Cube day old French bread and drizzle with olive oil. Dust with 1 tsp. seasoning per cup of bread. Bake on cookie sheet in 300 degree oven for 10-15 minutes or until crispy and browned. Chai Spice Infused Sweet Potato Bisque Pumpkin Butterscotch Fudge Ingredients: 1 1/2 lbs. sweet potatoes, peeled & diced 1 pkg. Chai Spice Mix 4 cups chicken broth 1/2 tsp. Saigon cinnamon 1/8 tsp. ground cloves 1/4 - 1/2 ground white pepper 1/4 cup brown sugar 1/2 tsp. salt 1/8 tsp. ground cardamom 1/4 cup heavy cream 1/4 cup apple juice 1 muslin bag Directions: Combine sweet potatoes and Chai Spice Mix with chicken broth in large pot. Boil over high heat until sweet potatoes are tender. Remove muslin bag and drain sweet potatoes, reserving liquid in a bowl. In food processor, puree potatoes until smooth, adding back chicken broth as needed to desired thickness. Add cinnamon, cloves, brown sugar, salt, white pepper and cardamom; pulse to combine. Add heavy cream and apple 6 | Old Mill District Holiday Guide 2012 | www.theoldmill.com Ingredients: 2 1/2 cups white sugar 1 cup milk 3 tbsp. light corn syrup 1/4 tsp. salt 1/2 cup pumpkin puree 1 tsp. Pumpkin Pie Spice 1 1/2 tsp. butterscotch extract 1/2 cup butter Directions: Grease an 8x8 in. pan and set aside. In a saucepan over high heat, combine the sugar, milk, corn syrup, pumpkin puree and salt. Stir continually until the mixture comes to a boil. Reduce heat to medium and continue boiling. At this point, do not stir. When the mixture comes to 232 degrees F (110 C) on a candy thermometer, or forms a soft ball when dropped into cold water, remove from heat. Add pumpkin pie spice, butterscotch extract and butter but do not stir in. Let cool to 110 degrees F (43 C). Beat mixture until thick and it loses some of its gloss. Quickly pour into pan and let set. Cut when firm. Yields: 64 1x1 inch squares. (Notes: It is well worth it to wait for the fudge to come up to temperature and cool down.) The work is constructed of fused glass and forged steel and is inspired by Corliss’s desire to connect the outdoors with the indoor environment, a perfect fit for art in Bend. The Met: Live in HD Take a trip to NYC for the afternoon and enjoy a live performance of the Metropolitan Opera with a high-definition simulcast at Regal Cinemas in the Old Mill District. New Murals decorate the Tunnels on the Deschutes River Trail The Deschutes River Trail just became even more beautiful. The two tunnels underneath the Columbia Street Bridge in the Old Mill District are now graced with striking murals thanks to the efforts of an innovative collaboration between Arts Central, a team of Nike designers from Portland and the Old Mill District. The mural images in both tunnels reflect the rich and thriving riparian areas along the Deschutes River in the Old Mill District. Local artist Paul Allen Bennett, an arts instructor at Arts Central and whose work is at Tumalo Art Co., created the mural design and oversaw the execution of the painting with the kids and designers. To complete the painting, more than twenty Nike designers and staff worked shoulder to shoulder with Arts Central’s Art Academy students and kids from the Boys and Girls Clubs. Enjoy puppet shows, story time and art classes on select dates in late December and early January. A $5 donation per child is requested for all events. Santa Land is located next to Jimmy John’s. Puppet Shows welcome to attend the free puppet shows. Treehouse Puppet Theatre offers educational and fun learning experience while teaching children about nature and their environment. Story Time and Reading Collection The Old Mill District has partnered with the Deschutes Public Library for story time in Santa Land after Christmas. The dates will be December 27-29 and January 2-4 at 11am and 2:30pm each day. Children of all ages are welcome to attend the free story times. In support of our Governor’s 40-40-20 plan, local leaders in Bend will read books to children in recognition of the importance of early literacy and reading to kids. The State of Oregon has set an ambitious goal for educational attainment, known as the 40-40-20 goal. Approved in 2011 the goal is for 40% of adult Oregonians to hold a bachelor’s or advanced degree, 40% to have an associate’s degree or postsecondary certificate and all adult Oregonians to hold a high school diploma by 2025. Preparing