This manual is divided in two sections. The first sections is dedicated to the appliance installation in the workplace, and the second section focuses on oven operation and maintenance. Before operating or using the appliance, read this manual carefully and thoroughly. The manufacturer waives all liability, express or implied, for any possible errors or omissions the manual should contain. - The oven may not be used by personnel who have not received training or who do not have the skills or experience necessary to correctly operate the appliance. Do not allow children to use or play with the appliance. - The owner of the appliance must require that the personnel in charge of use and maintenance read this manual. The owner also must keep this manual in a safe place so that it may be available for reading and consultation by all appliance users. If the appliance is sold to another party, this manual must be delivered with it. - This oven should be used only for the purpose for which it was manufactured: cooking, heating, reheating, or dehydrating food. Any other use of this appliance may be hazardous and result in personal and material damage. - The appliances are shipped from the factory once they are calibrated and have undergone rigorous quality and safety testing to ensure proper functioning. The maximum recommended amount of food per tray in the GN 1/1 model is 5kg and in the GN 2/3 model, 3.5kg. ENGLISH 127 3. GENERAL SECURITY AND ACCIDENT PREVENTION STANDARDS 3.1 Personnel responsible for appliance use The use of the appliance is reserved for trained personnel. The personnel who operate the oven, including use, cleaning, installation, handling, etc., should be familiar with safety standards and usage instructions. Do not allow any unauthorized personnel to use, handle, or clean the appliance. 3.2 Electrical hazard Work on the electrical power source and access to power lines is permitted solely for qualified and authorized personnel. In all instances, the appliance must be disconnected from the power grid before accessing any power lines. If the appliance is placed on top of a cart or on moving tables, do not move while appliance is connected to electrical current so as to avoid damages in the wiring, drainage tubes, or water input tubes. If you want to move or change the position of the appliance, disconnect the cables and the draining and water input tubes. 3.3 Thermal hazard When the appliance is running, open the door slowly and carefully to avoid possible burns from the steam or hot air that may escape the oven chamber. Make sure the ventilation openings are not blocked. Do not install the appliance near flammable products. Avoid placing the oven near heat sources such as stoves, griddles, deep-fryers, etc. Check the safety distances in the Positioning chapter. ACCIDENT HAZARD! Be careful when using cooking vessels in the oven when the top tray is set at 160cm or more from the bottom. You run the risk of injuries caused by hot content from the GN trays. Do not touch the metal or glass parts of the oven while it is running. Temperatures may exceed 60°C. Touch only the door lever and the control panel. 128 3.4 Corrosive materials hazard Take caution and appropriate security measures when handling cleaning products. Always read the security label for the chemical products before using them and following the usage instructions. These products in contact with any part of the body can be abrasive and may result in skin and eye irritations and chemical burns. When cleaning the combi oven, if aerosol or mist result from handling cleaning product containers, use a mask with a P2 / P3 particle filter, safety splash goggles, and chemical protective gloves. RECEIPT, TRANSPORT, AND POSITIONING Before installing, verify the dimensions of the area where the appliance will be installed and verify the electrical and water connections to ensure they are within the parameters indicated in the installation sheet attached in chapter 6. 4.1Receipt Once the oven has been received, check that the model corresponds to the model ordered. Check to ensure that no damage occurred during transport and that no pieces or parts of the appliance are missing. If any abnormality or problem is detected, contact the distributor immediately. 4.2Transport The appliance should be transported with the original packaging until reaching the site closest to the installation area in order to minimize the possibility of damages. It is recommended that the original packaging be kept intact until the appliance is correctly installed and functioning. Lift the oven perpendicular to the ground and transport it parallel to the ground. - Be sure that during transport, it does not overturn or hit any object. 130 4.3Positioning - The oven should be placed at a distance from the wall that allows space for electrical and water connections. Each part of the oven has space requirements so that ventilation and cooling can properly occur. The space requirements are as follows: o 50mm on the left and right sides o 100mm on the back o 500mm on the top - The appliance should be placed on a MyChef support table or a wall support. - If heat sources are close to the appliance (stoves, charcoal grill, grill, deepfryer, etc.), they should be kept at a distance greater than 1 meter. - Once the oven is placed in the workspace, be sure it is level. 