Carrabba’s Italian Grill is unique and delicious

F
ounded in Houston, Texas, by Johnny Carrabba and
Damian Mandola in 1986, Carrabba’s Italian Grill is
anything but the typical Italian restaurant.
Though Italian by heritage, the Carrabba’s family had no
problem incorporating the local fare from Louisiana and Texas
into their family recipes when they came to the U.S., recreating
family favorites and creating a Carrabba’s Italian Grill menu
that is unique and amazing.
From start to finish, all made from scratch with the
freshest ingredients, everything at Carrabba’s Italian Grill
is delicious.
“The biggest thing about us is that everything is made
fresh and made to order, from the soup to the salad dressings. We do a lot of catering to guests with special dietary
needs,” said Jay Hyde, manager at Carrabba’s.
Walking through the door at Carrabba’s, customers
are instantly greeted and made to feel like friends.
“We are a corporate restaurant, but we are still run
like a family restaurant,” said Jay. “We are very familyoriented, and it is all about the guest.”
“We’re about big portions, good food and making sure
everyone’s happy,” Jay continued. With the easy-going, personable staff and the fabulous food, it is hard to picture anyone
leaving any other way.
Carrabba’s has the traditional antipasti items on the menu,
such as Calamari, Zucchini Fritte, Mozzarella Marinara, and
Grilled Bruschette, to name a few, but they are all unlike items
of the same name found at other Italian restaurants.
Each of the fried items is very lightly battered with flour,
salt, and black pepper—just enough for a nice coating to give a
little crunch to the bite.
The Mozzarella Marinara are thick strips of fresh mozzarella battered and fried— warm and soft to the bite, but not
oozy. The marinara sauce, served on the side, is perfect, made
with fresh, crushed tomatoes and spices.
The garlic aioli, served with the Zucchini Fritte (finely
sliced, lightly breaded zucchini), is rich and tangy and heaven
for the garlic lover!
Carrabba’s boasts two different calamari dishes—traditional and the Ricardo.
The Calamari Ricardo is served with a spicy Italian pepper
and lemon butter sauce. The lemon butter sauce is zesty, with a
kick to it that enhances the flavor of the fresh calamari.
Any mussel fan will instantly love the Cozze in Bianco.
The mussels are flown in fresh from Prince Edward’s Island,
Canada, and they are fabulous. The mussels are steamed in the
shells then topped with a white wine, basil, lemon butter and
Pernod sauce. The flavor is quite tangy, but almost sweet and
very savory.
The Grilled Bruschette changes daily at Carrabba’s, but
can always be counted on to be fabulous. The Bruschette in
Pesto is fresh and tangy with the bread smeared with pesto,
then topped with the freshest diced tomatoes and sprinkled
with Parmesan cheese.
Any fan of goat cheese must try either the Insalata
Fiorucci or the Chicken Bryan—or both!
The Insalata Fiorucci boasts a bed of mixed greens lightly
tossed in a vinaigrette, then topped with roasted red peppers,
large succulent slices of artichoke hearts, grilled eggplant and
a hazelnut goat cheese medallion. The tart flavor of the cheese
is tamed by the sweet hazelnuts, all working to enhance the
flavors of the roasted peppers and grilled eggplant.
The Chicken Bryan is a perfectly seasoned and grilled
chicken breast topped with goat cheese and sun dried tomatoes. A basil lemon butter sauce is drizzled over the top. Again,
the sweetness of the basil in the creamy lemon butter sauce
cuts through the tanginess of the goat cheese, leaving behind
the rich flavor of the cheese. The flavor combinations are
phenomenal and a delight to the palate.
The personal pasta favorite of the evening, though, may
be the Mezzaluna. Half moon ravioli, stuffed with chicken,
ricotta, and spinach, is then topped in a tomato cream sauce.
The house-made tomato cream sauce nearly overwhelms the
palate, full of fresh tomato flavor.
In addition to the great food, the prices at Carrabba’s
really cannot be beat. The menu at Carrabba’s is reasonably priced, as is the wine list. As a perk, on Wednesday
evenings, Carrabba’s hosts Wine Wednesdays, when patrons
get $10 off of any bottle of wine they purchase throughout
the evening. Additionally, they host Happy Hour from 4
p.m. to 6 p.m. every day.

