2015 has been a year of significant progress and development for the nationwide Bin Inn
group of 37 Foodmarkets .
The dietary habits of New Zealanders are constantly being challenged as consumers

Michelle
Yandle
Bin Inn New Zealand is pleased to introduce Michelle
Yandle from The Good Life Health as our new Healthy living
(spokesperson/Ambassador/etc). Michelle is encouraging us to
make small but sustainable changes for lasting health and we are
very excited to have her on board.
Michelle Yandle is an Integrative Nutrition Coach and
founder of The Good Life Health, a health coaching practice
based in Taranaki. She is also the author of ‘A Diet for 7
Generations’ and an engaging speaker who teachers and inspires
worldwide via her acclaimed health programs. Michelle began
her studies with the Institute for Integrative Nutrition based in
New York and has since continued her education here in New
Zealand with Holisitc Performance Nutrition. Michelle teaches
people that health doesn’t have to be complicated and that we can
learn simple techniques for health for a lifetime simply by going
‘back to basics’
Michelle’s partnership with Bin Inn New Zealand is a perfect

Chocolate Spotlight
A good quality dark chocolate can be a healthy addition to your
holiday treats. During the holiday season, instead of indulging in
milk chocolate or white chocolate – have a small amount of dark
chocolate instead (over 70% cocoa) which has a heap of health
benefits associated with it, without all the sugar.
HAVE A GO AT MAKING YOUR
OWN DARK CHOCOLATE!
Dark chocolate is plant-derived and contains flavonoids which
act as antioxidants. Antioxidants protect the body from aging caused
by free radicals, which can also cause damage that leads to heart
disease and other conditions. Flavonoids also help relax blood

pressure through the production of nitric oxide and balance certain powder
hormones in the body.

Cocoa also stimulates endorphin production, which gives us a
feeling of pleasure, and serotonin, which acts as an anti-depressant.
Remember: This doesn’t mean you should eat a kilo of chocolate a
day over the holidays! Most studies done used only about 80 - 90
grams of dark chocolate per day.
Always go for dark chocolate: milk or white chocolate cannot
make any health claims and are high in sugar. Skip the nougat and
caramel filled chocolates, these filings add extra sugar and refined
fats and lower the health benefits.
Go for a 70% + dark chocolate or better yet, make your own raw
dark chocolate.

Simply melt the coconut
oil on low heat over a
double boiler. Remove
from the heat and whisk in the cacao powder, then add the
sweetener of your choice and sea salt. Pour into moulds and place
in the fridge or freezer to set.

Recipes To Help Make
Your Holiday Healthy
CRANBERRY APPLE AND
ORANGE VINAIGRETTE
1 cup frozen cranberries
¼ cup + 2 Tbsp apple cider vinegar
¼ cup pure maple syrup
1.5 tsp. Dijon mustard
½ cup fresh orange juice
½ cup sea salt
Fresh ground pepper to taste
In a medium sized pot, heat the
cranberries, maple syrup, and vinegar over
medium heat until the cranberries burst
(about 7-10 minutes). Slightly cool the cranberry mixture and place in a
blender along with the rest of the ingredients (except salt and pepper).
Blend until smooth and add the salt ¼ tsp. at a time, to taste. Blend again.
Adjust other ingredients to taste if necessary. Place in the fridge to chill.
Keep in the fridge in an airtight container for up to 5-7 days.
HOLIDAY SALAD WITH FRUIT & NUTS
1 large bag of organic mixed
greens
1 large granny smith apple,
chopped
1 large pear, chopped
¼ cup dried cranberries
½ cup chopped walnuts, lightly
toasted
¼ cup pumpkin seeds
Cranberry apple orange vinaigrette
Add washed and dried greens into a large salad bowl. Add toppings and
serve. Drizzle with cranberry vinaigrette. Serves 6-8
SUMMER BLUEBERRY CHIA
SMOOTHIE
1 cup of coconut water or coconut milk
2 Tbsp. chia seeds
1 scoop of greens powder of choice
(or a big handful of kale or spinach)
1 tsp. of organic virgin coconut oil
1 scoop of protein powder of choice
¼ cup of frozen wild organic blueberries
1/3 of a frozen banana (optional)
1 tsp. maca powder
Put everything except the frozen fruit into the blender — blend to combine. Add in the frozen banana and blueberries, blend.
Add ice as desired to thicken, blend. Pour and enjoy!
RAW CHOCOLATE
MINT TRUFFLES
1/2 cup raw almonds
1/4 cup raw walnuts
8 Medjool dates (the big
soft kind—make sure to
remove the pits)
1/3 cup raw cacao powder
1 tsp. vanilla extract
1/2 tsp. peppermint extract
1/4 tsp. sea salt
1 Tbsp. water
In a food processor or high speed blender, process the nuts until you have
a very fine crumb consistency. Add the rest of the ingredients and process
until you achieve desired texture.
Once well combined, place the truffle mix in a large bowl and use wet
hands to create a large sticky ball of the mixture. (If you used a food
processor, you may have to add one more tablespoon of water as you use
your hands to make the mixture stick back together.)
Using approximately 2 Tbsp. of the mixture at a time roll the truffle
mixture between your hands until you have a nice small balls formed. Roll
the truffles in the following options
1/4 cup crushed candy canes (try to find canes without high fructose corn
syrup in your health food store) or
1/4 cup cacao or
¼ cup desiccated coconut
CRANBERRY SAUCE
3 cups of frozen cranberries
½ cup honey
1 cinnamon stick
¼ cup ground ginger
Zest of one orange
Small pinch of sea salt
1 cup filtered water
Put everything into a pot, cook over a medium high heat for about 30-45
minutes. When most of the liquid is cooked out, turn your stove down to
a simmer. The longer you let this simmer, the thicker the sauce will get.
Don’t let all the liquid cook out or it will burn. Stir more frequently near
the end. Allow to cool before serving.
APRICOT GINGER QUINOA
WITH CASHEWS
4 cups cooked quinoa, cooled to room temperature (If grain-free
you could use 4 cups of cauliflower rice)
1 cup dried apricots, chopped
½ cup cashews, chopped
2 Tbsp lemon juice
Zest from 1 lemon
¼ tsp. salt
1 ½ tsp. ground ginger
Mix all the ingredients together in a medium mixing bowl and serve at
room temperature. Makes approximately 10 servings.