50 mm 100 mm 500 mm ENGLISH 50 mm 1000 mm Figure 3. Example of appropriate installation positioning. To install stacked MyChef ovens, follow the instructions provided with the stacking kit. 131 5. INSTALLATION 5.1 Electrical connection Check that the voltage at the point where the oven will be connected is the correct voltage for the the appliance. Before doing any electrical work, be sure that there is no electric current at the appliance connection point. The appliance should be connected to the electrical grid through a multi-pole circuit breaker with a contact gap of 3mm or greater. Also install a type A differential relay and and an overloading protection device. Always ensure that the electrical environment is properly grounded. Connect the appliance to an equipotential bonding system by using the contact gap established expressly for this purpose (see equipotential symbol in the bottom left corner of the appliance). If two appliances are stacked, both should be equipotential bonded. Connection to an equipotential bonding system ensures additional protection in the event of simultaneous earth leakage and differential failure. Wiring and other safety devices used in the electrical installation should have the appropriate length for the appliance involved. At all times, adhere to the current standards for connecting appliances to a low-voltage grid. Before beginning electrical installation, check that the electrical requirements of the oven and the electrical grid supply are the same. After the appliance has been positioned, a proper connection requires a length of wire long enough to reach the connection point plus an additional 20cm in order to connect to the back of the appliance. Remove back panel from appliance. Insert the wire through the stuffing box located in the bottom left section of the oven (from a rear view of the appliance). At the time of installation, all MyChef ovens, with the exception of MyChef 4GN 2/3, can be configured to operate in single-phase or three-phase systems, and at 230VAC or 400VAC. To create a proper connection, use the electrical terminal connectors that are provided with the appliance and follow the instructions in the following subsections. 132 Figure 4. Electrical terminal connectors. Figure 5: Wire input. Never connect a phase to neutral or ground wires. Check that the installation voltage corresponds to the appliance power requirements. In the following subsections, three types of possible connections for MyChef ovens are shown. 133 ENGLISH Once the connection is made, ensure that there are no loose wires and that all wires are firmly secured. Potable water with the following features: - Hardness between 3ºf and 6ºf - pH between 6.5 and 8.5 - Chloride level less than 30ppm Use of water softener and filter required (BRITA Purity Steam 450 recommended) In a new installation, let the water run until the connection is completely cleaned. This process should be repeated each time work or repairs are done on the water system that supplies the oven. 5.2.2Drain Note that the drain pipe must have a minimum constant slope of 5º in order to properly function. Figure 14: Siphon drain installation. 137 ENGLISH In order for the steam system to function properly, the appliance should be connected to a drainage system with a heat-resistant pipe. The drain pipe must have a nominal diameter of 40 mm (DN40). 5.3 Condensation hood The condensation hood is an optional feature. The hood can be installed after the oven is installed. See the installation guide provided with the condensation hood to install. 138 6. START-UP REPORT The individual in charge of oven installation should fill out the installation sheet pursuant to sections 4 and 5 and return it to the manufacturer to activate the warranty. The panel includes displays, buttons, rotating knob, and visual signs. Figure 15: Control panel. The function of each component is explained below: Figure 16: Control panel description. Letter Function Description A Convection button Selects convection mode. B Convection mode light Indicates mode chosen. C Humidity button Selects percentage of humidity. Only active in combination mode. D Humidity display Percentage of humidity in the chamber. E Combined convection and steam button Selects combination mode. F Combination mode light Indicates mode chosen. G Steam button Selects steam mode. H Steam mode light Indicates mode chosen. 140 Letter Function Description I Temperature button Selects temperature. When the oven is running, you can see the temperature by pushing this button. J Temperature light Indicates temperature selection. K Temperature display Desired/actual temperature of the chamber in °C. L Time button Selects time. M Time light Indicates timed cooking selection. N Time/temperature probe display Indicates the time remaining in the program / indicates the desired/actual temperature of the probe. O Fan speed button Selects fan speed. The speed changes each time the button is pressed. There are two speeds: high and low. (Except MyChef 4GN 2/3) Low speed is automatically selected at low temperatures. Fan speed light Indicates if the convection fan is on low speed. If the indicator light is off, the convection fan speed is high. (Except MyChef 4GN 2/3) Q Delta T button Enters Delta T and probe cooking mode. R Delta T light Indicates if the Delta T option is activated. S Temperature probe button Briefly pressing the button selects temperature probe cooking mode. Holding down the button will display the temperature of the probe. T Temperature probe light Indicates temperature probe cooking selection. U Preheat button Allows chamber to be preheated. Preheating occurs at a higher temperature than the temperature set in the desired temperature indicator. V Cooling button Rapidly cools chamber. This mode activates the convection fan and allows the door to be opened to maximize ventilation of the cooking chamber. 