Since being sworn in as Mayor in January 2014, I’ve had the unbeliev-
able good fortune of looking out my office window each day over our
very own Cradle of Liberty – the place where Samuel Adams rallied for
our independence and George Washington toasted our nation.

KILVERT & FORBES’ FAMOUS

Who knew that a late-night chocolate chip
cookie craving would turn into a small
business venture for the future Secretary
of State of the United States of America?
That’s correct – back in 1976, John F.
(Forbes) Kerry, then a private sector
lawyer, opened Kilvert & Forbes Bake
Shop with a friend K. (Kilvert) Dun Gifford.
Secretary Kerry references his
experience as a former small, local
business owner of the Faneuil Hall
Marketplace bake shop in remarks to
business groups all over the world. He
states that he learned many first-hand
lessons about starting and managing a
small business, lessons that have proved
very valuable throughout his life in
public service.
At the U.S. Export-Import Bank
Conference in Washington D.C. last year,
Kerry recalls the night when he first
hatched the idea.

“I was having a wonderful dinner at
one of the establishments at Faneuil Hall…
and I really did have this notion that I
wanted to do something in retail business.
There was vacant space in Faneuil Hall and I
looked at it and said, ‘God, it’d be really interesting to open this gourmet food store
there.’ So literally, the next morning I found
myself in Jim Rouse’s [developer of Faneuil
Hall] Baltimore office and I negotiated a
lease. We had these wonderful ovens that
you can see the cookies progressing
through them and dropping out on the
other side,” said Kerry.
One important missing factor, Kerry
realized, was a cookie recipe! He told the
crowd, “So I went home and started baking
and baking and baking. I learned that the
chemistry of food is the hardest thing in the
world because as you get bigger, of course
it changes, it’s not an automatic progression. I learned the hard way, many batches

Despite
the seemingly endless
experiment,
Kerry’s efforts to perfect the
chocolate
cookie worked. “We put together these incredible cookies with pure Lindt chocolate
and honey, all natural ingredients. Within
one year we won the Best of Boston for our
cookies, our macaroons, for our brownies,
for our everything.”
Kerry also highlighted the important
lessons that he learned and the experience
he gained in being a small business owner
of Kilvert & Forbes. That experience, Kerry
says, helped him in the U.S. Senate where
he served as a member and chairman of
the Small Business Committee for more
than 20 years.
“It taught me an enormous amount
about the difficulties of being a small business, about having 35 – 40 part-time employees, getting your tax forms filled out,
working on your withholding, dealing with
the health department, getting your license,
dealing with inspectors….but it really taught
me about entrepreneurship and risk-taking,” Kerry added.
In 1982, he eventually sold the business when he made the decision to go into
public service. But Kerry continues to visit
Kilvert & Forbes whenever he is back in
Boston, sometimes bringing with him
Heads of State to have them sample the
melt-in-your-mouth chocolate chip cookies,
brownies and macaroons that originally
made the bakery famous.
Current owner Carol Troxell says she is
thrilled every time John Kerry makes a visit
to the renowned bake shop. “It’s great to see
the Secretary of State at Kilvert & Forbes
where he gained so much knowledge about
being a small, local business owner. We
continue the tradition that he established of
creating delicious baked goods that serve
the thousands of visitors who come to
Quincy Market. Kilvert & Forbes co-owner
Sara Youngelson added, "We always enjoy a
visit from our former owner. John Kerry is
welcome anytime,” she said.

Debuting this spring is the all-new “Outdoor
Lounge” located adjacent to the Cheers
patio. Come hang under the tree canopy
and enjoy continuous new programming
while relaxing at moveable tables and
chairs for your convenience. The Lounge
will serve as a Reading Room during most
of the day, but will also play host to other
activities such as chess, yoga, historic tours,
lecture series and art classes to name a few.
Another fun addition to the Marketplace is
free ping pong! Look for tables on both the
South and North Markets of the property.

