Introduction
A warm welcome to the bumper edition of our new cookery course programme taking you
through the spring and summer months. We have had a very busy few months at La Cucina
with the publication of Katie Caldesi’s new cookery book, “The Italian Cookery Course”,
(Katie will be teaching selected dishes from her book including her skilled masterclasses
throughout 2010, see dates inside our brochure). We have been listening to our customers’
requests and have added extra pasta and pizza making courses at weekends and courses
incorporating quick dishes for time-conscious food lovers. We have also introduced some
fabulous new courses to celebrate the seasons, both spring and summer, below you will find a
few highlights of what we have in store for you.

To give you some clarification on our range of pasta courses, our monthly “Pasta, Pasta,
Pasta!” taught by Valentina Harris is aimed at all skill levels, fresh pasta is made from
scratch, and Valentina focuses on regional pastas and sauces. With recipes changing
throughout the year along with the seasons, this is an ideal course to come and practise your
skills and increase your repertoire.
“Fresh pasta for novices” – taught by Stefano Borella, is aimed at people who have never
made pasta before and are a little nervous in the kitchen. This fun, hands-on course will give
you the confidence to return home and successfully reproduce a great bowl of pasta for your
friends and family.
“The art of fresh pasta making” – is taught by La Cucina Caldesi co-owner, Giancarlo
Caldesi. This course is aimed at people who have a love of Italian cooking and would like
to learn the basics of pasta making. On occasions Giancarlo may show you how to make
his infamous lasagne! Giancarlo’s courses are a combination of demonstration and hands-on
tuition.
Carolina Català Fortuny, our popular and talented chef who heralds from Spain will
be teaching a hands-on cookery course solely dedicated to tasty tapas (Saturday 13th
March), the dishes that are on everyone’s lips at the moment, bringing a wider range of
Mediterranean cuisine to our school. This course promises to be popular, so we suggest you
book early!
Carolina, who is Cordon Bleu trained, will also be teaching a unique course dedicated to food
presentation. You will learn a range of skills and techniques used in professional kitchens
that with a little practice can be recreated at home, for dinner party dishes that will be sure to
impress. You can be creative as you like, as you will be given plenty of opportunity to design
your own dishes. ‘Dress to impress’ (Saturday 8th May).

Our 7 week cookery course, “The Complete Italian Cookery Course”, which runs on
Monday evenings, will be running Monday 17th May - 28th June, and covering all the main
aspects of Italian cuisine; aimed at the keen novice who loves all things Italian and is keen to
learn more. There will then be a short summer break and it will return again in the autumn
with wonderful seasonal Italian dishes for you to learn.
Our festive canapés and cocktails evening sold out very quickly, so as promised we have
scheduled another course for you, this time to celebrate summer; you will create a fabulous
selection of imaginative bite-sized treats perfect for the picnic food and summer parties,
along with a lesson in cocktail making by the enigmatic Claudio Grisorio, mixologist from
the fashionable “de Vigne bar”, The Mandeville Hotel, W1, (Tuesday 22nd June, 6.30pm –
8.30pm £45, including tasty bites and cocktails).
A must for all cookery enthusiasts is our ‘Gourmet Italian weekend’, (Saturday 6th & Sunday
7th March), where you have the opportunity to spend the weekend cooking with the Caldesis
and our cookery school team. Offering you the chance to enhance your cookery skills as well
as enjoying cooking a variety of mouth-watering seasonal dishes; you can selflessly immerse
yourself in Italian cookery, wine and culture amongst like-minded people.
Our popular visiting chefs are also dropping in at La Cucina Caldesi to teach varied aspects of
Italian cookery, below are some updates on who is coming and the treats they have planned
for us...
Following on from his successful victory in the ‘Celebrity Jungle’ we have managed to entice
Gino D’Acampo back to teach his popular Friday night slot, (Friday 5th March & Friday
14th May). This season his hands-on courses will be based on his newly published cookery
book, ‘The Italian Diet’, incorporating a range of simple, tasty and yet healthy dishes.
The Caldesis have persuaded the affable and much talented Valentine Warner to host a special
evening at La Cucina Caldesi, where he will be creating a seasonal 3 course Italian dinner with
his own twist. This promises to be a fun-filled and informative evening. (Friday 21st May).
Ghalid Assyb’s course ‘The Mediterranean Deli’ (Saturday 26th June), is the perfect choice
for this time of the year: he will show you how to combine seasonal Mediterranean produce
with herbs and spices to produce colourful, fresh and unique dishes for which, through his
work with the popular delicatessen ‘Ottolenghi’, he has become renowned for. Ghalid is
also teaching the ‘Italian dinner party’ (Tuesday 23rd March, Friday 14th May, Saturday 24th
July), where you can glean ideas for 3 course lunches/dinners, as ever Ghalid will include his
exceptional desserts that have people returning to us time and again.
Franco Taruschio is introducing an unique and exciting new course based on the lesser
known concept – the 5th sense – ‘Unami’, (Tuesday 25th May). This is an unusual course

