The Norma Oficial Mexicana (NOM) applies to all processes and activities related to the supply of agave, production, bottling, marketing, information, and business practices linked to the distilled alcoholic beverage known as tequila. Tequila must be produced using agave of the species Tequilana Weber Blue variety, grown in the federal states and municipalities indicated in the Declaration. Furthermore, the NOM establishes the technical specifications and legal requirements for the protection of the Appellation of Origin of "Tequila" in accordance with the current General Declaration of Protection of the Appellation of Origin of "Tequila", the Law, the Industrial Property Law, the Federal Consumer Protection Law and other related legal provisions. All authentic, regulated tequilas will have a NOM identifier on the bottle. The important laws since 1990 were NOM-006SCFI-1993, the later update NOM-006SCFI-1994, and the most recent revision in late 2005, NOM-006-SCFI-2005. The number after NOM is the distillery number, assigned by the government. NOM does not indicate the location of the distillery, merely the parent company or, in the case where a company leases space in a plant, the physical plant where the tequila was manufactured. Reposado: We rest our Blanco in specially made American and French Oak barrels for six months—four months longer than Mexican law requires. Anejo: We age our Blanco a full eighteen months in specially made American and French oak barrels to make Trianon Añejo. Because that’s how long it takes to strike the perfect balance between the taste of oak and agave. Reposado: 100% organic, fermented without yeast, double distilled and rested for 8 monthS. Anejo: aged in oak bourbon barrels for 18 months. Reserva Extra Anejo: aged in oak bourbon barrels for 5 years. 2,000 acre estate, average maturity 10 years, cold filtration, 7-10 days fermentation. DON DIEGO SANTA 80˚; NOM # 1124 ARANDAS, JALISCO 750ML ONLY; REPOSADO, BLANCO Our agave is grown at higher altitude for eight to ten years before it acquires the desirable sugar that allows for maximum fermentation by natural yeasts from the same fields as which the agave is grown. After cooking the agave and extracting the “agave nectar”, the fermented liquid is double distilled for absolute purity while retaining the essence of the agave soul. It is aged in oak barrels in order to produce our Reposado and Añejo varieties. The creation of Don Diego Santa Tequilas is done by one of the oldest and most highly respected distilleries, Destilería de la Plata, in Guadalajara, State of Jalisco. Don Diego Santa Tequilas have a limited production due to their handcrafted process. They are also Kosher certified. ALMA 80˚; HIGHLANDS, JALISCO NOM # 1504 750ML ONLY; BLANCO, ANEJO, REPOSADO The finest 100% blue Weber agave, cultivated from the shores of Lake Chapala, a region of Mexico known for the quality of its maguey plants, rich in minerals with a unique and distinct character. Our natural fermentation results in a purer and longer process without the use of any enhancers, chemicals or artificial coloring to expedite our fermentation. The agave comes from our very own plantations where our experienced ‘jimadores’ select the highest grade of agave, the ‘heart and soul’ of a good tequila. We carefully analyze each plant, making sure they are at the best mature age, free of pesticides with perfect sugar levels. ORO AZUL 80˚; NOM # 1079, LOS ALSTOS, JALISCO 750ML ONLY; BLANCO, ANEJO, REPOSADO Blanco – straightforward, this silver tequila is heavy with green agave notes and some woodland character — pine and cedar bark. A touch of sweetness on the finish does little to cut through the bite, which finishes on a lasting and lightly bitter note. Reposado – this tequila, rested in oak for six months, tempers the vegetal notes and subs in caramel and a little vanilla. Much more easy drinking than the Anejo – This tequila spends two long years in oak, giving it a nicely dark color and some rich flavors of caramel, whiskey-infused vanilla. The Anejo can’t shake that bitter edge, but at least it’s on the lighter side here, leaving this tequila — a bargain among anejos at just $32 a bottle — easily the best of the bunch. HACIENDA VIEJA 80˚; NOM # 1412, ARANDAS, JALISCO 750ML ONLY, REPOSADO, BLANCO, DON FELIX Don Felix Anejo (named for the Banuelos family patriarch and founder of the distillery) is aged for well over the minimum one year that is required. Don Felix provides the ultimate experience for those who wish to sip and savor a truly unique and special spirit. Hacienda Vieja Reposado is rested for 90 days in new White American Oak barrels. This outstanding tequila earned a rating of 90 points and a "Best Buy" from the Beverage Testing Institute in September, 2011. One of the smoothest tequilas on the market. CASA 1921 80˚; NOM # 1535, ARANDAS, JALISCO 750ML ONLY; BLANCO, ANEJO, REPOSADO, & CREAM LIQUER 1921 Tequila combines both traditional and new age processes to produce its extraordinary tequilas. Production starts with harvesting only the finest blue agave, the most prized of all agave plants. The piñas are then baked using a three-step cooking process which prevents the agave from burning and developing unpleasant flavors. The shredded piñas are then pressed rather than ground in order to gently extract the most juice while leaving the fibers behind. This process is followed by a double fermentation process which differentiates 1921 from other producers. This double fermentation, which takes over a week to complete, endows 1921 Tequila with a smoothness and spectrum of flavors not found elsewhere. Double distillation in pot stills is the final step. Unlike other producers which use higher temperatures and a faster pace, the 1921 distillation method occurs slowly under cool and controlled temperatures resulting in a more aromatic tequila free of fats and undesirable compounds. The tequila that will be aged to reposado and añejo is then filtered and transferred to new charred American oak barrels. The estate itself was founded in 2004 by Francisco Beckmann, though we've been working these grounds for over eight generations, as long as the history of Tequila itself. (Export does not have a NOM) RANCHERO 100% AGAVE 80˚; NOM # 1460 JALISCO LITRES ONLY; SILVER AND GOLD An economical way to use a 100% agave tequila instead of a “mixto”, produced by the good folks at Hacienda Vieja. That pathetic looking guy on the label doesn’t want to be identified, a testimony to keeping production costs in check in order to provide you with a quality, economical priced mixer. MEZCAL There are two types of mezcal, those made of 100% maguey and those mixed with other ingredients, with at least 80% maguey. Both types have four categories. White mezcal is clear and hardly aged. Dorado (golden) is not aged but a coloring agent is added. This is more often done with a mixed mezcal. Reposado or añejado (aged) is placed in wood barrels from two to nine months. This can be done with 100% agave or mixed mezcals. Añejo is aged in barrels for a minimum of twelve months. The best of this type are generally aged from eighteen months to three years. If the añejo is of 100% agave, it is usually aged for about four yearS. Mexico has about 330,000 hectares cultivating agave for mezcal, owned by 9,000 producers.[8] Over six million liters are produced in Mexico annually, with more than 150 brand names. BRUXO # 1 ARTISINAL MEZCAL JOVEN 92˚ 750ML ONLY, 6 PACKS Bruxo's No.1 is a joven (young) mescal made entirely from Espadin. Produced in Oaxaca, it is double distilled for a slightly smoky style of mescal. Made with 100% Espadin agave, Bruxo No.1 is a traditional mezcal, a close relative to tequila (which must be made from blue agave). If you didn't know, "Espadin" is the Spanish name for a ceremonial sword, just a little trivia for you to enjoy as you're sipping this smoky, flavourful mezcal.
