December is my favorite month of the year. The holidays are in
full swing, travel plans have been made and families are uniting
to share holiday traditions.
The scents of the holidays fill the air. I love the smell of a fresh
cut tree, spiced cider and all of the holiday baked goods. My
mom would always make a German chocolate cake. The smell
of the rich condensed milk combined with coconut and pecans
would waft throughout the house on Christmas Eve. She would
put our turkey in the oven around 3 a.m. (I guess waiting up for
Santa), and on Christmas morning, the smells of all of the combinations of delicious foods filled our home. The tree beautifully
decorated housed all of the gifts. I am the last of seven children;
we had a lot of gifts. I now love creating this atmosphere for
our children and grandchildren, knowing that we are making
memories and holiday traditions that will last a lifetime.

Family Members Names:
Eric Rothfus
Lisa Rothfus
Joshua Rothfus (19)
Jacob Rothfus (15)
Eric attended MIT in Boston, MA. I attended Simmons college in Boston, MA, and Simmons School of Social Work for
my masters
Eric and I met in Boston, MA, and got married in Christ
Church Cambridge in Harvard Square. This is the same church
George and Martha Washington attended, and there is a bullet
hole from the revolutionary war in the door of the church.
Street: Coleridge Lane
Pets: Chloe Rothfus – King Charles cavalier
Eric and I have lived in Austin since 1990.
Eric is a venture capitalist working at Alara Capital and is a
mentor for Westlake FTC Robotics team at Westlake. In addition, he is the founder of the Chap Research student group that
is part of the Westlake Robotics team. Eric has been coaching
the boys Destination Imagination teams and Robotics teams for
the last six years.
Joshua is attending the University of Texas and is in the engineering program, majoring in Computer Science. He is a
sophomore, and he currently interns at Gemalto. He was also a
member of the Westlake Robotics team. His dad coached many
of his robotics and Destination Imaginations teams when he
was in junior high and high school.
Jacob is in his first year of high school at Westlake High and
loves all STEM activities (science, technology, engineering and
math). He is on the FTC robotics team that his parents coach,
and has also had his dad and mom coach all of his robotics
teams since fifth grade! Jacob is an accomplished drummer
and has been playing drums for the last five and a half years.
He is in a rock and roll band that has been together for the
last three and a half years called Tech 12. He sings and plays
the drums in his band. He also plays in the Riverbend Church
youth band on Sundays.

