MASTERCHEF WINNER
Shelina Permalloo was crowned the winner of
BBC1’s MasterChef series in 2012 and has since
been catapulted into the culinary world, working
in leading kitchens such as Benares and David
Thompsons Nahm. As a proud Mauritian, she
wowed the audience and the judges with her
creative Mauritian dishes, learning her skills and
knowledge from spending time in the kitchen with
her Mother and Aunt. She is now embarking on her
career, combining her talent and passion as an up
and coming chef. She is currently busy writing her
first cookbook, Sunshine On A Plate, which is due
out in June 2013.

mountainous beauty with a myriad of

We discover what is drawing Carrier clients back to this Mediterranean classic.
Ever since Byron carved his name on Cape
Sounion’s Doric columns and Gerard Durrell
was bewitched by the lush hillsides of Corfu,
as a nation we have had an enduring love affair
with Greece. Our passion may have waivered
in recent years; however Greece is back on
our shortlist for 2013. Rather than responding
to mass market demands for beach bargains,
Greece has done the opposite. Along with rural
tourism, luxury hotels are on the increase,
such as Amanzo’e, which opened on the
Peloponnese last July. Several museums are
slated to open in 2013 and enogastronomic
tourism is flourishing.
Weather
Summers are hot and sunny, with temperatures
soaring into the late 30s during July and
August. Benefitting from coastal breezes,
islands are several degrees cooler. Spring and
autumn are popular times to visit with typically
eight hours sunshine a day and temperatures
around 20C. Crete offers the longest beach
season from mid-April until early November.
Culinary Highlights
Greek cuisine is varied, boasting mountain
cheeses, delicious pastries, abundant fish
dishes and herb-roasted meats. A hot spot for
this summer is Santorini which celebrates its
Year of Gastronomy. Expect wine tastings and
culinary demonstrations to savour its 40 grape
varieties and local produce including capers,
fava beans and white aubergines.

and the Minoan palaces of Crete make the
perfect three-centre trip. Island bases are also
good to explore from. Zakynthos is the perfect
springboard to visit Kefalonia, setting for
Captain Correlli’s Mandolin.

Family choices include Porto Zante on
Zakythnos where villa living is combined with
the services of a five star hotel and the all-suite
and villa property of Domes of Elounda, Crete
with its excellent beach club. Couples may
prefer the spectacular Mystique, built into

Although one of the most beautiful places on the planet in which to
lie in the sun and feel the hot sand between your toes, it is below the
surface of the azure ocean where many guests of The Residence get
their thrills. Thought to be the deepest atoll in the world, virtually
undiscovered, it promises a wealth of astonishing dive sites, vibrant
reefs and lagoons, suitable for all levels of divers and passionate
snorkellers. Measuring just 120 metres across at its widest point,

South Africa, malaria-free Tswalu is home to

desert black rhino, black-maned Kalahari

meerkats emerge from their burrows to bask
in the sun before foraging for grubs is both

Heritage wine tasting on the Cape:
STEENBERG, CAPE TOWN
It’s easy to think of New World wines when you think of South Africa.
In reality however The Winelands have an enduring 300 year old
winemaking tradition. A favourite of Napoleon’s, Cape wine even
earned a mention in Jane Austen’s Sense and Sensibility as a cure
for a disappointed heart. Fanned by Atlantic sea breezes, a large
number of cultivars including Cabernet Sauvignon, Semillon and
Sauvignon Blanc flourish in the area’s Mediterranean microclimate.
The oldest vineyards are those that were established in the
Constantia Valley in 1685; characterised by its gabled whitewashed
farmhouses that nestle amongst rows of vines in the shadow of
dramatic mountain peaks. Delightfully compact, the Constantia Wine
Route has just nine wineries to explore. None of them cater to bulk
production, so wine tastings here are an individual experience.

