A local favorite! Made with Kentucky’s own country
cured ham, blended with Cheddar and Monterey Jack
cheeses wrapped in a crispy wonton wrapper. Served
with a bourbon mustard sauce.
Curing the Kentucky Country Ham involves a combination of
time and experience. Salt and brown sugar are rubbed into the
ham by hand. Then they are washed and hung to be smoked
with hickory wood. After 6-9 months of aging in the changeable
Kentucky climate, the delicious product is produced.

Kentucky burgoo
Burgoo is a stew that has been made in Kentucky since the
time of Daniel Boone. It is slow cooked in large batches and
contains a large variety of meats, vegetables and spices.

A sample of three of our favorite spreads combined to fulfill
your senses. A creamy chicken salad enhanced by toasted
pecans. A local favorite – Benedictine with the perfect
combination of onion, cucumber and cream cheese to form a
cooling spread. And finally - Country Ham salad. The smoked
and sugar cured ham is blended with celery, onion and Dijon
mustard-mayonnaise to create a balanced spread. Served with
assorted crostini and crackers.
Benedictine was originated in the 1920’s by a Louisville
caterer named Jennie Benedict. The spread was regularly
featured at cocktail parties and weddings in and surrounding
the Louisville area.

The Hot Brown was created at the Brown Hotel in Louisville
in the early 1900’s by Chef Fred Schmidt. It is still served at
many fine dining establishments and the Brown Hotel.