and I put ornaments that I have collected from all our travel on
my tree every year. I have collected Christmas decorations from
all over the world. On Christmas Day, we lay out our favorite
breakfast casserole, brown sugar covered Bacon ( Jacob’s favorite)
and fresh chocolate scones. We have all of our family over to
open more gifts in the evening and have sit down Christmas
candlelight dinners usually with 15 to 20 or more people to celebrate Christmas Day. This is always one of our best and favorite days of the year together.
S P O T L I G H T
Lisa is a psychotherapist who has worked with children and
families for the last 29 years and specializes in working with
families going through divorce. Lisa is also a coach for the FTC
robotics team at Westlake high school and has help coach the
boys’ numerous Destination Imagination and robotics teams
over the last six years.
NeighborhoodNews
Eric is from Woodward, Iowa. Lisa was born in Houston, Texas,
and lived most of her early life in Dallas. She attended and graduated from Hockaday School in Dallas. She moved to Boston
when she went to college. Both of the boys were born in Austin.
Without a doubt, this family has spent many hours over the last
seven years dedicated to running and being on Robotics and
Destination Imagination teams. This is our passion and we love
working with students on collaborative teams. We also love to
travel together and have had some of our best adventure on our
RV vacations to national parks and on Backroads Adventure
Travel vacations (a company that does tours for family vacations) to Europe.
We have been on four Backroad adventure family vacations
and feel these have given us some of our greatest family memories together.
• We biked trough the Loire Valley in France, and stayed in a
castle in Dartmoor National park in England.
• Biked and hiked through the Dolomites (Italian Alps) in
Italy, visited Rome, Pompeii and the Amalfi Cost.
• Biked through the Czech Republic and Austria along the
Danube and attended the Salzburg Music festival.
• Sailed, biked, kayaked and hiked in the Dalmatian cost
in Croatia
In addition, we love going on cruises to the Caribbean with
friends and family.
Our favorite restaurants are Lupe’s Tortillas, Kirby Lane, Hula
Hut and Sushi Zushi! We love to attend the Renaissance festivals in Texas every year together. This is one of our favorite
annual activities.
We are not really into sports teams but did attend MineCon
(Minecraft conventions as both of the boys were big Minecraft
players), and a few comicons. Our whole family loves science
fiction movies and TV shows like Firefly, and we are big Star
Trek fans! We have seen every Star Wars movie multiple times
and are eagerly awaiting the new Star Wars movie. In addition,
we love The Big Bang Theory.
We love to listen to some of the old rock and roll bands like
Boston, Queen, Journey and Sticks together, just to name a
few, and the boys like newer bands like Pendulum, Coldplay,
Oasis (“Wonderwall”).
Our favorite family traditions would have to be around Christmas. We always go to Riverbend Church on Christmas Eve
with all of our family for the candlelight service, come back and
eat tamales for Christmas Eve dinner, watch White Christmas
together, and read A Visit from St. Nicholas (The Night Before
Christmas) before going to sleep. I really decorate for Christmas
Eric and I have lived in this neighborhood for 15 years. We
moved here when Jacob was 4-months-old. We completely
redid our house and have added to it over the years. I joined the
neighborhood social committee in 2000, and was the president
of the Social Committee about nine years ago. I used to love to
organize the Halloween, Fourth of July and holiday parties for
the neighborhood.
For relaxation, I love to dance and do Zumba. I also love to sing
and spend time with my family. Eric likes to build and create
new projects. Our 3D printer is always working! Eric loves to
relax watching science fiction movies, The Matrix in particular,
and Jacob and Josh love to play computer games. We also love
to play cards together.
Eric and I volunteer many hours at our children’s schools, helping with their teams and teaching students about collaborative
teams. Eric has developed and run Chap Research, and his
students have even gotten a patent for one of their inventions.
I love to find ways to volunteer with children in various capacities, either at church or at local schools.
My favorite part about living in this neighborhood are all of the
amazing friends I have made over the years.

Here’s What’s Cooking In Rob Roy This Month:
Pimiento And Crab Omelets
By Heidi Muth, resident
Breakfast for dinner or breakfast for breakfast. Either way, this is
something off the cuff to try.
We got to visit great friends in Pensacola, FL, this summer.
We had the pick of the freshest seafood at a market called Joe
Patti’s. Our host is a “foodie” and created this amazing and
different omelet.
Ingredients
• 2 – 3 eggs per person
• Lump crab meat (Central Market, Heb, Costco), drained
• Pimiento cheese (your favorite or make your own),
room temperature
• Splash milk
• Butter for sauté pan
• Fresh parsley or finely diced green onion for garnish
• Salt and pepper to taste
Directions
Whisk eggs with splash of milk, add S&P. Heat omelet pan over
medium-high heat. Add 1 ½-teaspoons butter, add eggs, once
set, flip and add cheese and crab meat. Remove from heat and
cover for about 2 – 3 minutes for cheese to melt and eggs to set
on flip side. Fold in half, garnish and enjoy with your favorite
toasted bread and fruit.