141 ENGLISH P Letter Function Description W START/STOP button Starts and stops the oven. If the oven is turned off, hold down the button for two seconds to turn on. If the oven is turned on but not cooking, pressing the button briefly will start the cooking cycle. If the oven is turned on and cooking, pressing the button briefly will stop the cooking cycle. If the oven is turned on but not cooking, hold down the button for two seconds to turn off. X START/STOP light Indicates the state of the oven. If the oven is turned off: Light off = oven not connected to electricity Light blinking every 3 seconds = oven connected to electricity If the oven is turned on: Light off = oven not cooking Light on = oven cooking Light blinking every second = oven cooking and in preheating mode. Y Turning knob Changes various cooking settings, which were previously selected by pressing the appropriate button (temperature, humidity, time, etc.) Z Phase button Selects phase. Immediately after, you may adjust the cooking settings. If the oven is cooking, it is not possible to turn it off by holding down the button for two seconds. You must cancel the cooking by briefly pressing the START/STOP button first. 7.3 Cooking programs There are 99 programs, all with up to 5 cooking phases, that can be edited and recovered according to user preferences. There is also a manual mode that allows you to change the cooking settings (chamber temperature, humidity, time, or probe temperature) without saving them in a program. The oven also comes equipped with a series of default programs for maintenance, reheating and conserving, low-temperature cooking, and cleaning. Description Manual program. Allows you to work with all the capabilities of the oven. When you turn off the oven, none of the settings will be saved. User programs, from 1 to 99. These programs are editable and saved in the internal memory for future recovery and use. Default program for temperature maintenance. Default time-controlled mid-temperature reheating program. After reheating, the temperature will be maintained. Default probe-controlled low-temperature reheating program. After reheating, the temperature will be maintained. Default time-controlled high-temperature reheating program, especially for fried foods. After reheating, the temperature will be maintained. Low-temperature cooking for tough meats. To change the setting, push the button that corresponds to the setting you wish to change and change the value by turning the knob. To leave a program on continuous mode, push the time button and turn the knob counterclockwise until “INF” (infinite) appears on the display. When you change any of the user program settings or default program settings, the manual program will automatically be selected to avoid changing data in the original program. There are various security methods the user should be aware of during use that inhibit abnormal operation of the appliance. - When an error occurs, the appliance will stop and display the error code (see chapter 8). - The oven will not work if the door is open. 144 7.4 Cooking modes There are three cooking modes: convection, combination, and steam. To select a specific mode, press the corresponding button. Figure 17: Cooking modes selectors. The convection mode acts like a forced convection oven without providing or eliminating humidity from the cooking chamber. The combination convection mode can regulate the elimination or provision of humidity in the cooking chamber. To regulate the humidity, push the humidity button and turn the knob to the desired value. Negative values extract humidity, and positive values provide humidity in the cooking chamber. In this mode, the oven automatically increases the temperature that the user selected so that when the oven is opened and food is introduced, the temperature in the chamber is the same as the originally selected temperature. This mode is used just as in the previous mode; select a temperature and cooking time by pushing the button and , and press the preheating for a few seconds. 