A highlight of the route is Steenberg. A 17th century Cape
Dutch farmhouse renovated into a luxury spa hotel with its own
championship golf course, its 24 spacious rooms and suites are

settings; savour fine cuisine at Catharina’s restaurant, wine tasting
and tapas at the stylish Bistro Sixteen82 or sparkling wines in the

watches for glimpses of these rare creatures.
Far from the lights of Antigua, it is also one of
the best locations for stargazing together with
Jumby Bay’s resident astronomer. Returning
to the Caribbean side, the sapphire waters,
thatched-roof bohios and hammocks slung in
coconut trees on Jumby Beach make for some
idyllic beach time. It’s also the venue for the
weekly White Night seafood barbecue where
the whole island gets together for music and
dancing to the sounds of live steel bands.

cacti of Arizona. As the stars come out, the
chuckwaggon suppers and cowboy cookouts

Utah, too, offers enthralling Grand Canyon
viewing, and being more remote than the South
Rim it attracts fewer tourists. You may hear the
sound of a native Indian flute or the complex
intonations of the Navajo language. Here, the

“I deliberately chose to visit during the autumn,
or the fall as the Americans call it, as the area
is famous for its foliage this time of year. We
started our trip in Boston, a laid back city easily
explored on foot. The Oak Long Room and
Kitchen at the Fairmont Copley Plaza was a
perfect spot for a glass of red wine – recently
restored with a copper-top bar, soft leather bar
stools and custom-designed music programme.
From Boston we headed to Cape Cod. The
Wequassett Resort and Golf Club near
Chatham was in a beautiful spot, perched on
the edge of the bay – so calm the reflection of
the sky and clouds were mirrored perfectly in
the still waters. The location also meant we
could easily get to Hyannis (where the ferries
depart for Martha’s Vineyard and Nantucket)
and Provincetown, a bohemian, arty hub on the
tip of the Cape.
Continuing on our route south, we stayed in
the historic harbour town of Newport in Rhode
Island for a couple of nights. The Vanderbilt
Grace, a converted, traditional New England
mansion, was welcoming and friendly. We
went out on boats and ate our body weight in
seafood. The hotel’s restaurant, Muse, stood
out as some of the best food on the trip –
I can still remember the simple but delicious
buttered lobster.
The road trip took us through orchards and
pumpkin farms – locals were already gearing
up for Halloween. As I drove by the autumnal
leaves in the low, dappled sunshine, I knew I
had visited in New England’s best season.”

ourselves to enjoy the scenery and the sea
breezes as we continued on to the 10th before
turning inland. Finally, the 17th returns back to
the coast before you stand beside the sea to tee
off on the most famous finishing hole in golf.

The mysterious allure of Vietnam is epitomised
by its mesh of bustling cities, hill tribe
communities and beautiful coastlines. Ho Chi
Minh City (Saigon) is wonderfully disordered.
Locals bundle as much as possible atop their

buy, sell and barter. It’s all in stark contrast to

Hanoi is bigger, cooler and greener than
Saigon and an excellent base from which to
explore Halong Bay, where sailing trips aboard
traditional junks are popular. Brave a cyclo ride
through Hanoi’s Old Quarter and have a suit
made to measure in traditional Hoi An with its
cobbled streets, galleries and cafés. Then relax
at enchanting beach resorts such as Ninh Van

I am often asked if it’s worth using valuable
holiday time to travel the extra distance to one
of the Caribbean’s outer islands - and the answer
is yes, in my view, it is. The islands vary so much,
each having such a distinctive character and
identity, that the (little) effort it takes actually
makes the holiday feel longer and more fulfilling.
Last year, Carrier discovered a new airline which
has made island hopping around the Caribbean
an easier - and altogether more stylish – prospect.
Tradewind offer private charters throughout
the Caribbean including St Barths, Anguilla,
St Martin, Antigua and Nevis. On my trip, the
pilot came to collect me personally from the
lounge at St Barths and walked me over to the
plane, explaining the route we would be taking.
Their fleet is the newest in the Caribbean, with
luxurious private jet-style interiors and a cool box
with beers, wine and soft drinks. Guests will love
the arrival back into Antigua; the pilot escorts you
back to the terminal, introducing you to ground
staff who then walk you straight through the fast
track lanes. I literally touched down and was in my
car within five minutes.
My trip included Nevis, Anguilla, Antigua,
St Martin and St Barths so if you are considering
this type of holiday in the future, I would love to be
of assistance. Here’s what some of the nation’s best

