Sage Sage is one of the oldest medical and culinary herbs of the Middle East. This beautiful plant is native to the Mediterranean region and can be found in abundance in Israel. Frescoes on the island of Crete, dating to 1400 BC, depicted that the Phoenicians and Greeks used this plant for cooking and medicine. The benefits of this herb that have endured through time prove its dependability as a traditional healing plant. Tea made from sage leaves has had a long history of use for treating sore throat and coughs, often by gargling. Externally, herbalist use it to treat sprains, swelling, ulcers and bleeding. It was given as a traditional remedy for fevers in small repeated doses. The natives use it for all kinds of stomach trouble and diarrhea. Even the aroma of sage can be inhaled during asthma attacks to soothe the bronchial system. When ground into powder it can be applied to the skin to treat insect bites. This powder can also be used as an insect repellent. Sage leaves can actually be burned to ward off mosquitos and other annoying bugs. In its native habitat, it frequently develops wholly galls called apples. These apples can be peeled and eaten when they are soft and are described as being fragrant, juicy and tasty. Borax Powder You may have heard about baking soda, but have you ever heard of borax? Different but very similar to baking soda, borax can be used in a plethora of ways that involves improving our health as well as the state of our homes. Used primarily externally, borax can be used to remove stubborn stains of all kinds (from clothes), repel roaches, ants, and water bugs (when mixed with sugar), keep away mice, kill fleas as well as bed bugs, unclog drains (when mixed with boiling water), to make homemade washing powder, all-purpose cleaner, dish detergent, to remove rust (when mixed with lemon juice), remove mold/mildew from clothes, to deodorize as well as clean your home (toilet, garbage can, furniture, etc.), and for many other purposes. Internally, borax can be taken in extremely low doses (1/16 to ¼ teaspoon per 32oz of water) to remove fluoride from the body, help kill parasites, kill fungus in the blood, cure candida, prevent calcification of the bones as well as organs, prevent gout, osteoporosis, arthritis, obesity, and cancer. When using borax internally, ALWAYS be sure to stick to extremely low doses in large quantities of water. To be safe, use borax internally only when you are suffering from an ailment. 3 THE GOCC TRUMPET SEPTEMBER 2013 Sister Ahmanaha’s Kitchen From the Tribe of Simeon: Dominican Mangu (Mashed Plantains) Plantains are a staple food of the Dominican Republic. So much so, that there are songs and sayings to compare the Dominican to the plantain. In a way, plantains are to Dominicans as potatoes are to Americans. They can be boiled, grilled, fried, or mashed and can be eaten for breakfast, lunch, or dinner. What you’ll need: • • • • • 4 Plantains 1/4 Cup of olive oil 2 TBL butter or margarine 1/2 Cup cold water 1 TBL + 1 TSP The Facts Plantains are nutritionally beneficial; they have more than twenty times the amount of vitamin A, about three times the vitamin C, double the magnesium, and almost twice the potassium as a banana. Very low in fat and sodium, they are cholesterol-free and offer a good source of fiber. One-half cup-cooked slices contain about 89 calories. Doesn’t sound too bad, does it? 4 THE GOCC TRUMPET SEPTEMBER 2013 Sister Ahmanaha’s Kitchen Mangu (Mashed Plantains) 1. Fill a pot halfway with water, put on high heat. 2. While water is heating, peel the plantains and cut in half then slice each half in the middle (to get 4 pieces from each plantain). 3. Place in water, cover and bring to a boil. Once boiling and add a tablespoon of salt. 4. Let the plantains boil until they are fork tender (about 20 – 25 minutes). 5. Drain ALL of the hot water. While the plantains are hot, add the butter/margarine followed by olive oil and 1 tsp. salt. 6. Mash the plantains and after mashing briefly, add 1/2 cup of Cold water (NOT HOT WATER- adding cold water makes the Mangu really soft. It’s an old trick that has been passed down from generations). After adding the water, mash again until the Mangu is thoroughly combined. Licorice Root The word licorice derives from a Greek word meaning “sweet root”, explaining why it is most commonly used for making licorice candy. This wonderful herb has an enormous amount of health benefits that is often overlooked by the medical world. It can be found in abundance in the Middle East, Asia and Europe. Many different cultures have made use of it throughout ancient times proving it to be much more than just a sweet treat. Various Uses The herbs key ingredient glycyrrhizin is what gives licorice root its therapeutic effect. It was known in ancient times as a “cure-all”. This is because licorice can be used for a variety of different ailments: when mixed with honey it can be placed on wounds to speed up healing and prevent infection. It has been known to build the body’s resistance to the damaging effects of stress if taken during times of physical and emotional exertion. Licorice can also be gargled as a mouthwash to keep cavities at bay. In addition, it can be taken for a multitude of liver problems. Finally, licorice has shown to be very effective in fighting colds, flus and even cancer! Licorice When making it as a tea, the root can be mixed with ginger to enhance its effect. Keep in mind that only 1-2 cups of licorice root is recommended a day during sickness. Licorice in excessive quantities can become a problem for those with high blood pressure or diabetes. Also, while taking licorice root plenty of potassium-rich foods should be eaten, like bananas and guavas. In general, low or occasional usage of licorice root is considered by many to be a safe and an effective treatment for many kinds of diseases. 