Commodore’s Comments
Deke and I hope that you had
as good a time as we had at the
Memorial Day Celebration. A big
thank you goes out to P/C Shaun
and Paula Graser along with Gus
and Karla Olson for all their efforts
in making this an event that we will
all remember.
The Change of Watch was a
signature event that will be cherished as I look back over
the years. Thank you for making this a special event for
your newly appointed Flag Officers. We appreciate your
continued support and look forward to an outstanding
year!
This month starts off with a fun-filled Fourth of July.
If you are feeling lucky, then plan to join me as I call
Firecracker Bingo at 11:30 a.m. in the Sunset Room.
Venice Theatre will be our special guest for the
Friday, July 10 Ladies’ Luncheon. Come take a sneak
peek at their upcoming production of Godspell.
Our Entertainment Committee has another special
event planned for you on Saturday, July 18. Jerry and
Kathie Bullano will host An Evening on the Bayou
where you will enjoy great food and drink.
Members celebrating VYC membership anniversaries
of 25 years or more in July are: Merle and Pat Graser
Manager’s Column
First, I would like to thank
everyone who came out to the Club
over the Memorial Day Weekend. We
had a terrific turnout and everyone
seemed to have a great time. Even the
weather cooperated. If you missed it,
the memorial service on Sunday was
beautifully done. One of my favorite
activities was the Kids’ Fishing
Tournament on Saturday morning. As always, the kids had
a great time and even caught a few fish.
Well, sometimes, things just don’t always happen quite
as planned. That was kind of the case with the replacement
of the irrigation system and the landscaping project we’ve
been talking about. However, as I write this, the plan is to
start in a few days (weather permitting). If things happen as
scheduled, the work should be completed by the time you
receive this edition of the Currents. Part of the ongoing
efforts to make your Club a better place!
We have introduced new Lunch/Tiki and Dinner Menus.
We’re going to try something just a little different this
July 2015
(52 yrs); Cornelia Hill (52 yrs); Maurice and Patricia
Dalton (35 yrs); Mary Alyce Hartman and Lt. Col.
Russell Fairbanks (32 yrs); Edith Keyler (31 yrs); John
and Betty Link (29 yrs); Robert and Myriam Murphy
(29 yrs); and Marshall and Janet Peters (26 yrs). Please
join me in congratulating these members for their long
term commitment to VYC.
Finally, I would like to take this opportunity to thank
our 45 employees who work so diligently to making
our Club so successful. Take a few minutes to reach out
to these employees and let them know how much we
appreciate all that they do for us.
Will look forward to seeing you at the Club.

summer. Our typical very large menus are very challenging
to manage during the slower months. This leads to excessive
prepping and waste. To address this we are paring back
the dinner menus a little and changing them weekly. This
allows Josh to take better advantage of fresh items that are
available and better control his waste. We will keep many
of your favorites, but now you can look for new fun items
each week.
The second week of July is Shark Week. So, once again
this year, Chef Josh will be preparing various species of
the predator of the deep in very delicious ways. Stop by the
Club to see what’s on the menu that night.
Finally, my most favorite holiday of the year is coming
up……….the Fourth of July. A big day is planned with
lots of fun activities. We always have a huge turnout and I
suspect this year will be no different. It would help the staff
be better prepared if you would please take a minute and
call ahead with your reservations. We just want to be ready
when you arrive.
Fair winds and following seas.

Chef’s Corner
Rethinking Culinary Creations
As a chef, your success is defined
by what you plate. That’s why it’s so
important that each and every dish you
include on your menu is up to snuff.
It isn’t as easy as you might think. I
am working on a new menu concept,
which means I have menu creation
on my mind. I really focus in on each
dish - the preparation, the components,
and where it is going to be served. It is easy to put together a
few main ingredients and make a menu item, but a really great
menu requires and deserves much more than that.
I have always been one to really consider my food. There
are a few questions I ask myself before I decide whether an idea
is up to snuff. Some of the questions I often ask myself are:
1.Who are my guests? What are they familiar with? (Geographic location plays a very large role here.)
2.How can I present something differently, i.e. what
unexpected twist can I surprise the member with?
3.Is the dish approachable? Is it something that is
easy to eat?
4.How will it travel from the kitchen to the dining room?
I must consider:
☞ Temperature
☞ Architecture: leaning/falling components
☞ Service friendliness
☞ Any pieces that functionally go along
with the dish
5.Does the dish bring any surprise or emotion to
the diner?
6.How much labor is required to produce the dish?
7.What is the item’s selling price vs. perceived value?
Does it meet expectations?
Knowing what questions to pose is a great start but it’s only
one part of the equation. Please know that I am always striving
to do what’s best for the members, kitchen, and staff - to make
memorable dishes that are good quality and value.
I will continue to work hard and try to PLEASE and WOW
as many members and guests as possible. This is forever a
work is progress.
Bon appétit!
Chef Josh