QUINCY MARKET THEN AND NOW
While Faneuil Hall was donated to Boston by merchant Peter Faneuil in 1742,
Quincy Market was added nearly a century later to meet the area’s growing needs.
As you’re dining, shopping, and touring
historic Faneuil Hall, imagine how different
it must have looked in the early 1800s.
Buzzing with farmers, livestock, carts and
more, the area was a hub for food
distribution. Food was sold from
wagons, and the market bustled with
locals stocking up on essentials.
Having a central location to buy and
sell food was critical to what had been a
growing issue in Boston: the need to
accommodate its increasing population.
The newly elected Mayor Josiah Quincy
recognized this challenge in 1823. He
knew the population had grown to 50,000
residents and that there was a dire need
to expand the current 7,600 square-foot
market that was bursting at the seams.
From Mayor Quincy’s second-story
office in Faneuil Hall, the market was
unsightly. Among the shanties and
dilapidated wharves beneath his window,
the narrow streets overflowed with
vendors and shoppers. It was clear that
more market space was needed.

Creating an Urban Marketplace
Mayor Quincy knew that the market not
only needed more space, but it also
needed compelling architecture. A new
market structure – later to be named
“Quincy Market” – was imagined as a way
to better support the growing population
and enhance civic life. Mayor Quincy pronounced that the building would serve not
only as a convenience, but as “a blessing to
the poor, an accommodation to the rich,
and an object of pleasure to the whole
community.”
Thus, Quincy Market was constructed
with architecture reminiscent of Greek
temples. Planned by Architect Alexander
Parris, a Greek Revival-style structure was
erected with columns and pediments at
each end and a central copper dome.

Quincy Market officially opened its
market house to the public on August 26,
1826. With 128 food stalls on the first floor,
numerous vendors moved into the new
market to sell produce, cheese, bread and
more. Butchering work was often done onsite and an 1865 account indicates that
meat was the primary product being sold
at the early Quincy Market. The building’s
second floor was used as an exhibition
space.
With its attractive Quincy Market structure, Faneuil Hall went on to be more than
a place of necessity for those buying and
selling goods. One visitor from Philadelphia
in 1838 was recorded as saying:
On a Saturday night, when the market is
lighted with gas, it presents an animated
and cheerful appearance. It is crowded
almost to suffocation by mechanics and
other manual laborers, who, with a portion
of their week’s earnings in hand, are buying,
for their wives and children, a few Sunday
luxuries…The show of fruits, flowers, and
vegetables in this market is exceedingly
beautiful, and not without picturesque effect.
Far from the eyesore that it once was,
the marketplace became a vital business
hub and remained that way throughout
the 1800s. Unfortunately, the buildings
making up Faneuil Hall Marketplace had
fallen into disrepair by the middle of the
20th century. Tagged for demolition, the

marketplace was saved by a group of
committed Bostonians intent on
preserving it in the early 1970s.
Instead of being demolished, the
structures of Faneuil Hall Marketplace
were later revitalized, in a first-of-its kind
urban renewal project that spawned
imitations in the United States and around
the world. Today, the market continues to
provide food, entertainment, shopping
experiences, and rich history, attracting
both locals and visitors throughout the
year.
Boston Today
Quincy Market was Boston’s first major
project after incorporating as a city in
1822. Nearly 200 years later, Boston is
experiencing a major development boom
that is further reshaping the streets and
the skyline. This boom is driven in large
part by the city’s growing population. A
March 2015 Boston Globe article reported
that between 2010 and 2013, the city’s
population rose by 30,000 to 646,000
people. Of the 72 development projects,
about 68 percent are residential, the story
reported. Significant changes are underway in neighborhoods like the Seaport
District, East Boston’s waterfront, and
Dudley Square.
As Boston changes, the importance
of Faneuil Hall remains constant, as does
the rich Boston history that it represents.
Quincy Market was the response to a
growing population and a changing
society, as are many of the city’s current
development projects. As it continues to
grow as a world-class city, Boston holds
dear the historical role that it played in
launching a nation, and Faneuil Hall
Marketplace is a daily reminder of this
valuable place in history.
OUTDOOR DINING & CAFES
Faneuil Hall serves up several outdoor dining
options where you can enjoy a variety of
cuisines and mingle among the one-of-a-kind
pushcarts at the Marketplace.
If you are looking to eat in a historical
setting, then head over to Durgin-Park. Existing for over a century, Durgin-Park is one
of the oldest establishments in the country,
serving up their most beloved and classic
food, including their famous baked beans.
To them, “Durgin-Park is quintessential for
traditional Yankee fare, served on an outdoor patio with signature brewed John Durgin Ale on a pleasantly warm day or night.”
If Asian flavors are what you desire,
then visit Wagamama where you can dine
on their outdoor deck in the spring, summer
and fall or in their indoor restaurant yearround. It is here that you can experience a
pan-Asian style menu and grab a front row
seat to watch world-renowned street performers in the South Market promenade.
If the excitement of a lively bar entices
you, then visit Ames Plow Tavern. With
ample outdoor seating and beer or mixed
drinks to match, this is the ideal place to
mingle as the sun starts to set beyond the
Marketplace.
It’s always friendly to go someplace
where everybody knows your name, and
that’s Cheers, the restaurant based on the
classic television show. Sit on the outdoor
patio and compete for the “Norm Burger Hall
of Fame” by eating a specially-designed
stacked burger. “Take in the scenery at Cheers
Faneuil Hall while enjoying your meal and a
cold beverage. Tell them Norm sent you!”
For a quirkier, more outrageous setting, soak in the sun and relish in the nevera-dull-moment atmosphere at Dick’s Last
Resort. Known for their paper hats with
humorous insults written upon them, Dick’s