146 button During the preheating phase, the oven will show this status in the program display: Figure 21: Preheat display. It is possible to cancel preheating and continue with cooking by pushing the button or by opening the oven door. Once the oven reaches the preheating temperature, the user will receive an auditory and visual alert that the oven may be loaded. The temperature differential between the cooking chamber and the food remains constant and matches the value selected in the temperature display. To use this mode, choose a Delta T temperature as well as a food temperature by pushing the the and button, and adjust it with the knob. When you press button, the oven will begin to heat, constantly adapting the chamber temperature, and will stop when the core probe temperature matches the set temperature. When a probe-controlled cooking program is running, the chamber temperature display shows the desired temperature, and the probe display shows the actual food temperature. 7.6 Editing programs You can modify programs 1 to 99 by holding down the button for a few seconds , until you hear a beep and PR appears in the program display. Figure 29: Program button and program display. Then you can change the cooking settings as the previous subsection explained. To save the program, press the button until the program number reappears. To add or delete phases in programs 1 to 99, you must first enter program editing mode. 7.7 Editing phases Phase editing can be done directly in the manual program (---). If you would like to change the phases of any user program (1 to 99), first enter program editing mode (see 7.6). 7.7.1 Navigating between phases To navigate between different phases, briefly press the 150 button. It is possible to add or delete phases to the program during the last phase. 7.7.2 Adding a phase To add a phase, briefly press the button until ADD appears in the program display. This allows you to select different oven trays. The cooking settings for each tray can be changed as specified in the previous subsections. Changing the cooking mode, humidity, temperature, etc, of one tray will affect the rest. Changing the cooking time of one tray WILL NOT affect the rest. button for a few seconds until “---“ To leave multi-time mode, push the (manual program) appears in the program display. 7.9 Start of cooking cycle Once the cooking settings are selected, whether in manual mode or a default program, you can start the cooking cycle. To start the cycle, press the START/STOP button, and the indicator light will turn on. Figure 34: START/STOP button illuminated. 152 7.10 End of cooking cycle When the cooking cycle has finished, the appliance will signal the end visually and with a beep. Specifically: - The chamber light turns on and off for 30 seconds. - Three beeps of 2 seconds each will be heard with 10 seconds in between. - END will appear in the time/probe display until the user ends the cooking cycle. Figure 35: End of cooking cycle signal. To end cooking, push the button. 7.11 Rapid cooling oven is not cooking or cleaning. The convection fan turns on in this mode and the heating element turns off. The fan does not switch off when the door is opened. The fan, along with the open door, can lower the chamber temperature in just a few seconds. To enter rapid cooling mode, push the button for a few seconds. Once this mode is selected, the chamber probe display will continuously show the chamber temperature. To enter rapid cooling mode, briefly push . Be aware that, in this mode, the convection fan runs when the door is open. Take proper precautions. 153 ENGLISH The appliance has a rapid cooling system. This mode may be used as long as the 7.12 Speed selection In any cooking mode, the user may select whichever convection fan speed is appropriate for the task. To select fan speed, push the fan speed button. If the speed light is off, the oven will run with high fan speed. If the speed light is turned on, the oven will run with low fan speed. In order to properly regulate the chamber temperature in certain situations (low temperature, DeltaT, etc.) the oven can automatically select the low fan speed. 7.13Preheating The appliance has a preheating system. This mode is accessible when the oven is not running, and always for time-controlled cooking. To enter preheating mode, push the button for a few seconds. You can find more information about preheating in chapter 7.5.2. 7.14 Setup menu To access the setup menu: - Turn off the oven. - Hold down both the START/STOP button and the rapid cooling button for 3 seconds simultaneously. 154 Navigate between the various setup menu settings by pressing the button and turning the knob. 7.14.0 Series number Displays the electronic control panel series number. Figure 52: HACCPManager. 161 ENGLISH Data can be recovered through the HACCPManager software (optional). The data 7.16NightWatch NightWatch allows the oven to automatically continue cooking after a power outage. This feature is especially useful for unsupervised cooking. This feature will only resume cooking if there is an outage and subsequent recovery of power. This feature must be enabled by the distributor and does not require any intervention by the user. Be sure that all the risks of use are fully understood. When an outage occurs and power is subsequently recovered, the oven will continue the cooking cycle in progress (if there was one) and continue with the same settings that were used before the outage. It also automatically checks the temperature in the cooking chamber. If the temperature is lower than 56ºC, there may be a risk of bacterial contamination. In that case, the oven will continue cooking but will show error 28 when the START/ STOP button is pressed to terminate the cooking cycle. When this occurs, the final user will decide what to do with the food, considering the risks of a possible bacterial contamination. To minimize risk, check the food after the temperature error appears when the cooking cycle resumes or dispose of it (Error 28). This feature does not exist for Multi-time cooking. Use the HACCP data registry to check the cooking cycles. See chapter 7.15. 