februa ry 2010 TOM’S WINE PICK OF THE MONTH : See what Cellar360’s Manager Tom Capo is drinking this month… In February, we turn to things we love about harvest…and who doesn’t love Italy?. Our suave European friends really know how to enjoy the bounty of harvest and enjoy wine and food, so we recommend the Riserva Chianti by Gabbiano this month. In the glass, this wine is a deep ruby red color. The nose is filled with highly complex and intense aromas of wilted violet, red fruits and spicy aromas of black pepper and sweet licorice. The palate is mouth-filling and warm, with the red fruit flavors balanced by round tannins, a fresh acidity and a long finish. #407240 2005 Chianti Classico Riserva DOCG Merchandise of the month: What’s New at Cellar360 this month? $23 Cellar360 Featured Winery of the Month: Castello di Gabbiano – the Bounty of Tuscany In the 12th century, a time when battles r aged between Siena and Flor ence for control of the fruitful Tuscan land, Castello di Gabbiano was constructed in the heart of the Chianti Classico region. The soils there range from limestone and sandstone to clay, and the average elevation is 600-900 feet above sea level. Chianti typically has mild winters and warm summers and receives an average annual rainfall of 25 inches, a climate very similar to the Bordeaux region of France. The unique terroir of the Chianti appellation continually yields high-quality fruit, rich in perfume and body. The Winemaker, Giancarlo Roman, creates wines that reflect the uniqueness of the region. Giancarlo has worked in Tuscany for nearly 30 years and has been associated with Castello di Gabbiano from 1990 to the present. Initially charged with overseeing the preparation of all of the castello’s wines, he now supervises the entire winemaking operation. Small Plates are making a Big Splash in San Francisco Cellar360 is pleased to have added small plates to the bar menu in our Ghirardelli Square location. Customers can now choose some light, fresh appetizer sized portions to go with their wine pairings. And, as a new benefit to Wine Club Members when you visit you’ll receive a free small plate appetizer, standard, every time! Available Fridays and Saturdays, 4-8pm.
