The grated Bottarga is one of the best Sardinian product, worked and seasoned following the old Sardinian home made tradition by Su Tianu Sardu.
CHARACTERISTICS
This grated mulled roe is one of the greatest Sardinian foods, it is made of the thousands of eggs that female mullets have in their egg sacks.
Expert workers use to salt, press than dry eggs for some months in a dark and ventilated room.
Once ready it takes the classical amber gold color with its unique sea flavor.