Message from the Fleet Captain Sail
Blessing of the Fleet
Premier Yachting Event of the Year
Hosted by Gus and Karla Olson and
the IOBG
I want to take this opportunity
to thank Gus and Karla Olson and
the IOBG for their role in this year's
Memorial Day Celebration. It was
truly a spectacular day.
The Blessing of the Fleet is a tradition
that began centuries ago in Mediterranean fishing communities.
The blessing from the local priest was meant to ensure a safe and
bountiful season. The Venice High School Jazz Band directed
by Jonathan Case started the afternoon with the performance of
patriotic songs. As each boat passed the viewing area, Reverend
Chris Gray and Father Peter Brudzinski blessed the boats as the
men saluted the flag and the women placed carnations in the
water. Our Master of Ceremonies, Dr. Jim Irwin, read the names
of the captain, first mate, and guests onboard each boat. The
boats then returned to their slips.
The Retreat Ceremony
serves a twofold purpose.
It signals the end of the
official duty day and serves
as a ceremony for paying
respect to the flag. P/C Joe
Dombrowski initiated the Retreat Ceremony at which time the
flag was lowered and folded as the meaning of each fold of the
flag was read. The flag was then presented to the Commodore.
P/C Dombrowski chose this Memorial Day to honor our four
oldest veterans. The veterans were each introduced and given a
plaque and thanked for their service to our country. The ceremony
ended with the reading of the names of all of the members
who had passed away during the year. A bell was rung after
the reading of each name indicating the end of that member’s
watch. A wreath laying ceremony at sea in remembrance of
our departed members followed the Retreat Ceremony. The
wreath ceremony took place in the Gulf of Mexico with two of
the Venice Youth Boating sailors, Bogan Whitehead and Garrett
Lawlor, performing the ceremony at sea.
Sailors’ Table
Thursday, July 2
Sailors’ Table is normally held on the first Thursday
of each month. We gather for drinks at Pearson’s
Cove at 6:00 p.m. and dinner at 7:00 p.m.
Come join us, and enjoy the banter and sail talk.

Great news for all you boat owners.
The Venice Yacht Club is now a Boat
Owners Association of the United
States (BoatU.S.) cooperating group.
If you are a boat owner, there are
many great benefits to joining this
organization. As a Member of VYC you
can join BoatU.S. for half the normal
rate. If you are already a member, just
notify BoatU.S. when you renew. The
participating group number is GA82624Y. You can get more
information and sign up online at BoatU.S.com.
Now that it is July, it is time to seriously think about
hurricane season. If you have a boat at the Club, there are
certain procedures that you should be aware of to protect your
boat and the boats around you from damage. Of course, even
if you keep your boat somewhere else, the same preparedness
is applicable. There is a hurricane preparedness form that has
been prepared for you and is available at the Dockmaster’s
office. The form lists the things you should do and other
suggestions for protecting your boat from damage. One of the
most important things is to have properly sized lines and extra
lines to ensure the boat doesn’t break loose in high winds.
It doesn’t have to be hurricane strength winds to do a lot of
damage to a boat that is not properly tied up.
The June cruise was to the St. Petersburg Yacht Club June
26-29. This is a favorite destination both because of the great
hospitality of the St. Pete Yacht Club and the proximity to
downtown St. Pete. There are lots of opportunities for eating
and shopping.
The July Cruise is to The Field Club July 24 -26. If you
would like to join us, we can be contacted by email: roger529@
comcast.net or phone 770-330-4592. If you would like to be a
cruise leader on this or a future cruise, please give me a call.
If you haven’t been to a Fleet Captains’ Luncheon or it
has been a while, come join us, and yes, the ladies are also
welcome. We meet every Tuesday at 11:30. Please join your
fellow members, both boaters and non-boaters and me, for a
great lunch and casual conversation.

(May 1 to October 31)
No.6
For Independence Day this year, our Sertoma Club
has prepared the largest fireworks show that Venice
has ever seen at the South Jetty. The best place to
enjoy this event is at your Tiki Bar. Come early to
claim your spot and be ready to party for the Ol’ Red
White and BOOM! Come out and check Chef Josh’s
new menu. He brought back some of the old goodies
and added some new dishes for everyone to enjoy!
The Stars and Stripes Colada – OK, everyone, this
is a tough one! Place 7 (because my birthday is the 7th
of this month) ice cubes in your glass and pour ¼ oz
of Blue Curacao into it. Then separately mix a frozen
Piña Colada with Captain Morgan’s Rum. The trick
is to mix this layer very thick. Carefully pour your
frozen Piña Colada on the ICE CUBES not the Blue
Curacao (this will be your second layer). Then again
separately mix a strawberry daiquiri with Captain
Morgan’s. This is your third and top layer. BOOM!!!
Top it off with some whipped cream and a cherry.
Happy 4th of July everyone!
It’s always 5 o’clock at the Tiki…