162 8. ERRORS AND FAILURES Errors may occur while preparing and running any of the oven’s programs due to appliance failure. If appliance failure occurs, “ERR” will appear in the humidity display, and the error number will appear in the temperature display. Figure 53: Example. Error 9. ENGLISH 165 9.MAINTENANCE Before the appliance is handled for maintenance or repair, it should be disconnected from the power supply. If the power line is damaged, it should be replaced by your after-sales service provider or by personnel with similar qualifications in order to avoid risk. 9.1Cleaning Cleaning is one of the most important aspects of appliance maintenance. Parts of the appliance should be cleaned at different regular intervals. The table below displays the frequency with which different parts of the appliance should be cleaned. Before starting any cleaning program, remove trays, racks, grates, probes or other accessories from inside the chamber. 9.2 Cleaning the cooking chamber 9.2.1 Semi-automatic cleaning Use proper protection when using the cleaning processes and when handling cleaning products (see section 3.4). 166 Make sure you have all the necessary materials before starting the semi-automatic cleaning process. This material can be purchased from your regular Distform product distributor. - Cleaning hose - Product cleaning spray gun - Distform DG detergent or equivalent: o Mixture of substances, including: §Potassium hydroxide 10 - <25% not use the cleaning hose to eliminate food particles from the cooking chamber. Remove them beforehand so they do not enter the drain. Do not replace trays or grates during the cleaning process. The oven should be empty during the process to ensure proper cleaning of the appliance. Once the food pieces are removed, the semi-automatic cleaning process may begin. To start the process, select the “CL1” program from the programming section of the control panel and then press the button to start the process. Figure 54: CL1 Cleaning program. 167 ENGLISH Then, manually remove any food pieces and solid remnants inside the chamber. Do Meanwhile, refill the spray gun with Distform DG detergent. After 10 minutes, open the door, spray the chamber with the spray gun, and close the door again. When the appliance is running, open the door slowly and carefully to avoid possible burns from the steam or hot air that may escape the oven chamber. After another 10 minutes, clean the chamber with a cloth that will not damage the chamber. After wiping down the chamber, rinse with the cleaning hose until all the detergent has been rinsed away. Once the cleaning process has ended, dry the chamber interior with a cloth. 9.2.2 Self-cleaning 9.2.2.1 Self-cleaning and rinsing programs The MyChef cleaning program automatically cleans the cooking chamber. The MyChef self-cleaning system has four cleaning programs and one rinsing program. The self-cleaning program is optional and factory-installed. Some ovens cannot support it. The system cannot be installed after the oven has been installed. The self-cleaning programs are only enabled if the oven is equipped with the option. The oven’s self-cleaning system allows the user to clean or rinse the chamber automatically. 168 The table below lists the amounts of detergent and rinse aid used by each program as well as the time needed to run each program. To start the cycle, use the control panel to select a cleaning program according to the level of soiling in the chamber. 169 ENGLISH Before starting any cleaning process, be sure there is enough detergent and rinse aid. When you have selected the program you want, start it with the button for a few seconds. If the oven detects that the temperature within the chamber is too high, it will automatically start the cooling process until the oven reaches a temperature appropriate for the cleaning process. Once the temperature is appropriate, the cleaning program will run. The durations of the self-cleaning programs specified in Table 15 do not take into account a potential cooling in the chamber. Once the self-cleaning process has begun, do not, under any circumstances, open the door. In case of an emergency, you may stop the cleaning process with the button for a few seconds. If the cleaning process has been stopped before automatically finishing, you must repeat the cleaning process or run the rinsing program. The oven will turn off automatically upon termination of the cleaning process. Once you finish any of the cleaning programs, if you notice that detergent or rinse aid remains in the chamber (including behind the fan guard), run the rinse program or do a full rinse of the cooking chamber. If there is a power outage during the cleaning process, an error message (Error 26) will appear on the control panel when the oven turns on again. If this occurs, to remove any remnants of detergent or rinse aid in the chamber, run a rinsing program. Always run a self-cleaning or rinse program when Error 26 appears. Clarification: You must load the product in the pump for the first use of the self-cleaning system. Follow the instruction for clearing the pumps described in section 9.2.2.2. 