Clearview Drive. Hours are Monday through Thursday,
from 4 p.m. to 10 p.m.; Friday, 4 p.m. to 11 p.m.; Saturday,

he Preschool at Red Mountain United Methodist
Church is having a Summer Day Camp program
for ages 3 to 6 the first two weeks of June, beginning June 1, Monday through Thursdays, 9 a.m. to noon
each day.
The theme is Around the World in Eight Days! The
first week we’ll be exploring Australia and Mexico, and the
second week explores Africa and England. Activities will
include art, music, literacy, and science.
The camp fee is $55 per week, and $45 for the
second or third child of a family. There is a one-time

Mountain United Methodist Church will have
their Vacation Bible School program.
The program is for ages 3 to 11. The school
begins with a light supper at 5:30 p.m. and then
breakout sessions by ages beginning at 6 p.m. and
continuing until 8 p.m. The vacation bible school
fee is $15 per child, with a $40 maximum per
family.

WHY CAN’T I LOSE WEIGHT?

n estimated 119 million
American adults are
overweight or obese
(more than 20 pounds over ideal
body weight).
According to Dr. Pamela
Smith, in her book Demystifying
Weight Loss, “There is, indeed, an epidemic of weight gain
and obesity in the United States.”
This article focuses on the multi-factorial reasons
people gain weight and have a hard time losing it. There
are reasons why some people crave certain foods, and why
some people burn calories faster than others.

OVERWEIGHT AND OBESITY
1. Food Allergies: Weight gain may be due to
allergies to food or food intolerances. About 60
percent of the U.S. suffers from undetected food
allergies, which can affect the brain and the hunger
response, thereby, affecting the ability to lose
weight.
2. Stress Hormones: Many people eat more food
when stressed. The two hormones governing
stress are DHEA and cortisol. When these two
hormones are out of balance, long-term consequences related to weight can occur. They include
weight gain, binge eating and sugar cravings.
3. Female Hormones: The average weight gain at
peri-menopause and menopause is 20 pounds. As
women go through peri-menopause and menopause, many gain extra pounds. In order to lose
weight and keep it off, a woman’s sex hormones
must be balanced and replaced, if lost.
4. Male Hormones: Men have declining hormones,
which is called andropause. For men, weight and
difficulty to lose weight may be related to changes
in their hormones, particularly testosterone.
5. Insulin: Insulin helps the body to regulate its
blood sugar. When elevated, there is a common
link to obesity and the ratio of fat to muscle
increases.
6. Thyroid: Hypothyroidism is commonly misdiagnosed. In fact, 40 percent of the population
experiences undiagnosed hypothyroidism. If your
level of this important hormone is too low, the
result is weight gain.
7. Detoxification: A total of four organs serve to
detoxify the body. They are the skin, kidney, liver,
and gastrointestinal tract. It is important all four
remain healthy for optimal fat burning.
8. Inflammation: Being overweight sets up inflammation in the body and increases chemicals, which
increase food intake and decreases fat burning.
Besides weight gain and obesity, inflammation is a
symptom of almost every chronic disease process.
9. Sleep: Adequate sleep is important to promote
weight loss and maintain proper levels of chemicals and hormones involved with weight control.
Disturbed sleep results in weight gain.
10. Exercise: Exercise is very important to lose weight
and keep it off. Exercise aids in increasing metabolic rate and maintains lean muscle mass.
11. Water: Drinking enough water allows the body
to feel full and decreases the intake of additional
calories. Ideally, the amount of water you drink
each day in ounces should be half your body
weight. For example, an individual weighing 180
pounds should drink 90 ounces.
12. Neurotransmitters: Neurotransmitters are
chemical messengers relaying signals between
nerves cells. Weight gain and obesity, for some
people, can be related to improper levels of these
chemicals.