and encouraging children to read is the foundation for the Governor’s plan and a high priority for the Library District. The Deschutes Public Library and Old Mill District are thrilled to help work towards this important goal. In addition, the Deschutes Public Library District has funded the purchase of children’s books for the Santa Land space offering kids the opportunity to read a new book while waiting for their family pictures with Santa. Children can read and return books to the Reading Collection area as they depart. These children’s books will be the foundation of a Reading Collection available each year in Santa Land. 10 | Old Mill District Holiday Guide 2012 | www.theoldmill.com Parents may drop off their kids in the Old Mill District for the art classes and snowshoe adventure (sign a quick waiver!) and enjoy 45-60 minutes to walk the river trail, grab a coffee, make a return or, of course, enjoy the many fabulous after Christmas sales in the Old Mill District. Art Classes The Old Mill District has also partnered with the Art Station for children’s art classes in Santa Land. The dates of the art classes will be December 27-30 and January 2-4 at 10-11am (ages 4-6) and 1-2pm (ages 7-10) each day. Art classes are limited to the first twelve children that check-in. Please arrive 10 minutes before class start time as spaces are sure to fill-up quickly. Kids Snowshoeing Mini Adventure The Old Mill District has joined forces with Wanderlust Tours for a kid’s snowshoe demo, interpretative talk and fun snowshoe hare race. The dates of the outdoor adventures are December 27-30 and January 2-4 at 2pm and 3:15pm. Snowshoe classes are limited to the first ten children that check-in. Kids ages 814 are welcome. Meet at Santa Land. Please arrive 10 minutes before class start time as spaces are sure to fill-up quickly. Snowshoe adventures will happen in the best snowfall coverage area within in the Old Mill District. Parents will sign a quick waiver and kids will return to Santa Land space at end of class. Hot Cocoa & Hot Cider Savory Spice Shop will be serving complimentary cups of cocoa and cider from 2-4pm on December 27-29 and January 2-4. Bowman Memorial Museum in Prineville has created a vivid collection of pioneer history over the years and new exhibitions at the museum include Living Traditions and Timber. Usually only available during the winter months, these brews are created for the crisp winter days in Oregon, meant for sharing with friends and pairing with the rich and hearty foods that mark the holiday season. 10 Barrel Brewing Pray for Snow: As with every snow season that is unique to itself, so is the Pray for Snow recipe. This year’s version is based around a Winter Strong Ale which delivers caramel, coffee, and raisin notes contributed by the malt. This is opposed by the bubblegum, spice, and grapefruit delivered via the hops. Ale ApothecarySahalie: Handmade with a process that celebrates the evolution of beer, Sahalie is brewed, conditioned, and dry-hopped in oak barrels. Mixed fermentation and a secret ingredient add complexity, bottle-conditioning produces tiny, natural, CO2 bubbles that just might make champagne blush. Below Grade Brewing Identity Crisis: This micro-brewery’s newest beer is a Farmhouse style Sour IPA, made of a blend of naturally soured versions of the brewery’s Validation Imperial IPA and Nevermind White IPA. These beers went through a primary fermentation and then experienced an extended dry-hopped open fermentation. The result is a crisp, slightly sour brew with pineapple and grapefruit notes imparted by Mother Nature. Bend Brewing Company Pinnacle Porter: A classic example of a robust porter with a predominant roast malt flavor. The addition of black malt adds an underlying dryness which balances the sweetness of the crystal malts. Boneyard Beer Backbone: This rich, creamy stout combines three of our favorite things: espresso, beer and chocolate. Boneyard and Backporch Coffee Roasters have collided to create an extremely flavorful and aromatic ale, using a cold extraction method. Brew Wërks Brewing Brown Ale: This English Special Brown Ale features an abundance of specialty imported pale chocolate malt and pours at only 5 percent alcohol, making it a very sessionable but robust brew. This new brew was inspired by the smoky fall 2012 in Central Oregon. Cascade