month due to everyone’s
busy schedules.

The Year in Review
2009 has been a changing year for Parnell Creek.
We became an Official
GOOD SAM PARK in April
of 2009. Our ad with the
Good Sam Logo will be in
the 2010 Edition of Trailer
Life. When we purchased
the park, our goal was to
become a Good Sam Park.
It took 2 years to add the
amenities and it was well
worth it!
We have made a lot of
improvements in the last
12 months to the park.
Perhaps the biggest
improvement was the addition of a 4 unit bathhouse.
The new bathhouse really
came into good use Memorial Day Weekend. The
park had all but 3 sites
filled. We had a great
weekend with breakfast
and a cookout. The food
was endless.
We have also added 3
cabins this year. Little
Joe’s Hideaway was the
first cabin completed and it
sits in the circle. Next was
the Sherriff’s Lookout
Cabin that sits nest to site
35. It has a porch and
overlooks the park. The
last cabin addition was the
Cowboy Bunkhouse. It is
our largest cabin and sits
beside the laundry room.
Be on the lookout for more
cabins to appear throughout the park in 2010.
Another addition this
year was the Tent Pads
down near the creek. We
are currently in the process
of adding two more Tent
Pads.
We added a new Road
and expanded our Full
Hook Up Pull Thru Sites.
We also added flowers,
shrubs and created several
planters for the park.
Camping Fees
Welcome
Please remember
that you Camping fees
are due by 11am on
your due date. For
example, if you pay on
the 1st of the month,
the fee is due by 11am
on the 1st. If you can
not pay by 11am on
your due date, please
let the office know
prior to 11am.
We will have the NATW Camping Group with us the
second weekend in December. Please make them feel
welcome. The will have sole use of the Clubhouse from
December 11th to 13th. This is their 2nd visit with us.
This applies to
daily, weekly and
monthly campers.
Store & Office Hours
Remember, the Office/Store hours are from
9am to 6pm daily. With the cold weather,
there is not as much traffic. We will still be
available by phone if you need anything. Remember we have snacks, drinks and ice
cream available in the office.
Electric Heaters
Cold Weather
During the winter, if you use an
electric heater, please do not
leave the heater on if you are not
in your unit. We would not want
anyone’s unit to catch fire!
During the winter, if the temperature falls below freezing, we
will come around and cut the water off at each site. Please keep
fresh water in your tanks. We
will come around and reconnect
as temperature allows.

Campground News
Recipe of the Month
Pecan Crispies
Ingredients:
½ Cup Butter
6Tsp. Brown sugar
6 Tbsp. granulated sugar
1 egg
½ tsp. vanilla
1½ cups flour, all purpose
1 tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
1 cup chopped pecans
Directions:
Cream butter and sugars until
ight. Beat in eggs and vanilla.
Sift together dry igredients and
blend into creamed mixture. Stir
in nuts. Drop by teaspoon on
ungreased cookie sheet. Bake at
375º about 10 minutes. Makes
2½ dozen.
Also, keep watch for water leaks. If you find a leak around
the campground, please let us know. Also, if you have a leak
at your unit, please repair as soon as possible. This will help
Neighborhood Dog Problems
Please put your trash out in the mornings by 9am. Please
do not put trash in the can in the afternoon and evenings.
The neighborhood dogs are pulling out the trash at night
and spreading through the park. Your help will be greatly
appreciated helping with this problem.
Reason for the Season
Out in the fields, an angel of the Lord appeared to the shepherds who were tending
their flocks of sheep by night. The angel announced that the Savior had been born in
the town of David. Suddenly a great host of heavenly beings appeared with the angels
and began singing praises to God. As the angelic beings departed, the shepherds decided to travel to Bethlehem and see the Christ-child.
There they found Mary, Joseph and the baby, in the stable. After their visit, they began to spread the word about this amazing child and everything the angel had said
about him. They went on their way still praising and glorifying God. But Mary kept quiet,
treasuring their words and pondering them in her heart. It must have been beyond her
ability to grasp, that sleeping in her arms - the tender child that was born - was the Savior of the world.
The wise men continued to follow the star in search of the new born king and found
Jesus with his mother in Bethlehem. They bowed and worshipped him, offering treasures of gold, incense and myrrh.
Remember Jesus is the Reason for the Season! Let us be thankful for our families and
all the blessings we have during this Christmas season.