ANTIGUA & THE BRITISH
VIRGIN ISLANDS

Let’s not beat about the bougainvillea – I had been
expecting luxury. I was, after all, visiting five-star
Rosewood resorts in the British Virgin Islands and
Antigua with Carrier.
Lovely, superbly furnished airy rooms, tick;
fabulous Caribbean views and a white sand beach
yards from the door, tick; an outdoor shower, tick;
a chocolate on the pillow at night, tick. Even a
pillow menu, so you can rest your head on 50 per
cent feather and 50 per cent down, or siliconised
hollow fibre balls, or specially designed ones for
those who sleep on their sides. Essential really.
But what was this? An en-suite legato menu too.
Music to drift off by – you could select your choice
and on your return at bedtime the room was
filled with gentle notes. Swirling strings perhaps
for an inward journey of musical meditation;
or soothing vibes, with the alluring call of wind
birds. Maybe world beats, for a musical voyage
of celestial melodies. On the first night I went for
‘gentle breezes gliding through bamboo flutes and
brushing koto strings’. The right choice.
It was brilliant touches like this that took luxury to
a whole new level for me at the fabulous resorts of
Rosewood Little Dix Bay, lying behind a colourful
barrier reef on Virgin Gorda in the British Virgin
Isles, and Rosewood Jumby Bay, set on a 300-acre
private Caribbean island just off Antigua.
Not to mention the bicycles parked outside each
cottage, so you could make the most of the lush

parkland in which the hotels are set, or the golfstyle buggies that could be summoned to shuttle
you to dinner or a pampering session at the spa.
Although I was lucky enough to visit in lobster
season – which meant my key aim was to
experience as wide a selection as possible of
the many and marvellous ways in which it can
be cooked – I was also there to pursue a fitness
regime. And there, Rosewood again scored top
marks, with state-of-the-art gyms (and attendant
fitness gurus), superb tennis courts and coaching –
and every water-based activity you could imagine.
So guilt could be minimal as I pondered in the
evening whether it should be lobster bisque,
lobster thermidor or simply char-grilled on the
barbecue. Mmmm…

Our Head of Product & Commercial, Fiona Greenhalgh has recently
returned from a life-changing trip to Sri Lanka, travelling through bustling
Colombo, exploring the intriguing Ceylon Tea Trails and seeing the famous
‘stilt fisherman’ at Weligama. Read on to share her unforgettable experience.
What is a must see in Colombo?
“I stayed in The Wallawa hotel in Negombo, a
boutique style sanctuary. It is easily accessible to
the hustle and bustle of Colombo – a fascinating
experience – yet entirely secluded. I was
welcomed with a chilled glass of Sauvignon Blanc
and warm roasted cashew nuts with thinly sliced
garlic and fried curry leaves, a combination I have
never tried before, but it was absolutely delicious.”
What are the highlights of the Ceylon Tea Trails?
“Travelling from Colombo to Hatton by helicopter
was incredibly exciting and the aerial view
breathtaking. I was then whisked off by my private
chauffer to experience the gracious living at the
colonial tea planter’s Castlereagh Bungalow.
The views surrounding the bungalow were
unbelievable and I was immediately made to feel
at home. I particularly enjoyed watching the tea
pickers at work. Make sure you order the high
tea, served with delicate cucumber sandwiches
and delicious homemade cakes and scones. I am
usually a coffee drinker but I was converted after
just one sip of Sri Lankan tea. Also be certain to
take a personalised tour with James Taylor, the
great, great grandson of the famous ‘Taylors Tea’
founder.”
What was your favourite thing about Galle?
“I arrived at the enchanting Amangalla, set
within the Old Dutch Fort and embarked on a
tour of Galle by tuk-tuk. Watching the famous
‘stilt fishermen’ at Weligama (known as the sand
village), collecting their evening catch by the light
of the setting sun was awe-inspiring. I took some
extraordinary photos and even caught my very
first fish with the help of the friendly locals. Back
at my charming hotel, I enjoyed a relaxing bath,
followed by a mouth-watering Sri Lankan curry
served on the terrace.”