Lakes Brewing Co. Slippery Slope: This full-bodied ale uses crystal malt and generous amounts of cascade hops to produce a well-balanced seasonal ale. So, whether your slippery slope is a mountain or your sidewalk (or possibly holidays with the in-laws), this ale makes an excellent companion. Crux Fermentation Project Crux Xbock: Not your traditional Weizenbock. This beer is dark brown in color and holds the malty sweetness of a traditional Weizenbock but balanced with a clovelike phenolic and fruity-estery banana elements to produce a unique well-rounded aroma and flavor. Medium to full body with a rich roasted malt character and flavor. Deschutes Brewery Jubelale: Jubelale is brewed with dark crystal malt creating a luscious holiday note with bountiful hops to excite the taste buds. This iconic winter brew celebrates it’s 25th year in 2012. Silver Moon Brewing’s Winter Moon Strong Ale: English IPA meets northwest winter: this slightly darker IPA packs a smidge more heat to lift the winter chill. Winter Moon is brewed with American, British and Belgian malts. Organic New Zealand hops provide bitterness while American and British hops blend a complex spice finish. Solstice Brewing Company: This popular brew pub in Prineville plans to start brewing its own beer this winter. The only Prineville brewery on our list, it is a must see while visiting this historic Central Oregon town. Sunriver Brewing Company Stout: Can craft beer be simple and simply good? The new Sunriver Brewing Company says yes with this dry stout that boasts what they call a “simple approach.” They use noble hops, Carafa, chocolate malts and a base of barley and oats for a guileless stout that will keep you coming back for more. GoodLife Brewing Pass Stout American Stout Ale: This beer is a perfect example of the northwest twists GoodLife adds to all their creations. A smooth bodied ale with subtle hints of roasted malt and chocolate combined with a slight coffee and cocoa character. Three Creeks Brewing Company Rudolph’s Imperial Red: This big, malty, hoppy red style ale is brewed over a two-day period (not to be confused with the length of time it takes to finish completely) to get the Original Gravity needed to finish big. The recipe includes 10 specialty Malts and over twelve pounds of Hops. McMenamin’s Kris Kringle: This hearty and robust ale has a big and bold malt complexity as well as an intense and flavorful hop profile. This “winter warmer” highlights the rich, toasty, aromatic and chocolaty malt flavors as its very sturdy foundation. Generous amounts of hop varieties delivers a magnificent hop assault. Worthy Brewing: Bend’s newest brewery is fast under construction on the city’s east side with plans to be open in early 2013. Worthy plans on a hop garden as well as a beer garden styled after those in Germany. We can’t wait to see what they bring to our craft beer scene here in Central Oregon. Phat Matt’s Brewing Company Phat Matt’s Red: An enticing, rich auburn color with a thick creamy head, this beer is a true representation of classic American red ale. This dry, crisp ale displays a subtle bitterness balanced perfectly with a smooth caramel body and a solid malt backing. This red ale is indeed Phat. Cheers! 16 | Old Mill District Holiday Guide 2012 | www.theoldmill.com U.S. Gran Prix of Cyclocross The Deschutes Brewery Cup The Old Mill District and Deschutes Brewery will host the 2012 Trek US Gran Prix of Cyclocross Deschutes Brewery Cup on December 8-9. The USGP races in Bend are the final races of the U.S. Gran Prix’s four weekend series. “Bend is the perfect place for a big season finish. The atmosphere for the racers is tremendous. This year, with the UCI Cyclo-cross World Championships taking place in the U.S. for the first time in the history of the sport, spectators are sure to see amazing battles on the bike as racers vie for selection on the World Championship team,” said series race director Joan Hanscom. The Deschutes Brewery Cup will follow a course similar to the one used in last year’s USGP and includes features such as a fly-over, a classic set of stairs and hopefully mud. Cold weather, mud and snow are all part of what makes Cyclocross as much fun to watch as it is to race. Races run from 8am-4:30pm both days with Elite Pro races starting at 2:15pm and 3:30pm on Saturday and Sunday afternoon.
