MINESTRONE SOUP (Serves 6 as a lunch and 10 as a starter) 1 carrot, peeled and diced 1 white onion, peeled and diced 1/2 leek, washed and diced 1 sticks of celery, washed and diced 1 courgettes, diced 1/2 handful of peas 1/2 handful of broad beans 1 handful of roughly chopped spinach 1 litres vegetable stock 1/2 medium potato, peeled and diced 30g cooked borlotti beans 1 tomato 30g cooked macaroni or other small pasta shape Grated parmesan cheese to finish Blanch, skin, deseed and dice the tomatoes. Cook the onions gently on a low heat for a few 7 minutes, without colouring them, then add the carrots and cook for a further 5 minutes. Next add the celery, then the courgette, the leek, peas and broad beans and spinach, cooking for a few minutes each time before adding the next veg. When the last veg has been in for 3 minutes, add the stock, potatoes and borlotti beans. Bring to the boil and then turn down and simmer until all the vegetables are cooked. Add the pasta, adjust the seasoning and mash the potato up a bit. Finish with lots of grated parmesan. I like to mix in some basil pesto too! Mr. Hassan Jarrar CEO, Bahrain Islamic Bank Islamic banks at par with traditional banking Islamic Financial Institutions (IFIs) are at par with conventional bank in terms of transparency and disclosures as well as in their business model, says Mr. Hassan Jarrar, CEO of Bahrain Islamic Bank (BisB) in an exclusive interview with bizbahrain. Mr. Jarrar rejected the unwarranted criticism of IFIs transparency, and pointed out that today IFIs have adequate and proven tools for maintaining transparency and disclosures in accordance with international standards. ‘My answer to the criticism from those who don’t believe Islamic Banking is at par with conventional and international banking institutions is very simple.