Cowboy Bunkhouse
November News
We have finished the next Cabin! This cabin is located beside the Laundry
Room. The cabin has 2 full size queen beds that will sleep 4 adults and two
lofts that will sleep 6 children. One loft sleeps 2 and the other loft will sleep 4
children. There is also a middle common area with a loveseat. The cabin also
has a small refrigerator and a desk. The cabin has air conditioning and heat.

Sunday Morning Breakfast
October 25th was the last Sunday
Morning Breakfast for 2009. From
April through October we served breakfast every Sunday Morning from 8am
to 10am. The Charge was just a donation to help cover food cost.
Next Spring we will start having
the breakfast again in April on Sunday
from 8am to 10am.

Beginning November through March
we will charge for using Electric
Heaters. Camping units are designed to heat using Propane. Electric Heaters cause the electricity to
increase greatly. The charge is $30/
month for each heater used. For
nightly campers the charge is $1/day
for each heater used.

Cabbage Creole
1 head cabbage
1 jar (med) cheese dip (with or without salsa)
1 Small onion, chopped
1 bell pepper, chopped
1 lb choice smoke sausage, turkey, chicken, hamburger scrambled
Boil cabbage, onion and pepper. Drain. Put everything into a large skillet and simmer until it gets as
thick as you desire. Salt and pepper to taste. You
can adjust ingredients to your taste.
Joe’s Pizza
Joe’s Pizza is located 4 miles from the campground West on 72 on the right. They are now
giving Campers 10% of your entire order.
Just let them know you are from the campground. We have menus in the office.

April, we have had
Breakfast every Sunday
Morning from 8am to

We will start Breakfast up again in April of
2010.

Speed Limit in
Park is 10mph!
Fresh Water Tanks
Well, it is that time of year again with the winter approaching, that you
need to make sure your Fresh Water Tank is working properly.
To sanitize your fresh water tank add 1/4 cup of bleach for each 10 gallons
of water(40gal. Tank=1 cup of bleach) Once the bleach and water is added,
disconnect from the city water supply. Turn your water pump on and run water through all faucets hot and cold. Do this this until a very faint smell of
bleach comes through, then turn off water and let set over night. The next
day drain your fresh water tank with the valve on the outside at the tank. Add
a little more water and flush out the lines through your faucets. Reconnect
your city water and flush again. This should kill any bacteria in the lines and
the tank. Fill your fresh water tank and you are ready to use the tank when
the water is turned off this winter. Keep a close check on your tank and keep it
full. We will not be coming around and telling each person when we cut the
water off, just be ready. If the water has been disconnected, do not reconnect
it, we will take care of it.
During the Winter Months, any time the Temperature falls below freezing
(32°) we will come around and turn the water off at each site. We will also
unscrew the water hose from the water spicket. We will also come back each
day and reconnect it as the temp. rises. This will ensure that we will not have
any burst pipes.
If you need freshener for your Fresh Water Tank, we have TastePURE
Drinking Water Freshener available in the Office for purchase.
Next Cabin
Toilet Paper
We have started working on the
next cabin. This cabin is located
beside the Laundry Room. It is
called the Cowboy Bunkhouse. The
cabin will Sleep 4 adults and 6 children. Currently, we are working on
the insulation, paneling and flooring.
Please remember to use septic

rice
2 cups water
2 tablespoons olive oil
1 onion, chopped
1 red bell pepper, chopped
1 small zucchini, chopped
1 small yellow squash, chopped
1 1/4 cups teriyaki sauce
3 tablespoons soy sauce
2 teaspoons garlic powder
1/2 teaspoon salt
1 teaspoon ground black pepper
4 (10 inch) whole wheat tortillas
DIRECTIONS

1. In a saucepan bring 2 cups of water
to a boil; add rice. Reduce heat, cover,
and simmer for 20 minutes.
2. Heat olive oil in a large skillet over
medium heat. Sauté onion, bell pepper, zucchini, and yellow squash until
onions are tender. Stir in the teriyaki
sauce. When the vegetables are tender, stir in the cooked rice, soy sauce,
garlic powder, salt and pepper. Simmer for 3 to 5 minutes.
3. Place 1/4 of the rice and vegetables in
each tortilla, and roll up.

