When we launched our exclusive vacation club in October 2010, our members only had
access to 19 resorts in 3 countries. Now, we have approximately 40,000 members from
all over the globe, and we have been able to grow tremendously into several countries.

How many wines do you stock at Secrets The Vine?
And what types of wine do you offer?
We have more than 4,400 bottles in the massive wine cellar housed in the resort’s
lobby. With 300 different labels from 14 countries, our wine list has something for every
palate, including Pinot Grigio, Chardonnay, Barolo, Brunello di Montalcino, Merlot,
Malbec and a great Shiraz from Australia.
What daily activities do you plan for guests?
We offer 3 wine tastings each afternoon based on the wine-pairings on the menus in
all 6 international restaurants on-site, as well as champagne tastings by the pool. The
Sommelier’s table allows me to go a bit deeper with individuals, pairing wine to specific
dishes guests order. We also invite wine personalities and winemakers to special wine-paired dinners.
Any other advice for people who love wine?
Use all 5 senses when you enjoy wine. And be adventurous! Your favorite wine
may be one you haven’t tasted yet.
His 12-year love affair with wine began
with the story of Sassicaia. Considered
the seminal “Super Tuscan” wine, it was
crafted by an Italian Marchese, the
co-owner of one of the world’s most
revered racehorses. “I still tell the same
story to introduce others to the marvelous
world of wine,” Ariel says. We sat down with
the Master Sommelier at Secrets The Vine
Cancun to learn some of his secrets.
FUN FACTS ABOUT WINE & CHAMPAGNE
– It takes around 600 grapes to make just one bottle of wine.
– The best way to keep a glass of wine cool? Use frozen grapes. The skin of the
grape prevents the fruit juice inside from melting and affecting the flavor of the wine.
– The pressure inside a bottle of unopened champagne is around 6 atmospheres.
In layman’s terms, that’s 90 pounds per square inch — roughly the pressure
needed to inflate a tire on a double-decker bus!

3 ounces dark rum
1 1/2 cups mangoes, cubed
3 tablespoons fresh lime juice
1 ounce triple sec
4 teaspoons sugar
2 cups ice cubes
Blend in a blender until smooth.
Pour 1/4 of drink mixture into a glass.
Strawberry Daiquiri (makes 2)
1 ounce light rum
1 ounce strawberry schnapps
1 ounce fresh lime juice
dash grenadine
dash orange juice
2 cups ice cubes
Blend in a blender until smooth.
Pour 1/4 of drink mixture on top of
Mango Daquiri mixture.