6 THE GOCC TRUMPET SEPTEMBER 2013 Nature’s Remedies Cont. Super Food: Sauerkraut Many of us, at one time, or another received antibiotics from our doctor. Antibiotics are supposed to protect us against infectious bacteria, but they also destroy the beneficial bacteria for digestion, protection, vitamin production and total body immunity. It becomes important for us to re-flourish our inner eco-system with good bacteria since most of us have low amounts in our intestines. When cabbage goes through fermentation it becomes what is known as sauerkraut. Fermentation is a reaction that occurs when the cabbage breaks down over time. This reaction produces a plethora of good bacteria and enzymes. One study showed that probiotics or good bacteria tend to accumulate on the inner lining of the intestinal wall and when consumed regularly it can actually block pathogens, toxins, and candida from being absorbed into the bloodstream, proving that the gut is our first line of defense against sickness and disease. Making your own sauerkraut is a simple process that you can do at home with just cabbage, salt, water, and time. There are different recipes all over the web, once you get it down packed you can graduate to pickles! Vitamin Watch Are you suffering from symptoms such as joint pain, muscle pain as well as weakness, fatigue, high blood pressure, poor concentration, chronic weight gain, bladder problems, constipation, diarrhea, or insomnia? If so, you’re symptoms, are probably due to a lack of vitamin D. Vitamin D is responsible for helping the body to absorb calcium, helping the brain to function properly, strengthening the bones as well as teeth, preventing all forms of cancer, reducing the risk of allergies, autism, cavities (by 50%), heart disease, reducing the rate of obesity in children as well as adults, gout, Psoriasis, infertility, and all types of autoimmune diseases. Foods that contain efficient amounts of vitamin D include salmon, sardines, eggs, all natural butter, and cheese. . 7 The greatest source of vitamin D is sunlight, which we are exposed to daily. Fifteen to thirty minutes of sunlight exposure each day is efficient for all though those of lighter skin tend to absorb sunlight faster than those of a darker complexion. Jogging, walking, or relaxing in sunny areas regularly are great ways to increase your intake of Vitamin D. THE GOCC TRUMPET SEPTEMBER 2013 Nature’s Remedies Cont. Grape Juice and Almond Milk Iron deficiency anemia is the most common type of anemia. Iron is an essential part of hemoglobin, and low iron levels result in decreased incorporation of hemoglobin into red blood cells. In the United States, 12% of all women of childbearing age have iron deficiency, compared with only 2% of adult men. The incidence is as high as 20% among African American and Mexican American women. Studies have shown iron deficiency without anemia causes poor school performance and lower IQ. Fortunately, this problem can usually be corrected through proper diet and nutrition. In fact an old recipe made from 100% grape juice and 100% almond milk has been show to furnish the system with blood of the purest kind. Grapes themselves contain enough nutrients for a man to live on alone, but most importantly they contain iron and vitamin C. Almond milk also has iron but best of all copper, selenium and potassium. Together in a mixed drink, about half and half, they introduce every element the body needs to replenish its blood supply. Finally, if you decide to make this drink, it’s highly recommended that you squeeze your own grape juice the old fashioned way. This is because grape juices sold in super markets today have most of its benefits taken out through processing. It’s also vitally important that the skin and seeds of the grape be left behind and not consumed. Grape skins contain tannins that will interfere with iron absorption, but pure grape juice is perfectly fine. This is also true for the almonds, they should be soaked overnight and the skins blanched or removed before making the milk. This nutritious drink can be taken in decent amounts whenever symptoms of anemia arise! The Hebrew Health Tip of The Week: Always chew your food slowly and properly Not only does chewing food properly allow one to enjoy their food, it also helps to prevent heartburn, aids indigestion, helps the body to absorb nutrients easier, promotes good oral hygiene, helps to maintain a healthy weight, and reduces the amount of bacteria/build up in the intestines. Apply this one tip and become that much more healthy by chewing your food properly. The first step of digestion is chewing. Proper or improper chewing determines the effect in which the food consumed will have on the body, whether negative or positive. Even some of the healthiest foods, if not chewed properly, can have an overall negative effect on the body. 8 THE GOCC TRUMPET SEPTEMBER 2013 Sister’s Crafts Corner: Hand Sewing: Pillow Let’s keep practicing simple stitches and make a pillow in four easy steps. Making a pillow is almost identical to a small pouch, although today we’ll take it a step