Next Campground Project
Our next project will be another Cabin. This cabin is located beside the Laundry
Room. We are beginning to layout the plans and hope to begin in September. This cabin
will have two lofts and also 2 full size beds. The cabin will be able to accommodate large
families. It will be able to sleep up to 10 people.
We have also placed two more cabins on the campground that will be completed
in the near future. If you know anyone that doesn’t have a camper, but would like to experience the camping fun, have them give us a call and rent one of the cabins.

INGREDIENTS

Heat the olive oil in large skillet over
medium-high heat. Stir in chicken
and cook about 1 minute. Mix in garlic and onion; cook until tender. Stir
in carrot, zucchini, and red bell pepper. Pour in tomatoes with juice. Season with red pepper flakes, basil, and
bay leaf, and continue cooking 10
minutes, until vegetables are tender
and chicken juices run clear. Stir in
the butter until melted, and season
with salt and pepper just before serving.
2 tablespoons olive oil
1 pound skinless, boneless chicken breast
halves - cut into bite-size pieces
• 2 cloves garlic, minced
• 1 medium onion, cut into 1/2-inch pieces
• 1 medium carrot, thinly sliced
• 1 medium zucchini, cut into 1/2-inch pieces
• 1 medium red bell pepper, cut into 1/2 inch
pieces
• 2 (14.5 ounce) cans diced tomatoes with juice
• 1/2 teaspoon red pepper flakes
• 1/2 teaspoon dried basil
• 1 bay leaf
• 2 tablespoons butter
salt and pepper to taste

Sherriff’s Lookout Cabin
Internet Usage
Recently, our internet has exceeded the allowed band width from our
provider. Please remember that the Internet is for banking, checking
email, and things like that. No Phone Calls (or Skype), Listening to Music, Playing Games or Watching TV is allowed on our service. Currently
our provider has cut back on our service until we get below the designated bandwidth. The service will be slow until we reduce the bandwidth usage.
New Tent Pads
Some of you may have noticed a lot of dirt being place in areas near the creek. We are in the process of setting up Tent Pad
areas along the creek fro Primitive Tent Camping.
Some of you may have noticed a lot of banging, hammering, etc going on across from the
Pavillion. We have been working
hard to get out latest cabin ready
for visitors.
The latest cabin has a porch
with a view that overlooks the
park. Inside the cabin is a full
size bed and 3 bunk beds. The
cabin will sleep 5 people. There
is also a chair, desk and small
refrigerator.
The cabin has wood floors
and ceilings. It also has air conditioning and heat. There is parking in from of the cabin. We also
have a picnic table and fire ring
on the side of the cabin.
This is another great addition
to the park and give us new exposure and help bring travelers to
the campground.
The first Tent Pad is in the works. We have built the frame and
also put the sand down for 2 Tents. Keep watching to see the
completion of this set of Tent Pads and the addition of more!

1/3 cup all-purpose flour
1/4 teaspoon ground nutmeg
6 fresh peaches - pitted, skinned, and sliced
1 recipe pastry for a 9 inch single crust pie
Preparation:
Cream sugar and butter or margarine together. Add flour and nutmeg; mix until
mealy. Spread 1/2 of mixture in pie crust. Arrange peaches on top of crumb mixture.
Sprinkle remaining crumb mixture on top of peaches.
Bake at 450 degrees F (230 degrees C) for ten minutes. Reduce heat to 350 degrees
F (175 degrees C). Continue baking for 40 minutes, or until brown.

As the temp rises, please everyone help us conserve power. Just a few
things can help with this issue such as not leaving on outside lights at
night or when not needed, Turning the air conditioner thermostat up
when you will be away from your unit for some time, don’t leave the windows or doors open when the air is on and so on. Your help with this is
greatly appreciated.

We need everyone's help with the trash collection. We only have 3 residential
trash cans at the street for collection. Please remember to have your trash out by
9am every day. Also, please use the marked cans for aluminum and any burnable so
we can keep the trash down and fit it all in the containers. Trash gets stinky if left
to pile up. Thanks

Next Project
Be on the lookout for the next Project. We will be
working on the next Cabin—Sherriff’s Lookout. It
is the cabin located next to Site 35. The cabin has a
porch and we will be starting on the Electrical this
week. We hope to have it completed by the end of
the month!

