Easy to bake for children
and the young at heart,
these biscuits also make
fun tree decorations.
Ingredients
Perfect roast
potatoes
To get that perfect tray
of sizzling, golden, crispy
roasties, we recommend
parboiling the potatoes for 5
minutes and drain. Put them
back in the pot and sprinkle
with semolina and olive oil
(freshly ground pepper and
herbs, if you fancy), giving
them a good shake and bash
in the pot to fuzzy the potato
edges, which will enhance the
crunch factor later.
Place the potatoes on a hot
oiled tray and into a really
hot oven and roast, turning
them once until you get that
gorgeous crunchy crust.
Heavenly!
350g Plain flour
1 tsp Bicarbonate of soda
½ tsp Salt
2 tsp Ground ginger
100g Butter
175g Soft brown sugar
1 Free-range egg, beaten
4 tbsp Golden syrup
A packet of wrapped fruit
flavoured boiled sweets in
different colours
Crush the sweets in their wrappers
using a rolling pin.
Roll out the dough on a floured
work surface to about 0.5cm thick.
Cut out festive shapes and transfer
to a baking tray lined with baking
paper. Cut out shapes in the centre
of each biscuit, leaving a good
edge all around the biscuit and
completely fill the hole in each
biscuit with crushed sweets.
Bake in the oven for 10-12 mins, or
until golden-brown. Once cooked,
do not remove the biscuits from
the baking tray until the boiled
sweets have cooled and hardened.
Preheat the oven to 180C/Gas 4
Mix the flour, bicarbonate
of soda, salt and ginger in a
bowl. Rub in the butter until it
resembles fine breadcrumbs,
then stir in the sugar.
In another bowl, beat together
the egg and golden syrup, then
pour this mixture into the flour
mixture and knead lightly with
your hands until it becomes a
smooth dough.
Chocolate & Baileys cheesecake
Ingredients
100g Butter, melted
250g Digestive biscuits, crushed
600g Philadelphia cream cheese
25ml Baileys or Giffard Irish syrup
100ml Icing sugar
300ml Double cream, whipped
100g Grated chocolate
For the BASE, mix the crushed
biscuits into the melted butter
until completed absorbed.
Press into a lined 18cm
spring bottomed tin. Set in
the fridge for 1 hour.

the whipped cream and grated
chocolate until smooth. Spread

Set for 2 hours in the fridge.

The Blue Hole
The Islands
30 minutes jeep ride from
Dahab, the Blue Hole is
a 70m diameter sinkhole
in a reef table that drops
to 90m. A ‘must dive’
destination for freedivers
and scuba divers alike,
the Blue Hole has several
wall dives with varying
degrees of difficulty.
This is truly divers’ heaven!
10 minutes drive from
Dahab, the Islands is
suitable for all scuba divers.
However, it’s the notorious Arch –
a 26m long tunnel that connects
the Blue Hole and open water
at around 55m - that gives the
Blue Hole its sinister title of the
‘World’s Most Dangerous Dive Site’.
Extremely challenging, this is
one for the Tech diver, as you’re
diving way beyond the 40m PADI
recreational diving limit. Without
the appropriate equipment, the
‘drunken’ effects of nitrogen
narcosis would be significant
when diving to these depths. Also,
finding the entrance to the Arch
can be tricky – miss it and there’s
a bottomless drop off into the
inky blue abyss…
Unfortunately, too many
experienced divers up for a
challenge have pushed the limits
and paid the ultimate price.
Two coral islands create a stunning
labyrinth of hard corals to explore
and three pools of intriguing marine
life to ogle at. With a maximum
depth of 16m, the fantastic light
conditions make this dive all the
more spectacular.
The Bells
70m north of the Blue
Hole, you enter the
Bells dive site at a small
natural crack in the reef
and descend through an
impressive ‘chimney’.
Leaving the chimney at approx.
30m, you drift back towards the
Blue Hole taking in beautiful
displays of coral and fascinating
fish, eventually ascending to enter
the Blue Hole via a pretty coral
garden teeming with life and
bursting with colour.

eco gift wrapper
Every Christmas, all round the world, tons and tons of
wrapping paper is used once, ripped off presents and
then discarded without a second thought; even if you
wanted to, the bright inks and dyes make it difficult to
recycle. So, here are a few ways you can go green this
Christmas … or in fact for any birthday or anniversary.

magazines to wrap your
presents – just like your
grandparents did during
the War!
Plain brown paper may not
sound exciting, but, apart
from being biodegradable,
it’s incredibly easy to
decorate and personalise.
Arabic newspapers make for a
more exotic look if you’re sending
presents from Egypt. Although
you may need to spray on some
form of fixative to make sure the
newspaper ink stays put.
Festive fabric
It doesn’t always have
to be paper! Fabric gift
wrap can be used again
and again in the same
household; there is little
to no waste and fabric is
much sturdier than paper.
Try making reusable gift bags –
put your gift inside and tie off
the top with a recycled ribbon.
You could even make the gift part
of the wrapping by using a tea
towel to wrap up a cookery book,
or a scarf around a jewellery box.

Why not try using wrapped
sweets or toffees as gift
box filler - much more tasty
than polystyrene chips!
Use rubber stamps, potato prints,
get the children to draw their own
designs, cover with hand prints

What style is best for you?
Yoga has been practiced for thousands of years and
there’s no disputing that regularly practicing yoga is
immensely beneficial to your overall health and
well being.
The science of yoga incorporates ancient theories and practices concerning
the connection of mind and body, which is now being proven by modern
medicine. Extensive research has been carried out looking at the elements
encompassed when practicing yoga - that is postures, breathing and
meditation –and the many health benefits they provide, both
physiological, psychological and biochemical.
Hatha yoga
Pronounced ‘hah-ta’,
(from Sanskrit ha meaning
sun and tha meaning
moon), this is the style
that most people associate
with the word ‘yoga’.
Generally, Hatha classes are more
gentle, allowing you to gradually
develop flexibility and strength,
and gain a sense of relaxation
through a combination of postures,
breathing exercises and sometimes
meditation.
Hatha yoga is an excellent choice
for the complete beginner to
ease themselves into the life
enhancing science of yoga. But if
you find this style too slow and
meditative, try Vinyasa Flow for a
completely different experience.
There are many different
styles of yoga to choose
from, where no one style
is better than another. And
just to confuse matters
further, the names of
all the yoga styles are
often Sanskrit – the main
language of the yoga
tradition. So, which one is
going to suit you best?
Essentially, practicing any
style of yoga you will increase
flexibility, gain strength and
balance and improve posture,
as well as relax, refocus and
achieve a sense of inner calm.
Certain yoga styles are more
strenuous, where you work up
a real sweat, others are more
gentle ... you could even do
it in the nude, if that’s your
thing!

each of these yoga styles entail
to help you decide which style

Vinyasa Flow
As the name suggests,
Vinyasa Flow yoga is a
graceful, continuous,
flowing stream of motion,
connecting various poses,
linking movement and
breath.
The flow of one pose to the next
is stimulated when you inhale
or exhale a breath, therefore
connecting mind and body.
Vinyasa Flow yoga is dynamic
and powerful. If practiced every
day, you will certainly notice an
increase of stamina and endurance
as your muscles stretch and
strengthen. At the same time,
increased blood flow carries more
oxygen to revitalize essential
organs, enabling your body to
heal itself.
Vinyasa Flow yoga classes can
vary in intensity and content,
depending on the style of the
teacher, so if you enjoy variety
and movement, Vinyasa Flow
could be the one for you.