also serves up juicy burgers, sweet crab legs,
and a long list of margaritas. Throw your seriousness out the window and grab a stool
at Dick’s for some hilarity.
Nothing says warm weather like
strolling the city with an iced coffee in hand,
and Café Pulse makes that easy with its
quick accessibility. Sitting amongst the South
Market strip, Pulse serves fresh, delicious
coffee or tea. You can’t miss their bright blue
flags or their fresh croissants in the morning!
But that’s not all! For authentic Mexican
cuisine and cocktails, head over to the outdoor patio at MIJA Cantina & Tequila Bar.
For fresh seafood, visit the three-season
patio at the Salty Dog Oyster Bar & Grill,
which includes a street side oyster bar. For
spirited American fare, check out the outdoor
café at Anthem Kitchen + Bar – they’re even
open for breakfast! If clam chowder is what
you seek, visit the outdoor café at Ned
Devine’s Irish Pub, which also features a
variety of lobster options and pub food.
What is warm weather without ice
cream? Quincy’s Place Ice Cream Cart –
the outdoor extension of Quincy’s Place in
Quincy Market – serves up cold treats like
shakes, sundaes and homemade ice cream
sandwiches on the West End of the
Marketplace.
If you are looking to quench your
thirst, then check out Boston Pretzel and
Lemonade Stand for the perfect cup of
fresh-squeezed lemonade. And for the best
pretzel twists in town, visit the pushcart or
head inside to their main location in Quincy
Market. Here, you can also get custom
pretzel letters for that special summer
cookout!
And don't forget the Boston Fried
Dough Stand for delicious, classic fried
dough!

One performer you won’t
want to lose focus on is stunt
comedian, Wacky Chad. He
has reached impressive
heights both on his pogo
stick and in life, performing
at the Super Bowl and on NBC’s “America’s
Got Talent.” For the “tiny-bike-riding and back
flipping Chad”, performing at Faneuil Hall
means that he plays for some of the best
crowds he’s ever seen.
If an intimate crowd is what
you’re looking for in a show,
Malik the Magician specializes in magic for smaller
audiences. Having performed at the Marketplace
for ten years, Malik is always working on new
and exciting tricks. “Meeting people from all
over the world is something I enjoy,” he says
of Faneuil Hall.
A performer who seems to
be from another part of the
world is the kilt-wearing, bagpipe-playing unicyclist, Kilted
Colin. Colin taught himself to
master the unicycle. And why
the kilt? Aside from it matching his theme,
Colin says it’s super comfortable.

Many local students perform
at Faneuil Hall, like 23-year-old
vocalist and guitarist
Ryan Jordan, who received a
musical education at Berklee
College of Music. “Whatever
generation – playing older tunes for an elderly
couple, pop tunes for school trips, or kid’s songs
for a parent and their shy young child – I’ve
enjoyed playing for all crowds at Faneuil Hall.”

