gentlemen of the course were all plus-fours
and Argyll socks (note, we speak here of the gentlemen
of the course; the ladies were back home chained to the
kitchen sink). But how things have changed! Today, we
are rather more Ian Poulter than Arnold Palmer in golf
course style terms, which means the old style book has
been consigned to the bunker.
Poulter, who is arguably even more widely known for
his crazy golf style than his form, is one of the leaders

Simon Walsh is prematurely grey. Still
in his 30s, there is barely a hint of the
once-ebony mop, but the salt and pepper
grey suits him, and it is certainly not a
reflection of culinary angst. “No, I just went
grey early,” he laughs, “and we like to keep
things to an extremely high standard, but
there is beauty in simplicity and we let the
produce shine through in every dish.”
Simon and his talented team have
revamped the menus at Argent D’Or
restaurant at Close House, stripping away,
as he puts it, the dishes to their purest
form. “It’s stripped back, more relevant,
and lighter, which suits modern taste
and the light and airy surroundings,” says
Simon. “The dining experience, though still
sophisticated, is less formal, so people
relax and linger over their meal.
Argent D’Or is about simply modern food
with a British influence; fresh, seasonal
and exciting, served in a glamorous, light
and airy dining room with beautiful views.
“At the No.19 clubhouse, the atmosphere
is relaxed, laid back and happy. We always
insist that the produce is of highest quality,
and the dishes at No.19 are fresh and
wholesome. Our weekly steak and curry
nights are hugely popular, and we’re
introducing BBQ nights for summer. While
the produce is the same high quality
in both restaurants, we enjoy different
interpretations for the two different dining
experiences. At Argent D’Or we are a little
more technical in our approach, while we
are a little more robust at No.19. We are
particularly excited about The Orangery,
which is now the perfect setting for private
dining with beautiful views. Every event
starts with a blank sheet of paper, which
means every experience is unique, just as
it should be.”

spatchcock chicken and a special

Ingredients
1 spatchcock chicken
freshly ground black pepper
olive oil
coleslaw:
200g shredded red cabbage
1 banana shallot, finely sliced
50g chopped flat leaf parsley
1 pinch sea salt
1 pinch freshly ground black pepper
50ml olive oil
½ lemon, juiced
200g carrots, finely sliced

Method
Chicken: Place the chicken in brine for
at least 3 hours and up to 12 hours (for
a good brine mix 95% water + 5% salt
solution). Soaking like this will help to
keep your chicken lovely and moist during
the cooking. After a minimum 3 hours,
remove chicken from brine, dry with a
piece of kitchen towel, rub with olive oil,
and season with black pepper. Place
chicken on the BBQ and cook until it’s
nicely coloured, turning it regularly.
Then, move the chicken onto the higher
shelf of the BBQ, close the lid and turn
the heat down until meat cooks through.
Coleslaw: Toss all the ingredients in a
bowl, add salt and pepper, olive oil and
lemon juice. Leave to macerate for
5 minutes before serving.
To serve: Remove the chicken from the
BBQ and serve it on a wooden board
with the coleslaw garnished with pea and
coriander shoots.
Simon’s spiced
lamb koftas with
flatbreads and
cucumber dip
Enjoy some Turkish barbecued delight
with these amazing lamb koftas and
homemade flatbreads
Ingredients
500g minced mamb
1 onion, finely chopped
2 cloves garlic, crushed
1tsp ground cumin seeds
1tsp ground coriander
1tsp ground turmeric
1 pinch cinnamon
1tsp cayenne pepper
2tbsp chopped coriander
salt & pepper
2tbsp olive oil
Flatbreads:
250g plain flour
1tsp fine sea salt
1tbsp olive oil
150ml warm water
Minty cucumber dip:
1 cucumber
1 small clove garlic, crushed
2 spring onions, chopped
large handful mint leaves, shredded
finely grated zest and juice of 1 lemon
150g Greek-style yogurt
Method
Lamb: In a large bowl mix the minced
lamb with the onion and all the spices and
coriander and season with salt & pepper. With
wet hands, make12 sausage shapes and
place onto a tray to firm up in the fridge for
12 hours.
Flatbreads: Sift the flour into a large bowl,
add salt, oil and water and form into a dough
with your hands. Turn out onto a floured work
surface and knead for about 5 mins until the
dough feels smooth and elastic. Cover dough
with a bowl and let it rest for 15 mins. When
you are ready to cook the flatbreads, roll the
dough into a sausage shape and divide into
six balls. Roll out on a floured surface into
3mm thick rounds. Cover with a tea towel and
rest for a few minutes before BBQing.
Minty cucumber dip: Cut cucumber in half
lengthways, scoop out seeds with a teaspoon
and slice. Combine cucumber and remaining
ingredients in a serving bowl and season to
taste with salt and pepper.
To BBQ: Lightly brush the koftas with olive
oil and cook on a BBQ. Shake off any excess
flour on the flatbreads and carefully lay on the
BBQ or a griddle. Leave a minute or two, until
the dough looks set, then flip over and cook
for a further 30 seconds.
To serve: Place barbecued koftas on a platter
and finish with a squeeze of lemon juice, some
chopped mint and a sprinkling of sea salt.
Serve with flatbreads and the cucumber &
mint salad.

