Hello!
I hope everyone is able to attend the informational meetings for updates
on the new meat lab, hosted by Jeff Sindelar and Dan Schafer. This is a
very exciting time for our industry and so much time and effort has been
put into this project by Jeff, Dan and many others. It will greatly benefit
all of us for many years to come.
Also, try to plan on attending the Wisconsin Food Safety Summit.
This will be held at the University of Wisconsin meat lab in November.
Information has been mailed to all plant members. Validation may seem
overwhelming, but if we stay informed it will help immensely.
In closing, I would like to thank Dr. Sindelar for all of his hard work and
dedication to our industry. I don’t know if we realize all that Jeff does for
us – convention planning, HACCP training, research, the Master Meat
Crafter Program, and not to mention all he has done to get the meat lab
to this point. Jeff is a huge asset not only to our association, but to our
industry on national and international levels, as well.

Governor’s Blue Ribbon Meat Products Auction
raised more than $110,000 for 4-H youth
Governor Scott Walker hosted the 24th Annual Governor’s Blue Ribbon Meat Products Auction, which raised
more than $110,000 for the Wisconsin 4-H Foundation.
The 2015 Best of Show Award went to meat processor Lake Geneva Country Meats. The company earned the
honor for its Ultimate Bacon, a tasty combination of Canadian bacon, wrapped in bacon, in the Wisconsin State Fair
Meat Product Contest. The Wisconsin Association of Meat Processors (WAMP) sponsored the competition. The Best
in Show’s Ultimate Bacon sold for $20,000 to a consortium formed by Country Fresh Meats, Wisconsin Souvenir
Milkcaps, Miejer Inc., Egg Innovations, Town Bank, Jim Reid, and Bob and Jill Nieskes.
The evening’s emcee was Bob Meyer, anchor of Brownfield Ag News. Auctioneers for the evening were Bob
Johnson, Gary Finley and Dave Koning.
The auction is produced in partnership with the Wisconsin 4-H Foundation and Wisconsin State Fair. Generous
sponsors included Schenck SC, Rupena’s Fine Foods and Wisconsin Association of Meat Processors (WAMP).
Thank you to the following food concession vendors at the Wisconsin State Fair who donated a portion of their
sales on 4-H Day, Aug. 11, to the Wisconsin 4-H Foundation. They include Bo Alan LLC, Double K Dairy Products,

grants college scholarships to support 4-H youth in continuing their education after high school.

Wisconsin Meat Industry Hall of Fame
seeks nominations
Established in 1993, the Wisconsin Meat Industry Hall of Fame recognizes the contributions of people – working
as individuals and in teams – who have had a significant impact on the meat industry of Wisconsin. The nature of
these contributions can be varied, from innovative business ventures and new manufacturing processes to educational efforts and leadership roles. Past inductees include scientists, policymakers, professors, equipment suppliers and
operators of both large and small processing plants.
To date, 85 individuals have been inducted into the hall of fame. Their names and biographies are posted
online at www.ansci.wisc.edu/Meat_HOF.
It is now time to select the class of 2016. Nominations are being sought by the Wisconsin Meat Industry Hall
of Fame committee and will be accepted through Nov. 20, 2015. The nomination form and instructions can be

2016-2018 Master Meat Crafter Training Program
Did you miss out on the opportunity to be a part of the first three Master Meat Crafter
Training program classes? Have you been patiently waiting for the next class to begin? If so, the
wait is over.
We are pleased to announce that in the next couple of months, we will be accepting
applications for the fourth Master Meat Crafter Training program class set to begin in early
spring 2016. This unique and one-of-a-kind program was developed in conjunction with the
Specialty Meat Development Center (SMDC) of Wisconsin and is supported by the University of
Wisconsin Meat Science Extension; University of Wisconsin; Wisconsin Department of
Agriculture, Trade and Consumer Protection; and the Wisconsin Association of Meat Processors.
The goals of the program are to:
1) Provide participants with well rounded, in-depth, and comprehensive knowledge about meat science/meat processing
principles;
2) Provide development opportunities for the future meat industry leaders; and
3) Help ensure the U.S. meat industry remains strong and viable for years to come.
After successful completion of the four program elements (six meat science “schools,” a mentorship program,
completion of an in-plant project, and several homework assignments) taking approximately two years to complete,
participants will be awarded accreditation as a “Master Meat Crafter,” signifying their skill set and understanding of meat
science/meat processing principles.