The Red Trouser Show has been performing
at the Marketplace for eight years, featuring
balancing stunts that drop jaws and bewilder
audiences. The duo have played shows from
Boston to Scotland. To them, “Faneuil Hall is
one of the best spots to perform in the
country when you have a focused show!”
In a Hall that welcomes
families from all over the
world, Tatu Mianzi
speaks to this sense of
connectedness. Susan,
Kate, and Allie Reed started as a classical string
trio at a family wedding, but have transgressed
into a group that covers every genre imaginable . The mother-daughters trio see music as a
form of communication and connection, and at
Faneuil Hall, “It’s rewarding for us to see someone rushing by who is lost in their thoughts
suddenly turn, stop, and listen for a bit.”
Another eclectic performer is the talented
Tori Marjorie. While playing a classic by Bob
Dylan, Tori was approached by a couple that
had just renewed their vows, and proceeded
to slow dance along to her song. “Crowds are
always contagiously energetic, but sometimes
it's the little moments that make playing at
Faneuil Hall really special.”
Constantly amazing the
crowd with a piano or
saxophone is the
Marketplace’s youngest
street performer, 12-year-old
Bradley Bartlett-Roche.
With a signature hat-trick move, Bradley plays
his tenor saxophone over his head until his
fedora falls off, then without missing a beat,
scoops it up with his foot and flips it back on
his head.

Luke Provost
The Salty Dog Oyster Bar & Grill, Manager
Luke’s lineage in Quincy Market goes
back four generations, when his
great-great grandfather owned and
operated one of the largest fruit and
produce dealerships in the 1850s.
This produce company was active up
until the 1940’s, when his grandfather dissolved the business after
Luke’s uncles were called off to duty
in World War II. Luke’s father was too
young at the time to take over the
family business, but he would return
to Quincy Market in the late 1960s to
establish a fresh fish pushcart, which
in 1972, would evolve into The Salty
Dog Fish Market located in the depths of Quincy Market.
The Salty Dog further transformed during the development of
Faneuil Hall Marketplace in 1976, when The Salty Dog became a
full-service restaurant. This transformation also included a large,
three-season patio and a street side oyster bar located at the forefront of the historic Quincy Market Building. The Salty Dog is the
only pre-existing tenant to the Marketplace and continues to provide locals and travelers with fresh seafood served up with an
authentic Boston experience.
Luke began helping his family in the restaurant at the age of
12. At 13, he stepped into the kitchen and spent the next eight years
learning the ins and outs of how to properly handle and prepare
fresh seafood. While Luke attended college in upstate New York, he
held several restaurant jobs to hone his serving style and skills.
Upon attaining his degree, he returned to the family business and
has been at the helm for 17 years. He is the active General Manager
overseeing all facets of the family business.
When asked about the continued success of Salty Dog, Luke
states that he is, “Fortunate to have the opportunity to work with so
many great people over his career. The Salty Dog has remained true

Some of the most rewarding aspects Luke finds in running this
business day-to-day are the regulars who have been returning for
years. In some cases, these guests might live great distances away,
or even in different parts of the world, but when they visit Boston

Harry Haralabatos

Back in 1976, when
there were only a
handful of food vendors in Quincy Market,
Harry Haralabatos
stood within his father’s grill, lucky to be
one of the few. Ten
years earlier, his father
had come from Greece
to start a life in America, bringing the concept of Greek grilling with him. At the start of
Aris BBQ, Harry’s dad would toss his meat on the grill, seasoned in
lemon and pepper, and would close at 9:00pm each night with a
line still weaving through the market. Nearly 40 years later, Harry
has taken over his father’s legacy.
Harry, having officially worked at Aris BBQ for 19 years,
broadened the restaurant’s horizons years ago, introducing foods
like pulled pork and pulled chicken, saying, “I don’t even know if my
Dad knew these foods existed!” The restaurant hasn’t changed
drastically since its opening, but has simply grown on a concept.
A burger lover himself, Harry explained the extent that he cares for
grilling, slow cooking brisket each day for eight hours, and serving
up Aris BBQ’s original, homemade dressing to eager customers.
Located within Quincy Market, Harry says Aris BBQ meets a
fair share of people from all around the world. People from foreign
countries will often state that they have never seen anything like
Quincy Market in their lives. “One man from England has come
back for the past five years! Every summer he comes for a pulled
pork sandwich and fries,” says Harry. “I say, ‘You buy the food, but
I’ll take care of the drink!’”
Harry is excited for his sons to grow up and take over his
legacy, as he took over his father’s. Currently one of the oldest
established food businesses in Quincy Market, Aris BBQ has grown
with the Marketplace, becoming more and more historical. “My dad
and I will have fun, bicker about sauces and foods at the front of
the shop; it’s a very Boston thing we’ve got going on here. Why give
that legacy up?”