A weekend in...
MARRAKECH
AT ROYAL MANSOUR
A beguiling assault on the senses, the rosered city of Marrakech, named after the warm
pink hue of its medina walls, is an abundance
of colourful souks, opulent palaces and
luxuriant gardens. There could be no better
introduction to the medina than Djemma el
Fna square. Alive from dawn to dusk with
Berber storytellers, snake charmers and henna
artists, at night it is transformed into an openair restaurant boasting every type of street food
from roasted lamb to spicy, fried aubergine.
Seat of Morocco’s ruling dynasties for
centuries, Marrakech’s finest monuments
can easily be explored on foot including the
ornate minaret of the Koutoubia Mosque,
the remains of the 16th century Badi Palace;
nicknamed ‘The Marvel’ for its Italian marble
and Sudanese gold decor and the sumptuous
Saadian tombs with their carved alabaster and
zellige tiles details.
You will also want to discover the famous
souks where everything from Arab slippers to
woodcarvings can be found. A highlight is the
Souks des Tenturiers dyers’ market where the
pavestones are splashed with a rainbow of fresh
tints and a kaleidoscope of newly-coloured
wools and silks billow above the market stalls.
Until very recently Marrakech’s luxury hotels
were confined to the Ville Nouvelle. However,
a new trend in renovating riads has provided
visitors with some enticing options to make the
most of their weekend with a stay in the medina
itself. One of the finest examples of this is the
Royal Mansour where guests enter via bronze
gates to discover a palace of shimmering tiles,
hand-carved cedarwood and intricate ceiling
lamps. A verdant oasis in the city, the riads

Describe what your typical day onboard would
be like and why you enjoy your job?
I oversee a team of 31 crew onboard and am
responsible for all their training, scheduling
and general wellbeing. I’m also responsible for
producing the activities for ‘Daily Passages’.
The best part of my job is the amount of social
time I get with crew and guests. I have to be a bit
of everything; a manager, a friend, a confidant...
whatever the situation demands.
When you are not at sea, what do you like to do?
Outside of Regent my passion is bowling! I’m an
avid bowler and have been for many years.
I have played in competitions for both country
and the city.
Is there anywhere you have not visited that is
on your ‘bucket list’?
I would really like to do a luxury small ship cruise
in French Polynesia and cannot wait to have the
opportunity to see some of Asia and Australia.
Is there one memorable moment that has really
stayed with you?
From dinner and entertainment in the desert
of Namibia, to dog sledding in the snowy
mountains of Alaska, and a panoramic helicopter
tour of Rio de Janeiro, in this job I have had many
great experiences.
Recently however, I was given the fantastic
opportunity to escort a small group of guests for
three days to Machu Picchu, Peru. Wow - it was
absolutely breathtaking. Our hotel in Cusco stood
at 11,800 feet above sea level and Machu Picchu
at over 8,000 feet high. The scenery, the history
and for the most part, the weather was incredible.
From the flights, the hotel, the professional and
knowledgeable tour guide and the friendliness of
the locals, it is an experience I will never forget
and will surely stay with me forever.

These clients are big fans of Rod
Stewart and wanted to arrange their
trip to glitzy Las Vegas around the
concert. I ensured they had two
premier, front row orchestra tickets
to the show at The Colosseum at
Caesar’s Palace and arranged for
them to be delivered to The Bellagio
where they were staying. We can
arrange tickets to see a range of
shows in Las Vegas, including the
Blue Man Group, Celine Dion and
Cirque du Soleil.
PRIVATE SKI
INSTRUCTORS
A family booked their first skiing trip
with us, as the children had never
been on skis before and the parents
were a little rusty, I arranged lessons
for them. They had a group family
lesson for their first day and some
further lessons for the children on
the beginners slope. Their private ski
instructor met them at their hotel at
a time that suited and took them to
the slopes, also explaining the plan
for the week and how he would help
to hone their skills and achieve their
skiing goals.
ICE DRIVING IN VAL D’ISERE
During a long weekend, a large group wanted an afternoon away from the
slopes. I suggested the Val d’Isère ice driving experience - they just couldn’t
resist. Ice driving is a thrilling winter sport that can be taught in some of the
world’s most stylish sports cars. I arranged for instructors to teach the group
how to push their driving skills to the limit and help them learn new techniques;
the BMW’s used for the ice driving are equipped with specialised studded tyres
to ensure they had fun sliding across the ice whilst staying in control.