INGREDIENTS

1. Slice 1 cup of the strawberries; set
1 quart strawberries, divided
1 1/2 cups boiling water
2 pkg. (4 serving size) JELL-O
Brand Strawberry Flavor Gelatin
• Ice cubes
• 1 cup cold water
• 1 (10.75 ounce) loaf pound cake,
cut into 10 slices
• 1 1/3 cups blueberries, divided
• 2 (8 ounce) packages PHILADELPHIA Cream Cheese, softened
• 1/4 cup sugar
1 (8 ounce) tub COOL WHIP
Whipped Topping, thawed
aside. Halve the remaining 3 cups
strawberries; set aside. Stir boiling
water into dry gelatin mixes in
large bowl at least 2 min. until
completely dissolved. Add enough
ice to cold water to measure 2
cups. Add to gelatin; stir until ice
is completely melted. Refrigerate 5
min. or until gelatin is slightly
thickened (consistency of unbeaten egg whites).
2. Meanwhile, line bottom of 13x9inch dish with cake slices. Add
sliced strawberries and 1 cup of
the blueberries to thickened gelatin; stir gently. Spoon over cake
slices. Refrigerate 4 hours or until
set.
3. Beat cream cheese and sugar in
large bowl with wire whisk or
electric mixer until well blended;
gently stir in whipped topping.
Spread over gelatin. Arrange
strawberry halves on cream
cheese mixture to resemble the
stripes of a flag. Arrange remaining
1/3 cup blueberries on cream
cheese mixture for the stars.
Store any leftover dessert in refrigerator.

Our new bath house is complete
and ready to use. It has 4 individual
bathrooms each with a sink, toilet and
shower. One unit is handicap accessible.
We will still be adding finishing
New Bath House Ready and Waiting

bath house and club house and a new
covered shelter.

sink for washing dishes located just to

With summer temperatures heating up, be sure to keep
your tanks closed until dump time. Make sure to use a
good holding deodorant . Also, remember to use approved toilet paper only. They are POM, Angel Soft and
Scott 1 ply or camping specific toilet paper.
Do not put Kleenex, paper towels or feminine products in your tanks or our tanks. They will cause future
problems and costly repairs to your unit.

New Bath House Update
Over the last month we
have made a lot of progress
on the new bath house. We
started with the walls being
constructed and now have
the structure complete.
Once the walls were
completed, we began on
the roof. The roof has a
slant on it to allow the rain
to drain off. It is also a Tin
roof.
Once the roof was completed, we began on the
plumbing inside each bath
room. We also ran the
water lines and then we
were ready to put in the
light fixtures and the doors.
Now we are in the process of installing all of the
toilets, sinks and showers.
We hope to be finished by
mid April and have the bath
house open for the campers.

Spring Camper Maintenance
With the spring approaching, it is time to air
out the camper and get it
ready for the camping season.
Remember to lubricate
your waste system valves
by keeping them closed
until dump time. This will
help prolong the life of the
seals and help prevent
black water tank problems.
Also, remember to clean
you A/C filters so that they
will be ready for the season. During the season, it
is a good idea to clean
them once a week to get
optimum air flow.
Another tip, to keep ants
and other crawling creatures from getting into your
unit, lubricate the hoses
and cords with Vaseline
and they won’t be able to
climb up and into your unit.

will start serving Breakfast
in the Club House every
Sunday from 8am to
10am.
We will have eggs,
bacon, sausage, pancakes, biscuits and gravy.

Recipe of the Month
It’s that Time again!
Temperatures are rising and the
wind is blowing. Come play some
Mini Golf and enjoy the outdoors
and sunshine!
Easy Bake Fish
Ingredients:
3 tablespoons honey
3 tablespoons Dijon mustard
1 teaspoon lemon juice
4 (6 ounce) salmon steaks
½ teaspoon pepper

Come join us for Cards every Monday night.
Preheat Oven to 325°F. In small bowl,
mixhoney, mustard and lemon juice. Spread the
mixture over the salmon steaks. Season with
pepper. Arrange in a medium baking dish.
Bake 20 minutes in the preheated oven, or
until fish easily flakes with a fork. Cool for 2
minutes and serve.
Beginning in April we will play cards on Monday nights and begin
at 7:00pm every week. Cards will either be in the Clubhouse or
the Outside Covered Pavilion. We need at least 4 players.

