EVOLUTION
The future always starts now! Those who want to invest in a roll line
should base the decision on three fundamental requirements:
Requirement 1 The new system must completely cover the current requirements. The current roll
assortment – all varieties, and the daily production volumes – must be easily produced with the line.
And the system must have capacity reserves.
Requirement 2 The new system must define state of the art technology. It must optimise the space
used, process all doughs, optimise the hourly capacity and especially the energy consumption.
Requirement 3 The new system must be adaptable in all respects. You must have the possibility to
increase capacity or install additional modules to produce new varieties, in order to react to changing
market conditions at anytime, quickly and with calculable effort.
Our response to these requirements is EVOLUTION, a modular system concept for today and for the
future – extremely flexible, high capacity whilst being energy-efficient, in a compact version or in line.

EVOLUTION
Kemper – has been developing, manufacturing and installing machinery and systems
for bakery production since 1898. Today we are one of the worldwide leading manufacturers of intelligent solutions for dough production and processing. Within the
WP BAKERYGROUP we are in charge of the product ranges, „Mixing“ and “Roll lines”.
Our product portfolio includes mixers, mixing systems, dough conveying systems,
dough dividing & roundmoulding machines as well as Roll Lines.
We deliver technical solutions that meet the highest standards. Together with our
clients, we develop concepts that meet the requirements of the markets and set the
trends for the industry‘s future – for Craft bakeries, as well as Industrial production.
EVOLUTION – the name of this roll line concept is it’s programme, it is the response
to the continuous evolution of the market and the requirement to be able to respond
quickly and profitably.
EVOLUTION roll lines are for innovative bakeries, with a strategy for growth, which
requires a high degree of flexibility and spontaneous response to expansion opportunities. For bakeries with high quality standards combined with high capacity and for
large and industrial bakeries.
EVOLUTION roll lines are modular systems in two versions: EVOLUTION COMPACT for a
divided intermediate proof (e.g., slit rolls), and maximum capacity in the smallest area,
EVOLUTION LINE for a complete intermediate proof with an openly accessible means of
production.

Modular Roll Line Concept
EVOLUTION COMPACT is our modular roll line concept. Every roll known to us can be processed
with this system, with every dough, in every process, in weight from 25 – 140 g, in a capacity of
9.000 – 24.000 pcs/hr. And we have designed in such a way that it is possible to expand for the
production of new rolls or increasing the hourly capacity.
EVOLUTION COMPACT
– for products that need a second intermediate proof after longmoulding
(e.g., slit rolls)
– enables a high degree of product and production flexibility
in the smallest area.

EVOLUTION COMPACT the drive frame, intermediate proofer with switch box,
the system can be equipped with a wide range of modules, tailored to the
required production parameters. EMKA doors with seal rim make the individual
module sections of the profile frame easily accessible.

BASE MODULE
Drive frame, Intermediate proofer with switch box
The intermediate proofer is for resting the roundmoulded dough pieces. It can be equipped
with a steam generator system. The proofing frames are designed to take into consideration
the different hygiene requirements for the dough that is to be processed.
It can also be equipped with a bypass for green doughs.

– EMKA doors As the sliding widows are more dirt and climate sensitive, we use
EMKA swing doors with sealing rim. They allow better access and have no dirt traps.
– Drive chain We use maintenance-free chain drive chains with inserts made of special
plastic that repels any possible humidity, and as always maintenance-free sprockets.
– Proofing frames The plastic frames ensure, through the gauze inserts, that the dough
piece has sufficient ventilation. The risk of condensation build up is under the dough piece,
is minimized.
– Discharge belt We guide the dough piece onto the discharge belt, instead of tipping onto
the belt. This provides a more accurate transfer. In addition to this each discharge belt is
equipped with a press roller to lightly press the dough pieces. This prevents any movement
of the dough pieces during transfer.

MODULE 2. Longmoulding station with upper belt
Longmoulding station consists of
– C onveyor belt

eight-adjustable belt mounted above the conveyor belt and equipped with adjustable speed.
– C orrection device is mounted in front of the longmoulder for aligning the dough pieces
along the length and width before longmoulding
The required moulding channel is adjustable via hand wheels.

– Longmoulding Station with upper belt has the advantage of being able to adjust the speed
and use the belt as a flat pressing station, which is perfect for Hamburgers or Baps. It has the
added advantage that any moisture on the belt has the chance to dry during production.
– Correcting device To ensure that all dough pieces are correctly positioned along both axes before
further processing a centring device is mounted in front of the longmoulding station. A roller device
is used for longmoulded dough pieces
– Drive (Upper belt) Hollow-Shaft drive, (Lower belt) Drum motor.

Longmoulding station consists of

MODULE 3. Stamping station
Stamping station with cups
The stamping station is for the production of stamped products and is equipped with cups to
hold the dough round pieces during stamping. It consists of a cup frame with swivel head
for the stamping tools. For the drive system we use a motor with stepped gear. The swivel
head for the stamping tools is equipped with one stamping tool (Kaiser stamp). Additional
stamping tools are available as an option.

MODULE 4. Stamping on the belt
Stamping station for production of stamped rolls.
The stamping process occurs directly under the stamping tool carrier, on the timing belt
and the system is constructed with an independent drive, interchangeable tool carrier and
a correcting device, to ensure that the dough pieces are in the correct position before the
stamping process. The stamping tool carrier is equipped, as standard, with a stamp for
dinner rolls (Rosett stamper).
Typical Kaiser rolls cannot be produced with this system.

MODULE 5. Cutting station
Cutting station with correcting device
The cutting device for the production of slit rolls is equipped with a linear drive
and triangular knife. It includes a linear correcting device to ensure that all dough
pieces are in the correct position before cutting. A holding device then slightly
presses the dough pieces and they are then cut.

MODULE 6. Seeding station
Seeding station with intermediate belt
Automatic seeding station is for sprinkling seeds onto processed dough pieces. The drive unit
is integrated in the line, and the seeding unit can be wheeled out for cleaning purposes.
The dough pieces are moistened via a height-adjustable water jet. One seeding container is
delivered as standard and these stainless steel containers are interchangeable in the system.

Water column We use a height adjustable water column, mounted under the mesh belt.
This method allows excess water to be drained immediately. This method has hygienic
advantages over a water bath.

Drive through stepped gearbox
Continuous operation for stamping head, which ensures a stable, low wearing operating process. It can be used in Multi-Shift operations.
Kemper EMKA doors:
As sliding windows are susceptible to dirt and heat/humidity loss WP Kemper uses EMKA doors,
hinge mounted with sealing rim. The EMKA doors allow better access and do not have dirt traps.