It’s The Most Wonderful Time Of The Year,
Even For Your Home
Festive holiday decorations can range from kitsch to drop-deadgorgeous. If you are trying to achieve the latter, you’re in luck!
We’ve round up a list of design tips to take into consideration
when venturing into turning your home into a winter wonderland this holiday season.
Decorating 101
To begin the decorating process, select a concept; whether more
traditional or out-of-the-box, this is the step where you get to
own the project. Once you’ve gotten an idea of what you want
to do, pick a color palette for uniformity. Then, create a plan. See
what existing items you can reuse, what additional items you
have to purchase and how you can get creative with household
staples. The trick to achieving chic and modern holiday decorations is avoid cluttering spaces, furniture or walls. Arrange the
décor in groupings to achieve a clean look.
Westlake
High School
Ranked Among
Newsweek’s Top
Schools
Westlake High School of the Eanes Independent School
District has been ranked fourth in the state and number 106
nationally by Newsweek magazine, jumping 11 spots from last
year’s 117 national mark. When comparing open-enrollment
comprehensive high schools only, Westlake takes the number
one ranking in the state; the three schools above Westlake are
magnet and charter schools.
Newsweek’s methodology was based on graduation rates, the
number of graduates accepted into college, the number of
advanced placement courses taken, the weighted composite
of SAT and ACT scores, student retention and counselor-tostudent ratio. The college readiness methodology included the
following for Westlake:
Student Retention 105.8 percent
Average ACT Score 27.3
Average SAT Score 1800
SAT/ACT Composite 72.0
Still not sure what direction to take? Here are some of
our favorites:
AP Courses Taken 62.1
Average AP Score 3.42
Dual Enrollment Pct. 0.7 percent
Counselor-Student Ratio 1:323
When compared to historically high-ranking high schools
around the state, Westlake rose to the top above Highland Park
(112), Carroll Senior High (145) and Alamo Heights (407).
Vandegrift (256) and Dripping Springs (480) were local
top performers.
Westlake High School also earned a Gold Star designation
from Newsweek, which recognizes schools in which economically disadvantaged students performed at or above the state
average in language arts and mathematics.
To view the rankings, visit http://www.newsweek.com/topic/
high-schools-2015.
All That Glitters
Forgo the traditional red and green and glam it up! Golddipped accents are all the rage, and since these don’t scream
“Christmas,” you can use them all the way through New Year’s
Eve and even save them for birthday celebrations.
The Gift That Keeps On Giving
Mason jars are the gifts that keeps on giving and a designers
dream! These can be used for pretty much anything from DIY
candle holders to elegant center pieces. Fill them with “snow” or
pine cones, or decorate the outside to create a Rudolph or snowman. Another plus? Kids will love them!
All Wreaths Everything
Like mason jars, wreaths can be extremely versatile decorations, ranging from indoor centerpieces to traditional outdoor
decorations. Get creative with indoor ferns, pepperberries and
golden cedar.
Don’t Forget The Porch!
Bring the Christmas spirit to your front porch! Add a festive
pillow to an outdoor bench or chair, drape a garland along doors
and, of course, light things up with luminaries.
Don’t have time to spruce up your home and have a big gathering coming up? Enlist the help of a professional
interior designer.

Austin Eco Bilingual School
By Phaedra Rogers
Pulling into the Austin Eco Bilingual School, you won’t hear
the usual pandemonium that sometimes accompanies an early
learning school. As you walk through the arched entrance, you’ll
see young children doing what they do best, learning and playing.
But what you’ll hear may be a little bit different. Between the
typical squeals and laughter in a preschool setting, you’ll also hear
background chatter between children and teachers in Spanish and
English, sometimes both occurring within the same sentence. The
school has a peaceful yet joyful vibe to it, and according to Adriana
Rodriguez, Co-Founder and head of the AEBS schools, the vibe is
like that for a reason.
If it’s true that doing what you’re passionate about brings success, then Adriana is a living example of that. Rodriguez’s calm,
warm and nurturing demeanor is the kind most parents pray
for in a school director. But her tone switches to full-throttle
enthusiasm when talking about her school’s successful teaching
philosophy. AEBS is National Association of Young Children
(NAECY) certified, accredited by the International Baccalaureate Foundation and the Reggio Emilia Alliance.
The Austin Eco Bilingual School serves students ages 3-months
to second grade. It’s a perfect synchronicity between educating
and creating strong thinkers. Says Rodriquez, “AEBS’s aim is to
create ethical leaders with a strong sense of civic responsibility,
who will go onto the best universities in the world and become
successful leaders.” That may sound like a lot for an early learning center to aim for, but it seems they’re on the right track.
“We have students who graduate from our school and go on
to excel in whatever school setting they’re placed in, whether
it’s private or public.” Walking through the campus, you’ll see
flags dangling from the ceiling from almost every country in the
world, as well as flags with words like “Kindness,” “Inquires,”
“Knowledgeable,” “Communicators,” “Tolerance” and “Thinkers,” just to name a few. These are visual reminders of the
school’s standards.
The International Baccalaureate
The International Baccalaureate is the foundation of AEBS’s
core structure. There are only three schools in Austin that are
accredited by the prestigious International Baccalaureate, and
AEBS is one of them. IB programs are becoming more and
Rob Roy Living