New Bath House Update
This month the blocks, mortar
and sand was delivered for the
new bath house. Due to the
weather, it is taking longer to get
the walls started.
We hope to have the walls
completed within the next couple
of weeks. The walls have been
started on the bath house. The
contactor anticipates that he will
have the walls up and complete
within a week. Once the
walls are up, we will begin
installing the roof, doors,
showers, sinks and toilets.
Keep your eyes on the
progress.
Cookout
March 14th is the date for
this month’s cookout.
This month we will have a
pot-luck. Bring your favorite
dish to share with everyone.
We will provide the drinks!

New Cabin—Little Joe’s Hideaway
I know everyone has noticed
the addition of 3 buildings on the
property. We are in the process
of adding cabins to the campground.
The first cabin has been finished and is ready for campers!
The inside of the cabin has 2
lofts that will sleep 4 children.
There is a full size bed, desk and
a small refrigerator in the lower
level of the cabin.
The cabin has wood floors
and ceilings. It will also have air
conditioning and heat. There is a
front porch with a driveway beside the cabin. On the other side
of the cabin is a picnic table and
fire ring.

During January we reorganized and

some wall shelving and installed it during the month.
The office now has a lot of new
items. We have expanded out selection

Monthly Recipe—Chili Casserole
Ingredients:
Cooking Instructions:
1 pound ground beef
Preheat oven to 250 degrees F
(120 degrees C).
1 onion, chopped
1 stalk celery, chopped
8 ounces egg noodles
1 (15 ounce) can chili
1 (14.5 ounce) can peeled and
diced tomatoes
1 (15 ounce) can whole kernel
corn, drained
1/4 cup salsa
1 (1 ounce) package taco seasoning mix
In a large skillet over medium
heat, combine the ground beef,
onion and celery and saute for
10 minutes, or until the meat is
browned and the onion is tender. Drain the fat and set aside.
In a separate saucepan, cook
noodles according to package
directions. When cooked, drain
the water and stir in the meat
mixture, chili, tomatoes, corn,
taco sauce and taco seasoning
mix. Mix well and place entire
mixture into a 10x15-inch baking dish.
Bake at 250 degrees F (120
degrees C) for 20 minutes, or
until thoroughly heated.

Bath House Updates
During January we also worked on the
new Bath House. We finished getting the
pipes plumbed into the frame. We also
poured the concrete slab!
During February, we will begin construction of the Walls for the bath house.
If you get a chance, walk down and see
the work in progress.
Reminders
Please remember to use Septic Friendly Toilet Tissue like
Angel Soft or Scott 1 Ply or Pom. We are now selling
Pom Toilet Tissue in the office.
Also, keep watch for water leaks. If you find a leak
around the campground, please let us know. Also, if you
have a leak at your unit, please repair as soon as possible.
This will help with water consumption.
Also, if you are not going to be in your unit or cabin,
please turn the lights off to help conserve the electricity.

and rainy weather we have not
been able to proceed as quickly
as we had hoped.

Monthly Recipe—Butter Nut Chocolate Topped Cookies
Ingredients:
Preparation:
1/2 cup (1 stick) butter or
margarine, softened
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1-1/4 cups all-purpose
flour
1/4 teaspoon baking soda
1/8 teaspoon salt
30 HERSHEY'S KISSES
Brand Milk Chocolates
1/2 cup ground almonds,
pecans or walnuts
1. Beat butter, sugar, egg
and vanilla in medium
bowl until well blended.
Stir together flour, baking
soda and salt; add to butter mixture, beating well.
If necessary, refrigerate
dough until firm enough
to handle.
2. Remove wrappers from
chocolate pieces. Heat
oven to 350°F. Shape
dough into 1-inch balls;
roll in ground nuts. Place
on ungreased cookie sheet.
3. Bake 10 to 12 minutes
or until almost no imprint
remains when touched
lightly in center. Remove
from oven; immediately
press a chocolate piece
into center of each cookie.
Carefully remove from
cookie sheet to wire rack.
Cool completely. Chocolate should be set before
storing. About 2-1/2
dozen cookies.
ORANGE VARIATION:
Add 3/4 teaspoon freshly
grated orange peel to butter mixture.