Young scientists dig deep into research
AT THE MESA ACADEMY SCIENCE FAIR
Ryan Gurr, sixth grade, won first place in chemistry on
Negative Electrolysis. He ran electrical current from a small
battery through water. Then, he compared how many
hydrogen bubbles were generated from either the positive or
negative terminal.
“The jar with the negative current produced twice as much
hydrogen,” Ryan found out.“That was the opposite of what I had
thought,” he said.
Ryan’s results indicate he may be getting better gas mileage
with his apparatus than with a conventional hydrogen generator.
“My grandpa tried my hydrogen generator in his car, and it
worked real well for him,” Ryan said.
Camille Kaiser, sixth grade, won first place in math
again this year. She investigated whether shoe length
can predict a person’s height. And so she came up with a
mathematical algorithm.
“I measured 20 people,” Camille reported. She asked her
family, friends and neighbors to help out with her project. Most
candidates went along quite willingly. She worked on her project
for about three weeks every afternoon.
“My results showed that there are two equations to
predict a person’s height,” Camille explained. “One for men,
and one for women.” Aside her neat display board, with
statistical graphs, she exhibited her custom-made yardsticks
for height and shoe length.
Kirstyn Shields, sixth grade, compared two color separation processes.“I used Adobe Photoshop to filter out all colors
but one, and then printed the pictures out,” Kirstyn explained.
For showing how the computer screen is based on the RGB
(red, green, blue) system versus the printer on CYMK (cyan,
yellow, magenta, black), she received an honorable mention in the
computer category.
Kevin Eldridge, eighth grade, picked his topic from
forensic science. How does blood splatter at the crime scene?
“My hypothesis was that the harder the impact, the wider the
diameter of splatter,” Kevin said. This would be important in
reconstructing details of an act of violence.
Kevin’s hypothesis was right. He changed the height
and angle of the liquid splattered. “At 75 centimeters, the
circles started to show protrusions,” he said. A windy day
might change the outcome, as does the surface texture.
Kevin picked this topic because his mother used to work in
criminal investigations.
The academy’s science fair spanned two days of all-out
presentations, involved many volunteer judges, and kept students
pushing for new horizons. Science teachers Dawn Klingaman,
Kim Merlene and Tamara King were excited
about so many high quality projects.
A few weeks later, the Science Fair
winners were scheduled to present at the state
level. Several students had already been there
last year.“I love to go around and look at other
people’s work,” Mary stated.

project? It’s not only about the topic. Coming
up with a question, setting up a method,
sticking to the plan, running the numbers,
improving computer skills and presenting
results neatly—all are useful for any subject. n

he Science Fair at the Mesa Academy for Advanced
Studies passed with fanfare. Amidst the hustle and
bustle of a packed multipurpose room, Principal Bob
Crispin proudly announced this year’s winners.
“I can’t thank our teachers and parents enough,” the principal said.“You all must be glad that this is coming to an end.”
For the last six weeks, the academy’s young scientists had driven
a fierce chase in the quest for knowledge.
Last year, the Mesa Academy for Advanced Studies had
harvested the most awards in the elementary division. This year’s
projects were as diverse as the young investigators who created
them. Plant science again drew an especially large following.
Melodie Bennett, sixth grade, tested the effect of five
different liquids on the growth of French marigolds. She
assumed milk would have the most favorable effect on plants
because it contains calcium.
“After 14 days, two plants, one watered with Pepsi, the other
with milk, had died,” Melodie reported. The milk dried up the
soil, Pepsi made it swampy. Marigolds treated with tea or with
water, however, survived the experiment until the end.
“I picked this project because I love growing stuff,” Melodie
shared.“I also learned that marigolds are rather drought-tolerant
and day-neutral,” she added.
Mary Saxon, sixth grade, won second
place in medicine and health science.“Are
fingerprints inherited?” was her research
question. She enrolled 58 individuals from
17 families in her research project.
“I compared fingerprints based on
eight different main types plus some ridge
characteristics,” she explained. Her results
demonstrated the fact fingerprints were,
indeed, inherited. She discovered 91
percent of children take after one of their
parents, and 65 percent of children take
after one of their siblings.