more sought after because of high success rates for students who
progress through their program.
At the Austin Eco Bilingual School, the IB method is outlined
through the Primary Years Program. PYP focuses on six themes:
who we are, where we are in place and time, how we express
ourselves, how we organize ourselves, how the world works and
sharing the planet.
These themes are the guideline that AEBS follows for their
everyday instruction. Core subjects like math and language arts
are taught through a variety of methods. They have classrooms
and settings where students learn about different facets of the
world they live in. Although students can’t walk in or out of any
classroom anytime they want, there is flexibility on where they
can be within a learning “circuit,” which is to say a specific time
for a specific subject. For example, some children may be more
motivated to learn about math through a tactile approach. There
are rooms where a student can line up rocks and count them
aloud while the teacher makes notes in the student’s portfolio.
Maybe the child will count in Spanish, then switch to English
mid-count. There’s no right or wrong in that scenario, as long as
the student is able to learn the skill.
Through the International Baccalaureate and the Reggio Emilia
approach, the AEBS has the ability to teach their very young
students about global stewardship and environmental responsibility. Hence, the “Eco” in the school’s name. The students
are encouraged on a daily basis to make choices that serve the
planet. And this isn’t teaching just about recycling; it’s about
using things from the earth like flowers, sticks, leaves and dirt as
learning tools.
The Reggio Emilia Approach
If the International Baccalaureate is the what then the Reggio
Emilia is the how. AEBS follows the Reggio Emilia approach
to teaching. In case you were wondering, Reggio Emilia is not
a who, but a where. This teaching approach started after World
War II in the Italian village of Reggio Emilia. Because there
was a great need for educational change after the war, schools
started teaching children with the resources that were available
at the time. This approach to teaching young children makes
teachers, parents and the children themselves stakeholders in
the education process. It’s not the sit, stay, learn approach that
is typical in many early childhood development schools these
days. The foundation focuses on the educational importance of
building a community and free inquiry as its primary values.
“We don’t expect our students to observe and experience what
we’re teaching the exact same way, because none of them are
exactly the same,” says Rodrigues. “Even though they’re too
NeighborhoodNews
19
young to really understand what different learning styles are,
they all benefit from the atmosphere of total inclusion in the
classroom regardless if they have a disability or not. To them
it’s just natural to ask questions and learn through
different modalities.”
The teachers observe and document the daily life of their students. In Reggio-inspired classrooms, teachers use a variety
of documentation methods, such as cameras, tape recorders
and journals to track children’s thoughts and ideas as they play
together or work with materials. For example, each child has
a portfolio binder including photographs of their projects,
quotes from the child, artwork and writing samples. You can
liken it to a narrative of what the child learns at school, noting
that the children take great pride in their portfolios.
Educating The Educators And Putting It All Together
Because the AEBS is structured under the International Baccalaureate and teaches through the Reggio Emilia approach, the
teachers are required to undergo extra education. In addition to
their undergraduate degrees, they have to take specific coursework outlined by both the International Baccalaureate and
Reggio Emilia Foundation. Neither the IB nor Reggio Emilia
will certify a teacher unless he or she has undergone extensive
coursework and exams. Rodriquez goes to Italy regularly to stay
up to date on the Reggio Emilia method, which is something
she feels strongly about.
What’s Next?
Adriana already has two schools under her belt in Austin,
but she has no plans of stopping there. “I’m very excited to
announce that my third school just opened this past July in the
Houston area,” says Rodriguez. The Alianza Eco International
School, which is located in Cypress, Texas, mirrors the same
teaching philosophies as the Austin schools. The reception
has been so positive that Adriana also shared she’s teaming
up with a partner this fall. Vel Murugan, CEO at Velamal
Educational Trust, will be working with Rodriquez to expand
into more Texas markets. “There just aren’t that many schools
that do what we do, and people are starting to rethink how
they want their children to be educated in today’s competitive
global market.”
Keep your eyes out for more from Adriana Rodriquez. If there’s
a shift in the way some parents decide to educate their young
children here in Austin or Houston, there’s a chance she may be
the reason behind it.

