True World Foods has come a long way from its humble beginnings in the
mid-70s when the company – then a modest enterprise known as New York
Fish House – sold fish to passersby on the streets of Brooklyn, New York.
Today, an organization that started out as a modest supplier of fresh seafood
has grown to more than two dozen independent locations throughout North
America. We offer a diverse and wide range of premium products with an Asian
focus, including frozen seafood and non-seafood items, fresh produce, gourmet
meats, dry grocery products, and a full line of restaurant tools, supplies, and
equipment.
With more than 30 years experience and expertise in the wholesale seafood

WHAT MAKES TRUE WORLD FOOD’S TUNA SPECIAL?
To ensure food safety,
we monitor our tuna
from “boat to table” for
complete traceability.
On arrival, the temperature of each
fish is measured & recorded. Any
tuna with a temperature higher
than 40°F is rejected.
Each fish is inspected for proper
temperature, freshness, color,
quality, fat content, odor and
place of origin.
Wearing sanitary gloves is
mandatory when handling fish.
All fresh fish products are iced
down to maintain quality.
Our fresh tuna is very
popular and sought after
by sushi restaurants. We
maintain strict standards
for cleanliness & sanitation
in our tuna processing
rooms.
To prevent cross-contamination,
tuna loins are placed in new,
sanitary cartons and covered
with ice or ice packs.
Storage temperatures
are monitored 24 /7.
During food handling, hands
must be washed & sanitized
regularly. Protective lab coats
& hairnets must be worn.
Our products are carefully packed
and handled with care to maintain
freshness. Every day our fleet of
refrigerated trucks deliver superior
products directly to our customer’s
door.

. Mr. Tadao Kitanaka, True World Foods NY Live Fish Specialist, is the man

Forging Methods
Brands
Honyaki: Superior in strength, sharpness and durability. Its maintenance is difficult as
improper sharpening and cleaning can easily damage it.
Kasumi: Blade forged in two layers - a carbon steel cutting edge and softer iron body for
durability. Its maintenance is easier compared to Honyaki knives. Its prices are also relatively
inexpensive.
Sakai Takayuki (Sakai): A 600 year history in
Sakai, Japan. Produced by elite “Meisters” who
have studied the blade-making techniques used for
samurai swords, they are the strongest, most
durable and exquisite knives available today.
Masamoto: Perhaps the most famous name in
Japanese knives, founded in 1872 in Tokyo, Japan.
Hon-Kasumi: Better quality Kasumi blade, manufactured to a higher standard.
Materials
Tojiro: Niigata, Japan. It pursues “Sharpness.”
While it maintains tradition, it also innovates new
processes like DP.
Blue-2 Steel (Aoniko) / Blue-1 Steel (Aoko): High-carbon steel with added tungsten and
chromium.
Hidemune: Hyogo, Japan. Made by hand from
Aoko steel in an artisan’s shop.
White-2 Steel (Shironiko) / White-1 Steel (Shiroko): High purity and high-carbon steel.
Inox Molybdenum Steel: Special steel containing chrome and molybdenum. It doesn't rust
easily and is very sharp.
Brieto: Made of high-carbon stainless steel with
molybdenum and vanadium. The sub-zero
manufacturing process ensures an extremely hard
and durable blade.
Stainless Steel: Mixed steel containing chrome or nickel. Its special feature is resisting rust.
Damascus Steel: A hot-forged steel used in Middle Eastern sword making from about 1100 to
1700 A.D. Damascus swords were of legendary sharpness and strength.

Delivery Policy
1) Orders must be placed before 11:15pm for
next day delivery.
2) Minimum order from NY branch is:
$150 for Manhattan area.
$250 for out of Manhattan area.
(Minimum order for farther places may be
higher.)
Minimum order for other branches may
differ.
3) Delivery time requests are not
accepted. Customers are supposed to
arrange for someone to be able to receive,
if the delivery arrives at the times you are
closed during the day.
4) Orders are carefully delivered to one
designated receiving area accessible by
hand-truck.
5) At the time of receiving our delivery, you
have to check with our delivery driver if
your merchandise matches the delivery
invoice and sign on the invoice. If not,
please have the driver make a note about it
on the invoice.
6) A Delivery Charge will be applied to each
invoice. For special deliveries, (if a
supervisor approves), an emergency
delivery fee of $25 will be added to the
invoice.
Return Policy
1) Regarding fresh products, you must inform
your sales representative of a fresh product's
defect within 24 hours after the delivery,
otherwise a credit for it will not be issued.
2) Regarding the other products, you must
inform your sales representative of the reason
you would like to return our product within 7
days of invoice date.
3) No credit will be issued for returned products
which were delivered more than 30 days ago.
The products must be unopened and
undamaged.
Other Policies
1) If your check is returned, a $35 bank fee will
be charged to your account.
2) All of our prices are subject to change without
notice.
3) At the time of opening an account, your credit
term is COD (Check on delivery) unless you are
approved for some other term.
4) Customer Service:
Open 9:00am - 4:00pm, Monday - Friday
5) We will close on U.S. national holidays such
as:
New Year’s (January 1st), Memorial Day (in
May), Independence Day (July 4th), Labor Day
(in September), Thanksgiving (in November),
Christmas (December 25th).
