To secure fresh and healthy ingredients for each crew, we strive for traceability and have developed stringent quality procedures when sourcing and selecting our suppliers. Seven Seas follows international food standards and is certified globally in quality and environment management according to ISO 9001:2008 and ISO 14001:2004 by Bureau Veritas. As part of ISO 22000, all of our main hubs have adopted our Hazard Analysis Critical Control Point program (HACCP). This comprehensive program ensures the risks and hazards associated with food safety, freshness and quality are systematically evaluated and appropriately controlled along the entire supply chain. This applies from the product source to delivery to the end customer, whether you are on a vessel or on an offshore rig. QUALITY ENVIRONMENT EMS Seven Seas The welfare of your crew is our top priority. Our procedures ensure that the highest levels of safety management are adopted by our personnel every day, 365 days a year. Identify, prevent, correct As part of HACCP, Critical Control Points (CCPs) and general Control Points (CPs) have been identified that require specific controls and monitoring procedures to be applied. These are essential to prevent, reduce and/or eliminate food safety hazards to acceptable limits. Hazard identification, prevention, monitoring and corrective action procedures are in place at all points along the process, to track and secure our products. We distribute all food items from our own warehouses. None of the products are manufactured or modified in our facilities. Everything arrives at our warehouses packed. We then pick and distribute the products according to the HACCP guidelines. MAXIMIZING FOOD SAFETY 06 COMMITMENT TO OUR HACCP PROGRAM ENSURES CONTROL OF FOOD SAFETY, FRESHNESS AND QUALITY The HACCP program includes the following major stages and controls: Receipt of goods from suppliers Storage in chillers/freezers Picking and dispatch of products When products are received at our warehouse, they undergo a strict inspection procedure. Potential hazards, such as contamination, incorrect temperatures, incorrect expiry dates, documentation errors etc are identified and dealt with by fully trained staff. We also conduct regular audits of our suppliers. We have stringently implemented temperature controls throughout our facilities to ensure maintenance of the cold chain at all points. Potential hazards are identified, prevented and issues resolved by trained staff on a daily basis. Temperature control is verified. Fully trained staff members ensure appropriate handling practices are followed. Products are dispatched only when they pass our strict conformance criteria. Specific quality guidelines and standards for individual product categories and items are required from all our suppliers. Quality standards UNECE standards for carcasses and cuts All our frozen meat products comply with local health regulations. We insist on full traceability and have a product recall program in place according to ISO 22000. All our frozen meat is stored at minimum -20 ˚C and our labeling is in compliance with the standard for pre-packaged food, CX-STAN 001 1991. Boxes do not exceed 25 kg. All our products are supplied according to UNECE specifications and guidelines. These standards set up an international language for meat carcasses and cuts for human consumption. They have strict requirements for the origins of the meat and for the nature of the types of cuts available. The standards also set guidelines for refrigeration requirements, traceability of the items through all stages of production, feeding systems, slaughter systems, packaging, labeling, storage and transport. How to store meat and poultry Keep meat and poultry in its original packaging in the refrigerator. To freeze, slip the packaging into a resealable freezer bag. If you’re freezing for several months, it’s best to wrap pieces individually in plastic before bagging; this will make them less vulnerable to freezer burn. Another way to cut the risk of freezer burn is to buy vacuum-packed meats and poultry. Quality standards All our frozen seafood complies with the UNECE specifications and guidelines according to CX-STAN 165 Rev1 1995 and CX-STAN 092 Rev1 1995. We insist on full traceability and have a product recall program in place as per ISO 22000. All our frozen seafood is stored at -20°C, processed according to RCP 16 1978 and our labeling is in compliance with the standard for pre-packaged food, CX-STAN 001 1991. Seafood from sustainable local sources is always our priority, when available. How to store seafood Leave seafood in its original packaging and, if possible, place on a bowl of ice in the refrigerator. However, live shellfish (like clams) should not be put on ice; open or poke holes in the packaging. To freeze seafood, slip the original packaging into a resealable freezer bag. Freezing and defrosting It is safe to freeze fish as long as you: • Freeze it before the use-by date • Make sure the meat is properly wrapped in the freezer or it might get freezer burn, which will make it tough and inedible Re-freezing Never re-freeze fish that has been defrosted. EMS Seven Seas • Date and label meat in the freezer and eat it within 24 hours of defrosting. Do not keep food in a freezer indefinitely. Labeling and packaging is in compliance with CX-SAN 001 1991. How to store dairy products These items should be kept in the refrigerator, though cheeses benefit from a little extra care. Place soft ones, like Brie and mozzarella, in an airtight container once open. Wrap semi-hard and hard cheeses, once open, in wax or parchment paper, then stow in a resealable plastic bag. Both milk and yogurt can be frozen: just transfer them into freezer containers or freezer proof glass jars, leaving 1 inch of space at the top to allow for expansion; once thawed, mix to redistribute the solids. Quality standards All our fresh fruit and vegetables comply with the applicable UNECE specifications and guidelines. How to store fresh fruit and vegetables Almost all fresh fruit and vegetables may be stored in the refrigerator except for bananas, tomatoes, potatoes, lemons, and limes. These items should be kept in a cool, dry area, but will experience undesirable changes if kept at too cold a temperature. Garlic and onions should also be kept at room temperature (or cooler) in a well-ventilated area. Certain fruits produce ethylene, a gas that speeds up the ripening process. To reduce unnecessary spoilage of your produce, do not store ethylene producing fruits and vegetables with those that are sensitive to it. A complete list of such products is available upon request. Tomatoes are very delicate and should be stored unwashed and always at room temperature. Any refrigeration will give them an unpleasant mealy texture and kill the flavours and aroma. Eggplant has a short fresh lifespan and should be used within a couple days of purchase and stored in a cool area. Asparagus should be stored in the refrigerator with a moist paper towel around the stems or can be placed upright in a glass of cold water with a damp paper towel wrapped around the tops to keep them crisp; they'll still only be at their peak for a day or two. Mushrooms can be kept in a cool, dry place and should only be washed directly before use. There are several ways to keep herbs fresh longer: wash them before they go in the fridge, dry them well, cut off the ends, and put them in a glass of water like a little bunch of flowers. You can cover the tops with a plastic bag or damp paper towel to lock the moisture in. You can also store washed and dried herbs in a plastic bag along with a paper towel which will absorb extra moisture and make the environment more humid.