further and use a ladder stitch to close. It is very comforting to have just the right pillow to rest an achy, tired body on! STEP THREE: Fold inside out, take your stuffing and push it into the open side of your pillow. Try to keep the stuffing evenly distributed as you go. Don't stop until your pillow is full and has no obvious areas of slack in its body. Store-bought cotton filler works best, but anything from feathers to scrap fabric can work. STEP ONE: Begin with two pieces of fabric of your liking. Almost any fabric can work. Cut all edges in a rectangular form slightly bigger than you want your pillow to be in order to leave a ½’ seam. STEP FOUR: Now the big and final step ladder stitching the pillow closed. Stitching with two strands of thread will provide added strength to your finished seam. Make sure the seam allowance at the opening is folded over and pressed very crisply. You will use the creases to guide you as you sew. Now, let’s stitch! Push your threaded needle up and through one of the folded seams, from back to front, and pull through. The knotted end of your thread will now be nicely concealed within the seam on the inside of the project. Now reference the ladder stich method from the first article. So nice and tidy! If you just can’t seem to get it, settle for an overcast or backstitch to close your pillow. STEP TWO: Place your two pieces with the right sides facing each other. This means the wrong sides should be facing you on both sides. Pin corners to help keep the fabric from moving as you stitch. Run stitch across the top, down one side and finally across the bottom. Try and do this all in one stitch to avoid holes. If you must stop, be sure to make a tight stitch next to where you left off. A note on timing: If you live in a cold winter climate, this will be the wrong time of year to take cuttings–wait until spring. But in a warm winter climate this is the ideal time Steps for Herbs that start in water: 1. Take some cuttings and trim them down: 2. When choosing a branch to propagate, look for the freshest, plumpest, prettiest sprigs you can find. The stems should be pliant, not woody. Look for tiny leaves sprouting at the tips. That’s always a good sign. Pluck off one or two sets of leaves, and remove any flower or buds that have formed. The goal here is to keep the plant focused on growing roots and leaves; flowers (a different form of reproduction) are a big energy drain. 3. The next step is to make a cut at a node–make the cut just beneath the node, as cleanly as possible. Remember, you don’t want to crush the stem at all when you make the cut. Which node you choose depends on what sort of herb you’re working with. It’s just a matter of common sense. The cutting will be planted in soil, so the stem needs to be long enough to bury–about an inch, more or less: i.e. A lavender cutting is large, so it would be cut at the topmost node. For thyme, which are much smaller and more delicate, cut three or four nodes down. 4. Stick the stems in a small cup or jar of water and place in a sunny but protected spot. Add more water as it evaporates; at least one node should always be submerged in water since this is where the roots will form. 5. Once healthy roots have formed pot up or plant the new plants in-ground and you’re done, well of course water them in well to get things going. In hopes that sprouting went smooth, let’s pick up the pace and get our hands dirty! Are you still a bit timid? No worries, this next gardening tip is just as simple! This is a technique that anyone from a beginner to the most experienced grower uses regularly: growing herbs/vegetables via cuttings. Certain plants are incredibly easy to reproduce from cuttings — and a heck of a lot faster than growing from seed. So easy in fact, that it is practically criminal how quickly you can stock your entire garden from one small plant! Aftercare: The cutting part is the easy part. The hard part is waiting, and keeping these babies alive. They must always be moist, but not soggy. You can use a plastic cover to help keep them moist. You might find it easiest to water them with a spray bottle, if you water with any force before they root you might dislodge them. Steps for Herbs that start in potting soil: 1. Steps 1-3 from above. 2. OPTIONAL STEP: (Many use the rooting hormone, many don’t. You can choose to do half with and half without to see the difference!) Dip it in the rooting hormone, use honey for a chemical free alternative. Dip the tip of the stem–try not to get it on the leaves. To make the honey a rooting hormone agent: 1) boil 2 cups of water 2) add 1 TBS of honey 3) Let mixture cool then put in an airtight container 4) Store out of light 5) Dip cutting in solution. Shelf life of this solution is approximately 2 weeks. If you see any fungus or mold–anything suspicious at all– on one of your cuttings, pull it out. You don’t want that spreading. If the cuttings are outdoors, you also have to protect them from heat and sun. Move them to a shady spot if the weather is expected to be warm and sunny. They like to be warm, but not too warm. The 65-70ºF zones are perfect. You know your cuttings are succeeding when they put off new growth. They should be well rooted and ready for transplant in about 4 weeks. 3. Make a hole in the soil, plant cutting up to its leaves, gently pat down the soil around it. 4. Important tip. Make lot cuttings of each plant you propagate. There can be a high failure rate for various causes.
