SPEYSIDE
While other regions might have their trademark
flavours, Speyside is tougher to pin down.
Many whiskies from this area are light and sweet
– perfect for charming both newcomers and
veterans – while others thump the palate with
deep, powerful flavours.
The most pure expression of whisky, a ‘single malt’ is made at one particular
distillery using only malted barley. The result is a drink that uniquely captures
the land, climate, ingredients and craftsmanship that effected its creation.
Here we profile a range of whiskies from three of Scotland’s most famous regions.
HIGHLANDS
As the nation’s biggest whisky-producing region,
the Highlands stretches over much of Scotland.
With distilleries dotted all around the region,
it also produces the largest variety of whiskies.
ISLAY
Islay’s whiskies owe their reputation (and their
intensity) to peat. A decayed vegetation, peat is
used to fuel the fires that dry the malted barley
used in Islay whiskies. Adding to this intensity is
the coarse sea air, which imbues the peat with salt,
seaweed and iodine flavours.
With over 40 distilleries within its borders, Speyside
is home to around 50% of Scotland’s distilleries.
From coastal areas that excel in dry, peaty and
salty, through to fruit-tinged whiskies from distilleries
sheltered from the coastal winds, the Highlands has
something for every whisky palate.

IRELAND
NORTH AMERICA
While Scotland might be regarded as
the home of whisky, no aficionado would
discount Ireland. What it might lack in
numbers (Ireland only boasts four distilleries
compared with Scotland’s 90-odd), the
Emerald Isle makes up for in rich heritage
and rich whiskey.
AUSTRALIA & NZ
While Australia and New Zealand have
been producing whisky for hundreds of
years, it’s only since the 1990s that the local
drops have truly impressed. Since then, both
countries have slowly garnered award show
acclaim for their whiskies, which draw on
unique climates and individual methods.
The distilled product of fermented corn, barley and rye, the United States’ whiskey output is
primarily split into two categories, Tennessee whiskey and Kentucky whiskey, each with
stringent requirements on aging, ingredients and processes used in its making. In addition
to these two varieties is Rye whiskey, which must be made with at least 51% rye.
Much like the US, Canadian whisky distilleries endured a prohibition era. Fortunately, their
lesser-known ban only lasted from 1918 to 1920, allowing the country’s rye-rich whiskies
to continue impressing the world.