hourly wages. If an employee is on a salary, convert their
salary to an hourly wage. If a salary is yearly, convert it
by following this formula: salary / 52 / 40. If the salary
is monthly, please convert it by following this formula:
salary / 4 / 40.
When filling out the supplemental benefits section,
provide an overview of the benefits you offer. You do not
have to go into detail in this section. The data gathered
in this section will be used to generate an abstract overview of benefits offered in the industry. Other supplemental
benefits could include items such as dental insurance, free
lunches or company outings to sporting events, etc.
As owners, we are also operators, and our wages can
reflect the added responsibilities of ownership. The survey is
to demonstrate the wages paid to non-ownership employees.
Including the wages of owners could unfairly affect this
data. Exclude from both the wage and benefits sections of
this survey information about anyone who is compensated
differently than a non-ownership employee because they
have an ownership interest in the business.

Recently there has been conversation among the
WAMP Board of Directors about what type of wages are
paid to member plant’s employees. That information would
be useful to members as they negotiate with their employees
to offer fair wages and supplemental benefits that are in line
with market rates. All information gathered in this survey
is meant to be non-identifiable. The information gathered
is to be used for internal compensation uses only and is
to be kept strictly confidential. Participation in this survey
accepts these terms of use. Only WAMP members who turn
in a wage survey will receive the final, aggregated results of
the study around the end of February.
Please fill out both pages of the following survey to the
best of your ability. Not all members will have employees
in all positions. Match the description to your employees as
best as possible. If employees fill multiple roles, please enter
their information on their primary role only, and put them
in the most senior roll. For instance, if your head meat cutter
is also your production general manager, put that person

The actual review time will vary depending on the
number of hazard analyses and HACCP plans, and
the complexity of the hazard analyses and prerequisite
programs.

Wisconsin Association of Meat Processors 2016 Scholarship Application
DEADLINE: January 31, 2016
ELIGIBILITY & PURPOSE: To promote, through scholarship, the post-secondary education of students whose
parents/guardians, grandparents or themselves are employees of plants who are members of the Wisconsin Association
of Meat Processors. Previous recipients of a scholarship will not be eligible, but previous applicants are welcome to
reapply.
CRITERIA: Selection of recipient will be based upon the student’s scholarship ability, leadership and community
service.
SELECTION: Applications must be mailed by January 31, 2016 to WAMP Executive Secretary and will be forwarded
to an independent scholarship committee who will select the top applicants as recipients.
AMOUNT: Chosen candidates will each receive a $1,000 scholarship. The scholarship payment will be made upon
proof of enrollment, tuition payment receipt, and completion of one semester of post-secondary education. If a recipient
is already in college and has completed at least one semester and enrolled for a second semester, they are eligible for
the scholarship payment right away.
Initial qualifying criteria includes:
1) Student must intend on continuing their education following high school graduation at an accredited college,
technical college, business college, nursing school or junior college.
2) Attach a resume.
3) Attach transcripts of their classes taken in high school or college.
4) Attach two letters of recommendation.
5) Recipients have to be present at the Annual Conference Banquet, or have a plant representative present to receive
this award.
If the following criteria are not included in your resume, you must address them on a separate sheet of paper to be
eligible for the Wisconsin Association of Meat Processors scholarship.
1) List the school you are attending or plan to attend.
2) Briefly explain your career objectives or goals.
3) List and discuss all school and community leadership positions and years of participation.
4) List and discuss all extra curricular activities and the number of years of participation.
5) List and discuss all honors and awards.
6) List and discuss all work experiences.
7) Explain what you feel is the importance of post-secondary education in your chosen field.
8) Explain how you feel the Wisconsin Association of Meat Processors is important to the meat industry.
Please include a cover page to include: Applicant’s first, middle and last name with date of birth, applicant’s
permanent address and phone number, father’s full name and occupation, mother’s full name and occupation,
WAMP plant sponsor name and address, signature of applicant, signature of parent/guardian, WAMP plant
owner signature.