Making a
DIFFERENCE
Kids Helping Kids
By Jenny Aghamalian, resident
Each year, the Dell Children’s Trust hosts a special event
designed to teach children about the importance of giving back.
The Children’s Trust Squared event encourages the children of
Trust members to raise money that will be pooled together to
fund special needs at the hospital. This year, the children of Rob
Roy families hosted a bake sale/lemonade stand. Thanks to the
generosity of Rob Roy neighbors, over $300 was raised in one
afternoon! Special recognition goes to Trust Squared members:
Juliet, Leighton and Dash, children of Jenny and
Brandon Aghamalian
Stella, Oliver and June, children of Kristin and Eric Fearday
Sloane and Millicent, children of Megan and Damion Heredia
Mikie and Elle Lustina, children of Jennifer and Don Stevens
Altogether, the Trust Squared event raised over $2,000. The
children had the opportunity to vote on how to allocate their
financial gift. The kids voted for their hard earned money to
fund the following items within the Child Life Department:
First place - $471.64 for pajamas
Second place - $410 for Legos
third place - $330 for tiny containers of bubbles
Fourth place - $290 for action figures
Fifth place - $280 for baby dolls
Sixth place - $220 for play dough
Background:
The Dell Children’s Trust of Central Texas was established in
2008, to nurture the next generation of leaders for Dell Children’s. This philanthropic organization comprises people who
share an interest in pediatric healthcare and are dedicated to
providing leadership through service and collaborative giving
to create direct impact. Departments and programs within Dell
Children’s apply for support and members vote to direct their
pooled funds each spring.

This event was presented by the Women’s Association at Austin Country Club. Two hundred twenty ladies from the Austin

by Wild Orchid Salon and Spa.
Katie Shore, the fiddler from Asleep at the Wheel, an American
country music band based in Austin, performed her new song, “Red

Teresa Windham, owner of Valentines, interjected a vignette

She used a model and her sales assistant from the store to show
how to mix and match clothing in order to travel light — n o

The show featured the current fashions including the latest in

A note about our resident, Kim Francois. This is the third year Kim
has produced the ACC fashion show. She spends many hours coordinating models and retail establishments. Kim and her husband
spend many evenings listing to music together to find the perfect

Save Time To Get More Time In Your Day
By Polly Lines, RN BSN, Certified Holistic Coach
Do you ever get to the end of the day and wonder where all
the time went? You planned to get so much accomplished, but
somehow never even got around to the to-do list! Especially
at this busy time of year, making the most of our time is really
important. Here some time-saving tips to hopefully help you to
be more productive and still have time left to just breathe!
Limit computer time. Most of us are overwhelmed with emails.
Going through them can really be a time-sucker! Instead of
opening each one, scan them and only open the ones that need
to be opened. Commit to how much time you are willing to
spend on it. When you do have time, go through and delete the
ones you don’t need to open at all. Better yet, unsubscribe to the
ones you don’t want to receive instead of continually having to
delete them. Once a week or so, clean up your inbox.