Ginger is known for soothing an upset stomach and alleviating
nausea. If a new baby is in the plans these holidays – ginger is also
known to help women with morning sickness. Ginger is also antiinflammatory and has been used for centuries in the treatment of
arthritis and fibromyalgia. It is naturally immune system boosting
and may even aid in relieving migraines.
Cloves have both anti-inflammatory and antioxidant properties; it
boosts protection from heart disease, cancer prevention and slows
cartilage and bone damage caused by arthritis (combined with the
right diet). Cloves are often used as a home remedy for toothaches
because of its numbing effects. Clove oil will also fight off bacteria
and viruses. Not only that, but just 1 tablespoon of this powerful
spice contains the full amount of the recommended dietary intake
of manganese, which is important for bone formation and protein,
fat and carbohydrate metabolism
Cinnamon is a naturally sweet spice that can also regulate blood
sugars by increasing glucose uptake by the cells to turn glucose
into glycogen. It is an anti-inflammatory and can help in reducing
the pain and stiffness of muscles, joints and menstrual discomfort.
Cinnamon is also great for digestive function and has been shown
to relieve gas and nausea. This powerful spice can help reduce
triglycerides and total cholesterol and is a heart healthy addition
to any diet. Lastly, cinnamon is high and fibre and can reduce
heartburn after those Christmas indulgences.
Cardamon is great for stimulating bile flow for both liver health and
fat metabolism. It is often used as a digestive aid easing stomach
cramps, digestion and reducing mucus. Cardamon can also induce
the expulsion of gas from the stomach and intestines, which can
help with that holiday flatulence!

This heart-healthy holiday spice has strong antibacterial
properties; and can even kill the bacteria that cause cavities.
Studies show that it can also inhibit an enzyme in the brain that
contributes to Alzheimer’s along with the right diet. Currently,
there are studies looking at its potential as anti-depressant.
10 top tips to keep you Healthy
this Summer
1. Get your greens! Try a new vegetable or fruit once a week to
see if you like it – just because you didn’t like Brussels Sprouts as a
kid doesn’t mean you wont like them now.
2. Swapsies! There is no reason to deprive yourself over the
holidays – there are heaps of recipes for nutrient rich desserts that
are just as decadent as the real thing. Do a search online for your
favourite treat and simply add a “healthy” or “paleo” in the front and
you know it’s a better choice
3. Clean out your cupboard and give away that food that doesn’t
serve you healthily. Out of sight – out of mind!
4. Start moving! Commit to a realistic amount of time each week
to move your body and stick to it. Try out different types of exercise
until you find something that you enjoy. It’s easy to incorporate
movement into your daily routine; park further away from the

