Hollandaise Sauce
To make 1 quart:
6 Egg yolks
1.5 lb. butter, melted
.25 oz. salt
Pinch white pepper
3 T. white wine vinegar
4 T. water, divided
Juice of 1 lemon +/Combine vinegar, 3 tablespoons water, salt & pepper. Reduce
by 3/4. Place reduction into a bowl and add 1 tablespoon cold
water and egg yolks. Beat yolks over simmering water until
thickened to the consistency of cream. Remove from heat and
blend in butter, stirring briskly. Add lemon juice to taste and to
correct thickness.