Limit surfing the net. Again, a huge time-waster. This may
require setting a timer. It is really easy to get sucked into
social media sites that have links to other sites. Before you
know it, two hours have gone by and you can’t remember why
you started in the first place. Try to stay focused only on your
original intention.
Plan ahead for dinner. Sometimes the hardest decision of the
day can be “what’s for dinner?” Instead of grabbing whatever
is available, or worse, picking up something from the drivethrough, try this: Once a week, take an hour and plan dinner
for the week. From that, make your grocery list for the week.
Always go to the store with a list. This will keep you from overbuying and save money in the long run. Plus, you won’t end up
throwing out produce you have overbought. You can even make
it fun and have theme nights during the week (ex: vegetarian,
Italian, breakfast-for dinner, or build-your-own taco).
Don’t waste time looking for things. How many times are we
looking for keys, wallets, phone, or glasses, usually when we are
running late? Assign a designated spot for these frequently lost
items. Maybe a basket near the garage door or wherever you
enter and exit the house.
Group chores together. Try to designate a time to pay all the
bills, answer phone calls or emails, or do errands. Try not to do
random errands unless absolutely necessary. Many times, instead
of making an extra trip, you can wait to go to the bank or pick
up the dry cleaning when you need to be in that area for other
errands or appointments.
You can also do this for meal planning. Pick a day during the
week and cook large batches of food that you can then take to
work for lunch for have for leftovers during the week. It doesn’t
have to be the same meal. Use the roasted chicken for tacos or
soup. Leftover brown rice can be turned into a salad.

Don’t allow things to pile up. Go through mail when you get
it. Immediately discard (or recycle) the junk mail, either pay
bills right away or put a due date on them and file and organize
them on your desk. Try to keep clutter to a minimum.
Hopefully, by following these tips, you will even find some extra
time to treat yourself or a loved one to some “you” time and
enjoy the holiday season!

tales
By Becky Kittleman
Hi. I am Becky Kittleman, your local photographer. For the past
22 years, I have been creating historical narratives of the families
I have photographed with my camera.
Lately, I have been capturing the emotions and moods of the
Italian landscape. So, naturally, on my recent honeymoon, I
brought my camera.
I could talk of the plethora of beautiful and magnificent destinations, but instead I choose to leave you with a few culinary tips.
If you ever travel to Taormina, Sicily, you must dine at Andreas.
You will find Sicilian cuisine accompanied with the best bread
and olive oil you have ever eaten.
I also want to offer the cappuccino aficionados a gem of a Tuscan city on top of an ancient Etruscan settlement, only 10-miles
from Cortona. Caffe Vergnano has been serving rich and savory
cappuccinos since 1882. One can sit looking through the arches
of the city square out in the Tuscan countryside for only 1.50
Euro. The town is Castiglion Fiorentino.
In Florence, there are many great restaurants to choose from.
However, for the best focaccia cooked in a wood fired oven, and
wine tasting you must find Cantinetta dei Verrazano. The ambience is par excellence. Exiting Cantinetta, you will experience the
best gelato in all Italy. Perche no. You will not be disappointed.
I look forward to bringing your family narrative to life for this
magazine. Ciao Bella.

Homemade Family Christmas Ornament
By Aria Kilpatrick, resident
Completely by accident, I started a tradition of giving each household of our family a handmade Christmas ornament. If you ask
me, the best traditions are often the ones started accidentally!
The year of our oldest daughter’s first Christmas, I was feeling
especially crafty and made felt Christmas ornament gift tags on
my embroidery machine. Everyone loved them, and every year
since, the kids have gotten more and more involved. It can be
such an easy project with plain, store-bought ornaments and a little paint and extended family loves getting something handmade.
Take a look online or let your children use their creativity if you
have an artist in the house. One of our favorites for our young
children is handprint or fingerprint craft.
For the ornament pictured, we used simple matte blue bulk
ornaments, white craft paint brushed onto our kids’ fingers and
pressed onto the ornament. Since we are a family of four, we
painted four fingers. For larger families, you may want to have
only “snow children” (ours includes the adults) or repeat this step
for additional figures. Once the children finished their part, we
placed them upside-down and painted the bottoms of the ornaments white. Once dry, we added hats and details with paint
pens and added a simple bow to dress it up.
If the “snow family” isn’t your style, you can find other ideas
online from Christmas trees with finger print ornaments to
reindeer and more.
Happy holiday crafting! From our house to yours, we hope you
find some time together this holiday season.