Healthy Christmas
Baking
Diabetic Fruit Cake
1 kg fruit mix
½ cup walnuts, chopped
½ cup almonds, chopped
2 Cups hot tea or Diet Ginger Ale
2 cups self raising flour
1 tsp vanilla essence
1 tsp almond essence
1 tsp brandy or rum essence
Gluten Free Christmas
Pudding
In a bowl, place fruit mix walnuts and almonds and poor over the
hot tea or diet ginger ale. Leave to soak for12 to 24 hours. then
add self raising flour and essences. Mix well together. Put in line
greased tin. Bake at 160 degrees celsius for about an hour or until
cooked.
Paleo Christmas Cake
Makes 1 cake
1 ½ cps chopped mixed dried
fruits of choice + 1 cup water
(or brandy)
1 cup chopped nuts of choice
1 cup of almond flour
½ cup coconut flour, sifted
½ Tbsp baking powder
½ tsp salt
1 tsp cinnamon
¼ tsp mixed spice
¼ tsp ground ginger
½ cup coconut oil, hard from
the fridge
Zest of 1 lemon
Zest of 1 orange + 2 Tbsp juice
3 eggs, beaten
½ tsp almond extract
Preheat your oven to 120C
Prepare an 8 inch circle or square cake pan by greasing the sides,
then lining the bottom and sides with baking paper. Wrap the
outside of the cake with newspaper and secure.
Simmer the dried fruit with the brandy (or water) until most of the
liquid is absorbed and the fruit is plump.
Meanwhile, mix all the dry ingredients together in a large bowl.
Then, mix the wet ingredients in a separate bowl. Add the dried
fruit mixture to the wet ingredients + 2 Tbsp orange juice.
Combine all the ingredients together and gently mix until
combined.
Pour into prepared cake pan and press down for an even surface.
Decorate the top with almonds, pecans, dried fruit, etc.
Bake in pre-heated oven for about 1 hour – or until a thin knife
inserted into the middle comes out clean.
Cool completely on a baking rack.
125g Butter
2 Tbps sugar
1/3 Cup Golden Syrup
½ tsp Ground Ginger
½ tsp Cinnamon
½ tsp Mixed Spice
2 Cups Fruit Mix
1 tsp Baking Soda
1 Tbsp Milk
3 Eggs
225g Gluten Free Cake Baking Mix
Cream butter, sugar and golden syrup. Beat in eggs one at a time.
Mix in all ingredients. Put in greased pudding basin. Cover with
greaseproof paper, then with foil. Secure with string. Place the
basin on a trivet or an upturned saucer in a large saucepan. Fill
with hot water reaching half way up the sides of the basin. Bring to
the boil. Keep saucepan covered. Reduce heat, steam for 2 hours.
Check regularly to top up with water so as the water is always half
way up the basin sides.
Gluten free Xmas Cake
3 Oranges,
Grated rinds
1 cup dates
1 cup red cherries (or green)
¾ cup gluten free flour
1 cup Sultanas
½ tsp Salt
¾ cup Orange juice
3 eggs
2 cups walnuts, brazils and
almonds combined
½ tsp gluten free baking
powder
1 small cup mixed peel
1 tsp cinnamon
1 tsp nutmeg
1 tsp curry powder
1 tsp each almond, lemon and brandy essence
Chop dates and most of the nuts and cherries (leave a few to
decorate the top). Sift gluten free flour and baking powder into a
large bowl. Add all dry ingredients. Beat eggs and orange juice and
add together and add to the mixture. Press firmly into a 20cm cake
tin lined with baking paper. Top with left over nuts and cherries.
Bake at 125 Degrees Celsius for 2 – 2 ½ hours. Leave to cool in the
oven for about 10 minutes

Recipe from ‘ Beyond the Bin’
Peppermint Creams
To make the raw chocolate.
½ cup cacao butter
2/3 cup raw cacao powder
2-3 Tbsp coconut nectar or maple syrup.
Couscous Salad
1 ¼ cups water
2 Tbsp butter or olive oil
¼ tsp salt
1 cup couscous
2 capsicums green and yellow
2 tomatoes halved
1 courgette chopped
1 carrot diced
1/3-cup natural almonds
¼ cup lemon luice
¼ tsp cinnamon
Boil Water in covered pot with
butter or oil and salt
Add couscous and stir
Remove from heat once cooked and stand for 5 minutes then puff
with fork.
Mix remaining ingredients and toss well with couscous
To make the mint filling
½ cup cashews – soaked overnight and
drained
½ cup coconut oil, melted.
3-4 Tbsp maple syrup
2 Tbsp coconut milk
1-2 tsp peppermint extract
1 small handful of fresh spinach
Sage & Onion Stuffing
Melt the cacao butter in a bowl over a saucepan of boiling water.
When completely melted, stir in the cacao powder and your
sweetener and whisk until well combined. Remove the hot bowl
from heat and set aside.
Place all the ingredients for the Mint filling in a blender or food
processor and blend well. Pour the content into a small bowl and
set aside.
Fill your mould of choice about a third way through each cavity
(the remaining chocolate will be used later). Freeze it for 15
minutes (or until it hardens) then remove from freezer.
Spoon some of the mint filling on top the hardened chocolate in
each cavity and put it back in the freezer for about 45 minutes (or
until it hardens) then remove from freezer.
Lastly, pour the remaining chocolate over the hardened mint filling
in each cavity until almost filled and return them to the freezer and
freeze overnight.
The next day, remove the mould from the freezer and set aside for
a few minutes before popping them out of the cavities and eating.
Store the leftover chocolates in the freezer so they remain nice and
icy. Take them out only before eating!
3 cups of sage & onion
stuffing mix
2 Tbsp butter (melted)
1 egg
A pinch of salt and pepper
Combine mix with butter and
egg.
Add salt and pepper.
Remove giblets from chicken or turkey.
Spoon stuffing into cavity and secure cavity with skewers
4 Ingredient Christmas Cake
1 Kg fruit mix
2 cups fruit juice or cold tea
2 cups self raising flour
1 Tbsp sherry (optional)
Pre heat the oven to 130 degrees celsius. Soak
mix in fruit juice and sherry (optional) or cold tea for 2 hours (for
best results soak over night). Stir self raising flour in to soaked fruit
and mix well. Spoon mix into a large baking tin lined with baking
paper. Place tin into bottom of the oven. Bake for 1½ hours. Store
in tin or wrap in tin foil. Cut in 3-4 days and enjoy