are unlike any shopping
experience you’d find
within a typical mall.
Judy, the owner of Stuck on Stickpins, does not own a pushcart, but
instead has set up a theater for her jewelry, where the cart is the
stage and each section of products tells a story.
Judy went to school for art and interior design, enjoying the
study of textures and colors best. After college, and a quick switch in
career paths, Judy turned to making jewelry. What started as simple
brooches and pins, transformed into creating necklaces and then
opening her own pushcart – now a 25-year streak within Faneuil
Hall. At this point, Judy still makes jewelry, but her real forte is in
finding one-of-a-kind pieces and seeing the pure joy when these
pieces find their rightful owners.
“Sometimes I’ll find a unique piece, sit on it for a couple weeks,
and then up walks a woman from North Carolina and I think ‘that
belongs to you,’” Judy says. She takes pride seeing a customer immediately click with an item on her cart, knowing the piece is distinct to
them. And the feeling with her customers is mutual. “I’ve gotten mail
from women in Japan just saying hello and a quick thanks for their
brooches!”
At Faneuil Hall, Judy speaks with customers from all over the
world, saying, “It’s a fun environment. You get to interact with people
from all over the place and hear their stories.” Not only are her customers from overseas, but Judy’s time spent in the Marketplace has
made her a piece of history, so much so that her most loyal customer is a 95-year-old woman from the North End. “I fixed her earring 20 years ago, and she still comes back and will just sit with me!”
Never knowing that Stuck on Stickpins would evolve so much,
Judy is thrilled with her progress and experience running the cart.
“My cart stands out to a lot of people. It’s worth it to sit here and
hear people call my jewelry a ‘collection,’ because I think it is one.”

Evelyn, a 17th century Renaissance
Englishman. Travelling the world to
look for luxurious ingredients and
botanicals, Evelyn became a true inspiration to the creation of Crabtree
& Evelyn, founded in 1968 in
Cambridge, MA. Now, an international corporation with stores in
forty-seven different countries, Crabtree & Evelyn is dedicated to
the customer experience – and this is where we meet Meizi.
Meizi, a Chinese native, was using Crabtree & Evelyn products
long before she moved to Boston fourteen years ago, but has since
become an integral part of the largest Crabtree & Evelyn shop in
the Northeast region, located in Faneuil Hall. The shop, offering
everything from hand cream to men’s shaving kits to fingernail
polish, has been in Faneuil Hall since the 1980s. The chain has
many loyal, returning customers, but for first-time shoppers, their
experience is entirely unique.
“If our hires don’t know everything about the products, how
are the customers supposed to put trust in them?” Meizi asks.
When a customer walks into Crabtree & Evelyn, their skin needs
become an employee’s sole responsibility. First, the customer is
greeted by tea and biscuits, a tradition dating back before the store
acquired its real name. Next, they are led to a sink for proper hand
washing before the actual demonstration can begin. “A customer
needs to feel what we are explaining about a product. It’s hard to
imagine a feeling, so we show them. I like to call it a ‘moment of
inference’ for the shopper,” Meizi explains.
If the hands-on experience is not enough, Meizi and her crew
rely on a product’s story. Each fragrance, which Meizi describes as
being very personal, has a basis of inspiration. Summer Hill, for
example, is the scent of a lazy afternoon in England, sitting in a
garden accompanied by a cup of tea. “We want the customer to
feel the need to be a part of the story, like they need to be there.”
Meizi describes Faneuil Hall Marketplace as the perfect
location for Crabtree & Evelyn. Returning customers like the ease
of the Marketplace, and the plentiful amount of English tea offered
while browsing. “Anyone who visits Massachusetts will come to
Faneuil Hall, and this shop is particularly representative of the company because we were founded here.”