and one to interest those of you who are looking for something slightly different; inspiring
you to cook a wider range of dishes. He will also be helping us to celebrate Easter with his
‘Italian Easter dishes’ (Tuesday 30th March), where he will be teaching you a 3 course meal
incorporating Italian celebratory treats. Franco’s culinary background also specialises in
Italian Jewish dishes, we have created a hands-on cookery course where together you will
create a fabulous 3 course menu of regional Italian dishes (Tuesday 20th July).
Sophie Grigson will be teaching her exciting new course ‘Tasting the best’, (Saturday 5th
June) where she introduces a range of Italian produce for you to taste, compare and contrast;
they will include every day Italian staples e.g. mozzarellas, every day olive oil v single estate
oils, as well as the more unusual. Then together you will cook a range of dishes to illustrate
how these ingredients can be used in Italian cookery. Sophie is also teaching her popular
‘Springtime in Italy’, where she shows you how to get the best out of the fresh seasonal
produce available (Saturday 10th April), returning to us in August for ‘Foods from the Italian
Islands – Sicily, Sardinia and Capri’, ideal for the coming summer months, (Sunday 1st
August).
Thane Prince has a new course this season ‘Easy after work suppers’ where you will learn
some wonderfully easy and completely delicious dishes that take less than 15 minutes to
assemble. The aim of this course is to enable you to add variety to everyday produce, spicing
up midweek dishes without too much fuss, yet with maximum flavour. Thane is also running
our ‘Fish cookery’ masterclass, as well as her popular ‘Pizza, Pasta, Polenta’, aimed at
beginners, teaching them popular basic Italian dishes.
Due to popular demand we have asked Ursula Ferrigno to teach our ‘Midweek meals for
the family’, where together you will cook a range of Italian dishes that need little preparation
and can be cooked up in no time, enabling you to create tasty, healthy recipes for the family.
You are also able to bring your children to cook with you, encouraging families to cook
together, (please call the office to discuss this to ensure the children’s ages are appropriate).
Valentina Harris’s informative, hands-on cookery class ‘Matching Food and Italian Wine’
will have you cooking fabulous spring and summer dishes with carefully chosen wines to
match – the wines are regional, taking you on a small tour of Italy.

Our much loved Italian bread course (Monday 5th July) taught by Richard Bertinet enables
you to master the skills of making a range of Italian breads – including ciabatta, pizza,
focaccia and olive bread. In one morning you will be able to return home and recreate these
dishes for your friends and family.
We have created a very special mother’s day for you this year, “Mamma Mia!”, (Saturday
13th March), where you are able to come to us throughout the day from 10.30am – 4.00pm
and cook a recipe of your choice to take away to enjoy for dinner later, followed by a

pampering beauty treatment for both yourself and your mum at the infamous organic beauty
spa ‘Content wellbeing’, www.beingcontent.com. We want this to be a day for you both to
have fun, relax and remember... due to the nature of the course places will be limited, so we
recommend that you book early!
Katie and Giancarlo Caldesi have been newly appointed as ambassadors for the popular
Italian Moretti beer, to celebrate their partnership we are running Friday night, ‘Moretti
& Pizza’ evenings during the summer months, (16th April, 11th June & 13th August). The
evenings are inexpensive and fun – perfect for a bite to eat with friends before heading off for
a night out - £28 per person, including 2 beers and pizza which you have made yourself! Look
inside for further details.
For the school holidays (July & August) we have created a new course exclusively for
children and teenagers, where they will spend the morning cooking a selection of Italian
dishes, followed by a class bursting with crafts and sewing, led by ‘The Thrifty Stitcher’,
talented and infectious costume and sewing experts, (see our children’s courses for further
details).
Finally new for 2010 we are introducing “Caldesi Talks...” a series of monthly mornings
where you can join us for a relaxing cappuccino with biscotti and listen to an informative
talk about something topical and foodie related – menu planning, how to stock your store
cupboard, how to write a recipe. We are open to ideas so if there is something you’d like to
learn about let us know. These will be running monthly, on Monday mornings for 1 hour,

After his success in the ‘Celebrity Jungle’ we have managed to entice Gino D’Acampo back to
La Cucina Caldesi for a very special cookery evening. Gino will be cooking a range of healthy
Italian dishes taken from his fabulous new cookery book, ‘The Italian Diet’, which celebrates
the Italian love of food using simple, fresh, good-quality ingredients to create tasty dishes
that won’t ruin your waistline and are also beneficial to your health. This hands-on cookery
evening promises to be a lot of fun; once all the cooking is done you will sit down with Gino
to eat what you have made as an informal dinner. We have kept numbers small to ensure
maximum participation, so be sure to book early!