Christmas Mince Tarts
Fruit mince: (or just use fruit mince from Bin Inn)
1 cup raisins
1 cup sultanas
1/2 cup dates (chopped)
1 cup figs (chopped)
1/2 cup prunes (chopped)
1/2 cup brandy
1 tsp mixed spice
1 tsp lemon rind (finely grated)
Tart Pastry:
Christmas muffins
2 cups plain flour
½ cup sugar
3 tsps baking powder
1 tsp cinnamon
1 tsp mixed spice
1 cup fruit mix
1 Tbsp golden syrup
50g butter
2 Tbsp brandy (optional)
1 egg
½ cup yoghurt
1 cup milk (aprox.)
Sift dry ingredients into a bowl. Add in fruit mix and combine.
In another bowl, melt golden syrup and butter. Then add egg and
yoghurt. Whisk well. Add milk and stir. Make a well in the dry
mixture and poor in the liquid. Stir softly trying not to over mix.
Spoon into greased muffin tin. Cook for 15 – 20 minutes at 180
degrees celsius.
1 cup flour
1/2 cup wholemeal flour
1/4 cup margarine
1/4 tsp artificial liquid sweetener
3 Tbsps cold water
Mix fruit mince ingredients in food processor. Sift flour and
wholemeal flour in a bowl.Add melted margarine. Mix sweetner
and add to flours. Mix well. Add enough cold water to make a
dough. Roll out dough to 3mm thick. Cut into circles to line the
base of tart tins. Fill with fruit mince. Use a cookie cutter to cut a
top from left over pastry, place on top. Bake at 190 degrees celsius
for 15-20 minutes or until golden. Dust with icing sugar and
ENJOY!

Nz Ice Cream Christmas Pudding
½ cup sultanas
½ cup currants
½ cup raisins
¼ cup figs
½ cup brandy
½ cup red cherries
½ cup green Cherries
½ cup dried apricots
50g dark chocolate
½ cup slice almonds
2 litres vanilla ice cream
To remove smell from burnt food sprinkle GROUND
CINNAMON in a the pan/pot and heat slightly
To reduce the odours from Cauliflower while it is cooking add
a slice of lemon to the cooking water. This will also assist the
Cauliflower staying white.
PEGS IN THE PANTRY
Keep some spring pegs in your pantry and use them to close up
bags and packets which have been opened.
KEEPING BREAKFAST CEREALS FRESH
Store in the hot water cupboard.
EASY REFERENCE TO THE RECIPE CARD
Method:
Combine sultanas, currants, raisins and figs. Add brandy and the
rest of the dried fruits, cover, and then soak for 12-24 hours. Stir
occasionally. Mix the strained soaked fruit, chocolate, almonds and
the soft ice cream together. Re-using the 2 litre empty ice cream
container, spoon mixture back into this container. Smooth the
surface and cover. Freeze until firm.
A Sensational Christmas Dessert Treat!
Place the recipe in between the prongs of a fork and place it upside
down in a glass or mug. This way it won’t get lost amongst the
cooking utensils and ingredients and will remain clean and dry.
TIPS FOR BAKING YOUR CHRISTMAS FRUIT CAKES
For a richer darker cake add one tspn of Treacle or one tspn of
Coffee Essence.
For a moister cake add 2 tablespoons of salad oil to the mix. This
will also assist in making it less crumbly.
Other tips for a moister cake are to use half tea and half water
which will also improve the flavour.
To prevent the top of the cake from crusting cover it with a brown
paper bag in the oven after it has been baking for 45-60 minutes.