Catering for a marquee wedding of
200 guests, and getting to the site

be cooked through the stately home’s
tiny domestic kitchen. We managed it,
and can laugh about it now.

The Westwood burger
When the great man comes to play at Close House, he loves nothing more than
a great homemade burger, which is why its creator, Simon Walsh, has named it
after him. A fine partner to the two golf courses also bearing his name, we say
Ingredients
500g steak mince
2tsp salt
1 small onion, finely chopped
1tsp tomato puree
½ tsp mild curry powder
½ tsp English mustard
½ tsp wholegrain mustard
a good grind of black pepper
Burger sauce:
100ml tomato ketchup
100g French’s classic mustard
Method
Burger: Gently fry off the onion in a pan
over a low heat until soft. Now, mix all
the ingredients together in a large bowl
and then shape into burger patties. When
you’re ready to serve, simply cook through
on the BBQ, turning regularly.
Sauce: Mix together the ketchup and
mustard and serve in a pot on the side
(perfect for dipping your burger!)
Serve: With crispy strips of bacon and
melted cheese in a brioche bun.

Coconut Panna cotta with poached
pineapple and passion fruit
The ultimate pudding for summer, this is sunshine on a plate, and so easy
to put together, it’s a pleasure to create
Ingredients
Panna cotta:
1¾ pints double cream
200g caster sugar
4x½ leaves soaked bronze
gelatine
¼ pint milk
200ml Malibu
Poached pineapple:
1 pineapple, cut into 1cm chunks
200g caster sugar
2 star anise
1 cinnamon stick
pinch black peppercorns
1 vanilla pod, scraped
Garnish:
fresh passion fruit
a little sliced mint
coconut shavings
Method
Panna cotta: Warm 1 pint of the cream
with the sugar until dissolved. Dissolve
gelatine in the milk over a gentle heat.
Add the milk to the warmed cream, add
the Malibu and remaining cream. Strain
into a container and chill in fridge, keep
stirring whilst setting, and once it starts to
set pour into moulds.
Pineapple: In a pan combine the sugar
with 200ml water and all the spices,
bring to the boil and then add pineapple.
Simmer for 10mins. Remove from heat
and stand at room temperature for at
least 1 hour to allow the pineapple to
infuse (the longer the better). Turn panna
cotta onto plates, garnish with pineapple,
fresh passion fruit, sliced mint and shaved
coconut. Finish with a drizzle of the
poaching liquor from the pineapple.
Let us make it for you with lunch at Argent D’Or
Ingredients
16 extra-large scallops, cut in half
horizontally
Celeriac puree:
400g peeled celeriac
50g unsalted butter
75g white onion, finely diced
300ml whipping cream
Dressing:
100ml curry oil
1 Granny Smith apple, peeled and diced
65g golden raisins, halved
50g super-fine capers
30 coriander leaves, chopped
Method
Scallops: Heat two pans until very hot. At
the last minute, season scallops with salt,
add a little rapeseed oil to the pans and
place the scallops seasoned side down.
(don’t shake the pan). After 1½ mins, turn
the scallops, which should be golden, and
finish cooking for 30 seconds.
Celeriac puree: Shred celeriac on the
course side of a grater. Melt butter in a
pan, add onion and a pinch of salt and
sweat off til soft. Add celeriac, season
with salt, then add cream. Bring to the
boil, stirring frequently, cover and simmer
for 15 mins. Remove lid and cook for a
5 mins. Transfer to a blender, blend to a
puree, then pass through a fine sieve.
Dressing: Combine ingredients in a bowl,
season and finish with a little grape juice.
To serve: Place a spoon of warm puree
on each plate, arrange scallops around,
spoon over dressing and finish with apple
batons and coriander cress.