Indulge in all things Italian for a weekend by immersing yourself in Italian cookery at
La Cucina Caldesi. Saturday: on Saturday morning we will meet for coffee and croissants for
breakfast at Caffè Caldesi before starting the morning’s cooking. During the class you will
learn how to make fresh pasta and sauces to enjoy for lunch, along with other great ideas for

lunches, quick Italian supper dishes, as well as more complex recipes. Relax in foodie heaven
in Marylebone High Street for the afternoon enjoying La Fromagerie, Ginger Pig butchers,
Rococo Chocolates and more. We may be able to slip in a tasting at Rococo Chocolates
for those that are keen chocolate gourmets. Gather for dinner later to make the finishing
touches to the dishes that were prepared earlier; and then you will sit down to enjoy a wellearned, informal dinner. Sunday: After a light breakfast at the cookery school, we will shop
in Marylebone Farmer’s market in search of our ingredients for the perfect Italian Sunday
lunch including a range of antipasti recipes, roast meats and vegetables followed by two dolci
(Italian desserts) and ice cream. The course will finish at 3.30pm allowing plenty of time to
travel home. If you are coming from far afield we can recommend ‘The Mandeville Hotel’,

SIMPLE ITALIAN MAIN COURSES with Giancarlo Caldesi
Italian cuisine has a huge variety of choice when it comes to main courses: from hearty meat to
elegant fish to elaborate pasta dishes, the list is endless. During the course Giancarlo will teach
how to prepare some great traditional main course dishes such as the ‘hunter’s catch’ roast or
his signature lasagne with Tuscan ragù sauce along with an array of seasonal ‘contorni’. Once
everything is ready you will join Giancarlo for lunch with a glass of Italian wine.

FRESH PASTA FOR NOVICES with Stefano Borella
This class is aimed at keen would-be cooks who have never made pasta before and are a little
nervous in the kitchen. Stefano will guide you through the techniques of pasta making, step
by step. Learn how to roll and cut your own long pasta such as tagliatelle, and how to stuff
ravioli. To compliment your new skills learn how to recreate sauces at home that include pesto
genovese, classic tomato (which can be used in many Italian dishes), and pasta allo scoglio (for
seafood lovers). End the evening enjoying the fruits of your labour by sitting down to eat what
you have made for a typical Italian dinner with a glass of wine in Stefano’s company!

TRULY MADLY ITALIAN with Ursula Ferrigno
Tagliatelle with asparagus and prawn sauce, aubergine patties with roasted tomatoes, grilled

“MAMMA MIA - MOTHERS & DAUGHTERS” – cooking and pampering
To celebrate Mother’s day this year we are opening our cookery school doors for you to
come and join us in a day of cooking and pampering. You will be taught how to cook a
couple of seasonal Italian dishes ‘starter and main course’ or ‘main course and dessert’,
which you can take home to enjoy later. Once all the hard work is done, you can dust
down your aprons and head off to ‘Content Beauty/Wellbeing’, in nearby Bulstrode
street, www.beingcontent.com. Here you will both be given a fabulous manicure, in their
calm, tranquil and relaxing beauty room. Return to the school to collect your dishes before
heading home. The school will be open from 10.30am - 4.00pm and you can come along
throughout the day. However due to the nature of the course and treatments places will be
limited, so we advise you to book early. Included: hands-on cookery lesson, where you will
cook 2 dishes between you, 2 x manicures.

TAPAS EVENING – THE AUTHENTIC TASTE OF SPAIN

As with the Italians, Spanish life revolves around food, with meals seen as a time for family
and friends to come together. To find out more about Spanish cuisine and how to recreate
authentic Spanish dishes at home join Carolina Català Fortuny in this inspiring hands–on
course. Carolina, originally from Catalunya, will introduce you to a selection of traditional
Spanish tapas. Through the combination of special cooking methods, fresh seasonal
ingredients and a huge love of cooking, Carolina will show you how to capture the flavours
and essence of real Spanish cookery.
There will be plenty of opportunity to taste and ask questions throughout the evening.

