For Every Child
Make a difference with the Blackmores "Gift for
Christmas Charity Programme at Unity
Bucatini with Garlic Prawns
BBQ Chicken Skewer
(for party of 12)

Preparation
• 350g bucatini or other long pasta
• 2 tbs olive oil
• 3 finely chopped garlic cloves
• 20 green tiger prawns, peeled (tails intact)
• 500ml tomato passata (sieved tomatoes)
• A little sugar
• Basil leaves for garnishing
Preparation
• 1 x 225g can pineapple pieces in natural juice, strained, juice reserved
• 2 tbs tomato sauce
• 1 tbs soy sauce
• 1 crushed garlic clove
• 1 large red capsicum cut into 2cm pieces
• 4 shallots, ends trimmed, cut into 3cm pieces
• 12 (about 550g) chicken tenderloins, cut into thirds crossways
• Olive oil spray
Cooking
• Boil salted water in a large pan and put in pasta to cook.
Drain water leaving 60ml of the cooking liquid.
Turn off the heat and toss pasta with remaining cooking liquid.
• Meanwhile, heat up some oil in a deep frypan using medium
heat. Stir fry some garlic in frypan for 20 seconds or until
fragrant. Stir fry prawns for 2 minutes or until they begin to turn
red. Add the pasta and bring to the boil, then return heat to
low and let it simmer until thickened. Season sauce to taste
with sugar, salt and pepper.
• Serve pasta in bowls topped with prawns and basil.
Cooking
• Pour pineapple juice in a bowl, mix in tomato sauce, soy sauce
and garlic. Put in chicken tenderloins and then turn to coat.
Seal and leave in fridge to marinate for 1 hour.
• Put capsicum, shallot, pineapple and chicken alternately
through skewers. Spray on a light coat of olive oil.
• Preheat a barbecue flat plate or a large frying pan on
medium-high. Cook, turning occasionally, for 10 minutes
or until golden. Serve.

Steamed Christmas Pudding
Apricot Lamb with Herb Crusts
(for party of 8)

Preparation
• 1 cup plain flour
• 1 cup self-raising flour
• 1 teaspoon mixed spice
• 1 teaspoon bicarbonate of soda
• 3 cups fruit mince
• 2 eggs, lightly beaten
• 125g butter, melted, cooled custard
Preparation
• 2 teaspoons olive oil
• 4 (125g each) trimmed lamb cutlets
• 1/4 cup apricot jam
• 2/3 cup fresh multigrain breadcrumbs
• 1/4 cup chopped fresh flat-leaf parsley leaves
• 1/2 cup low-salt chicken stock
• 4 (85g each) steamed corn cobettes, steamed
Cooking
• Grease an 8 cup-capacity metal pudding basin (with lid).
Line base with baking paper.
• Sift flours, mixed spice and bicarbonate of soda in a large
bowl. Throw in fruit mince, eggs and butter and stir. Transfer
mixture into prepared basin. Smooth top before closing lid.
• Place basin in a large saucepan, add water half way up basin
and steam using medium heat. Boil for 5 hours, adding more
boiling water when necessary.
• Remove pan from heat. Carefully lift basin from water.
Stand for 10 minutes. Remove lid. Turn pudding onto a plate.
Serve with custard.
Cooking
• Preheat oven to 190°C. Heat oil in a large, non-stick frying pan
using medium-high heat. Throw in lamb to cook for 1 to 2
minutes until both sides are browned. Place browned lamb
in an ovenproof dish in a single layer.
• Spread jam on the top of lamb. Mix breadcrumbs with parsley
in a small bowl and sprinkle over pork. Pour stock into base
of dish.
• Bake without covering for 8 to 10 minutes or until lamb is fully
cooked and breadcrumbs are golden. Drizzle over dish juices.
Add corn to serve.