Close House.
“The produce is fresh and vibrant;
it speaks for itself,” says Simon. “We
invest in a local community of great
suppliers. Why serve French cheese when
you can use Northumbrian? It doesn’t
make sense.”
Simon is a passionate advocate of
local farmers and producers and he
enjoys going out to meet his suppliers on
their land. “I can’t do my job without
them, particularly as the seasons change,”
he says. “It’s exciting, knowing the stuff
you are using is grown locally and the
range of quality produce now in this
region, in this valley alone, is superb.
“We always insist that the produce
is of highest quality and seasonal and
spring/summer is always a lovely time of
year for produce, though the weather is
making the seasons different now. That
means we have to be more patient, which
is hard when you’re waiting for asparagus
in spring, and then the summer fruits.”

What better time than summertime to
celebrate the quintessentially English tradition
of afternoon tea?
Even those waifish ladies at London
Fashion Week celebrate high tea and (whisper
it) they say Victoria Beckham’s been known to
demolish a cake stand of cream scones.
The essential question is this, does the
milk go in first or the tea? How should one
sip? Opinion is divided on the origins of the
phenomenon that is tea, finger sandwiches,
scones, pretty pastries and cakes, but Anna,
7th Duchess of Bedford is reputed to have
started the trend in the early 1800s. She
decided that to stave off hunger pangs
between lunch and dinner, one should have
tea around four or five in the afternoon.
At Close House, afternoon tea and
Champagne afternoon tea is always a special
occasion, starring seasonal delicacies such as
gateau opera, salted caramel macaroons, gin
and blackberry Bakewell slice, shot glasses
with peach schnapps panna cotta and
rhubarb compote.
Afternoon tea changes with the seasons,
and there are occasional special event
versions, such as the 2013 Wimbledon
Special starring Pimm’s to drink, Pimm’s jelly,
strawberry tart and strawberry macaroons,
all perfect for an afternoon in the sun on the
Close House terrace.

If serving tea for a group,
make a pot of loose leaf. A
second pot with hot water
should be provided to dilute if
necessary.
If a waiter places a teapot
on the table without pouring
the tea, the person nearest the
pot should pour for everyone.
The tea should be poured
first and any milk, lemon or

Don’t dunk biscuits or

are in a very informal setting,
and don’t make slurping
noises - even if it is hot!
If you are served a scone
with jam and cream, bear in
mind that the most practical
way of consuming it is to split
the scone in half, spread the
jam first, then add the cream
on top. This is favoured in
Cornwall, but in Devon the
practice is to spread the
clotted cream first.

Antonio. The annual week-long village fiesta is
in early September.
Fornalutx is a beautiful village and an
excellent point from which to explore the rest of
the island. There are more beaches and bars to

House in the Lakes is a wonderful Lakeland
hideaway in the heart of pretty Ambleside,
traditionally built in slate and stone and
featuring off-street parking and gardens.
Whether you want to walk the Lakes, take
a foodie tour or soak up the history of an area
loved by Wordsworth, Coleridge and Beatrix
Potter, the Lake District has a magic all of its
own. Ambleside, which lies at its heart at the
head of Lake Windermere, is a Victorian market
