Santibanez
As a native of Mexico City and a graduate with honors from Paris’s top culinary institutions,
award winning Chef Roberto Santibañez has a culinary resume that includes stints as
restaurateur, culinary consultant, author, and teacher in Mexico, Europe, and the United
States. As with most legendary chefs, his love affair with cooking began as a young boy
when his grandmother, a world traveler, taught him that food preparation does not always
have to be by the (recipe) book.
Santibañez is the authority on authentic Mexican cuisine. He is the chef/owner of Fonda
restaurants in Brooklyn and Manhattan, NY. He is the author of Rosa’s New Mexican Table,
nominated for both IACP and James Beard Awards. His second book Truly Mexican was one
of the most Notable Cookbooks of 2011 by The New York Times, Epicurious, and Food & Wine.
His third cookbook Tortas, Tacos and Tamales was published in the fall of 2012. Roberto is also
a culinary consultant for Amtrak, and a member of The Culinary Institute of America’s Latin
Cuisines Advisory Council.

penchant for Mexican food, we thought visitors to the Convention Center would really
enjoy Roberto’s take on these great Mexican sandwiches.” Santibañez has created menu
items and concepts that incorporate locally sourced ingredients — the same used in
Chef Santibañez’s own acclaimed restaurants. Chef Roberto Santibañez, together

Bill
Pustari
When celebrities and dignitaries come to New Haven, Connecticut they make a beeline for
world-famous Modern Apizza. Originally called State Street Apizza, Modern Apizza was
founded in 1934 and has been in the same spot ever since. For more than 25 years, Bill Pustari
has served as chef-owner of Modern where he serves New Haven-style thin-crust apizza
(closely related to Neapolitan-style Italian pizza) which is baked in a coal-fired brick oven.
Modern's uses the highest quality ingredients including fresh Grande Mozzarella and a
distinct lot of San Marzano tomatoes grown specifically for Modern’s pies. Modern has
received numerous accolades over the years including Yahoo! Travel’s pick for #3 pizza in
the U.S., Playboy magazine’s top ten in the country as well as the New Haven Advocate’s
Reader’s Poll for “Best Pizza” twelve years in a row.
“If Naples is the pizza center of the universe, then New Haven, Connecticut is the pizza
center of the United States. We’ve partnered with Bill Pustari to bring the highest level of
pizza-making in the U.S. to the Colorado Convention Center,” states John Sergi, Chief Design
Officer of Centerplate, the Convention Center's hospitality partner. “We are literally using
the same cheese and tomatoes that Bill uses in his famous pizza in order to make
Crispy Thin Crust Pizza ‘restaurant-real’.”
The selection of pies features traditional cheese and tomato, pepperoni using Il Mondo
Vecchio Salumi local pepperoni, and a vegetarian Colorado seasonal version topped with
local vegetables. The menu also offers a classic Caesar salad, a meatball marinara sandwich,
a hot Italian cold cut grinder, and an Italian sausage sandwich, all made using local Polidori
Sausage, bread from Aspen Bakery, and Aspen Ridge Natural Beef. Bill Pustari, together

Troy
Guard
Troy Guard is the chef owner of TAG Restaurant, TAG | RAW BAR, and TAG Burger in Denver.
TAG’s cuisine is emblematic of Guard’s unique vision of Continental Social Food, a combination
of his Hawaiian roots, his Pan-Asian expertise and fresh, local Colorado ingredients, while the
bar, the location and the décor draw upon Guard’s Denver roots. Guard was named one of the
“Great Regional Chefs of America” by the James Beard Foundation. While running his kitchen
nearly seven nights a week, Guard is involved in numerous philanthropic efforts across the
city such as Share Our Strength, the Colorado Neurological Institute and TAG’s series of
Community Culinary events.

Centerplate and Guard have created a selection of menu items and concepts that incorporate
locally sourced ingredients. Guard‘s Grass-Fed Beef Burgers offers a mouth-watering,
restaurant-quality burger: a seven-ounce, Koberstein Farms All Natural Angus Beef patty
topped with a seasonal local cheese. A rotating side selection of skin-on fries will be offered
such as Garlic Fries with Parsley and Parmesan Cheese. Troy Guard, together with the

Carmen
Callo
As Executive Chef of the Colorado Convention Center, Chef Carmen Callo oversees the
largest kitchen in Colorado. Together with his team of more than one hundred, the kitchen
provides all of the food and beverage needs to the world-renowned companies that come
to Denver to host their national meetings.
“Carmen is clearly a rising culinary star in our industry” said John Sergi Chief Design
Officer of Centerplate, the Convention Center's hospitality partner. “He combines the
sensibilities of a three star restaurant chef while understanding how to serve thousands
at a time.” Tying together Callo’s vast knowledge of food, flavor, and fun, the reimagined
Little Blue Bear features signature sandwiches and salads created by Chef Callo especially
for visitors to the Colorado Convention Center.
The Little Blue Bear menu features locally sourced ingredients as well as produce from
the Colorado Convention Center’s own Blue Bear Farm. The Blue Bear Farm is part of Mayor
Michael Hancock's Denver Seeds Initiative whose mission is to grow a local fresh food
economy that spurs job creation and provides all Denver neighborhoods with access
to healthy and affordable food.
In addition to a variety of fresh, seasonal salads and sandwiches, Chef Callo has developed
a Colorado Buffalo Sausage, a Colorado Pork Green Chili and even the Bratwurst will be
infused with local brewer New Belgium’s 1554 Black Ale. Chef Carmen Callo, together
