bone marrow transportation program at
UAB. Dr. Pineda provides clinical service
in areas of expertise as well as educating
through academic, institutional and
community projects. But perhaps his most
inspired work has occurred in the kitchen.
Tired of seeing the same full cans of
supplements on daily rounds and
untouched meal trays, Dr. Pineda
founded the non-profit organization
Cooking with Cancer, INC and has
dedicated time and resources to address
patients’ nutritional problems by
creating recipes specifically designed for
patients undergoing chemotherapy and
radiation with the mission “Helping
those afflicted with cancer to enjoy a
better quality of life through good food.”
After finishing his masters in Health
and Science Administration, Dr. Pineda,
a native of Guatemala, enrolled in The
Culinard Institute of Virginia College
and became a chef. Combining his
background in medicine with his interest
in cooking, Dr. Pineda began developing
recipes for patients battling cancer.
Cooking with Cancer is a program designed
specifically for cancer care of those persons
who are afflicted with cancer, care givers of
the patients, and all of those who work in
the healthcare industry. The recipes have
been researched and tested on patients
undergoing chemotherapy and radiation.
Nutrition is so very important in cancer
care but because of the radiation and
chemotherapy regimens and the effect
they can have on a patient’s enjoyment
of the taste and smell of food, it
can also be a problematic aspect of
care that can undermine treatment.
By stimulating the taste buds and
boosting the appetite, Dr. Pineda’s work
with recipes and cooking processes can
improve patient health, and his work can
combat the constipation, diarrhea and
inflammation of the mouth and throat
that are typical side effects of cancer
treatment. Cancer-fighting antioxidants
also figure prominently in his recipes.
Early on Dr. Pineda became interested
in the nutritional challenges of cancer
patients. They would not eat because
food tasted bad to them. But he was able
to find little research or information

American Academy of Facial Plastic Surgery, serving as past president,
and with the International Society of Hair Restoration Surgery where
he also served as past president.
Dr. Rousso is sensitive to patients’ cosmetic concerns. He employs
computer-assisted video imaging during the consultation process so
that patients feel comfortable discussing their cosmetic goals and the
changes they desire. With the help of imaging analysis, a patient can see
the approximate surgical result of the procedure under consideration.
It is unquestionably a helpful service for patients as they contemplate
surgery.
The Rousso Aesthetic Medical Spa is an extension of the Surgery Clinic
that provides assistance to patients with camouflage and cosmetic

available on the actual nutrition of
foods for those on chemotherapy, no
one was addressing the problem of taste.
To help in his research, Dr. Pineda enrolled
in Culinard, the Culinary Institute of
Virginia College. “I explained to them what
I was doing, and they were very supportive,”
he says. The chef/instructors at Culinard, a
cooking school, taught him the techniques
for cooking for people with normal abilities
to taste food, and then changed those recipes
to tailor them for cancer patients. Pineda
graduated from Culinard as a certified chef.
Later, in conjunction with bestselling
cookbook author Edie Hand, Dr. Pineda
published his recipes in book form and
makes them available not only to his
own patients, but to others who take
chemotherapy. And he gives them away
for free through his non-profit foundation
(www.cookingwithcancer.org).