170 9.2.2.2 Changing cleaning liquids Before every wash or rinse, check that there is enough detergent and/or rinse aid. Pay close attention to when the cleaning liquids run out and need to be changed. On the back of the oven, there is a tag that indicates where each cleaning product tube is connected. Figure 55: Label for rinse aid and detergent connections. Distform recommends the use of its line of oven cleaning products. These products have been formulated especially for MyChef ovens. At all times, follow the established order. • Distform DG detergent or equivalent: o Mixture of substances, including: §Potassium hydroxide 10 - <25% • Distform AB rinse aid or equivalent: o Water mixture, non dangerous ingredients and the following substances: §Alcoholate, polymer 5 -15% §Citric acid 1-5% To change the empty tank, unscrew the lid, and remove the lid with the tube. In the new tank, unscrew the lid, and screw on the lid with the tube from the empty tank. When the liquids have been exchanged, check the circuit and be sure that each tube is in the proper place. Before the first cleaning cycle and after each time the tank is replaced, the pumps should be cleaned out. This ensures that the cleaning cycle is full of liquid and the following cleaning cycle or rinsing cycle will use the proper amount of liquid. 172 In order to clean out the pumps, turn on the oven and activate the rinsing program (see section 9.2.2.1). With the oven door closed, hold down the button for two seconds until detergent is released in the cooking chamber. Likewise, hold down the button for two seconds until rinse aid is released in the cooking chamber. Once the circuits are filled, a rinsing cycle must be done to eliminate the remaining detergent and rinse aid that has spilled in the chamber during the previous process. Always run a rinsing program (RNS) once the self-cleaning pumps have been cleaned out. The program will clean out the detergent and rinse aid remnants that may be left in the cooking chamber. 9.3 Compartment behind exhaust The part that separates the cooking chamber from the fan and heating element can be removed to clean the area. To remove the part, you must remove two screws from the bottom. ENGLISH Figure 58: Exhaust fastening screws. Once it has been removed, begin manual or automatic cleaning (see chapters 9.2.1 y 9.2.2). 173 Exercise extreme caution when cleaning this part of the oven. Leave the door partly open and wait until the chamber fan stops. When you have finished cleaning, fasten the chamber fan exhaust with the two screws. 9.4Seal Once you have finished cleaning the chamber, the cleaning process will continue with the gasket that ensures the airtightness of the chamber. This part of the oven must be clean without any food stuck on it so that it seals the chamber well and does not allow heat or steam to escape when the oven is running. To clean the rubber gasket, you only need a wet cloth and dishwashing liquid. Then rinse the whole area and dry well. Do not remove the seal to clean. The seal should only be removed when it is being replaced. 9.5 Outer shell To clean the outer shell, use a damp cloth and dishwashing liquid or a special cleaner for stainless steel. Then, rinse and dry. To clean the exterior glass on the outside of the door, use glass cleaner and paper towels so as not to scratch the glass. 9.6 Excess water chamber This part allows water that drips from the steam condensation on the interior door to escape through the drain. For this reason, the excess water chamber should be kept clean and clear. Before cleaning, remove any pieces of food that may have fallen. Then, clean with a wet cloth and soap and rinse thoroughly with water. 9.7 Interior-exterior door compartment To clean this compartment, open the exterior door and open the interior door clips to access the chamber between the interior and exterior door. It is recommended that you clean the inside of the exterior glass and the outside of the interior glass with glass cleaner and paper towels. If the inside of the interior glass is not overly dirty, you may clean it the same way the other glass is cleaned. 174 However, if it is dirty, run a semi-automatic or self-cleaning cycle to remove the excess remnants. Once the cleaning has finished, close the interior door and fasten it with the clips. Cleaning the oven with a pressure cleaning equipment is damaging to the appliance and may cause the appliance to break, after which the appliance warranty would no longer be valid. Do not use the manual cleaning hose on the glass door while it is hot. You run the risk of breaking it from thermal shock. Clean the stainless steel shell with a damp cloth and detergent, or a special detergent for stainless steel. Never use cold water to wash the inside of the cooking chamber when the chamber is at a temperature higher than 70ºC. Thermal shock is damaging to the appliance, and the warranty would no longer be valid. 9.8 Owner Liability The owner is responsible for regular maintenance.