T
here is good news
for first-time
homebuyers who
plan to purchase a home
in 2009.
Thanks to some of the
provisions in the recently
enacted American Recovery
and Reinvestment Act
of 2009, qualifying first-time homebuyers
can earn a tax credit of up to $8,000 if they
purchase a home before Dec. 1.
These buyers can claim the credit
on either their 2008 or 2009 tax returns,
according to the Internal Revenue Service.
The best news is the credit does not need
to be repaid provided the home remains
their main residence for 36 months after
the purchase date. Buyers can claim 10
percent of the purchase price up to $8,000,
or $4,000 for married individuals filing separately. The amount of the credit begins to
phase out for taxpayers whose adjusted gross
income is more than $75,000, or $150,000
for joint filers.
For purposes of this credit,
you are considered to be a
first-time homebuyer if you
(and your spouse, if you are
married) did not own any other
primary residence during the
three-year period ending on the
date of the purchase.
The new law does not
affect individuals who purchased
a home between April 8, 2008
and Dec. 31, 2008. For these
homeowners, the maximum
credit remains 10 percent of the
purchase price up to $7,500 for
individuals, or $3,750 for married
individuals filing separately. In
addition, the credit for these
purchases must be repaid in 15
equal installments over 15 years,
beginning in 2010.

PLANNING AHEAD FOR YOUR FAMILY PETS

or most pet owners today, pets are considered
members of the family. However, many pet owners
fail to think about what will happen to their pets
upon the owner’s disability or death.
Without proper planning, a family pet may be taken to
an animal shelter and killed if it is not adopted soon after
its arrival. Thus, it is important to plan ahead for the care of
your pets.
TRADITIONAL OUTRIGHT GIFTS
Because the law treats pets as property themselves, a
person may not leave money or other property, outright, to a
pet. Some pet owners have attempted to leave money with a
caretaker with the hope the caretaker would care for the pet
for the rest of its life.
However, once the caretaker has received the money
and the pet owner is out of the picture, there is nothing

keeping the money. Even in those circumstances where the
caretaker keeps the pet, there is no way to ensure the pet is
being cared for properly.
PLANNING FOR PETS IN WILLS
For a couple of reasons, wills are inadequate to plan
for the care of a pet. First, a will does not address
disability. Second, there is usually a large lapse
of time between the pet owner’s death and the

ith the elder population
growing, many people are faced
with the decision of how to care
for an elderly family member.
In years past, the only alternatives we had
were nursing homes or caring for our loved
ones at home. Today, we have many options
available, but choosing the right place is sometimes an overwhelming task. What it really
comes down to is the level of care required.
Nursing homes can provide skilled
24-hour nursing services to those in need.
Assisted living communities, with an apartment-like setting, work wonderfully for those
who do not need a lot of assistance. Many
of us, however, are faced with the dilemma
of what to do with an aging family member
not needing skilled nursing, yet needing more
assistance with the activities of daily living than
a larger assisted living community can provide.
Residential assisted living homes or group
homes have become a great way to fill the
gap. They usually are licensed for five to 10
residents, and provide care to those who can
no longer live independently and require help
with daily living activities. Such activities may
include dressing, bathing, toileting, incontinent
care, diabetic care, etc.
Assisted living homes offer elderly care
in the comfort of a compassionate and loving
home environment. Residents receive a higher
level of one-on-one care and attention than the
bigger facilities can sometimes provide.

n March, the Red Mountain Ranch
Hiking Club hiked the Pass Mountain
Trail, located in Usery Mountain Park
and Tonto National Forest.
We went to the horse staging area in
Usery Park, and then proceeded to the little
known trailhead along Usery Pass Highway.
At 8 a.m., we headed east up a wash toward
Pass Mountain in the distance.
Once close to Pass Mountain, we
intersected the Pass Mountain Trail, and
started climbing up to the north side of
Pass Mountain. The views looking out to
the Salt River Basin, Bulldog Canyon and
Fountain Hills are spectacular, especially on
a clear day like we enjoyed on our hike.
It took two hours to reach the summit
of Pass Mountain Trail, where we took a
15-minute break. The remainder of the
hike is mostly downhill. Again, there were
spectacular views toward the Superstitions
and Bulldog Ridge. In a little less than two
hours, we ended up at the horse staging
area, where we enjoyed lunch in the attractive picnic area.
The real treat for all the hikers was the
abundance of wildflowers along the trail.
Some say the wildflowers are not as nice as
last year. That may be true, but there can be
extreme enjoyment in this year’s crop. All
varieties and colors are there to be viewed
and enjoyed.
In addition to appreciating the
wildflowers, we had the opportunity to
enjoy many lizards and one diamondback
rattlesnake. n
