SUCCULENT SHAWARMA
Visitors to Qatar are always surprised by the
amazing variety of food on offer. Indeed, eating
out tops the list of things that residents and
nationals do every day. With so many restaurants
and international fast-food chains vying for your
attention, you will find yourself spoilt for choice.
The preparation of the shawarma is a laborious
process. Chunks of boneless meat are marinated
in a mixture of spices, vinegar, onion, ginger, garlic
and tomato paste. The meat is allowed to soak
in the marinade for at least 24 hours before it is
ready to be roasted. The longer the marinating, the
more flavourful and tender the meat will be. A busy
outlet can sell almost 40kg daily of meat through
its shawarmas.
Although it is a traditional snack, shawarma
cuisine has kept up with the times. It used to
be that the filling was always lamb or beef, but
nowadays chicken is very popular and fish is
available at some stalls. Many different types of
bread are also used these days. While wholemeal
pita bread is still very common, there are many
shops in Doha that offer shawarma wrapped up in
Turkish bread and finely rolled out Indian bread.
But no matter which eatery you finally decide on,
don’t miss out on the night-time stalls selling
shawarma, the Middle Eastern meat roll that is
a filling snack and often taken as a meal in itself.
Common throughout the Arabian Peninsula and
now successfully exported to London and other
Western cities where there is an Arab population,
the shawarma has gained a heartening acceptance
that transcends all tastes and budgets. Qatar’s
cityscape is dotted with shawarma vendors,
offering for a reasonable price (between QAR3
and QAR5) strips of finely cut roast lamb, beef or
chicken, with salad, sesame dip and chilli sauce
stuffed in pita bread.
Most of the shops selling shawarma offer other
delicious regional favourites: rotisserie chicken,
falafel (small, round, fried delicacy of chickpeas,
beans and parsley), foul (bean stew), and to wash
it all down, fresh fruit juices and tea. So, while you
watch the vendor expertly slicing off the meat for
your shawarma, you can also watch the rest of the
establishment in action — frying falafel, keeping an
eye on the foul pot, seasoning the chicken for the
rotisserie, and manning the blender to churn out
fruit juices and milkshakes.
Shawarma stalls are just the tip of the gastronomic
iceberg in Qatar, as you yourself will discover
once you step out in search of food. And if you get
lost looking for a restaurant, don’t worry, there is
bound to be a shawarma stall just round the corner
that will do more than quell those hunger pangs!