Join this popular hands-on pizza making course, where you will learn how to make the
perfect pizza dough from scratch in order to prepare your own delicious pizzas. You will
also prepare a vast array of toppings to be used to create your own personalised pizza. By
the end of the evening we hope you will become a master in kneading, seasoning, dressing
and baking your own pizzas. You will also learn how to make your own ‘Focaccia’ (Italian
bread), which you can take home. There will also be salads for you to create and enjoy
along with a seasonal dessert.
This promises to be a fun, sociable, informal cookery course, where you can enjoy your
pizzas as soon as they come out of the oven, along with a chilled glass of Italian beer.

KATIE’S ITALY with Katie Caldesi
This fabulous recipe packed cookery course consists of an eclectic collection of Katie’s
favourite recipes from her latest cookery book, ‘The Italian Cookery Course’. You will spend
the day cooking some real treasures from Italy’s diverse regions not often seen in the UK. Try
the moreish leek and olive tart, cinnamon dough balls, or lamb stuffed with Pecorino and
mint. This is a great course for foodies, and is aimed at the intermediate cook.
Together you will create a 3 course lunch which you will sit down to enjoy in Katie’s
company, wine included.

with Carolina Català Fortuny
Does the thought of having to cook a meal send you into a panicked frenzy or are you
looking to brush up on your cookery skills? Then this could be the cookery course for you!
Carolina will take you back to culinary basics and show you how to cook a selection of simple
recipes using key cookery skills, methods and techniques to help you get back in the kitchen
and get cooking. This is a hands-on course to give you plenty of opportunity to practise your
new found skills enabling you to grow in confidence and recreate these dishes at home with
minimal fuss. With Carolina’s assistance you will create a fabulous seasonal 3 course meal,
which you will then sit down to enjoy with a glass of wine. La Cucina Caldesi recipe pack of
the day’s recipes are also included. This course is aimed at either a total beginner or a cook
with a little experience.

AN ITALIAN DINNER MATCHING WINE WITH FOOD
with Valentina Harris
This popular course has been updated and revamped in order to maximise your enjoyment.
Valentina Harris will be your chef for the evening and she will be focusing on seasonal
wines which have been chosen to compliment a fabulous spring menu, created by Valentina
herself and prepared by you! This is a busy class as there is a lot to do, and it will involve a
combination of interesting demonstrations as well as plenty of hands-on cookery. Together
you will create a selection of Italian dishes which you will then sit down to enjoy as a four
course dinner along with a selection of specially chosen Italian regional wines. Once all the
cooking is done you can enjoy Valentina’s tutored wine tasting, where she will explain the
wine characteristics, why they have been chosen, along with tasting tips. This promises to be
a fun, relaxed, informal ‘foodie’ Italian evening, where you will be given the opportunity to
cook, taste, sip and enjoy!

ITALIAN VEGETARIAN – SEASONAL VEGETABLES GALORE!
with Katie Caldesi
In the spring/summer months Katie will arrive laden with freshly purchased produce
from her nearby pick your own ‘Home Cottage Farm’, www.homecottagefarm.co.uk, and
together you will spend the morning cooking an array of vegetable dishes from her freshly
picked bounty. In the colder months Katie will use the winter’s harvest to cook colourful
and imaginative Italian dishes such as aubergine balls, mushroom and potato bake and
gnocchi nudi (light dumplings of spinach and ricotta).
Enjoy the food you have prepared afterwards as lunch with wine.

ITALIAN DINNER PARTY with Ghalid Assyb
Founder chef of Ottolenghi, former patisserie chef of Baker and Spice, and currently
head chef of the popular ‘Fait Maison’ in Kensington, London, Ghalid has a respected
reputation for creating dishes suitable for both family cooking as well as dinner parties.
Ghalid enjoys introducing different flavours and textures to his dishes, making them
contemporary and sometimes stretching your taste buds! Dishes that he will help you
to master may include beetroot, quince and rocket salad served with grainy mustard,
followed by guinea fowl in red wine sauce, with a sweet potato gratin, with a
dessert of caramelized pear and almond cake served with dark chocolate sauce.
Enjoy a light supper with wine in the company of Ghalid.

Join Valentina in our popular pasta making course where you will be able to delve deeper into
Italian cookery by being introduced to a wider selection of regional pastas and their sauces.

you will be able to practise your pasta making skills as well as learning new techniques and
sauces. It is also suitable for those who have never made pasta before as everything is made
from scratch, Valentina and our cookery staff are always on hand to assist you.