Bistrot de Provence
Rosé, 2014
A Blend of Cinsault and Grenache, Bistrot de
Provence uses grapes from the very finest
terroirs of Provence. This wine offers up a
zesty, delicate and fruity flavor. Bistrot de
Provence is a superb, slightly tangy rosé with
a pale robe, perfectly served as an aperitif
drink, or with Mediterranean cuisine. With
its lively aromas, floral and fruity bouquet
and silky taste, it is a wonderful go-to wine
for every casual occasion.
Poggio Civetta
Montepulciano D'Abruzzo 2013
This wine is distinctly Italian, medium
bodied, ripe, and easy to drink. It is intensely
fruity, with cherry and blackcurrant flavors
and hints of cloves and earth to give it a
savory kick. Incredibly versatile, this will
pair marvelously with pizza, or Italian cured
meats & hard cheese.

Charitable Foundation Committee made the following
grant awards at our meeting on May 20:

Englewood Community Care:

Lighthouse of Manasota:
desktop PCs for visually impaired......................$1,400
Rotary Futures College Resource Center:
table for 10 at yearly fund raiser........................$1,500
Our Mother’s House:
credit counseling for residents.............................$500
Center for Building Hope:
family members to attend camp
for children with cancer.........................................$500
Interfaith Outreach:
sack lunches for Center of Hope.......................$1,000
Safe Place & Rape Crisis Center:

Mental Health Community Centers:
services to adults with mental illness..................$500
Laurel Civic Association:
homework assistance program
(program assistants)............................................$2,000
Total:.......................................................................$13,100
I am also pleased to report that our Foundation
received a special $5,000 grant from a club member to
establish the Venice Community Support Fund. This fund
will be restricted to making grants to those groups within
the Venice community that make our community more
enjoyable and a place where we are proud to live. It is
likely that some of the grant recipients from these funds
will be organizations that previously were included in
the general operating budget. The Yacht Club Board and
our Committee felt it would be more appropriate to have
gifts that are charitable in nature be handled through the
VYCCF. This is a new fund, and our Committee will
discuss how best to administer the fund and process
grants.
Respectfully submitted,
Wayne Hall, Chair

INTERNATIONAL ORDER
OF THE BLUE GAVEL
I want to thank everyone who attended the Blessing
of the Fleet and the Retreat Ceremony. So many
wonderful men and women gave their lives to defend
our freedom of life; it was good to honor them over
Memorial Day weekend. Thank you especially to four
of the gentlemen who attended the ceremony: Loomis
Hales, age 98, John Dexter (96), Stuart Hamilton (94),
and John Schultz (93).
I was remiss in not mentioning the following. It is a
little known fact about World War II that a Cadet Nurse
Corps was formed in 1943 to train young women as
nurses. In exchange for her education, each nurse was
to serve in any military hospital in the U.S. or overseas.
Of the 116,717 nurses in this program, two are members
of VYC and have full veteran status. They are Second
Lieutenants Edi Crelin and Jean McLaughlin. When
you see these wonderful women, give them a salute and
a thumbs-up.

Florida Council of Yacht Clubs
I attended my first FCYC meeting as your VYC
Representative at Captiva Island Yacht Club May
15-17. Friday evening began with a casual Happy
Hour on the beach under a large tent and continued
inside with a delicious buffet in the Clubhouse. On
Saturday, I attended the Directors’ luncheon meeting
and later that evening enjoyed a fabulous Surf 'n'Turf
dinner. The evening culminated with dancing at
'Tween Waters. I would like to extend my heartfelt thanks to the staff and
members of the Captiva Island Yacht Club for their hospitality.
At the Directors’ meeting, Commodore Smith reported that cabin rates
for the upcoming FCYC West Coast Cruise have been lowered and the
shipboard credits have been increased. More details are available on the
FCYC website: www.floridacouncilofyachtclubs.com.
V/C Jack Burwell reported brisk sales of the FCYC pins. These pins are
selling at $3.00 each or 10 for $20.00.
R/C Audrey Rice updated the recent Government Affairs Report from
Johnson & Blanton. Legislative work on derelict boats and anchoring
restrictions did not make it out of committee before the recess. It may be
addressed in the next regular session.
Treasurer Jack Kindsvater reported that the financials are in good shape
and that dues had been received from all 36 Clubs. He urged all Clubs to
purchase the Cruising Guides at a 25% savings if you buy 24 or more guides.
FYI:
1. Royal Palm Yacht & Country Club reported that construction
is ongoing and should be completed by fall. Limited dock space is
available.
2. Pelican Island Yacht Club announced that the pass from the Gulf
is open and a maintenance dredge will begin next month.
3. Bradenton Yacht Club has a new Pool Bar and Tiki Hut.
4. Eau Gallie Yacht Club has expanded the outside dining and
fire pit area.
5. Vero Beach Yacht Club announced that their remodeled bar is
now open.
Tampa Yacht & Country Club will host the July 2015 meeting. The Marina is
closed for renovations. However, one of the docks, as well as the Clubhouse,
will be open for business.
