A Big Texas thank you to everyone for the warm welcome, I’m thrilled to be a part of the Cliffs Family.
It has been a great summer for business, and we are thankful to our membership for the continued support,
heading into our fall season. I have heard some great comments about the Golf Course and Menu changes in the
Grill, please let us know how we are doing I’m a believer in creating a Hospitality culture for Membership, and
our Team, this will make for a great place to work and live. I have already begun to feel it as I’m around the
property. I will keep you updated on future upgrades, and thanks again for the best wishes.

From The Spa
Thanks to all who visited us and helped us make it a great summer for 2016! This summer marked the 10th
year the Spa has been open and we welcomed many new guests along with some who have become friends
over the last several years. We welcomed back Aggie Fernandes who helped us with massages, but sadly, he
was only able to be with us for the summer. A fun service we have added is MOOD EFFECT nails! These nails
are one color when your hands are warm, and a different color when your hands get cold! If you have long
nails, the nail bed will be one color while the tip will morph into another color! We have several colors available
for fall, so come check them out! The Spa remains open Thursday through Saturday, 9am-5pm and Sunday,
9am-12pm. And while we always welcome walk-ins, to ensure you get the services you want at the times that
best fit your schedule, we can certainly schedule appointments in advance. Please contact us at 940-779-4570

Ship Store
The Ship store will continue to operate on the weekends until October, weather permitting. However, if a
reservation was to be made during the week then we would be more than happy to accommodate you.
Take advantage of our rentals now; before you know it they will be taken out of the water and stored for
the winter months. As a reminder to our marina tenants, please remember that the water will be turned
off at the marina if we happen to have a freeze. If you decide to turn the water back on, please make sure
you don’t forget to turn it off again. If anyone has any problems or concerns, please call us at the ship store

From the Chef
A huge thanks to everyone that came out to the Grill this spring and summer. As the seasons change for the
colder months, I find myself refocusing our cuisine to complement the new weather. Be sure to look for new fall
and winter menu items in October, I assure you we are cooking up something special. In the meantime, here is
a favorite soup of mine that will surely please! As a reminder, the last Seafood buffet of will be October 1st and
don’t forget to book early for our Thanksgiving Day Feast.
Executive Chef Todd Artigue
Champagne Chicken Soup (makes 10-12 servings)
Ingredients:
3 Tbsps. Olive oil
3 Carrots (peeled)
1 head Celery
1 Yellow onion
2-3 lbs. Chicken Breast
1 bottle Champagne
2 Tbsp Salt and Pepper
2 Qt. Chicken stock
1 Qt. Heavy whipping cream
4 Tbsps. Butter
1½ Cups Flour
Directions
• Boil chicken 15-20 minutes until cooked through, set aside to cool. Once cooled, cut into ½ inch pieces and set aside.
• Make a roux by melting the butter in a small saucepan over medium heat. Once melted slowly add flour while
stirring constantly. Cook for a minute or two (stirring constantly) then take it off the heat and set aside.
• Dice the carrots, celery and onions into ¼ inch pieces.
• In a large pot add olive oil and half of your celery, carrot, and onion mix and cook until soft.
• Add champagne and reduce by half.
• Add the heavy whipping cream and chicken stock and bring to a boil.
• When boiling add your roux to thickness desired. Add chicken and cook for 7-10 minutes.
• Once desired thickness is attained add the remaining vegetables and cook for additional 10 min.
Golf Shop
Find a friend and team up for our 2-person, par 3, scramble golf event. Every hole will be set up to be played as a par
3 hole from 80 to 170 yards. Each player must have an official and verified handicap to compete. The USGA
recommended 2 person scramble handicapping method will be used to level the playing field. Men, women, property
owners and guests alike are invited to participate. All players must sign up with The Cliffs Resort Pro Shop 940-779-4520

Fill a foursome and compete in the 4-person shamble golf tournament Saturday, November 5th. Each player on the
team hits a tee ball; team members then play their own ball through the hole from the selected drive. Each player must
have an official and verified handicap to compete. Players will receive 50% of their handicap as the team counts the
one best net score of their foursome as the team’s score. Men, women, property owners and guests alike are invited to
participate. All players must sign up with The Cliffs Resort Pro Shop 940-779-4520.

Monthly Skins Game
Be sure to join us on the second Sunday of each month for our monthly skins game. Normal greens fees apply in addition
to the skins game entry fee of $20 per person. Play will begin promptly on the first tee at 1:00 and all competitors must
sign up with the pro shop no later than 12:30 on competition day. All groups will be paired at random by the Golf Shop
without exception. If no skins are claimed, prize money will be carried over to the next month’s event. Players must have
a USGA handicap to participate. GHIN handicapping services are available at the Cliffs Resort for an annual fee of $25.
Why do we cover the Greens?
When the temperature hits sub 30° numbers, the vegetation on the putting surfaces becomes extremely
susceptible to damage and even death. Because of the extremely short height of the grass on the putting
surfaces, extreme cold damages the blade and root structure. When you add strong winds to the mix, the plant can
literally be blown out of the ground. When we cover the greens, we have to act quickly. It takes between 8 and 10 hours
to cover all 20 greens (nursery and practice greens included). It is also quite dangerous trying to control a huge tarp on a
cliff’s edge like many of our greens have. This process can definitely ruin some golfing plans but it is absolutely necessary.
We do appreciate everyone’s understanding and support as we continue to take care of the golf course.
Cliffs Resort Golf Policies
Golf Carts: Please be aware that when five-somes are allowed to play (Mondays, Wednesdays, and Thursdays) groups
are limited to the use of 3 carts. When four-somes are allowed to play (Fridays, Saturdays, and Sundays) groups are
limited to the use of 2 carts.
Dress Code: The Cliffs Resort golf facility is a NO denim facility. This policy includes the driving range. Anyone seeking to
use the practice facilities or spend time on the golf course must wear proper golf attire. We understand that the resort
can, at times present an interesting dichotomy when visiting both the lake and the golf club in the same day in the
summer and that denim is a warm winter item, but we feel that the golf facility should present and maintain a certain
image for guests and Property Owners alike. Your state of dress directly reflects that image and we appreciate your help
and attention to this matter. Please make sure to pass along this information to any guests and family members seeking
to use the golf facilities.
Alcohol: The Cliffs Resort Golf Facility is licensed as a private club and therefore cannot permit alcoholic beverages to be
brought onto the golf course. This policy will be strictly enforced! Persons bringing their own alcoholic beverages onto the
golf course will be asked to surrender those beverages until the conclusion of their round at which time they may retrieve
them from the golf shop. If a person is unwilling to surrender their alcoholic beverages, they will be asked to leave the
premises without a refund.
