MarketDistrict.com new! Market District Artisan granolas Real Food, Really Well Made! We love granola, but sadly, a lot of it tastes the same. It’s crunchy, it’s sweet, blah, blah, blah. It wasn’t until we stumbled upon a version served at a quaint bed and breakfast in central Pennsylvania that we realized what a difference homemade could make. It was something about the just-baked flavor bursting (literally) with simple ingredients: rolled oats, nuts, fruit, honey and butter, that made a heck of a difference. Ends up, guests at the inn come back just for the granola — and so did we. It was on our third or fourth bowl that we got the courage to ask said innkeepers if they might consider making their granola for us to sell, and to our delight, they said YES! Dalmatia fig spread, divided • 1/4 cup agave nectar (honey or maple syrup can be substituted) • 2 eggs • 1/4 cup heavy cream • 1/4 tsp. salt • 1 tsp. sugar ® • 1/4 tsp. orange extract • 6 oz. Market District goat cheese • 4 slices brioche, 1/2-inch thick (available in our Bakery) • 1 cup corn flakes, crushed • 1-1/2 Tbsp. butter • Market District 100% Pure Maple Syrup (optional) Prep Time 15 min. Cook Time 15 min. 1.In a pan over medium heat, combine half of the fig spread and agave nectar and cook until spread has melted. (If syrup is too thick, add 1-2 tablespoons of orange juice to thin.) Remove from heat and set aside. 2.In a bowl, beat eggs, cream, salt, sugar and extract. 3.In another bowl, mix goat cheese and remaining fig spread. 4.Spread two slices of brioche with cheese mixture. Top with two remaining slices of bread. 5.Dip the sandwiches in egg mixture and coat with corn flakes. 6.Heat a sauté pan over medium heat and add butter. All we wanted was something hot and hearty — a really good soup. We tried the Market District Mushroom Bisque and found our new favorite! Great as a meal on its own or with a dollop of goat cheese or sour cream. Also makes for a great sauce for topping fried chicken cutlets and pasta. Nuttin' Better Market District Ground Nut Butters The Market District nut butters are a staple in my home. They make an appearance every day — breakfast, dinner, snack time, you name it. Most people immediately think peanut butter and jelly, but I use all of the varieties. They are great to make a sauce for pasta or meat, to thicken soups, add flavor and protein to hot cereal and smoothies, in yogurt or with herbs for a veggie dip or salad dressing . Of course, my son’s favorite is the aforementioned PB&J — grilled. You’ll find our nut butters near our Bulk Foods Section ground to a texture between crunchy and creamy. The only ingredient is the nuts and sometimes a dash of salt. But, you can also grind them yourself — as much or as little as you like! Available in Peanut, Almond & Cashew. — Chef Crystal Baldwin, Nut Butter Facilitator “Thai” Peanut Butter Jelly Chicken Burgers Compliments of Chef Crystal Baldwin • 1/3 cup shallots, minced • 1 Tbsp. canola oil • 1/2 cup coconut milk • 4 Tbsp. Market District ground peanut butter • 2 Tbsp. hot water • 1 Tbsp. soy sauce • 2 lbs. Nature’s Basket ground chicken • 2 Tbsp. Thai Kitchen red curry paste • 1-1/2 tsp. salt • 3/4 tsp. pepper • 1/4 cup hot pepper jelly • 1 Tbsp. rice wine vinegar • 1/2 cup peanuts, chopped (available in our Bulk Foods Department) • 1/4 cup Nature’s Basket cilantro, chopped • 1 English cucumber, sliced very thin • 6 leaves leaf or butter lettuce • 6 ciabatta rolls, split in half and toasted Serves 6 Prep Time 20 min. Cook Time 10-15 min. 1. Sauté shallots in a saucepan with canola oil over medium heat until translucent. 2. Remove 1/4 cup of the shallots and place in a large bowl and let cool. 3. In the saucepan with remaining shallots, add coconut milk and bring to a simmer. 4. Add peanut butter, water and soy sauce; whisk until smooth. Set peanut sauce aside. 5. In the bowl with the shallots, add chicken and curry paste. Season with salt and pepper and mix lightly. Form into 6 even patties. 6. Cook on a grill over medium-high until cooked through and a thermometer inserted in the thickest part reads 165°F. 7. Meanwhile, place jelly in a saucepan with vinegar and cook until just melted. Remove from the heat and let cool slightly. 8. Add peanuts, cilantro and cucumber to jelly; toss to coat. 9. Serve the burgers on the ciabatta buns topped with the peanut butter sauce, the jelly mixture and lettuce. Nutritional Information (Per serving): Calories 590, Fat 20g, Sat. Green Jalapeño TABASCO® sauce • 1 Tbsp. lime juice • 1/2 tsp. kosher salt • 1/4 tsp. ground black pepper 1. Combine all ingredients in a mixing bowl, toss with a spoon until well mixed.