The course is being taught by our popular chef Stefano Borella and together you will create
an array of tasty, seasonal, trattoria style regional Italian dishes; some weeks may include pasta

SUNDAY MARKET KITCHEN with Stefano Borella
Join our chef Stefano in this monthly weekend hands-on cookery course where the
preparation of a delicious Sunday lunch starts from the very beginning, with you choosing
most of the ingredients! Stefano will take you to on a culinary journey through the flavours
of the Marylebone Farmer’s market. You will choose the most seasonal, local and fresh
ingredients directly from the stalls with a chance to meet and chat with the producers. On
returning back to the school with your bags full of goodies, you’ll cook a selection of Italian
dishes for a “pranzo della domenica” (‘Italian Sunday Lunch’) and then you’ll enjoy the results
of your work as a sociable, informal lunch with a glass of wine. A great way to spend a spring
sunday morning!

Until 100 years ago the accepted fundamental tastes were sweet, e.g. sugar, salty e.g.
anchovies, bitter e.g. coffee and sour e.g. lemon. Then umami, the fifth taste was brought in
by a Japanese scientist; umami means tasty (saporito) - the most important taste sensation of
them all. The concept of the fifth taste is now being recognised by us here in the West and
Italian cooking uses lots of umami food, such us truffles, mushrooms, parmesan, Parma ham,
tomatoes, anchovies etc.. A classic example of an umami dish is Franco’s Vincisgrassi recipe

This summer we have combined two creative crafts for your children and teens to enjoy at
La Cucina Caldesi; helping them learn new skills, be inspired and perhaps even make new
friends. They will spend their morning preparing and cooking a selection of Italian dishes
alongside our resident chef Stefano, with plenty of time to taste and ask questions along the
way. After a quick clear down, ‘The Thrifty Stitcher’, our fabulously fun costume and sewing
experts will guide them through a selection of craft/sewing projects which they will complete
in order to take home. We have ideas for all ages covered with the making of aprons, recipe
book covers, beach bags, bread/grissini bags, cup cake pin cushions, home decor projects,
fun novelties, and that’s just for starters. So come and join us creating pieces that are totally
unique, whilst combining with cooking Italian dishes.

Our Favourite Seasonal Recipes
Salmon, Prawn and Tuna Kebabs with Orange and Bay Leaves
Serves 4
4 king prawns, head and tail intact, vein and shell removed • 1 tuna steak, about 150g, cut into 3cm
cubes • 2 salmon fillets, about 250g, cut into 3cm cubes • monkfish fillet, about 150g, cut into 3cm
cubes • Juice and zest of 1 orange • 1 orange, peeled and cut into 4 thick slices
12 bay leaves • 3 tablespoons olive oil • Salt
4 wooden or metal skewers
If you are using wooden skewers, soak them in water for at least 30 minutes to prevent them
from burning.
Put the prepared prawns and fish, the orange zest, slices and bay leaves into a lasagne or
shallow ovenproof dish and pour over the oil and orange juice. Dust with a good pinch of salt
and toss the ingredients gently together with your fingers. Leave to marinate for at least 30
minutes or up to a day in the fridge if necessary.
When you are ready to cook, preheat the grill while you make up the kebabs. Thread the
fish and prawns onto the skewers interspersing them evenly with the bay leaves and pieces of
sliced orange. Strain and discard the orange zest from the marinade and reserve the marinade
for basting. Put the skewers under the grill for around 10 minutes or until done. Turn them
half way through and baste with the reserved marinade juices.
Serve with crusty bread, a good glass of rosé and a salad of lettuce and mint leaves.

Vanilla Pannacotta
Serves 4 if using in 120ml dariole moulds
2.5 leaves of gelatine or 7g powdered gelatine • 200ml milk
300ml double cream • 80g Caster sugar • 1 Vanilla pod
Soak the sheets of gelatine in cold water or follow the instructions for softening the
powdered gelatine.
Combine the liquids into a bowl, then pour about a quarter of this liquid into a saucepan
and place over a low heat. Tip in the sugar and stir until it has dissolved, then remove the
saucepan from the heat..
Squeeze out the gelatine sheets and add to the pan or add the powdered gelatine. Stir until
the gelatine has dissolved, returning the saucepan back over the heat if necessary.
Strain the warmed liquid through a sieve (to remove any undissolved gelatine) into the
remaining milk and cream into the bowl. Stir to combine. For speed of setting and to
disperse the vanilla seeds evenly, put this bowl over another larger bowl filled with ice and
cold water. Leave to cool, stirring occasionally.
When the pannacotta is just starting to set, ladle it into suitable containers and place these
in the fridge. The container could be dariole moulds, shot glasses, martini glasses and so
on. Remember, pannacotta does not have to be turned out so use your imagination as far as
toppings go.
