This very photogenic red building was built during the early 16th century and restored and enlarged around 1900. The exhibition portfolio is highly diversified in terms of the sectors involved, its geographic alignment and the exhibition types. Basel – A City Portrait Known as the “three finest days”, the Basel Carnival starts on the Monday after Ash Wednesday at precisely 4am with the so-called “Morgestraich”, when all lights in the old town are shut down and the only light remaining comes from the lanterns carried by the participants. With a command from the drum majors, all teams start to march and play their instruments. The Basel Carnival last exactly 72 hours. Restaurant 44 Wine Restaurant 44 Wine In cooperation with the vineyard “Weingut zur Schwane” from the famous Franconian wine region, Swissôtel Berlin’s Restaurant 44 has recently created its own wine: a white 2011 Silvaner and a red 2009 Spätburgunder. Restaurant Manager Marco Pfeifer and Executive Chef Danijel Kresovic worked closely with the wine-grower and, during a blind wine-tasting to choose the right wine, amazingly chose the wine from barrel 44, fitting the restaurants name perfectly. The new wines were unveiled to guests at an event on the hotel’s herbal garden terrace. CREATIVE COOKING Tanja Nixdorf, Executive Chef at Swissôtel Sydney Tanja Nixdorf, the new Head Chef at Swissôtel Sydney, worked in Switzerland, Bangkok, Singapore and USA before she moved to Australia. To view the recipe CLICK HERE Tanja Nixdorf, Executive Chef at Swissôtel Sydney with Swissôtel Cold white tomato cappuccino with pan fried scallops and prawns Ingredients 25 vine ripened tomatoes 20g honey 50ml white balsamic 50ml vodka 4 sheets gelatin 250ml whipped cream Salt and pepper, Tabasco 10 scallops ready to use 10 prawns ready to use, cut butterfly 10g garlic 10ml fresh squeezed lemon juice 10ml olive oil 10 small cherry tomatoes Salt and pepper Balsamic glaze, basil leaves, chives and basil pesto for garnish CREATIVE COOKING Recipe: Cold white tomato cappuccino with pan fried scallops and prawns Tanja Nixdorf, Executive Chef at Swissôtel 1. Quarter the tomatoesSydney and blend them with all the ingredients except gelatin and cream. 2. Season with salt, pepper and Tabasco. 3. Strain the juice overnight through a towel. 4. Soak the gelatin. Heat the strained tomato juice. Season again to taste. 5. Mix warm juice with gelatin and beat until it thickens a little bit, then whip the cream in. 6. Pour into glasses to serve. 7. Season the scallops and prawns with salt and pepper. 8. Heat oil in a frying pan. 9. Fry scallops and prawns for about 2 minutes, add cherry tomatoes, after one minute add lemon juice. 10. Let the juice reduce and take pan off the heat. 11. Garnish the plate with balsamic glaze and basil pesto, place the glass with cappuccino on one side of the plate and scallops and prawns on the other. Place cherry tomatoes and basil in the soup and on the plate to finish.
