Pasta all’Amatriciana (Spaghetti with Bacon and Tomato)
centuries old, Roman dish called Pasta alla Gricia, a dish of pasta dressed only with bacon and pecorino
cheese. For centuries, it has been made not on in Rome, but all over central Italy, by adding tomato it has
creatied what we today call Amatriciana.
