ALMA - The International School of Italian Cuisine is hosted in the
magnificent 18th-century-Ducal Palace of Colorno, located in a
beautiful Italian-style garden.The school is 10 km from Parma, the
heart of the Italian Food Valley, where also EFSA - the European
Food Safety Authority is located.
This outstanding historical location is equipped with the latest
teaching and cooking facilities to educates chefs, pastry chefs,
sommeliers and F&B managers from all over the world.
It covers over 5.000 mq with: a conference room and an agora
room with kitchens, 7 training classrooms, 4 demo classrooms,
2 pastry labs and 1 sommellerie room fully equipped with A/V
system, a 17th century wine cellar, 1 sensory analysis lab, 1 R&D
kitchen, 1 library with 12.000 culinary books, newspapers and
dvd collections, a central kitchen and 2 restaurants seating 180
guests.

The right course to develop the basic skills required to start a
professional career in the industry of food and beverage.

ADVANCED PASTRY COURSE
For those who want to acquire and improve the fundamentals of
Italian pastry with the teaching and the guidance of great pastry
Chefs.
7 months
BASIC PASTRY TECHNIQUES COURSE
An intensive program focusing on the basic notions, skills and
techniques of Professional Pastry.This course can be preparatory
to access the Advanced Pastry Course.
Attending this course does also facilitate a job placement as
pastry chef assistant in restaurants or pastry labs

COURSES IN ITALIAN LANGUAGE
FOOD & BEVERAGE MANAGER COURSE
A course to acquire professional abilities on a high level in the organization
and management of food costs for hotels and restaurants.
8 months (2 days a week)
ADVANCED COURSE OF SALA & BAR
This intensive, full-time advanced course has been designed to teach the
real Italian Style hospitality so to become Assistant Restaurant & Bar
Manager professional.This course responds to the job market demand
in a concrete and solid way and ease the access to renown national and
international restaurants and hotels.

ADVANCED COURSE OF SOMMELLERIE
A unique course in Italy, aiming at forming professionals in the world
of wine and beverage, such as Sommelier or Brand Ambassador.

MASTER SOMMELIER ALMA-AIS
A course to complete the professional education of a Sommelier,
through a specific program dedicated to wine and beverage
management and communication.

JOINT PROGRAMS BETWEEN ALMA AND
THE PARTNER SCHOOLS
ALMA has developed partnerships with 20 Culinary Schools all
over the world. Together with our partners, we have designed
tailor made courses, called Joint Programs.
The first part of the joint program consists in a course taking
place in the student’s country of origin.
During the second part students arrive in Colorno to start the
residential phase and then, they complete this lifetime experience
with an internship in a renowned Italian restaurant with the
objective to put into practice what they learnt during their course.
This experience gives students the opportunity to deal with
restaurant timings and pressure,to interact with professional Chefs
and specialized operators and to experience the peculiarities of
the regional Italian Cuisine.
